Effect of Addition of Allium hookeri on the Quality of Fermented Sausage with Meat from Sulfur Fed Pigs during Ripening

  • The effect of the addition of Allium hookeri on the quality of fermented sausage made with meat from sulfur fed pigs was examined, throughout a 60 d ripening period. There were two treatments in animal management: normal feed fed pigs, and sulfur fed pigs given 0.3% sulfur mixed normal feed. Fermented sausage manufactured with meat from normal feed fed pigs, and with meat from sulfur fed pigs, and 1% A. hookeri-containing fermented sausage processed with meat from sulfur fed pigs, were determined at 1 d, 15 d, 30 d, and 60 d. The meat qualities in fermented sausage were measured by DPPH radical scavenging activity (DPPH), $ABTS^+$ radical scavenging activity ($ABTS^+$), total phenolic acids, and total flavonoid contents. Fermented sausage made from pigs that had been fed with 0.3% sulfur was protected from oxidation by reduced free radical, as shown by the significant increase in DPPH and $ABTS^+$ values, compared with fermented sausage made from normal feed fed pigs (p<0.05). A. hookeri-added fermented sausage with sulfur fed pork was shown to increase the values in DPPH, $ABTS^+$, total phenolic acid, and total flavonoid contents, by comparison with both the control sausage, and sausage with sulfur fed pork, at 60 d. These results suggest that A. hookeri in meat from sulfur fed pigs could be a source of natural addition, to increase quality in the food industry.

Sequential use of real-time polymerase chain reaction and enzyme-linked immunosorbent assay techniques verifies adulteration of fermented sausages with chicken meat

  • Objective: Detection of adulteration in processed meats is an important issue for some countries due to substitution of beef with a cheaper source of protein like poultry. In this study, the presence of chicken meat was investigated using real-time polymerase chain reaction (real-time PCR) and enzyme-linked immunosorbent assay (ELISA) techniques to verify adulteration of fermented sausage samples. Methods: A total of 60 commercial samples were collected from 20 establishments in three replicates including 10 fermented sausage manufacturers and 10 butchers to investigate the presence of chicken meat with the sequential use of real-time PCR and ELISA techniques. In addition, pH, moisture content, water activity and color values of the samples were determined. Results: Both real-time PCR and ELISA showed agreement on the presence or absence of chicken meat in 55 out of 60 fermented sausage samples and chicken meat was identified with both methods in 16 samples. Five samples produced inconsistent results for the presence of chicken meat in the first run. Nevertheless, the presence of chicken meat was verified with both methods when these samples were analyzed for the second time. In addition, the average physico-chemical values of the fermented sausage samples tested positive for chicken meat were not significantly different from some of those fermented sausage samples tested negative for the chicken meat. Conclusion: The sequential use of real-time PCR and ELISA techniques in fermented sausages could be beneficial for the government testing programs to eliminate false negatives for detection of adulteration with chicken meat. Furthermore, consumers should not rely on some of the quality cues including color to predict the adulteration of fermented sausages with chicken meat since there were no statistical differences among some of the samples tested positive and negative for chicken meat.

Microbiological Composition and Sensory Characterization Analysis of Fermented Sausage Using Strains Isolated from Korean Fermented Foods

  • This study aimed to analyze the microbiological composition and sensory characterization of fermented sausage using strains isolated from Kimchi (GK1, Pediococcus pentosaceus SMFM2016-GK1; NK3, P. pentosaceus SMFM2016-NK3), Doenjang (D1, Debaryomyces hansenii SMFM2021-D1), and spontaneously fermented sausage (S8, D. hansenii SMFM2021-S8; S6, Penicillium nalgiovense SMFM2021-S6). The control was commercial starter culture. Nine treatments were applied [GD (GK1+D1), GS (GK1+S8), GDS (GK1+D1+S8), ND (NK3+D1), NS (NK3+S8), NDS (NK3+D1+S8), GND (GK1+NK3+D1), GNS (GK1+NK3+S8), and GNDS (GK1+NK3+D1+S8)] by mixing lactic acid bacteria and yeast, and S6 was sprayed. The microbial composition of fermented sausage was analyzed [aerobic bacteria (AC), Lactobacillus spp. (LABC), Staphylococcus spp. (STPC), and yeast and mold (YMC)], and pH and electronic nose and tongue measurements were taken. The AC, LABC, STPC, and YMC values of the control and treatment groups tended to increase during fermentation (p>0.05). The STPC values of the GD, GS, ND, and GDS groups were similar to that of the control on day 3. The pH of the control on day 3 was significantly lower than that of the GD, ND, and GND groups (p<0.05). Higher levels of 4-methylpentanol, 2-furanmethanol, and propyl nonanoate, which provide a "fermented" flavor, were detected in the GD group compared to in the control and other treatment groups. GD and ND groups showed higher umami values than the control and other treatment groups. Therefore, it is expected that GD can be valuable as a starter culture unique to Korea when manufacturing fermented sausage.

Screening of Bacteriocinogenic Lactic Acid Bacteria and Their Antagonistic Effects in Sausage Fermentation

  • Four strains of lactic acid bacteria (LAB), that lower the pH of sausage $\leq$ 4.2 within 24 h of incubation at $37^{\circ}C$, were screened from 57 bacteriocin producing LAB which were isolated from kajamie shikhae and natural fermented sausages. The proteinaceous nature of the bacteriocin was confirmed by losing antimicrobial activity after pronase treatment. Inhibitory activity against pathogens, times of bacteriocin production and sensory tests were compared between 4 isolates and 3 commercial starters. Especially, strain NFS #8-1, screened from natural fermented sausage and identified as Pediococcus acidilactici, antagonized a large number of foodborne pathogens including Listeria monocytogenes, Aeromonas hydrophila, Bacillus cereus, Clostridium perfringens, Salmonella typhimurium and Staphylococcus aureus. Production of bacteriocin by strain NFS #8-1 was early in the growth phase (mid log phase) and its sensory acceptance was high. The feasibility of using strain NFS #8-1 as a starter for the production of microbiologically safe fermented sausage is envisaged.

Effect of acid whey and freeze-dried cranberries on lipid oxidation and fatty acid composition of nitrite-/nitrate-free fermented sausage made from deer meat

  • Objective: This study evaluated the effect of acid whey and freeze-dried cranberries on the physicochemical characteristics, lipid oxidation and fatty acid composition of nitrite-free fermented sausage made from deer meat and pork fat. Antioxidant interactions between acid whey and cranberry compounds were also explored. Methods: Four formulations of fermented venison sausage were prepared: F1 (control), F2 (with 5% liquid acid whey), F3 (with 0.06% of freeze-dried cranberries), and F4 (with 5% liquid acid whey and 0.06% of freeze-dried cranberries). Each sample was analyzed for pH, water activity ($a_w$), heme iron content, 2-thiobarbituric acid reactive substances (TBARS) value and conjugated dienes at the end of the manufacturing process and at 30 and 90 days of refrigerated storage. Fatty acid composition was measured once at the end of the manufacturing process. Results: At the end of ripening, all samples presented statistically different values for a pH range of 4.47 to pH 4.59. The sum of the unsaturated fatty acids was higher, while the conjugated diene and the TBARS values were lower in sausages with freeze-dried cranberries as compared to the control sausage. The highest content of heme iron (21.52 mg/kg) at day 90 was found in the sausage formulation with the addition of freeze-dried cranberries, which suggests that the addition of cranberries stabilized the porphyrin ring of the heme molecule during storage and thereby reduced the release of iron. The use of liquid acid whey in combination with cranberries appears to not be justified in view of the oxidative stability of the obtained products. Effects of Kimchi Powder or Lactobacillus plantarum Added Fermented Sausages on Serum Lipid and Cholesterol Levels in Rats

  • This study was performed to investigate the serum lipid and cholesterol lowering effects of kimchi powder or Lactobacillus plantarum when added to fermented sausage in rats. Male SD (Sprague-Dawley) rats were divided in three groups and administered with the following diets for 6 wk: non-fermented sausage added diets (CON), kimchi fermented sausage added diets (KIM), and Lactobacillus plantarum fermented sausage added diets (PLA). The CON has significantly (p<0.05) higher food intake, body weight gains, and final body weight than the other two groups. The body weight of KIM was significantly (p<0.05) lower than that of the other groups. The weights of organs (heart, lung, liver, kidney, spleen, perirenal adipose tissue, and epididymal adipose tissue) were not affected by any treatments. The mean value of serum triglycerides (TG) concentration in KIM and PLA groups was not significantly different compared with CON. Total cholesterol, low density lipoprotein and high density lipoprotein levels in serum of KIM were significantly (p<0.05) lower than those of CON. The serum free cholesterol level and atherogenic index (AI) in KIM and PLA were significantly (p<0.05) lower than those of CON. In conclusion, dietary supplementations with kimchi powder fermented sausages or L. plantarum fermented sausages were effective for lowering serum lipid, cholesterol levels and atherogenic index in rats.

아질산염과 녹차 추출물의 첨가에 따른 김치 발효 소시지의 미생물 및 이화학적 품질 특성 비교 (Comparison of Microbial and Physico-chemical Quality Characteristics in Kimchi-fermented Sausages with Sodium Nitrite and Green Tea Extract)

  • 본 연구는 김치 발효 소시지(Kimchi-fermented sausage)에서 아질산염과 녹차 추출물이 미생물 및 이화학적 품질 특성에 미치는 효과를 비교하고자 실시하였다. 실험 소시지는 $24^{\circ}C$/RH 89%에서 17시간 동안 발효시킨 후 $10^{\circ}C$/RH 70~80%에서 9일간 건조시켰다. 총균수, 젖산균수 및 pH는 최종 9일째에 각각 8.7 Log CFU/g sausage, 8.1~8.3 Log CFU/g sausage 및 4.35~4.36이었으며, 숙성기간 동안 처리구들간에 차이를 보이지 않았다. 지방산화(TBARS)는 아질산염과 녹차 추출물의 첨가에 의해 억제되었으나, 녹차 추출물 첨가구가 아질산염 첨가구보다 낮은 효과를 보였다. 색깔은 녹차 추출물 첨가구가 숙성기간 동안 대조구(무첨가구) 보다 높은 황색도($b^*$)를 유지하였으나, 아질산염 첨가구의 경우 다른 처리구들보다 높은 적색도($a^*$)와 황색도($b^*$)를 유지하였다. 따라서 녹차 추출물의 첨가에 의해 김치 발효 소시지의 지방산화 안정성이 증가되었으나, 아질산염에 비해 지방산화 안정성 및 색깔 안정성이 낮았다. 하지만 녹차 추출물과 아질산염 모두 젖산균의 생장에 영향을 미치지 못하였다.

자몽 추출물과 김치 추출 유산균을 이용한 발효 소시지 개발에 관한 연구 (Study on Development of Fermented Sausage using Grapefruit Extract and Kimchi Extracted Starter Culture)

  • 본 연구는 발효 소시지의 저장 기간 중 지질 산화를 억제하고, 항산화 활성이 우수하며, 유해 세균의 오염을 방지하기 위해 첨가되는 아질산염을 대체할 수 있는 천연 첨가제로써 자몽 추출물의 활용 가능성을 알아보고자 수행하였으며, 얻어진 결과는 다음과 같다. 자몽 추출물과 김치 유산균을 첨가하여 제조된 발효 소시지에서 우수한 지질 산화 및 유해 세균 억제 효과가 나타났으며, 저장 기간 7일차까지 아질산염과 아스코르빈산을 첨가한 처리구보다 우수한 결과를 나타내었다. 아질산염과 L. acidophilus를 혼합하여 제조된 처리구 A와 아질산염과 김치유산균을 혼합한 처리구 B, 아스코르빈산과 김치 유산균을 혼합한 처리구 C, 그리고 자몽 추출물과 김치 유산균을 혼합한 처리구 D의 제품 특성을 비교한 결과, pH는 처리구 D와 처리구 C에서 가장 낮게 나타났고, 유산균수는 자몽 추출물을 첨가한 처리구 D에서 가장 높았으며, 대장균 출현 억제효과는 아질산염과 L. acidophilus를 혼합한 처리구 A를 제외하고는 모두 시료 g당 100마리 이하로 나타났다. 육색 중 명도의 경우, 처리구 간의 유의차는 인정되지 않았으나, 적색도에서는 처리구 D와 아스코르빈산과 김치 유산균을 첨가한 처리구 C에서 유의적으로 높게 나타났으며, 황색도는 자몽 추출물을 첨가한 처리구 D에서 가장 낮게 나타났다. 조직감의 경우, 자몽 추출물을 첨가한 처리구 D가 다른 처리구에 비해 식감이 우수하였으며, 관능 평가에서는 아스코르빈산을 첨가한 처리구 C와 자몽 추출물이 첨가된 처리구 D에서 우수하게 나타나 자몽 추출물은 발효 소시지를 위한 천연 항산화제로써 활용 가능성이 매우 높았으며, 김치유산균인 L. brevis 또한 발효 과정 중 소시지의 산도를 낮추는데 효과적이며, 저장 기간 동안에도 지속적으로 발효를 유지시켜 유해 세균의 출현 및 성장을 억제하는데 매우 효과적임을 알 수 있었다.

Application of Baechu-Kimchi Powder and GABA-Producing Lactic Acid Bacteria for the Production of Functional Fermented Sausages

  • This study was carried out to determine the physicochemical, microbiological, and quality characteristics of a new type of fermented sausage manufactured by incorporating Baechu-kimchi powder and gamma-aminobutyric acid (GABA)-producing lactic acid bacteria (LAB). The LAB count was at the maximum level by day nine of ripening in inoculated sausages, accompanied by a rapid decrease in the pH. The addition of kimchi powder decreased the lightness ($L^*$) and increased the redness ($a^*$) and, yellowness ($b^*$) values, while also significantly increasing the hardness and chewiness of the sausage (p<0.05). Moreover, although the thiobarbituric acid reactive substances values increased in all samples during the study period, this increase was lower in the kimchi-treated samples, indicating a reduction in lipid oxidation. Overall, our results show that the addition of Baechu-kimchi powder to sausages reduced the off-flavor properties and improved the taste profile of the fermented sausage in sensory evaluations. The GABA content of all fermented sausages increased from 17.42-25.14 mg/kg on the third day of fermentation to 60.95-61.47 mg/kg on the thirtieth day. These results demonstrate that Baechu-kimchi powder and GABA-producing LAB could be functional materials in fermented sausage to improve quality characteristics.

Effect of natural pre-converted nitrite sources on color development in raw and cooked pork sausage

  • Objective: The effect of pre-converted nitrites from natural sources (spinach, lettuce, celery, and red beet) on color development in raw and cooked pork sausage was investigated in this study. Methods: The pork sausage was manufactured with six treatments: NC (negative control, nitrite free), PC (positive control, 150 ppm sodium nitrite), FS (3.0% fermented spinach extracts), FL (3.0% fermented lettuce extracts), FC (3.0% fermented celery extracts), and FR (3.0% fermented red beet extracts). Results: The pH value of the pre-converted nitrites groups was lower than those treated with 150 ppm sodium nitrite (p<0.05). The color values of raw and cooked pork sausage added with pre-converted nitrite showed slightly lower and/or similar lightness, lower redness, and higher yellowness values than PC. Color development (redness values) of cooked samples added with FS was higher than those of the NC and other treatments (FL, FC, and FR). Additionally, treatments with FS and FL were most effective for reducing thiobarbituric acid reactive substances and volatile basic nitrogen than the NC. Conclusion: Effects of natural nitrites from fermented vegetables on shelf stability of raw and cooked pork sausages were investigated. Fermented spinach extract was much more useful for maintaining the color development, but also inhibiting lipid and protein oxidation of cooked pork sausage. Therefore, pre-converted nitrite from spinach as a natural nitrite could be used as another natural nitrite source for making processed meat products.
