연육 (surimi) 소재로서 어체중량이 다른 넙치의 품질 특성 비교 (Quality of Bastard Halibut with Different Weights as a Surimi Source)

  • This study investigated the physicochemical and enzymatic properties of unmarketable cultured bastard halibut (Paralichthys olivaceus) of different weights as a potential source of surimi and surimi gel. The proximate composition of cultured bastard halibut of different weights did not differ significantly at P<0.05 (light weight (LBH) 400~500 g, medium weight (MBH) 600~800 g, and heavy weight (HBH) > 1,000 g). Compared to Alaska pollock muscle, the bastard halibut muscle had a 4% higher crude protein content and 6% lower moisture content. The collagen content of LBH bastard halibut muscle was 1.58 g/100 g, which was lower than or no different from bastard halibut weighing different amounts. Regardless of fish weight or pH, the enzymatic activities of crude fish extracts ranged from 0.34~0.48 U/mg for casein and hemoglobin, 11.0~12.7 U/mg for LeuPNA, 5.4~6.1 U/mg for ArgPNA, 2.3~2.9 U/mg for SAAPFNA, and 0.1~0.2 U/mg for BAPNA. The yield of surimi gel from LBH was 24.4%, which was similar to that from MBH and lower than that from HBH. The surimi gel from LBH was similar to that from HBH, while weaker than that from MBH. The surimi gel from LBH gel was stronger than grade SA gel from commercial Alaska pollock.

Fractionation of Gelatin Hydrolysates with Antioxidative Activity from Alaska Pollock Surimi Refiner Discharge

  • This study was conducted to obtain the gelatin fraction with a high anti oxidative activity from Alaska pollock surimi by-products using a two-step enzymatic hydrolysis and ultrafiltration. Among gelatin hydrolysates from refiner discharge of Alaska Pollock surimi, the highest antioxidative activity (81.5%) resulted from gelatin hydrolysate sequentially treated with Pronase E and Flavourzyme each for 2 hr. However, no difference was seen in the anti oxidative activity of the second hydrolysate (Pronase E-/Flavourzyme-treated hydrolysate) when compared to the permeate fractionated through a 10-kDa membrane. The results suggest that the Pronase E-/Flavourzyme-treated hydrolysate from refiner discharge gelatin of Alaska pollock surimi can be used as a supplementary raw material for improving health functionality.

  • Conventional surimi processing from white flesh fish, such as Pacific whiting and Alaska Pollee utilizes only <25% of the body (Toyoda and others 1992; Park and others 1997). Conventional surimi is refined myofibrillar proteins processed by removing unnecessary foreign materials such as fat, pigment skin, and water soluble sarcoplasmic proteins. The acid-aided process demonstrated excellent gel forming ability for cod and mackerel with extremely higher yield (Hultin and Kelleher 1999). (omitted)

  • In the industrial production of fish snacks using frozen surimi, molding the surimi mixture requires an expensive automated machine. This study investigated the efficacy of freeze molding without machinery molding in the production of Alaska pollock Theragra chalcogramma surimi snacks. At 90 minutes after deep freezing at $-80^{\circ}C$, the cutting ease and shape retention of the surimi mixture were superior. The freezing-molded surimi snack had a higher TVB-N (total volatile basic nitrogen) level (3.59 mg/100 g) than that (1.50 mg/100 g) of the normally molded surimi snack. Freezing did not affect the microstructure of the surimi snack or its hardness, which is an important physical property of snack products. The freezing-molded and normally molded snacks did not differ significantly in terms of color or appearance, or in any other aspect of the sensory evaluation. Our findings demonstrate that freeze molding does not induce changes in the quality of surimi snacks. Therefore, molding by freezing treatment could be used to produce surimi snacks at small- and mid-sized seafood companies.

쌀가루의 제분형태 및 첨가방법이 연제품의 물리적 및 관능적 특성에 미치는 영향 (Effects of Rice Flour Milling Types and Addition Methods on Rheological and Sensory Properties of Surimi Products)

  • Surimi products are among the most prominent seafoods in Korea. Together with fish meat, wheat flour is a major ingredient in the preparation of surimi products. Rice flour, however, can be an effective ingredient in enhancing the rheological characteristics of surimi products. In this study, we evaluated the potential of rice flour as an agent to replace wheat flour in surimi products. The effects of rice flour milling types and addition methods on the rheological and sensory properties of surimi products were investigated. Among different addition methods, the surimi product containing non-treated rice flour showed better gel strength and sensory properties than products containing paste (1:1.3 rice flour/water, w/v) and steamed paste (steamed at $100^{\circ}C$ for 30 min). According to the gel strength results for surimi products with added roll-mill (40 mesh) and jet-mill (180 mesh) rice flours, the roll-mill rice flour shows good potential as a replacement for wheat flour. When considering gel strength and sensory properties, an effective amount of rice flour to add was 10-15% (w/w). In conclusion, the rheological and sensory properties of surimi products containing rice flour were comparable with those of a premium commercial surimi product. Therefore, rice flour might be an effective alternative to wheat flour for premium surimi products.

  • 어류뼈 속에 함유된 칼슘제를 이용한 적색육어류 연제품의 품질 개선을 위한 일련의 연구로 칼슘 강화 적색육어류 연제품의 제조조건 및 저온 저장 중 품질 안정성에 대하여 살펴보았다. 가용성 칼슘 및 젤리강도의 결과로 미루어 보아 적색육어류 연제품의 기능성 개선을 위하여 첨가하는 칼슘제의 적정농도는 고등어 육에 대하여 0.9%이었다. 가용성 칼슘함량은 이 조건으로 제조한 칼슘제 첨가 연제품(105.0 mg/100 g)이 칼슘 무첨가 제품(2.9 mg/100 g)보다 훨씬 높았다. 저장 중 칼슘 첨가 제품은 수분함량, 아미노산 조성, 칼슘 및 인함량의 경우 변화가 없었고, pH, 휘발성염기질소, 히스타민함량, 과산화물값 및 갈변도의 경우 대조제품에 비하여 완만하게 증가하였으며, 생균수 및 대장균군은 검출되지 않았다. 곡류에 부족하기 쉬운 Iysine 등과 같은 아미노산, DHA, EPA 및 칼슘함량은 칼슘제 첨가 적색육어류 연제품이 무첨가 제품보다 높았다. 이상의 결과로 미루어 칼슘제 첨가 연제품은 영양 및 기능성이 우수하고, 식품위생적으로 안전한 식품으로 판단되었다.

  • This study investigated the physicochemical and enzymatic properties of unmarketable bastard halibut (Paralichthys olivaceus) cultured in different regions (i.e., Jeju, Wando, and Geoje) as a potential source of surimi and surimi gel. The proximate composition of unmarketable bastard halibut cultured in different regions did not differ significantly at P<0.05. Compared to Alaska pollock muscle, all of the unmarketable bastard halibut muscle had a 4% higher crude protein content and 5% lower moisture content. The collagen content of bastard halibut muscle cultured in Jeju was 1.96 g/100 g, which was higher than in fish cultured in other regions. Regardless of the region where cultured or pH, the enzymatic activities of the crude extracts from unmarketable bastard halibut muscle ranged from 0.30.0.48 U/mg for casein and hemoglobin, 11.9.13.7 U/mg for LeuPNA, 5.6.6.7 U/mg for ArgPNA, 2.8.4.7 U/mg for SAAPFNA, and 0.1.0.2 U/mg for BAPNA. Regardless of region, no mercury or lead was found in any of the unmarketable bastard halibut muscle, except for lead in fish cultured in Geoje. The strength of surimi gels from unmarketable bastard halibut cultured in Jeju, Geoje, and Wando was 1059, 988, and 900 g${\times}$cm, respectively. The surimi gel from unmarketable bastard halibut cultured in Jeju was stronger than commercial Alaska pollock surimi, which was grade SA.

복어(Lagocephalus wheeleri) 수리미를 첨가한 어묵의 제조 및 품질특성 (Processing and Quality of Natural-tasting Steamed Fish Paste Containing Unwashed Pufferfish Lagocephalus wheeleri Surimi)

  • To develop natural-tasting fish paste from the pufferfish Lagocephalus wheeleri, steamed pufferfish paste (SPP) was prepared and its optimal processing conditions, quality metrics, and shelf-life characteristics were examined. SPP was produced by thawing golden threadfin Nemipterus virgatus surimi (FA grade), then adding 10% unwashed pufferfish surimi (PS), 1.5% salt, 8.0% wheat starch, 0.25% calcium carbonate, 0.25% sugar, 0.75% sorbitol, 0.25% polyphosphate, and 12.0% pufferfish hot-water extract (Brix 10°). The meat was ground with a Stephan mixer, molded at low temperature (18℃, 10 h), vacuum packed in a laminated plastic film bag, heat treated with hot water (95℃, 50 min), and cooled. As the amount of PS added increased, the whiteness, gel strength, and shear strength of the SPP decreased slightly. However, the SPP folding test showed no deterioration in the texture. In the sensory evaluation, the SPP received a higher rating for taste, smell, and overall taste than commercial Japanese pufferfish Kamaboko. The total amino acid content of the SPP was 10,262.6 mg/100 g; the major amino acids were aspartic acid, glutamic acid, alanine, valine, leucine, lysine, and arginine. The free amino acid content was 133.0 mg/100 g; the major amino acids were taurine, glutamic acid, glycine, alanine, cystine, and lysine.

산과 알칼리 공정으로 제조한 어육 수리미의 가열 겔에 미치는 근형질단백질과 NaCl의 영향 (Effect of Sarcoplasmic Protein and NaCl on Heating Gel from Fish Muscle Surimi Prepared by Acid and Alkaline Processing)

  • pH 2.5와 pH 10.5에서 어육 단백질을 용해시키고, pH 5.0부근에서 침전 단백질을 회수한 후, pH를 중성 부근으로 재조절하여 제조한 7종 어류의 산과 알칼리 수리미의 수율을 수세 수리미와 비교하고 이들 수리미의 가열 젤에 미치는 근형질 단백질과 NaCl의 영향을 punch test와 색차계로 측정하였다. 알칼리 수리미의 수율은 수세 수리미와 산 수리미에 비하여 높았으나, 파괴강도, 변형값 및 백색도는 낮았다. 근형질 단백질을 첨가한 가열 겔의 파괴강도는 첨가하지 않은 가열 겔에 비하여 유의적으로 높은 파괴강도와 변형 값을 가졌으나, 백색도는 다소 감소하였다. 염은 첨가 농도가 증가함에 따라 파괴강도 값은 감소하였으나, 변형값은 유의적인 차이를 보이지 않았고, 백색도는 다소 증가하는 것으로 나타났다. SDS-PAGE 상에서 산 수리미의 myosin heavy chain과 actin은 급속히 분해하였으며, 수세 수리미와 알칼리 수리미 사이에는 큰 차이가 없었다. 알칼리 수리미의 수율과 가열 겔의 파괴강도, 변형 및 백색도 값에 미루어 알칼리 수리미 제조 공정은 kamaboko형의 연제품 제조에 활용이 가능한 것으로 판단하였다.

  • We investigated the physical properties and color values of surimi mixtures with added natural red pigments from laver Pyropia yezoensis. After adding the natural red pigment from seaweed extract to surimi, the hardness, gumminess, and chewiness of the surimi decreased compared to the negative controls. The L* color value was lower for the surimi mixture than the negative controls, but the a* and b* color values were higher. After cold storage for 7 days, the unheated surimi mixture showed increased firmness, but decreased adhesiveness. Moreover, the gumminess and chewiness of the surimi mixture stored after heating were increased compared to the pre-storage values. These results indicate that seaweed extract pigments may be used as additives for surimi, to increase the color preference, with little effect on the physical properties.
