Association between energy intake and skeletal muscle mass according to dietary patterns derived by cluster analysis: data from the 2008 ~ 2010 Korea National Health and Nutrition Examination Survey (군집분석으로 도출한 식사패턴별 에너지 섭취량과 골격근육량의 연관성 분석 : 2008 ~ 2010년 국민건강영양조사 자료를 활용하여)

  • Purpose: This study investigated major dietary patterns among healthy Korean adults using cluster analysis and analyzed the relationship between energy intake and skeletal muscle mass. Methods: This study was conducted using the data from the 2008 ~ 2010 Korea National Health and Nutrition Survey. The data of 7,922 subjects aged 30 years and over, without any missing values, were included in the final analysis. K-means cluster analyses were conducted to identify the dietary patterns of the study subjects, which were based on the energy intake from 21 food groups using a 24-h recall method. The changes in energy intake with each dietary pattern, according to quartiles of skeletal muscle mass, were investigated. Results: Three dietary patterns were identified for both men and women: 'Flour, Animal fat', 'White rice' and 'Healthy mixed diet'. The association between energy intake and skeletal muscle mass for both men and women was significant only in the 'White rice' dietary pattern. In the 'White rice' pattern, the energy intake increased up to > 300 kcal from the lowest to the highest quartile of skeletal muscle mass after adjustment for covariates. Within the 'White rice' pattern, skeletal muscle mass was linearly associated with energy intake in all the age groups in men. Conclusion: Energy intake was significantly associated with changes in skeletal muscle mass only in the 'White rice' pattern. Furthermore, the degree of association between the change in skeletal muscle mass and energy intake differed according to gender. These results indicate that the association between skeletal muscle mass and energy intake may be specific to Korean people who are accustomed to a traditional Korean diet.

A review on pesticide processing factors during processing of rice and barley based on CODEX (CODEX의 쌀과 보리에 대한 농약 가공계수 고찰)

  • This study summarized processing factor (PF) by the stage of rice and barley processing based on JMPR reports from 2006 to 2016. We compared PF of 17 pesticides in rice products during the processing of rice grain, husked rice, polished rice, hulls, bran and cooked rice. Among the 17 pesticides, 12 pesticides except for 5 pesticides such as acephate, methamidophos, glufosinate, quinclorac and sulfoxaflor mostly decreased in pesticides when rice grain processed into brown rice. Pesticides tended to be partially reduced when processed from husked rice to polished rice. However, hulls and bran produced during the milling process were concentrated. Acephate and others, 5 pesticides are systemic pesticides, and pesticides are penetrated into foods, and a large amount of pesticides was not removed during the milling process. The remaining pesticide residues in polished rice were mostly removed after processing into cooked rice, and trace amounts of pesticide residues remained. In the comparison of 23 pesticides PF during the processing of barley products (pearl barley, flour, short, malt, beer, hulls and bran). Most of the pesticide except for 4 pesticide (ethephon, pyraclostrobin, penthiopyrad, sulfoxaflor), which are systemic pesticides, decreased during the process of pearl barley production out of the barley grain. The pesticide in the malt, which was made by steeping pearl barley was concentrated but when processed into beer, pesticide was remained only in trace amounts.

Effects of the Dietary Inclusion of Porphyra and Sea Tangle Laminaria japonica on the Growth, Feed Utilization, Body Composition, and Plasma Chemistry of Juvenile Korean Rockfish Sebastes schlegeli (사료내 김(Porphyra)과 다시마(Laminaria japonica) 첨가가 조피볼락(Sebastes schlegeli) 치어의 성장, 사료 이용성, 체조성 및 혈액 성상에 미치는 영향)

  • This study examined the effects of the dietary inclusion of Porphyra and sea tangle Laminaria japonica on the growth, feed utilization, body composition, and plasma chemistry of juvenile Korean rockfish Sebastes schlegeli. Eight hundred and forty juvenile fish averaging 5.0 g were allocated 40 fish per tank to 21 180-L flow-through tanks. Seven experimental diets were prepared: control (Con) without additive, 0.5 and 1% Porphyra extract (PE), 3% Porphyra powder (PP), 0.5 and 1% sea tangle extract (STE) and 3% sea tangle powder (STP), referred to as PE-0.5, PE-1, PP-3, STE-0.5, STE-1, and STP-3, respectively. Each additive was included in the experimental diet at the expense of the same amount of wheat flour. Each experimental diet was fed to triplicate groups of fish. The experimental diets had no effect on the survival, weight gain or specific growth rate of the fish, feed consumption, feed efficiency ratio, protein efficiency ratio, protein retention, hepatosomatic index, condition factor, moisture or crude protein content of the entire body excluding the liver or moisture, crude protein or crude lipid content of the liver. None of the plasma parameters were affected by the experimental diets. Based on these results, the dietary inclusion of Porphyra and sea tangle did not affect the growth, feed utilization, body composition or plasma chemistry of juvenile Korean rockfish.

Effects of Substituting Fish Meal and Macroalgae for Tuna Byproduct Meal and Rice Bran in Extruded Pellets Fed to Juvenile Abalone Haliotis discus (Reeve 1846) (까막전복(Haliotis discus) 치패용 EP사료내 어분과 해조류 대체원으로서 참치부산물분과 생미강의 효과)

  • We investigated the effect of replacing tuna byproduct meal (TBM) and rice bran (RB) with fish meal (FM) and macroalgae (MA) in extruded pellets (EP) supplied as a diet to juvenile Abalone Haliotis duscus in aquaculture. In total, 80,000 juvenile abalone were distributed among eight indoor raceways and supplied with one of four experimental diets. The control diet consisted of FM, fermented soybean meal, corn gluten meal and shrimp meal as protein sources, with wheat flour and dextrin as carbohydrate sources; the control diet also contained MA. In the FM50 diet, TBM was replaced with 50% FM. In the MA 50 diet, RB was replaced with 50% MA. The final diet, FM50+MA50, included TMB and RB in place of 50% FM and 50% MA. Abalone were fed to satiation with little food leftover for 16 weeks. Weight gain and specific growth rate of abalone fed the control diet were greater than those of abalone fed the FM50 and MA50 diets, but not different from those of abalone fed FM50+MA50 diet. The proximate composition of abalone soft body did not vary according to experimental diets. Based on these results, it appears that the traditional commercial diet for juvenile abalone, comprising FM and MA, could be replaced with one containing 50% TBM and 50% RB without any retardation of growth.

  • Wheat (Triticum spp.) is an important source of food worldwide and the focus of considerable efforts to identify new combinations of genetic diversity for crop improvement. In particular, wheat starch composition is a major target for changes that could benefit human health. Starches with increased levels of amylose are of interest because of the correlation between high amylose content and elevated levels of resistant starch, which has been shown to have beneficial effects on health for combating obesity and diabetes. In this study, high amylose wheat germplasms from other countries were collected and cultivated in Korea, and then the content of amylose was evaluated, we examined amylose content in 614 wheat germplasm. Furthermore, amylose content was validated using several milling processes such as roller, hammer, and grinding mill. As a result, the amylose content distribution was divided into five groups. The range of the amylose levels in whole wheat flour was 18.3% to 29.6%. In addition, the mutant lines were screened for high amylose, and two mutant lines (WX-1046 and WX-1074) exhibited a comparable amylose content to Keumkang whole wheat (19.6%). It has been established that high amylose indicated SS IIa null and necessitate GBSS. Based on these findings, it may be helpful to develop high amylose wheat germplasm and production techniques, particularly in Korea.

Quality Characteristics of Pound Cake with Citrus mandarin Powder during Storage (감귤 분말을 첨가한 파운드케이크의 저장 중 품질 특성)

  • Pound cakes were prepared with Citrus mandarin powder(CMP) cultivated in JeJu Island, Korea. The impact of CMP amount level, which was incorporated into wheat flour by the ration of 0, 5, 10, 15, and 20% based on a flour weight, on the rheology and sensory profile of the pound cakes was measured. Moisture content of 13.70%, crude protein 5.12%, crude lipid 1.30%, crud ash 1.92%, respectively. Also evaluation was performed on the changes in physicochemical properties of the pound cakes during storage at 4 and $30^{\circ}C$. According to the amylogram, gelatinization temperature of the control dough was $63.35^{\circ}C$ and those of the dough with CMP were $63.85{\sim}66.55^{\circ}C$. Maximum viscosity of the dough was 686 B.U in the control, those were 575 B.U, 553 B.U, 504 B.U and 401 B.U in the dough with 5, 10, 15, and 20% CMP, respectively. The retrogradation degree(setback value) of CMP dough was $31{\sim}57%$ lower than that of the control dough under the same conditions. Water holding capacity of pound cake was increased gradually in proportion to the amount of CMP. The CMP addition decreased the brightuess(L) of pound cakes but increased redness(a) and yellowness(b). Hardness of pound cakes was significantly increased by CMP addition, while springiness, adhesiveness and cohesiveness were decreased. Based on sensory evaluation, pound cakes added with CMP were not significantly different in color and texture, while that of 10% CMP was significantly high in taste, flavor, and overall preferences, compared to the control. pH of pound cake with CMP was decreased during storage, showing that pH of CMP samples was lower than the control. Titrated acidity of pound cake with CMP was increased rapidly from storage for 10 days, which the changes in degree was fast in accordance with CMP amount. The Hunter's color value of pound cake with CMP was decreased, as the storage time proceeded. In the samples prepared with CMP, the firmness, adhesiveness, gumminess and chewiness was increased as the storage time proceeded, while springiness and cohesiveness was decreased.

Quality Characteristics and Antioxidant Activities of Cookies Supplemented with Aronia Powder (아로니아 분말을 첨가한 쿠키의 품질 특성과 항산화 활성)

  • The feasibility of incorporating aronia powder (AP) as a value-added food ingredient into convenient food products was investigated using cookie as a model system. AP was incorporated into cookies at amounts of 0, 1, 2, 3, and 4% (w/w) based on total weight of wheat flour. The pH level of cookie dough decreased significantly with increasing levels of AP (P<0.05), whereas moisture content and density were not directly affected by levels of AP incorporation. The spread ratio increased significantly upon addition of AP; however, it was not significantly affected by level of AP incorporation. The loss rate of cookies decreased significantly with increasing levels of AP (P<0.05). In terms of color, lightness and yellowness decreased while redness increased significantly (P<0.05) with increasing levels of AP. Use of AP significantly decreased hardness of cookies (P<0.05), but no significant differences were found between control and 1% sample, 1% and 2% sample, 2% and 3% sample, and 3% and 4% sample (P>0.05). 2,2-Diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-azino-bis-3-ethylbenzthiazoline-6-sulphonic acid (ABTS) radical scavenging activities were significantly elevated by AP addition, and they increased significantly as AP concentration increased in the formulation (P<0.05). Correlation analysis indicated that acceptances of color and chewiness were negatively correlated well with the level of AP incorporation, density and moisture content of cookie dough, and cookie redness, whereas they were positively correlated with pH of cookie dough, loss rate, and hardness (P<0.01 or P<0.05). Finally, consumer acceptance test indicated that the highest levels of AP incorporation (4%) had an adverse effect on general consumer preferences. In contrast, cookies with moderate levels of AP (2%) are recommended based on overall scores to take advantage of the antioxidant properties of AP without sacrificing consumer acceptability.

REARING OF THE EEL ANGUILLA JAPONICA IN RECIRCULATING AQUARIUMS (뱀장어 양식에 관한 연구 (순환여과식 이용))

  • From August 1976 to May 1977, a series of rearing experiments of eels weighing over 5 grams were carried out utilizing indoor recirculating aquariums and the results are summarized as following: 1. The eels were instantly acclimatized in the aquarium when alive Tubifex was fed as food, resulting in the food coefficient of around 5, and the daily growth rate of $2\%$ or so (Table 2). 2. When mackerel flesh was used in combination with flour dough or commercial powdered feed, the food coefficients were 4 to 5 and daily growth rates were between 1 and $2\%$ (Tables 3 and 4). 3. The eels of 12.4-14.7g in average weight which had not shown any growth when fed processed feed, grew normally when they were fed alternately with alive Tubifex and processed feed with the results of 4.3-6.0 in food coefficient and $1.4-2.3\%$ in daily growth rate (Table 5). 4. Experimental processed feed containing North Pacific which fish meal as the main ingredient showed the food coefficient of 1.31-1. 83 as dry material and this means that there is not any significant difference between this experimental feed and the control commercial eel feed, imported front Japan which showed food coefficient of 1.34 and 1.328 (Tables 6 and 7). 5. The feed cost may be reduced by about $45\%$ (based on tile domestic prices in the spring 1977) if this experimental processed feed is used instead of imported commercial feed. 6. Uneven growth is markedly significant in eels, and those which showed retarded growth gave very poor food efficiency as well as poor growth rate until they reach the size of about 30 grams. Thereafter they recovered both the normal food coefficient and growth rate. 7. Individuals which have been showing significant retarded growth may have some inherent physiological factors but this poor growth might also be, more or less, results of some external factors which are considered necessary to be investigated.

Quality Characteristics and Antioxidant Activities of Sulgidduk (Rice Cake) Added with Chia (Salvia hispanica L.) Seed Powder (치아시드 분말을 첨가한 설기떡의 품질 특성 및 항산화 활성)

  • Chia seed (Salvia hispanica L.) originated from Central America is a highly nutritious food containing large amounts of linolenic acid, dietary fiber, and protein. This study investigated the quality properties and antioxidant activities of Sulgidduk prepared with chia seed powder as a functional material. Freeze-dried chia seed powder was replaced with 0, 1, 3, 5, and 7% of rice flour. The addition of chia seed powder did not affect water content, whereas the pH value of the chia seed group decreased as compared to the control. For color measurements, a and b values increased as the amount of chia seed powder increased, whereas L value decreased. Hardness and chewiness of Sulgidduk with chia seed powder were lower than those of the control, whereas springiness of the chia seed group was higher than that of the control. Cohesiveness was not significantly different in all samples. According to retrogradation analysis based on changes in hardness during storage, it was confirmed that addition of chia seed powder inhibited aging of Sulgidduk. Retrogradation of CSP5 was the slowest. Consumer acceptability analysis did not show significant differences in all samples. Total polyphenol and flavonoid contents tended to significantly increase as chia seed content increased. DPPH and ABTS radical scavenging activities of Sulgidduk were also elevated due to addition of chia seeds. From the results, addition of chia seed softened texture, inhibited aging, and enhanced antioxidant activities of Sulgidduk. It is concluded that addition of 5% chia seed powder, which showed high effectiveness for aging, is the most suitable for commercialization.

Physical and Sensory Characteristics of Wet Noodles Prepared by Adding Ge-Geol Radish Powder (게걸무 분말 첨가에 따른 국수의 물리적 및 관능적 특성)

  • The effects of Ge-Geol radish powder on the physical and sensory properties of wet noodles were investigated by adding 4-16% Ge-Geol radish powder based on the flour source. The Ge-Geol radish powder additions significantly increased the redness of the uncooked and cooked noodles. For the texture profile analysis (TPA) of the wet noodles with added Ge-Geol radish powder, hardness, adhesiveness and resilience decreased, whereas chewiness increased. Changes in the volume and weight of the cooked noodles were not significantly different according to Ge-Geol radish powder concentration, but the turbidities of the soup increased. In sensory test, overall acceptability was significantly higher for the noodles with added Ge-Geol radish powder of concentrations between 4-8%. These samples had similar sensory texture properties as the control and had peculiar hot and cool tastes of the radish. Therefore, adding Ge-Geol radish powder at concentrations below 8% was good for making noodles that maintained a natural texture, and also gave an characteristic radish-like flavor to the noodles.
