BEHIND CHICKEN RATINGS: An Exploratory Analysis of Yogiyo Reviews Through Text Mining (치킨 리뷰의 이면: 텍스트 마이닝을 통한 리뷰의 탐색적 분석을 중심으로)

  • Ratings and reviews, despite their growing influence on restaurants' sales and reputation, entail a few limitations due to the burgeoning of reviews and inaccuracies in rating systems. This study explores the texts in reviews and ratings of a delivery application and discovers ways to elevate review credibility and usefulness. Through a text mining method, we concluded that the delivery application 'Yogiyo' has (1) a five-star oriented rating dispersion, (2) a strong positive correlation between rating factors (taste, quantity, and delivery) and (3) distinct part of speech and morpheme proportions depending on review polarity. We created a chicken-specialized negative word dictionary under four main topics and 20 sub-topic classifications after extracting a total of 367 negative words. We provide insights on how the research on delivery app reviews should progress, centered on fried chicken reviews.

  • The limitations of food production caused by global warming, consumption of soil fertility, and land shortage have demanded the development of alternative foods. Their market has been increasing, and in particular, there is an urgent need for an alternative meat. Among them, the non-slaughtered cell-cultured meat that can be manufactured in the laboratory, that is, cultured meat, is in the spotlight, which can solve the problem of meat consumption while including the advantages of meat. It is classified into minced cultured meat and structured one with a structure similar to that of real meat. The latter is currently facing limitations related scaffolds, cells, and the multiplicative problems, and many attempts are being made to solve them. The complex problem is related to secure texture and taste as well as structural similarity to actual meat. To solve the problems, it is necessary to lay emphasis on cells, there are fat cells and vascular cells, and the most fundamental cells, muscle cells. These are the main cells that control the texture and nutrients of meat, and unlike other cells, they grow in the form of fibers. A myofibril (also known as a muscle fibril) is a basic rod-like organelle of a muscle cell, which is a quantitatively major component of meat, and one of the tissues that maintain the appearance of the body and bones. In this review article, we focused on the growth of muscle cells into long, tubular cells known as muscle fibers using the fabricated fibrous scaffold, and reviewed not only research results for muscle tissue engineering but also various results in the related fields for the last five years.

Analysis of Menu Patterns of Bibimbab meals in the School Lunch Program in Busan and Gyeongnam provinces (초등학교 급식에서의 비빔밥식의 식단유형분석 -부산 경남 지역을 중심으로-)

  • The purpose of this study was to divide into a few groups of Bibimbabs with distinctive menu patterns and accompaniments from 484 Bibimbab menus of 360 elementary school foodservices around Busan city and Gyeongnam province. The menus were collected from the internet(http://www.kdclub.com) and the home page of elementary schools from December, 2004 to September, 2005. Moreover, Bibimbabs with high frequency were analyzed by seasons and regions to give informations for menu planing and developing in elementary school foodservices. The serving frequency of Bibimbabs was significantly different among seasons, highest in summer and lowest in winter. Kongnamulbibimbab and Bomnamulbibimbab were highest in frequency in rural areas meanwhile, Sanchaebibimbab, and Chamchibibimbab were frequently served in Busan. The basic structure of Bibimbab meal based on main dish, soup, kimchi and one or two accompaniments consisted of 'side dish', 'fruit & beverage', or 'starchy food & dessert'. Thus, most of the Bibimbab meals were composed of 4${\sim}$5 dishes. Five groups of Bibimbabs were suggested by the menu patterns and kinds of soups. Soups, fruit & beverage, and kimchi were included in the menu patterns of nearly all groups of Bibimbab. However, side dishes and strachy foods & desserts were included of excluded according to the groups of Bibimbabs. Some kinds of soups and side dishes were different among the groups of Bibimbab. These results suggest that the cost, avaliable labor and seasonal constraints contributed mainly to the numbers and kinds of accompainments in the Bibimbab meals. However, taste and sensory balance were also considered in the Bibimbab menus in the School Lunch Program.

Preparation of tomato Kimchi and its characteristics (토마토 김치의 제조 및 특성)

  • Kimchi is well Down for its taste and health function. However, recently Kimchi consumption has been falling because of its salty taste, spice flavor and pungency. This study was aimed to prepare a less salty and more mildly flavored Kimchi with the addition of tomato which contains a red color similar to that of the hot pepper used in traditional kimchi preparation has functionality. The pH, total acidity, color, texture, microbes, sugar, salt, Na and K content of the tomato kimchi were measured. The total amount of phenolic compounds of the tomato kimchi was five times higher than that of traditional kimchi without tomato. A sensory evaluation of the tomato kimchi demonstrated its higher acceptability in overall color, fresh flavor and hot taste but no difference in acidity compared to the traditional kimchi.

The Influence of Food Habits on Body Stature of Children (어린이의 식습관(食習慣)이 체위(體位)에 미치는 영향(影響)에 관한 연구(硏究))

  • The Purpose of this study was to determine every possible correlation between food habits and body statures of primary school children, aged ten years old. This study was conducted from July to October of 1975. In July, prepared questionaires concerning life style, anthropometry, food preference, and food behavior were distributed through school teachers to 425 children; 219 boys and 206 girls, in the 5th grade of three elementary schools in the city of Seoul. Then, in October, when subjects had been classified into underweight/obese by statistical analysis, mothers of obese or underweight children were interviewed by the authors to determine weaning history, daily food consumption of their children, and opinions of various snacks for children. Analysis of results in terms of correlation coefficient, chisquare test and percentage calculations, are as follows: 1. Physical growth and development Boys Girls Height (cm) $134.8{\pm}5.74\;134.4{\pm}5.97$ Weight (kg) $30.0{\pm}4.27\;29.5{\pm}5.16$ Chestgirth (cm) $64.1{\pm}3.59\;63.3{\pm}3.81$ Arm circumference (cm) $18.3{\pm}1.61\;18.2{\pm}1.70$ Triceps skinfold thickness (mm) $10.9{\pm}5.13\;12.7{\pm}4.86$ Various indices of nutrition such as relative weight, relative chestgirth, $R{\ddot{o}}hrer's$ index, Kaup index, Vervaeck index were determined. 2. Food habits 1) Food $preference{\cdots}{\cdots}A$ varying number of foods were selected from 60 items were accepted. It was found that the food which children liked best was fruit and snacks were popular one. Lowest ranking among LIKED foods were from strongly flavored vegetables and organ meat. In general, girls had more food dislikes than did boys. Selected as liked foods were fruits, rice noodle soup, biscuits, and peanuts. Disliked foods were liver, green onions, onions, green pepper, mushrooms, oysters, shellfish, and pork. Items which children never ate before were liver, mushrooms, fish cake, boiled rice mixed with sorghum, mayonnaise, and fresh water firsh. Reasons which children gave for dislike were undesirable flavor and odor. 2) Food $behavior{\cdots}{\cdots}It$ was found that boys liked sweet and salty flavors more than did the girls who more often liked sour flavor. The majority of children enjoyed evening meals more than lunch and breakfast. A number of children skipped breakfast because of lack of appetite or lack of time before going to school. Snacks were the most popular food, especially among girls. Their snacking habits were formed by the encouragement of the mother, and the relieve boredom. Educational backgrounds of mothers and family economical levels of children were remarkable correlated with mothers' attitudes toward feeding of children. There were several interesting findings relating body stature to some other responses; such as that the obese child has a small number of brothers, higher birth order, higher educated mothers and higher family cultural background. It was also discovered that food perference, except for fat and oil group foods was not related to body stature. Sweet taste was liked best and pepperly taste was mostly disliked. Sour taste was popular in the group of underweight. Underweight children were more finicky, disliked snacking, and didn't get much attention from their mothers. 3) Correlation between body stature and nutrition during their infancy. The majority of children, both from obese and underweight, were breast fed as infant. Twenty five per cent of obese children and 17.4 per cent of underwight children started weaning at $1{\sim}6$ months old. The most popular supplemental food of weaning was cereal gruel for the obese group, while boiled white rice and cereal gruel were most common for the underweight group. Highly significant relationships were found between stature of parents and their children. In the obese group 47.8 per cent of fathers and 45.9 per cent of mothers were overweight; however, none of the fathers and only one mother was found to be underweight. In daily food consumption patterns, meals consisting of bread or noodle were popular in the obese group but disliked by the underweight group. The study found clear contrast in that the obese group liked meat and fish while the underweight group liked fruits and vegetables, especially kimchee. The obese children desired to eat cereal foods, milk and milk products, and fat foods while the underweight group desired to eat fruits and vegetables. Frequency of snacks per day was much greater in the obese group. Foods which mothers believed to be good for the health were carrots, cucumbers, fruits, milk, potatoes, sweet potatoes, and breads, while sweet foods such as candies, drinks. chocolate were considered not good for the teeth. Watching television was not significantly related to statures of children. Most significant relationships were found beween frequencies of family guest meals/and eating-out, and children's statures. Nutritional problems which have been considered for the malnourished children in addition to those of children who have a tendency toward obesity, must be taken into consideration in the development of proper nutrition education through the channels of regular school teaching and teaching by parents in the homes. Korean standards of anthropometric measurements for children should be revised, current measurements show much higher figures than present Korean standards.

Evaluation of Perceived Importance and Satisfaction of Foodservice Selection Attributes in University Students in Beijing, China (중국 북경지역 대학 급식소 고객의 급식선택속성에 대한 중요도와 만족도 평가)

  • This study was conducted to analyze the gap between importance and satisfaction of university foodservice attributes as well as to assess customer satisfaction with university foodservice establishments. All statistical analyses were conducted using the SPSS package program (ver. 20.0) for t-test, ANOVA, and Importance-Performance Analysis (IPA). A total of 619 valid responses were used for the data analysis. The results of this study are as follows: the composition of respondents was 53.5% males and 46.5% females. Exactly 85.5% of respondents ate lunch at least five times a week at the on-campus foodservice. The favorite lunch menus of Chinese university students were Chinese food (91.8%), followed by Western food (3.5%), Korean food (2.2%), and Japanese food (1.5%). According to the results of IPA, foodservice selection attributes that were priorities for improvement were food taste, food freshness, menu variety, waiting time for meal, and toilet cleanliness. In addition, five satisfaction factors were extracted by exploratory factor analysis. According to the results of one-way ANOVA, 'physical environment' and 'service quality' factors showed significant differences according to the students' grades and the frequency of eating lunch at on-campus foodservice. On the other hand, 'food quality and menu' and 'convenience and price' factors showed significant differences according to meal cost. In conclusion, in order to enhance customer satisfaction of on-campus foodservice, foodservice managers should offer a varied menu at reasonable prices and improve food quality.

Study on the Midgut Epithelium of Korean Fresh Water Crayfish, Scanning Electron Microscopy (韓國의 민물가재(Cambaroides similis Koelbel)의 中腸上皮에 대한 走査電子顯微鏡的 考察)

  • Animals in Order Decapoda consist of a plentiful species and vary in external and internal shape, taste, feeding habit and the feature of alimentary canal. In this case, the morphological study on the midgut epithelium of filter feeding Decapoda in Crustacea, Korean fresh water crayfish (Cambaroides similis Koelbel), the only species dwelling in Korea, were performed by scanning electron microscopy. The anterior-most parts of midgut epithelium appeared to be many shallow, dense and irregular folds where a linear microvilli (MV) (1-3$\\mu$m long) numbered from a few to ten had raised. Middle part of the gut, the folds got gradually shallower. MV arranging on one, two or three lines were slightly thicker than those mentioned above. The number of MV in each group seemed gradual decrease from a apical border with maximum thirty in group to furrow with none. From the middle to posterior parts of the gut, the MV were slightly thinner and longer (2.5-4 $\\mu$m long) and raised twelve on a line and, in some cases, added from one to five on another line. On the posterior-end parts of the gut, the epithelium showed many shallow and dense folds as the anterior parts again. A group of thin and long MV (2-7 $\\mu$m long) countable fifteen on a line were raised to the base of each fold. In some cases, the MV also added utmost in five on the other line. All the MV observed in this study were posteriorly directed.

Quality Characteristics of Brown Rice Dasik added with Chia Seed according to Different Types of Sweetener (감미료의 종류를 달리한 치아씨 첨가 현미다식의 품질 특성)

  • The present study was performed to develop healthier sweeteners for brown rice Dasik with chia seed powder. The quality features and sensory evaluation were tested for brown rice Dasik with chia seed powder added with five different sweeteners and the results are as follows. The Dasik (DS) with isomalto-oligosaccharide and starch syrup received the highest scores on moisture content tests. The results from hardness tests identified the DS with agave syrup as the hardest, and the results from the adhesiveness test verified that the DS with agave syrup as well as the DS with starch syrup produce the most adhesive DS. The results of the springiness test show that the DS with starch syrup has higher springiness than other sweetners. The highest score for the chewiness and cohesiveness tests was the DS with starch syrup, while the DS with isomalto-oligosaccharide received the highest score on the gumminess test. The results of the chromaticity measurement test found that the DS with starch syrup showed the highest score of 'L' and the lowest score with fructo-oligosaccharide. In addition, the highest score of 'a' was DS with isomalto-oligosaccharide and the lowest score of 'b' was the DS with starch syrup. The results of sugar content displayed that the DS with starch syrup was the highest and the DS with fructo-oligosaccharide was the lowest score. The results of sensory evaluation verified that color did not influence evaluators' preference investigation. The results of sweet flavor test found that the DS with honey and the DS with agave syrup had the most preferred by participants, but there was no statistically significant difference among all five different sweeteners from the sweet taste test. Furthermore, the DS with agave syrup received the highest score while the DS with agave syrup scored the lowest from the hardness preference test. General preference evaluation identified the highest score with the addition of fructo-oligosaccharide and the lowest score with the addition of isomalto-oligosaccharide. Thus, the findings of the present study provide the meaningful results to demonstrate the DS with fructo-oligosaccharide is the most suitable sweetener to manufacture brown rice DS added by chia seed powder, and this result will help marketers with creating meaningful strategies and with developing similar products using chia seed powder.

Chemical Comparison of Germinated- and Ungerminated-Safflower(Carthamus tinctorius) Seeds (홍화(Carthamus tinctorius L.)씨와 발아홍화씨의 화학성분 비교)

  • This study was to investigate the chemical compositions of germinated (GSS)- and ungerminated (UGSS)-safflower (Carthamus tinctorius) seeds. GSS had higher amount of sugar and crude fiber than UGSS, but less amounts of protein and lipid. Levels of $\alpha$-tocopherol and essential amino acids of GSS were higher than those of UGSS, although there are no difference in fatty acid composition between GSS and UGSS. Among the nine phenolic compounds detected, five phenolic compounds, except for two lignans and two flavonoids, were found in both GSS and UGSS. Four serotonin derivatives accounted for about 80 per cent of total phenolic compounds, and levels of five phenolic compounds decreased slightly with germination. These results suggest that germination may enhance the functionality of safflower seed by increasing nutritional compositions and by decreasing phenolic compounds with bitter taste and cathartic effects.

The Effects of the Addition of Cheese in the Manufacture of Rice Cakes Colored with 5 Vegetable-Derived Natural Coloring Materials (오색(五色) 채소 유래 천연 색소를 이용한 건강 맞춤형 컬러 치즈 떡 개발에 관한 연구)

  • In this study, the effects of adding cheese in the manufacture of rice cakes having 5 different vegetable-derived natural coloring materials were investigated with respect to quality characteristics during storage. Rice cake samples were prepared without (control) or with the addition of 2.0%, 3.0%, or 4.0% cheese. Changes in pH, external appearance, total solid content, and scanning electron microscopy (SEM), texture and sensory characteristics were monitored during storage. The sensory and texture characteristics of the rice cakes with cheese were investigated with respect to color, flavor, and overall acceptability. The total solid content and pH of the cheese-treated rice cakes were higher than that of the control during storage. Rice cakes added with cheese had higher liquid flavor than control. Results revealed that rice cakes added with cheese at less than 4% addition had the best taste, appearance, and sensory properties. Moreover, the addition of cheese to five-colored rice cakes provides additional nutrients while maintaining flavor and quality.
