An attempt was made to elucidate the stability of serum metabolites and enzyme activities in blood samples taken from rockfish(Sebastes schlegeli), Israeli carp(Cyprinus carpio) and rainbow trout Oncorhynchus mykiss) under different storing conditions. The concentrations of total protein(TP), albumin(ALB), triglyceride(TG), cholesterol(CHOL) glucose(GLC), phosphorus(P) and sodium(Na), and the activities of alanine aminotransferase(ALT) and aspartate aminotransferase(AST) in serum were investigated for 16 days at $15^{\circ}C$(room temp.) and $4^{\circ}C$ (refrigerative) condition, or frozen at $-20^{\circ}C$ for period of 30 days. Though there was a little difference between fish species, the concentrations of TP, ALB, GLC, P, Na in serum were stable at all storing temperatures, while those of TG, CHOL, ALT and AST were not stable, particularly even at the normal temperature. In general, serum components were more stable at refrigerative and frozen conditions than at room temp. storing. However, it was noticeable that the stability of CHOL in rockfish serum was found to be more unstable at $-20^{\circ}C$ than kept at $15^{\circ}C$ or$4^{\circ}C$.

Doxycycline is a semi-synthetic broad-spectrum antibiotic, and it has been used to get rid of bacteria in animals and humans. The use of antibiotics has greatly contributed to the aquaculture production although its misuse sometimes presents public health problems. This study was performed to investigate the toxic effects of doxycycline on whiteleg shrimp (Litopenaeus vannamei) administered for possible infection treatments. The shrimp were allocated into four groups and doxycycline was fed three times a day for 7 days at 0, 20, 50 and 100 mg/kg to each group. After 24 hr following the 7-day treatment, hemolymph and hepatopancreas were used for blood and biochemical analysis: Total hemocyte counts, Total protein, Total cholesterol, Gluscose, Glutamic pyruvic transaminase, Glutamic oxaloacetic transaminase, Glutathione peroxidase, Superoxide dismutase, Glutathione-s-transferases, Total antioxidant capacity colorimetric and Acid phosphatase. In addition, histopathological examination was performed on the hepatopancreas and muscle. It was observed that body weight gain was significantly retarded in 100 mg/kg doxycycline group. Doxycycline was found to induce biochemical or functional disorders at 100 mg/kg as observed many of the blood and biochemical parameters were significantly reduced. In conclusion, it was judged that there will be no major toxicity problems with doxycycline when used for shrimp aquaculture at regular doses.
Although a generation-related difference in nutrient and food-group intake has been broadly recognized in the Japanese population, few studies have examined the difference and correlation of intakes with consideration of a family line and co-habitation status. We conducted a dietary survey using female college students in dietetic course in Aichi, Japan, and their mothers and grandmothers. A validated self-administered diet history questionnaire was used for assessment of intakes. Data from 110 families were included in the analysis. The means of 13 nutrients and 10 food groups (of the 15 and 14, respectively) showed significant differences among the three generations. A significant difference was observed in the carbohydrate, protein, saturated fatty acid, cholesterol, and fish intakes between the students living with their mothers and those apart. In the correlation analyses between generations, moderate correlation was observed for most nutrients and food groups between the students and their mothers living together (correlation range = 0.30-0.61 for nutrients, and = 0.21 -0.56 for food groups). A wide variation with no consistency was observed for the correlation between the students and their grandmothers (-0.18 -0.59 and -0.33 -0.65, respectively), No meaningful correlation was observed between any two generations living apart. Among the food groups examined, pulses, fish, and vegetables showed relatively large differences for the correlation between two groups with different living conditions. When living together, the correlation coefficients for nutrients and food groups between the students and their mothers decreased according to the increase in frequency of eating out by the students. These results suggest that living together and eating together were an important factor for the resemblance in dietary habits between generations in the population with a marked generation-related difference in intakes. BACKGROUND/OBJECTS: When the functions involved in the ingestion of food occurs failure, not only loss of enjoyment of eating, it will be faced with protein-energy malnutrition. Dysmasesis and difficulty of swallowing occurs in various diseases, but it may be a major cause of aging, and elderly people with authoring and dysmasesis and difficulty of swallowing in the aging society is expected to increase rapidly. SUBJECTS/METHODS: In this study, we carried out a survey targeting nutritionists who work in elderly care facilities, and examined characteristics of offering of foods for elderly and the degree of demand of development of easily chewable and swallowable foods for the elderly who can crush foods and take that by their own tongues, and sometimes have difficulty in drinking water and tea. RESULTS: In elderly care facilities, it was found to provide a finely chopped food or ground food that was ground with water in a blender for elderly with dysmasesis. Elderly satisfaction of provided foods is appeared overall low. Results of investigating the applicability of foods for elderly and the reflection will of menus, were showed the highest response rate in a gelification method in molecular gastronomic science technics, and results of investigating the frequent food of the elderly; representative menu of beef, pork, white fish, anchovies and spinach, were showed Korean barbecue beef, hot pepper paste stir fried pork, pan fried white fish, stir fried anchovy, seasoned spinach were the highest offer frequency. CONCLUSIONS: This study will provide the fundamentals of the development of easily chewable and swallowable foods, gelification, for the elderly. The study will also illustrate that, in the elderly, food undergone gelification will reduce the risk of swallowing down to the wrong pipe and improve overall food preference.

The objectives of this study were to examine the association between dietary factors and underweight and overweight adult Vietnamese living in the rural areas of Vietnam. A cross-sectional study of 497 Vietnamese aged 19 to 60 years (204 males, 293 females) was conducted in rural areas of Haiphong, Vietnam. The subjects were classified as underweight, normal weight, and overweight based on BMI. General characteristics, anthropometric parameters, blood profiles, and eating habits were obtained and dietary intake was assessed using 24-hour recalls for 2 consecutive days. A high prevalence of both underweight (BMI < 18.5 kg/$m^2$) and overweight (BMI ${\geq}$ 23 kg/$m^2$) individuals was observed (14.2% and 21.6% for males and 18.9% and 20.6% for females, respectively). For both genders, the overweight group were older than the under- and normal weight groups (P = 0.0118 for males and P = 0.0002 for females). In female subjects, the overweight group consumed significantly less cereals (P=0.0033), energy (P = 0.0046), protein (P = 0.0222), and carbohydrate (P = 0.0017) and more fruits (P = 0.0026) than the underweight group; however, no such differences existed in males. The overweight subjects overate more frequently (P = 0.0295) and consumed fish (P=0.0096) and fruits (P=0.0083) more often. The prevalence of both underweight and overweight individuals pose serious public health problems in the rural areas of Vietnamese and the overweight group was related to overeating and high fish and fruit consumption. These findings may provide basic data for policymakers and dieticians in order to develop future nutrition and health programs for rural populations in Vietnam.
This study was conducted to determine the optimum amount of dried Alaska Pollock Therage chalcogramma roe (D-AP-R) for preparing garlic gochujang with D-AP-R. We investigated the optimal preparation of garlic gochujang with D-AP-R by proximate composition, taste, color, and odor measurements and sensory evaluation. The moisture, ash contents and water activity of garlic gochujang with D-AP-R decreased as the amount of D-AP-R increased, whereas other components, such as crude protein and lipid contents, taste value, yellowness of Hunter color, and odor intensity, increased as D-AP-R increased. According to the sensory evaluation results, garlic gochujangs with 10 and 15% D-AP-R were superior to garlic gochujang without D-AP-R (control) in terms of taste and overall acceptance but inferior in terms of fish odor. However, there was no difference in the sensual color of garlic gochujang with versus without D-AP-R. These results suggest that high quality garlic gochujang can be prepared by adding 10% D-AP-R. The total amino acid content of garlic gochujang with 10% D-AP-R was 11.81 mg/100 g, which was higher than that of the control (9.05 mg/100 g). The cholesterol content of garlic gochujang with 10% D-AP-R was 16.1 mg/100 g, which is below the acceptable daily cholesterol intake (300 mg/day).
Metallothionein is an essential and common protein to regulate the intracellular concentration of heavy metals, which exist in most organisms from bacteria to vertebrates. Although the detailed function of metallothianein has not been fully identified until yet, it may be involoved in the cellular protection against the heavy metal toxicity and in the global regulation of several other genes and the expression of metalloproteins. We have cloned the full cDNA clone of metallothionein gene in Channel Catfish by Reverse Transcriptase-Polymerase Chain Reaction(RT-PCR) starting from poly(A)-containing mRNAs. All PCR fragments have been subcloned into EcoRV site of pBluescript SK+ and dT-tailed at Smal site of pUC19, then PCR products are recovered by the double digestion of recombinant plasmids wiht EcoRI and HindIII, which are adjacent to EcoRV site in multicloning sites or by rapid PCR screening. The nucleotide sequence analysis of pMT150(one of the PCR clones) showed high homology with several other piscine metallothionein cDNA genes.
In this study, we compared diet related attributes such as food taste preference, food consumption frequency and nutrition intake between elderly residents in their 80's of areas in Jeollanam-do that are well known for longevity and those of a part of Seoul. Structured in-depth interviews were conducted by trained interviewers on 125 consented subjects (67 Jeonnam and 58 Seoul). Differences of groups were tested using Chi-square tests for nominal or ordinal data and t-tests and ANOVA tests for ratio data. The elderly from Jeonnam tended to sleep longer, express emotion more freely, and interact with others more often than those from Seoul. The elderly tended to prefer sweet or salty tastes, which might be highly related to serious health problems. The most frequently consumed foods were napa cabbage kimchi (2.19 times/day) and multigrain rice (1.99 times/day). Elderly from Jeonnam tended to consume garlic, milk, beans and roasted barley/corn teas less often; whereas, they consumed porridge, dried radish greens, potato, fermented fish, dried fish, pork rib, pork belly, soybean paste soup, soybean paste/Ssamjang, other kimchis, pickled vegetables, snacks, cookies, and green/black teas more often than elderly residents from Seoul. Differences in nutrition intake between the regions were greater than differences between the perceived levels of household economic status. NAR and INQ for folate were lower among elderly from Jeonnam than those from Seoul, while those for protein, vitamin C, niacin, vitamin $B_6$ were higher. The study results indicated that elderly from Jeonnam engaged in a more diverse diet than the elderly from Seoul.

The identification of circulating tumor cells (CTCs) is clinically important for diagnosing cancer. We have previously developed a size-based filtration platform followed by epithelial cell adhesion molecule immunofluorescence staining for detecting CTCs. To characterize CTCs independently of cell surface protein expression, we incorporated a chromosomal fluorescence in situ hybridization (FISH) assay to detect abnormal copy numbers of chromosomes in cells collected from peripheral blood samples by the size-based filtration platform. Aneuploid cells were detected in the peripheral blood of patients with lung cancer. Unexpectedly, aneuploid cells were also detected in the control group, which consisted of peripheral blood samples from patients with benign lung diseases, such as empyema necessitatis and non-tuberculous mycobacterial lung disease. These findings suggest that chromosomal abnormalities are observed not only in tumor cells, but also in benign infectious diseases. Thus, our findings present new considerations and bring into light the possibility of false positives when using FISH for cancer diagnosis.
This study analysed the mercury concentration in the hair of 62 students (male : 21, female : 41) of D university in Najusi, Jeon-Nam area. Also, questionnaire, which developed by NIES, were completed by the students. According to the questionnaire, most of the students had a higher intake of meat than that of fish. Also, among the students, there were many smokes and many had dental treatment with amalgam. Based on the gender, female showed 1.024 ${\mu}g/g$ and male showed 0.882 ${\mu}g/g$ of the mercury concentration. This means that female students had higher level of mercury in their hair, but it was not a significant statistic difference. Comparing by the intake frequency of meat, processed food stuffs, protein foods, it shows the more they at the higher mercury concentration was observed. According to the intake frequency of fish, when the number of times they intake increased, the mercury concentration was higher. Under one time was 0.857 ${\mu}g/g$ and twice or more times were 1.152 ${\mu}g/g$, which showed a significant statistical difference (p<0.05). Depending on the Life style, the mercury concentration in the hair was high with workout, outdoor activities, and direct smoking. The mercury concentration in the hair showed no difference for whether they received amalgam treatment but the personal dietary habit and the Living condition affects strongly on the mercury concentration level.
