충북지역 사업체 급식소의 운영형태에 따른 고객 만족도 비교 (Comparison of Customer Satisfaction by Operation Types of Business Foodservice in Chungbuk Province)

  • In this study, the current status of the business foodservice industry, evaluation of leftover food and customer satisfaction with foodservice at direct operation and consignment foodservice businesses in Chungbuk were examined. This study has managerial implications in terms of improving the quality and effectiveness of the business operation of the foodservice industry. The sample size of this study included 800 customers who use foodservices provided by 11 selected businesses including 6 direct operation and 5 consignment foodservice businesses. From these 800 customers, a total of 692 were used (direct operation foodservice (n=361) and consignment foodservice (n=331) businesses). The results were as follows; First, as for the main reasons for using the employee restaurants in types of direct operation and consignment foodservice business, 'the close location' had the high percentage. Approximately 41% of respondents were not satisfied with the foodservice in the employee restaurants. Second, leftover food from consignment foodservices was higher than that for direct operation foodservices. Third, there were significant differences in customer satisfaction with five areas of foodservice between the two types of food service businesses: food, sanitation, feeding environment, mealing process and information and service. Customer satisfaction in the direct operation foodservice was higher than that of the consignment foodservice. In terms of the satisfaction level of foodservices, mealing process was the highest, followed by sanitation, food, and information and service in the direct operation and consignment foodservice businesses. Overall, satisfaction with the business foodservice was affected by the customers' satisfaction in five areas of foodservices (e.g., food, sanitation, feeding environment, mealing process, information and service). Especially, 'food' and 'information and service' were important areas for determining overall customer satisfaction with foodservice. In addition, the overall satisfaction was negatively correlated with the quantity of leftover food in the direct operation and consignment foodservice business.

강릉지역 고등학교 도시락 급식에 있어서의 영양적 품질 평가 (An Evaluation of the Nutritional Quality of Packaged Meal(Dosirak) Feeding of Adolescent Males in Kangnung)

  • This study was carried out to evaluate nutritional quality of the dosirak severed by 3 Dosirak manufacturing establishment in Kangnung. The subjects of this study came from 3 different male high schools in Kangnung. The portion amounts of Dosirak were weighed and the food intake was measured by substracting the leftover from the averaged portion amount. The leftover was measured by a modified aggregate selection plate waste measurement technique. The nutrient intakes were analyzed by a computer aided nutritional analysis program for professionals(CAN pro). The menu of the dosirak was too simple. The total amount of Dosirak was 714g and the percent of plate waste was 714g and the percent of plate waste was 7.2%. The male high school students were taking adequate energy, but the nutrients which did not meet 75% of the 1/3RDA(Recommended Dietary Allowances) were Ca, Fe, and vitamin B$_2$.

Effects of Feeding Dried Leftover Food on Growth and Body Composition of Broiler Chicks

  • This study was conducted to investigate the effects of feeding dried leftover food (DLF) on growth, body composition and feed conversion of broiler chicks. One hundred ninety-six of one-day old Ross broiler chicks were assigned to 7 treatments in a completely randomized design. Each treatment had four replications with seven chicks per replication. The treatments groups included control without DLF, dietary 10% level of DLF, dietary 20% level of DLF and dietary 30% level of DLF, 5% higher protein level of diet containing 10% DLF, 10% higher protein level of diet containing 20% DLF and 15% higher protein level of diet containing 30% DLF than control diet. Body weight gain was slightly higher in control group than that of DLF-fed groups. However, there were no significant differences in body weight gain among those groups fed diets containing different levels of DLF. In general, increasing dietary level of DLF resulted in decreasing feed conversion. Content of crude protein in whole broiler body was slightly higher in control group although any significant difference was not found among treatments (p>0.05). Content of crude fat in whole broiler body was lowest in groups fed diets containing 30% DLF with 15% higher protein level than control diet, showing significant difference from groups fed diets containing 20% DLF (p<0.05). Contents of total cholesterol, free cholesterol, cholesterol ester and LDL- cholesterol in blood of broilers fed DLF-containing diets generally appeared to be higher compared with control group without significant difference (p>0.05). Fatty acid contents in broiler meat were higher in the order of oleic acid, palmitic acid and linoleic acid without significant differences among treatments. Content of DHA in broiler meat was higher in groups fed diets containing DLF than that of control group although there were no significant differences among treatments (p>0.05).

Effects of Feeding Dried Leftover Food on Productivity of Laying Hens

  • This experiment was conducted to investigate the effects of different levels of dried leftover food (DLF) in the diet on feed utilization and egg-laying performance of hens. One hundred sixty-eight, 18 week old Tetra brown commercial layers, were assigned to 7 treatments in a completely randomized design. Each treatment has four replications per treatment with six animals per replication. All the experimental animals were fed diets for 7 weeks. The treatments included 1) control group without DLF, 2) diet with 10% DLF, 3) diet with 20% DLF, 4) diet with 30% DLF, 5) 10% higher protein level of diet with 10% DLF, 6) 20% higher protein level of diet with 20% DLF and 7) 30% higher protein level of diet with 30% DLF. Average daily feed intake (ADFI) tended to be improved with DLF feeding. ADFI of group fed diets with 20% was significantly higher than that of control (p<0.05). Feed conversions of DLFfed groups were higher than that of control. Egg production tended to be higher in groups fed diets with 10% DLF than control diet without significant differences (p>0.05). However, those of groups fed diets containing 20 and 30% DLF were lower than that of control. Supplementing protein source to DLF-containing diets improved egg production (p<0.05). Increasing level of DLF in the diet for layer decreased egg weight and egg mass compared to control without significant differences (p>0.05). Protein supplementation to DLF-containing diets increased egg mass without significant difference (p>0.05). The range of egg cholesterol concentration of DLF-fed groups was 11.94-14.10 mg/g while that of control group was 12.31 mg/g although there was no significant difference among treatments (p>0.05).

Clostridium perfringens 감염에 의한 한우 집단 폐사 증례 (Mass mortality of Clostridium perfringens infection in Hanwoo)

  • This is a case report that 24 heads of cattle suddenly died without clinical signs in a Hanwoo farm. The cause of death was Clostridium perfringens enterotoxemia resulted from them with feeding leftover food. The clinical signs were observed just before the death; increase of heart rate, shallow and rapid respiration, amyostasia, spasm and so forth. In autopsy, blood coagulation disorder, a little abdominal inflation, hepatomegaly and different size of red spots, congestion hemorrhage and undercurrent of bloody exudation were observed in the entire parts of small and large intestines. C. perfringens were isolated from the substantive organs, and a unique fragment of 405bp C. perfringens was amplified by PCR. Therefore, this case was diagnosed as enterotoxemia caused by ${\alpha}$-toxin of C. perfringens A type.

사업체 집단급식소 근로자의 지방산 섭취 조사 연구 (Dietary Fatty Acid Intakes of Employees in Employee Feeding Operations)

  • This study was carried out to evaluate the fatty acid intakes of employees in employee feeding operations in Seoul and to provide prudent dietary guidelines with special concern on dietary fat. Four establishments were selected in large scale group and other four were selected as small scale group according to feeding numbers and food cost. Food intake was measured by substracting the leftover from the averaged portion amount. The leftover was measured by the modified aggregate selection plate waste measurement technique. The results were as follows : Employees from the large scale institution consumed more energy, protein, carbohydrate and niacin compared to those from the small scale institution(p<0.05). The mean calorie compositions of carbohydrate, protein and fat of all subjects were 66.7, 16.4 and 16.9%. The mean fat intake was 12.1g/lunch. Linoleic acid(C18:2 $\omega$6, 3.67g) was the most abundant fatty acid contained in the diet, followed by oleic acid (C18:1 $\omega$9, 3.53g) and palmitic acid(C16:0, 1.83g). The subjects consumed 5.2g polyunsaturated fatty acids(PUFA), 4.6g monounsaturated fatty acid(MUFA), 3.2g saturated fatty acid(SFA) per lunch per person. The average ratios of P/M/S and $\omega$6/$\omega$3 fatty acids were 1.6/1.5/1.0 and 8.5/1/0., respectively. the dietary $\omega$3 fatty acid status can be improved, even though the ratios found belong to the desirable range, by including $\omega$3 fatty acid rich-foods such as bean products and seafoods more frequently in the diet. Caution is needed for higher unsaturated nature of $\omega$3 series fatty acids to be prevented from peroxidation.

Herbivory effects and growth rate of invasive species, Pomacea canaliculata on different macrophytes species

  • Wetland ecosystems act as natural freshwater purification systems, but their rich biodiversity is being threatened with the introduction of the non-native freshwater snail, Pomacea canaliculata. This study was conducted to measure the herbivory effects and growth rate of P. canaliculata on common macrophytes: Ipomoea aquatica, Ipomoea batatas, Pandanus amaryllifolius and Cucurma longa. In separate experiments, the macrophyte species were served as the snails' food as individual species and simultaneously. In the individual treatment, the growth pattern and rate were based on the snails' weight (mg/snail/day; n = 9) while the individual feeding consumption (mg/snail/day) was calculated from the leftover food. In the simultaneous treatment, the herbivory effects were evaluated as the feeding preference (%) from observations every two hours, while the total feeding consumption (mg) was calculated based on the food remaining after a 12-hour experiment (3 replicates: total n = 27). The results indicated that the growth pattern was significant for snails grazing on I. aquatica but not when other macrophyte species were eaten. The individual feeding consumption was higher when using I. aquatica than P. amaryllifolius but the growth rate for snails grazing on I. aquatica and P. amaryllifolius did not differ significantly. Meanwhile, the consumption of C. longa deterred the snails' growth rate. Although the snails consumed all the macrophytes in the individual experiment, when given the species simultaneously, the feeding preference and total feeding consumption were directed significantly more toward I. aquatica than P. amaryfollius and C. longa. We conclude that P. canaliculata is a generalist feeder given a limited choice of food but tends to show a strong feeding preference after being introduced to more food choices. These findings indicate that the introduction of P. canaliculata into wetland ecosystems may increase the herbivory effects on macrophytes, making these ecosystems vulnerable to the impact of eutrophication and biodiversity reduction.

펫푸드 테린의 가공방법에 따른 반려견의 선호도 조사 (Canine Preferences for Pet Food Terrine Based on the Processing Method)

  • This study aimed to evaluate the differences in canine preferences for pet food terrine according to the processing method. As companion dogs, three male Spitz canines (average age 12 years, average weight 7 kg) and three male Spitz mix canines (average age 12 years, average weight 5 kg) were used in Experiment 1, whereas five male (average age 10 years, average weight 9 kg) and five female Shetland Sheepdogs (Sheltie, average age 10 years, average weight 8 kg) were used in Experiment 2, to evaluate their preferences and intake types. In both experiments, all dog categories mostly preferred 'meat' when it came to their first choice of food consumed, followed by 'vegetables', 'mixed eating', and 'vegetable leftover' last. This confirms means that canines are carnivores, and over time, choosing 'vegetables' or 'vegetable leftovers' as a secondary or alternate food source can be considered a natural process. When provided various terrines, canines in both experiments first ingested 'cooked' rather than 'freeze-dried' duck, chicken, beef, and pork terrines when selecting food at the start of feeding. For both experiments, most of the intake types using duck, chicken, beef, and pork terrine showed a preference for 'after consuming cooked terrine first and then intake freeze-dried' item. In conclusion, the reason for preferring cooked terrine can be attributed to the difference in the preparation cooking method of freeze-dried cooked terrine.

건조 남은음식물 급여가 육성돈과 비육돈의 생산성에 미치는 효과 (Effects of Feeding Dried Leftover Food on Productivity of Growing and Finishing Pigs)

  • 육성돈 시험은 평균체중이 약 22 kg 내외인 3원교잡종 ($Yorkshire{\times}Landrace{\times}Duroc$) 75두를 공시하여, 건조 남은음식물 무첨가구 (Control), 25%, 50% 첨가구와 사료내 단백질 함량을 10% 보강한 건조 남은음식물 25% 첨가구 및 단백질 함량을 20% 보강한 건조 남은음식물 50% 첨가구 등 총 5개 처리구로 하여 60일간 사양시험을 실시하였다. 육성돈의 일당증체량은 대조구가 모든 처리구중에서 가장 높았으나 건조 남은음식물 25% 첨가구와는 차이가 없었다 (P>0.05). 사료섭취량은 건조 남은음식물 첨가구가 대조구에 비해 다소 낮았으나 큰 차이는 없었고, 건조 남은음식물 첨가구중에서는 단백질을 20% 보강한 건조 남은음식물 50% 첨가구의 사료섭취량이 유의적으로 높았다 (P<0.05). 사료요구율은 처리간에 유의적인 차이는 없었으나, 건조 남은음식물 25% 첨가구가 다소 개선되는 경향이었다. 비육돈 시험은 평균체중이 약 70 kg 내외인 3원교잡종 ($Yorkshire{\times}Landrace{\times}Duroc$) 75두를 공시하여 49일간 사양시험을 실시하였으며, 처리내용은 육성돈의 시험과 같다. 비육돈의 일당증체량은 대조구에 비해 건조 남은음식물 첨가구가 유의적으로 낮았으나 단백질을 10% 보강한 건조 남은음식물 25% 첨가구는 대조구와 차이가 없었다 (P>0.05). 사료섭취량은 대조구에 비해 건조 남은음식물 첨가구가 유의적으로 감소하였으나 단백질을 보강한 건조 남은음식물 첨가구는 대조구와 차이가 없었다 (P>0.05). 사료요구율은 단백질 함량을 10% 보강한 건조 남은음식물25% 첨가구가 가장 낮았으나 대조구와는 차이가 없었고, 50%첨가구는 유의적으로 높았다 (P<0.05). 도체중은 건조 남은음식물의 첨가수준이 증가할수록 낮아지는 경향이었으며, 도체율, 등지방두께 및 도체등급은 처리간에 차이가 없었다. 비육돈의 1 kg 증체당 사료비는 단백질 함량을 10% 보강한 건조 남은음식물 25% 첨가구가 가장 적게 소요되었다.

무상급식 전환에 따른 광주지역 중학생과 영양(교)사의 학교급식에 대한 인식 (Perceptions of school meal services of middle school students and dieticians/dietetic teachers in Gwangju area according to the conversion of free meal services)

  • 본 연구는 무상급식 전환을 경험한 광주지역 중학생과 학교에서 근무하는 영양(교)사를 대상으로 하여 무상급식 전환에 따른 학교급식의 만족도와 인식을 조사하였으며 그 주요 내용은 다음과 같다. 학생들의 급식만족도는 무상급식으로 전환된 후에도 높은 편 (53.8%)이었는데 급식 만족도는 여학생이 남학생 보다 유의하게 높았다 (p < 0.001). 학생들의 불만족의 이유는 배식량의 감소 (35.2%)였으며, 만족의 이유는 경제적 이유 (50.0%)가 가장 높았다. 무상급식 전과 비교하여 전체 학생의 69.9%는 학교급식 만족도에서 변화가 없다고 하였는데, 성별 간의 유의적인 차이가 있었다. (p < 0.05). 전체 중학생의 80.2%는 식단의 변화가 없다고 하였고, 70.6%는 기호도가 높은 음식의 빈도가 변하지 않았다고 하였으며, 64.0%는 잔반의 양이 변하지 않았다고 하여, 유상급식에 비해 학교급식의 만족도에서 큰 차이를 느끼지 못하고 있었다. 무상급식 전환에 따른 학생들의 학교급식 만족도에 있어 영양(교)사의 85.7%는 학생들의 만족도가 차이가 없다고 인지하여 중학생보다 다소 높은 수준이었다. 또한 영양(교)사는 학생들의 불만족 이유에 대해 66.7%가 급식 양의 부족이라고 하였고, 만족의 이유로는 79.5%가 식재료의 질적 향상이라고 답하여, 학생들의 만족 이유와는 다소 다른 인식이었다. 무상급식으로의 전환에 따른 식단에 대해 영양(교)사의 40.5%는 변화가 있다고 하였는데, 식품비의 상승이 가장 큰 원인이었다. 영양(교)사들은 59.5%는 기호도가 높은 음식의 횟수에 대해 변화가 없다고 하였고, 식재료의 질적 변화에 있어 채소의 종류가 증가하였으며, 95.2%의 영양(교)사는 학생의 잔반량이 변하지 않았다고 인지하였다. 영양(교)사들은 무상급식 전환에 따른 급식 업무에 있어 식단을 작성 할 때 식재료의 구매 및 비용 (26.2%)에 의해 제약을 받으며, 식단 선택 시 급식비 (45.2%)를 우선 고려하였다. 무상급식 전환에 따라 달라진 업무의 내용은 사무관리 (26.2%), 조리법 연구 및 개발 (19.0%)이었다. 본 연구의 결과, 학생과 영양(교)사가 인식하는 학교급식의 만족도는 무상급식 전에 비해 크게 변하지 않았다. 또한 학생과 영양(교)사 모두 식단과 선호도가 높은 음식 및 잔반에 있어 큰 변화를 인지하지 못하였다. 다만 영양(교)사는 무상급식에 따라 사무관리 업무량이 변화하였다고 하였고 급식비에 의해 식단선택이 제한되며, 질적 변화를 가져온다고 한 바, 위의 결과를 토대로 급식환경을 포함한 다양한 요인들이 중학생들의 학교급식 만족도에 미치는 영향을 밝힐 추후 연구가 필요할 것이다.
