Effect of Scoria, Quartz Porphyry and Oak Charcoal Powder Feeding on the Meat Quantity and Quality of Fattening Cross Bred Hanwoo Bulls (점토광물 급여가 한우교잡우의 산육능력 및 육질에 미치는 영향)

  • This study was conducted to investigate the effects of Scoria, Quartz porphyry and Oak charcoal powder feeding by 1% level of concentrate on the fattening cross bred bulls(5/8 Korean Native Cattle, 2/8 Charolais, 1/8 Brahman germ plasma) Feeding trial was conducted with 4 treatment groups which were T1(Full feeding of concentrate and roughage for 12 months), T2(T1 and Scoria addition), T3(T1 and Quartz porphyry addition) and T4(Oak charcoal addition) for 360 days, consisting of 32 heads whose initially weights were about 299.7kg. The results obtained are summarized as follows; 1. During the over-all period, average daily gains by T3, T4, T2 and T1 were 1.024, 0.987, 0.977kg and 0.964, respectively, without a significant difference by treatments. 2. Concentrate intakes per body weight and TDN intakes required per unit of kilogram gain were lower in addition agent groups than in control, and in all the treatments feed efficiency was higher at early stage for 360 fattening day than at end stage. 3. Carcass weight, dressing percent, back-fat thickness and loin eye muscle area by treatments were 330.9 to 348.4kg(average 340.3kg), 55.2~56.2(average 55.8%), 0.41~0.55(average 0.46cm)and 76.0~80.9$\textrm{cm}^2$(average 77.6$\textrm{cm}^2$), respectively, and were improved in addition agent groups than in control. 4. Meat quality grade is higher in addition agent groups than in control, and heads of 1st grade by treatments was 3, 2, 1 and none in T4, T2, T3 and T1, respectively. 5. Incidence heads of diseases by treatment were not apparently different, but diseases of digestive system was decreased in addition agent groups than in control. 6. The nitrate nitrogen content of fattening bull dung which collected in rectum were 0.082~0.089% (average 0.084%), and the content in addition agent groups was smaller than in controll. 7. Income was higher in order of T4, T3, T2, and T1 and incomes of treatment groups were grater than that of control group by 21.4 to 33.5 percent. According to the above results it may be concluded that fattening bulls may be required to feed no more than 1% of Scoria, Quartz porphyry and Oak charcoal powder based on the concentrate feeding level during the fattening period(12 to 24 month of age) to produce high quality meat and increase income.

Effect of fattening period on growth performance, carcass characteristics, and economic traits of Holstein steers

  • This study was conducted to investigate the effect of different fattening periods on the growth performance, carcass characteristics, and economic traits of Holstein steers. Sixty Holstein steers (8.0 ± 0.28 months old) with an average body weight (BW) of 231.88 ± 2.61 kg, were randomly allocated to five different fattening period treatments: 20, 21, 22, 23, and 24 months (n = 12 in each treatment group). Final BW and average daily gain (ADG) did not differ among the treatment groups during the early fattening period. At the late stage of the fattening period, the final BW of steers in the 24-month treatment group (812.84 kg) was greater (p < 0.05) than that of steers in the 20-month treatment group (750.39 kg). During the same period, steers in the 20- and 21-month treatment groups had a significantly higher (p < 0.05) ADG than those in the 22-month treatment group. The highest ADG (1.36 kg/day) was found in the 20-month treatment group (1.36), followed by the 21- (1.33 kg/day), 22- (1.22 kg/day), 23- (1.21 kg/day), and 24- (1.14 kg/day) month treatment groups. The feed conversion ratio (FCR) increased as the fattening period increased, and the FCR was 12.88% lower in the 20-month treatment group than in the 24-month treatment group. However, no significant differences were detected in back-fat thickness, loin area, marbling score, and chemical characteristics (water, crude protein, and crude fat content) among the treatment groups. The composition of fatty acids including C18:0, C18:1, saturated fatty acids, unsaturated fatty acids, and poly-unsaturated fatty acids did not differ among the experimental groups. As the fattening period increased, production costs increased, resulting in a decrease in gross income. The gross income for steers in the 24-month treatment group was 35.8% and 23.5% lower than that for steers in the 20- and 21-month treatment groups, respectively. Taken together, the best performance, including the ADG, FCR, and gross income, was obtained when the fattening program of the Holstein steers lasted 20 months.

  • Focusing high marble deposition, Hanwoo feedlot system uses high-energy diet over the prolonged fattening period. However, due to the individual genetic variation, around 40% of them are graded into inferior quality grades (QG), despite they utilized the same resources. Therefore, focusing on development of a nutrigenomic based precision management model, this study was to evaluated the response to the divergent selection on genetic merit for marbling score (MS), under different dietary total digestible nutrient (TDN) levels. Total of 111 calves were genotyped and initially grouped according to estimated breeding value (high and low) for marbling score (MS-EBV). Subsequently, managed under two levels of feed TDN%, over the calf period, early, middle, and final fattening periods following 2 × 2 factorial arrangement. Carcasses were evaluated for MS, Back fat thickness (BFT) and Korean beef quality grading standard. As the direct response to the selection was significant, the results confirmed the importance of initial genetic grouping of Hanwoo steers for MS-EBV. However, dietary TDN level did not show an effect (p > 0.05) on the MS. Furthermore, no genetic-by-nutrition interaction for MS (p > 0.05) was also observed. The present results showed no correlation response on BFT (p > 0.05), which indicates that the selection based on MS-EBV can be used to enhance the MS without undesirable effect on BFT. Ultimate turnover of the Hanwoo feedlot operation is primarily determined by the QGs. The present model shows that the initial grouping for MS-EBV increased the proportion of carcasses graded for higher QGs (QG1++ and QG1+) by approximately 20%. Moreover, there appear to be a potential to increase the proportion of QG 1++ animals among the high-genetic group by further increasing the dietary energy content. Overall, this precision management strategy suggests the importance of adopting an MS based initial genetic grouping system for Hanwoo steers with a subsequent divergent management based on dietary energy level.

Intramuscular fat formation in fetuses and the effect of increased protein intake during pregnancy in Hanwoo cattle

  • Understanding adipocyte development in fetus during bovine pregnancy is important for strengthening fattening technology. Additionally, nutritional level of dams during pregnancy has the potential to improve offspring growth and fat development. The purpose of this study is to evaluate the intramuscular adipocyte development and expression level of related genes in bovine fetus, and the effect of increased crude protein (CP) intake during pregnancy on the growth performance and carcass characteristics of male offspring. Eighty six pregnant Hanwoo cows (average body weight, 551.5 ± 51.3 kg, age 5.29 ± 0.61 y) were used. Fetuses were collected at 90, 180 and 270 d of gestation from 18 pregnant Hanwoo cows. The remaining 68 pregnant cows were randomly assigned to 2 feeding groups. The control (CON) group was provided the standard protein diet (n = 34), and treatment (TRT) group was provided a diet with a 5% increase in CP intake (n = 34). Male offspring were divided into two groups according to protein treatment of the pregnant cows: CON male offspring (CON-O) and TRT male offspring (TRT-O). Intramuscular adipocytes were found in the fetal skeletal muscle after 180 days of gestation. Male calf's birth weight increased in the TRT group compared to that in the CON group (p < 0.002). The final body weight (p < 0.003) and average daily gain (p < 0.019) of male offspring were significantly higher in TRT-O than in CON-O. The feed conversion ratio was also improved by 10.5% in TRT-O compared to that in CON-O (p < 0.026). Carcass weight was significantly higher in the TRT-O group than that in the CON-O group (p < 0.003), and back fat was thicker in the TRT-O group (p = 0.07). The gross receipts and net income were higher in TRT-O than in CON-O (p < 0.04). Thus, fetal intramuscular fat can be formed from the mid-gestation period, and increased CP intake during pregnancy can increase net income by improving the growth and carcass weight of male offspring rather than intramuscular fat.

  • 1. Objectives and Methods The original insect of $Q\'{\i}C\'{a}o$ is described as the larvae of Holotrichia diomphalia Bates (Scarabaeidae) in oriental medicine literatures. Traditionally $Q\'{\i}C\'{a}o$ inhabit on rotting wood, compost, and organic debris of soil or thatched roofs. They have the very important distinguishing mark that wriggle along on their back through rotting wood, compost etc. and they never do inflict the living crops. but, Holotrichia diomphalia Bates as the $Q\'{\i}C\'{a}o$ is not right because of many questions, such as Holotrichia are the harmful insects eat into farm products, and those don't match well with korean farmers' moods if their cultivated lands are turned over for collecting $Q\'{\i}C\'{a}o$ larvae, and especially they don't go on using their back. 2. Results and Conclusions Accordingly, in the conclusion of this subject it is reported that the original insect of $Q\'{\i}C\'{a}o$ is the larvae of Korean Cetoniidae(Coleoptera; Scarabaeoidea) insects including Genus Protaetia Burmeister(Protaetia orientalis submarmorea Burmeister, P.brevitarsis seulensis Kolbe, etc.) and the larvae of Korean Cetoniinae insects. Also, those were the original larvae of $Q\'{\i}C\'{a}o$ that were applied to not only 'DongEuiBoGam' but also 'Dongyi Suse Bowon prescriptions'. Those feed on rotting wood, compost, and organic debris of soil or thatched roofs.

  • This study developed a method to minimize rice damages and enhance timely control by accurately classifying Whitebacked Planthopper (WBPH). The body size of the 1st-3rd instar was 1.5-2 mm, and the body size of the 4-5 instar was 2.5-3.5 mm. In the third instar, the ratio of the front wing bud and the back wing-bud was 1:1. The fourth instar occupied 3/4 of the front wing-bud, and the 5th instar showed that the front wing-bud covers the back wing-bud. It was confirmed that the 1st instar does not have a sensory plate, the 2nd instar has 2-3, the 3rd instar has 4-5, the 4th instar has 6-9, the 5th instar has 10-15, and the adult instar has 15-20 sensory plates. The female spawning organs were reddish when the spawning horn was inserted. WBPH showed that the larvae of 2-3 larvae most actively feed on rice, and the damaged area was the stem of rice near the ground. In addition, a partial black wound was observed after the feeding. WBPH-susceptible 'Chucheong' was yellowish, and early growth was slower than that of 'Cheongcheong', which was resistant; moreover, a difference between susceptibility and resistance was observed. The identification of the number of such wounds in the bioassay will be a better basis for understanding the difference in susceptibility between WBPH strains and cultivars. These results will be used as basic data for cultivating the WBPH-resistant varieties of rice.

Reduction of slaughter age of Hanwoo steers by early genotyping based on meat yield index

  • Objective: This study was conducted to determine early hereditary endowment to establish a short-term feeding program. Methods: Hanwoo steers (n = 140) were equally distributed into four groups (35/group) based on genetic meat yield index (MYI) viz. the greatest, great, low, and the lowest at Jukam Hanwoo farm, Goheung. All animals were fed in group pens (5 animals/pen) with similar feed depending on the growth stage. Rice straw was provided ad libitum, whereas concentrate was fed at 5.71 kg during the growing period (6 to 13 mo) and 9.4 kg during the fattening period (13 to 28 mo). Body weight (BW) was measured at two-month intervals, whereas carcass weight was determined at slaughtering at about 31 months of age. The Affymetrix Bovine Axiom Array 640K single nucleotide polymorphism (SNP) chip was used to determine the meat quantity-related gene in the blood. Results: After 6 months, the highest (p<0.05) BW was observed in the greatest MYI group (190.77 kg) and the lowest (p<0.05) in the lowest MYI group (173.51 kg). The great MYI group also showed significantly (p<0.05) higher BW than the lowest MYI group. After 16 and 24 months, the greatest MYI group had the highest BW gain (p<0.05) and were therefore slaughtered the earliest. Carcass weight was significantly (p<0.05) higher in the greatest and the great MYI groups followed by the low and the lowest MYI groups. Back-fat thickness in the greatest MYI group was highly correlated to carcass weight and marbling score. The SNP array analysis identified the carcass-weight related gene BTB-01280026 with an additive effect. The steers with the allele increasing carcass weight had heavier slaughter weight of about 12 kg. Conclusion: Genetic MYI is a potential tool for calf selection, which will reduce the slaughter age while simultaneously increasing carcass weight, back-fat thickness, and marbling score.

Growth, Behavior, and Carcass Traits of Fattening Hanwoo (Korean Native Cattle) Steers Managed in Different Group Sizes

  • This study was conducted to evaluate growth, behavior and carcass traits of fattening Hanwoo (Korean native cattle) steers managed in different group sizes. A total of 48 animals, 6 months of age, were allocated to one of three group sizes and the experiment was conducted from 12 to 30 months of age. Groups were balanced for weight and the group sizes consisted of 4, 8, or 12 steers which were named 4sG, 8sG and 12sG, respectively. When animals were 12 months of age, initial fasted body weight (BW, $304.51{\pm}12.40\;kg$) was measured. All animals were housed at a constant space allowance of $8.82\;m^2$ per animal, and a feeder and drinker were provided per 4 animals. The whole fattening stage was divided into three phases: phase I (from 12 to 18 month of age), phase II (from 19 to 24 month of age), and phase III (from 25 to 30 month of age). Steers managed in 12sG showed low (p<0.05) growth rate and feed conversion rate (FCR) in phase I and phase II when compared to other treatment groups. However, this difference was not observed for the whole fattening phase (p>0.05). Steers managed in 4sG had a thick (p<0.05) ultrasound back fat thickness at 15 and 18 months of age. However, group size had no effect on meat yield and quality traits of area and marbling score. Animals managed in 8sG yielded a better meat grade of "A" than the "B" grade in other treatment group sizes. Lean color, fat color, firmness and maturity scores did not differ among group sizes. Hanwoo steers housed under 12sG spent less time on eating concentrate, relevant higher eating rate, less frequency of allogrooming, and more time on walking (p<0.05). It could be concluded that a large group size retarded growth rate and back fat thickness in the fattening stage, which was mainly focused on 15 and 18 months of age.

Effect of Reduction in Sialic acid on Solubility of Non Fat Dry Milk Protein Isolates (Sialie acid의 감소가 탈지분유의 단백 용해도에 미치는 영향)

  • The milk protein portion contains sialic acid which may be used as an index for k-casein. In comparison with non fat dry milk (NFDM) and calcium caseinate, the solubility of NFDM protein isolates at the various pH was inferior. Another consideration for the low solubility relates to the possibility that k-casein may have been extracted or possibly modified by the action of alcohol. The k-casein is the principal stabilizing fraction for casein micelle and any changes which result in its destruction or removal would be expected to have potent results. During solvent treatment, 16.5% of sialic acid was extracted in the first extraction solvent, whereas the second treatment caused only a 4.0% loss, based on sialic acid analysis. A study was conducted on the effect of concentration of methanol on loss of sialic acid. The loss of sialic acid decreased as the concentration of methanol increased to above 62% in both the first and second extracted solvent. It appears that loss of sialic acid is attributed to the water fraction rather than the methanol fraction. The effect of addition of the dried extracted solids on solubility was investigated. Protein solubility of NFDM protein isolates was sharply increased by 10% addition of the extracted solids and, thereafter, decreased. Efforts to restore solubility by feeding-back the extracted material supported the concept that removal of surface k-casein may have been a possible factor.
