염건숭어알의 가공과 저장중 당지질의 지방산 함량변화 (Fatty Acid Changes of Glycolipids during Processing and in Storage of the Salted and Dried Mullet Roe)

  • 염건 숭어알은 전통적인 방법으로 제조하였다. 제조 조건들은 10%염농도의 간장에 염지하고 두께 1.2cm 정도로 압착하여 70% 습도에서 3m/sec의 풍속 및 $20^{\circ}C$에서 음건하였다. 가공돠 저장기간의 유리 및 결합지질을 분리하여 다시 중성, 당 및 인지질로 분획하였다. 주요구성 지방산은 $C_{16:0},\;C_{18:0},C_{18:1}과\;C_{18:2}$이며 합계량이 7.71mg/100mg 으로 당지질의 77% 정도 점유하였다. 불포화도는 결합당지질은 2.09로 유리당지질의 0.92와 차이가 많았다. 다가불포화 지방산비는 0.10-0.78로 낮았으며 필수지방산함량은 결합당지질의 신선어란 4.23mg/100mg에서 저장 9주째는 거의 소멸되었다.

리기다소나무재(材)의 유기용매(有機溶媒) 추출물(抽出物)과 그 tall oil 간의 조성(組成)의 차이(差異) (Difference of the Chemical Compositions Between Petroleum Ether Extract and its Tall Oil in Pitch Pine, Pinus Rigida Mill)

  • 본(本) 실험(實驗)은 리기다소나무(Pinus rigida Mill)를 petroleum ether로 추출(抽出)한 추출액(抽出被)과 흑액(黑液)으로부터 얻은 tall oil과의 조성(組成)의 변화(變化)를 조사(調査)하기 위하여 실시(實施)하였다. 생재(生材)의 유기용매(有機溶媒) 추출액(抽出液)과 tall oil 을 DEAE-Sephadex 칼럼과 aluminum oxide 칼럼을 사용하여 수지산(樹脂酸)과 지방산(脂肪酸)으로 분리(分離)한 후 이를 개스크로마토 그래프로 분석(分析)하였다. 본(本) 실험(實驗)에서 얻는 결과(結果)는 다음과 같다. 생재(生材)의 유기용매(有機溶媒) 추출액(抽出液힘)과 tail oil은 주로 수지산(樹脂酸)으로 구성(構成)되어 있고 특히 abietic-type acide의 함량(含量)이 매우 높게 나타났으며, tall oil의 조성(組成)은 생재(生材)의 유기용매(有機溶媒) 추출물(抽出物)에 비(比)해 지방산(脂肪酸)의 함량(含量)이 증가(增加)한 반면 수지산(樹脂酸)은 감소(減少)하였고, 증해시(蒸解時) 고온(高溫)과 증해약품(蒸解藥品)에 의하여 불포화(不飽和) 지방산(脂肪酸)의 이중결합(二重結合) 위치(位置)의 변화(變化) 및 이성질화(異性質化)에 의하여 미확인(未確認) 물질(物質)의 양(量)이 증가(增加)하였다.

조리방법에 따른 삼치(Scomberomorus niphonius)의 식품 영양성분 변화 (Changes of Nutritional Components in Spanish Mackerel Scomberomorus niphonius by Various Cooking Methods)

  • The changes in the proximate compositions, lipid classes, and fatty acids of muscle and dripped lipids, and the amino acid compositions and mineral content were studied in Spanish mackerel Scomberomorus niphonius muscle cooked using a frying pan, oven, and microwave oven. The moisture content was high in the raw sample (65.7%) and decreased with cooking, decreasing the most with frying pan method (54.5%). Conversely, the protein, lipid and ash contents increased significantly with cooking (P<0.05). The dripped lipid content from the cooked muscles was the highest with the frying pan sample (0.81%) and was approximately half this level in the oven (0.46%) and microwave oven (0.34%) samples. The percentage of non-polar lipid (NL) in the total lipid content exceeded 95% for the muscle lipids (13.9-17.6 g/100 g sample) and 99% for the dripped lipids (0.34-0.81 g/100 g sample). The prominent fatty acids were 18:1n-9, 16:0, 22:6n-3, 16:1n-7, and 20:5n-3 in the muscle and dripped lipids. The frying pan muscle lipid contained high levels of saturates and monoenes such as 16:0, 18:0, and 18:1n-9, and low levels of polyenes compared with other muscle lipids. The fatty acid compositions of the dripped lipids were similar with all three cooking methods. The prominent total amino acids in Spanish mackerel muscle were glutamic acid, aspartic acid, lysine, leucine, and arginine, and their proportions were similar (45.49-45.82%) in all samples. The potassium and phosphorous contents increased significantly with cooking (P<0.05), and while no heavy metals were detected in any sample. These results indicate that the change in nutritional components, especially the lipid content, was lower with the microwave oven and oven methods compared with the frying pan method.

The Effects of Fatty Acid Composition and Storage Conditions on the Oxidative Stability of Various Vegetable Seed Oils

  • Vegetable seed oils (VSOs) have been extracted and used not only as ingredients in food and as sources of dietary lipids, but also as sources of nutraceuticals used to overcome the various oxidative stresses that contribute to the development of diseases, including cancer and other chronic conditions. The chemical compositions and oxidative stabilities of various VSOs were therefore investigated; samples were stored for 35 d, with each oil having been tested under $O_2$ exposure, sealed from $O_2$ exposure and sealed from $O_2$ exposure while containing $O_2$ scavengers. Oxidative stability was evaluated by peroxide value (POV), p-anisidine value (p-AnV), iodine value (IV), and thiobarbituric acid (TBA) value. Perilla seed and flaxseed oil were mostly composed of linolenic acid (45.5% and 59.7%, respectively), whereas pine seed oil was mostly composed of linoleic acid (48.3%). Meanwhile, camellia seed and olive oils contained 80% oleic acid, which correlated strongly with oxidative stability. The POV, p-AnV, and TBA values were the highest under $O_2$ exposure, and the lowest in the presence of $O_2$ scavengers. These results indicate that VOS oxidative stability depends not only on storage conditions, but on unsaturated fatty acid profiles as well.

들국화분말, 생균제 및 Selenium 복합 급여가 비육기 돈육의 육질 특성에 미치는 영향 (Effect of Feeding Complex of Wild Chrysanthemum Powder, Probiotics and Selenium on Meat Quality in Finishing Porks)

  • 총 50두의 돼지를 출하하기 전 55일 동안 일반 사료에 0.3% 들국화분말, 0.1% 생균제, 0.1% 셀레늄을 급여한 시험구 돼지의 육질특성을 조사하였다. 대조구에 비하여 일반성분, 콜레스테롤함량, 이화학적 특성 및 육색의 변화에 유의적인 차이가 나타나지 않았다. 조직감의 경우 경도는 유의적으로 높았으나 파쇄성, 응집성, 탄력성, 검성 및 씹힘성에는 유의적인 차이가 나타나지 않았다. 관능검사의 경우 신선육의 종합적인 기호도, 조리육의 연도, 다즙성 및 종합적기호도가 대조구보다 높게 나타났으나, 신선육의 육색, 드립 및 마블링 지수, 조리육의 육색, 육향 및 맛에서는 유의적인 차이가 나타나지 않았다. 지방산 조성의 경우 처리구의 myristic acid, palmitoleic acid, oleic acid, unsaturated fatty acid(UFA), MUFA(monounsaturated fatty acid), MUFA/SFA(saturated fatty acid) 및 n-6/n-3 ratio가 높게 나타났으나, palmitic acid, stearic acid, linolenic acid, arachidonic acid, SFA, essential fatty acid(EFA)의 지방산의 함량은 낮게 나타났다.

Assessment of Genetic Diversity and Fatty acid Composition of Perilla (Perilla frutescens var. frutescens) Germplasm

  • The objective of this study was to analyze the genetic diversity using SSR marker and investigate the fatty acid composition of perilla (P. frutescens var. frutescens) germplasm. Genetic diversity among 95 accessions, which consisted of 29 weedy types and 66 landrace accessions, was evaluated based on 12 SSR markers carrying 91 alleles. The mean values of observed ($H_O$) and expected heterozygosities ($H_E$) were 0.574 and 0.640, respectively, indicating a considerable amount of polymorphism within this collection. A genetic distance-based phylogeny grouped into two distinct groups, which were the landrace, moderate and weedy type, genetic distance (GD) value was 0.609. The physicochemical traits about crude oil contents and fatty acid compositions were analyzed using GC. Among tested germplasm, the total average oil contents (%) showed a range from 28.57 to 49.67 %. Five fatty acids and their contents in the crude oils are as follows: ${\alpha}$-linolenic acid (41.12%-51.81%), linoleic acid (15.38%-16.43%), oleic acid (18.93%-27.28%), stearic acid (2.56%-4.01%), and palmitic acid (7.38%-10.77%). The average oil content of wild types was lower than landrace, and the oil content of middle genotype accessions was higher than other germplasm, but no significant variation between landrace and wild types was shown. Nevertheless, IT117174, landrace of Korea, was highest in crude oil content (47.11%) and linolenic acid composition (64.58%) among the used germplasm. These traits of the selected accessions will be helped for new functional plant breeding in perilla crop.

Nutritional Evaluation of Korean Yam (Dioscorea batatas DECNE.)

  • The aim of this study was conducted to investigate the proximate and nutritional compositions including mineral, vitamin, amino acids and fatty acids in Korean yam (Dioscorea batatas $D_{ECNE}.$). Carbohydrate (68.1%) possessed the large single constituent of yam. Small amounts of crude protein (16.9%), crude ash (5.8%) and crude fat (2.0%) contents were found. Yam was found to be good sources of essential minerals such as K (1295.5 mg/100 g), Mg (115.3 mg/100 g), Na (99.0 mg/100 g) and Ca (56.5 mg/100 g) but Zn (0.3 mg/100 g) content was low. Relatively abundant vitamin $B_1$ (11.5 mg/100g) could be observed while vitamin A, $B_3$ and $B_6$ were not found. The amino acid analysis revealed that the yam was superior with respect to glutamic acid (1770.6 mg%), lysine (1210.6 mg%) and urea (550.9 mg%). Essential amino acids were calculated to be 2954.5 mg%. The amino acid profiles showed that yam to be limiting in valine and leusine. Palmitic acid and linoleic acid were the most predominant fatty acids with the value of 31.5% and 41.5%, respectively. And the polyunsaturated fatty acids including linoleic acid and linolenic acid were present in a large quantities in yam. And it also contained higher amounts of unsaturated fatty acids compared saturated fatty acids.

Sterilization effect and fatty acid composition of silkworm powder (Bombyx mori L.) by heat treatment

  • The effect of heat treatment on the sterilization and fatty acid compositions of silkworm powder was carried out under the guidance of Ministry of Food and Drug Safety. Food borne pathogens or microorganisms including E. coli, Salmonella spp., Listeria monocytogenes, Staphylococus aureus, Clostridium perfringens and aflatoxin, were not detected. The fatty acid composition was hardly changed after the silkworm powder was treated to a high temperature of $121^{\circ}C$. The low temperature sterilization of silkworm powder at $63^{\circ}C$ decreased the concentration of E. coli while high temperature sterilization at $121^{\circ}C$ has found no traces of microorganism.

The Effects of Docosahexaenoic Acid Oil and Soybean Oil on the Expression of Lipid Metabolism Related mRNA in Pigs

  • To study the acute effect of dietary docosahexaenoic acid (DHA, $C_{22:6}$) on the expression of adipocyte determination and differentiation-dependent factor 1 (ADD1) mRNA in pig tissues, weaned, crossbred pigs (28 d of age) were fed with either 10% (on as-fed basis) tallow (high stearic acid), soybean oil (high linoleic acid), or high DHA algal oil for 2 d. The plasma and liver DHA reflected the composition of the diet. The adipose tissue and skeletal muscle DHA did not reflect the diet in the short term feeding. The results also showed that the diet containing 10% algal DHA oil significantly decreased the total plasma cholesterol (39%) and triacylglycerol (TG; 46%) in the pigs. Soybean oil significantly decreased plasma TG (13.7%; p<0.05), but did not have an effect on plasma cholesterol. The data indicate that different dietary fatty acid compositions have different effects on plasma lipids. The ADD1 mRNA was decreased (p<0.05) in the liver of DHA oil-treated pigs compared with the tallow-treated pigs. The diets did not have significant effect on the ADD1 mRNA in adipose tissue. Addition of algal DHA oil in the diet increased acyl CoA oxidase (ACO) mRNA concentration in the liver, suggesting that dietary DHA treatment increases peroxisomal fatty acid oxidation in the liver. However, dietary soybean oil supplementation did not affect mRNA concentrations of ADD1 or ACO in the tissues of pigs. Because ADD1 increases the expression of genes associated with lipogenesis, and ACO is able to promote fatty acid oxidation, feeding DHA oil may change the utilization of fatty acids through changing the expression of ADD1 and ACO. Therefore, feeding pigs with high DHA may lead to lower body fat deposition.

벼 정조저장 중 저장온도 및 저장기간에 따른 쌀의 이화학적 특성 및 지방산 조성의 변화 (Changes of Physicochemical Properties and Fatty acid Compositions of Rough Rice Stored at Different Storage Temperatures and Periods)

  • 벼 수확 후 지역브랜드로 유통되는 벼의 저장 중 저장온도 및 저장기간에 따른 이화학적 특성, 지방산도 및 지방산 조성의 변화를 조사할 목적으로 신동진, 일미, 추청, 호품, 히또메보레 등 5품종을 저장온도를 달리하여 저장한 후 4개월마다 밥의 조직감(texture), 알칼리붕괴도(ADV), 도요 윤기치, 밥의 호화특성, 지방산도 및 지방산 조성 등을 분석한 결과를 요약하면 다음과 같다. 1. 밥의 경도는 밥의 씹힘성과 고도로 유의한 정의 상관관계를 나타냈고 밥의 부착성과는 부의 상관관계를 나타냈으며 밥의 응집성은 밥의 탄력성과 정의 상관관계를 나타냈다. 밥의 경도는 저장기간이 길어질수록 증가하였고 밥의 응집성은 저장전과 비교해서 저장온도 및 저장기간에 따라 품종 간 뚜렷한 차이를 나타내지 않았다. 2. 알칼리붕괴도는 품종 및 저장기간에 따라 다소 차이는 있으나 저장온도에 의한 영향은 미미하였다. 일미와 추청의 경우는 저장온도 및 저장기간에 따른 변화가 거의 없었으나 신동진, 호품 및 히또메보레의 경우는 상온저장의 경우 저장기간에 따라 통계적으로 유의한 차이는 나타나지 않은 반면 저온저장의 경우는 저장기간이 길어질수록 ADV 값은 작아지는 경향을 보였다. 3. 도요윤기치는 저장초기에는 품종 및 저장온도에 따라 품종간 차이는 크지 않았고 대체로 저장 후 4개월 이후부터 상온 및 저온저장 모두 도요윤기치 값이 떨어지는 경향이었다. 4. 밥의 호화특성은 상온저장에서 최고점도의 경우 신동진, 호품, 히또메보레 품종은 일미와 추청에 비해 저장기간이 길어질수록 저장전보다 확연히 높게 나타났다. 강하점도 또한 상온저장시 저장전보다 저장기간이 길어질수록 높아졌으며 치반점도는 저장온도와 큰 상관없이 저장전보다 저장기간이 길어질수록 낮게 나타났다. 5. 현미의 지방산도는 저온저장보다 상온저장의 경우에 저장전과 비교하여 저장기간이 길어질수록 그 증가폭이 컸고 백미의 지방산도는 저장전과 비교하여 저장 8개월 후부터는 지방산도가 낮아지는 경향을 나타냈다. 6. 지방산 조성의 변화는 현미의 포화지방산 함량의 경우 저장 전에 비해 일미와 추청 품종은 저장기간이 경과할수록 높아지는 경향이었으나 신동진, 일미 및 히또 메보레 품종의 경우는 저장기간이 경과하더라도 저장전과 비슷한 함량을 유지하였다. 또한 백미의 포화지방산 함량은 저장기간이 경과하더라도 상온저장 및 저온저장 모두 저장 전과 비슷한 함량을 유지하였다. 현미의 지방산 중 oleic acid와 linoleic acid의 함량은 저장 전부터 품종간 차이를 나타냈고 그 외의 지방산 함량의 변화는 저장 4개월 후부터 품종 간 차이가 나타났다. 백미의 지방산 중 linoleinic acid와 stearic acid의 경우 검출된 함량은 적으나 저장 4개월 후에 그 함량이 현저히 감소하였고 palmitic acid는 저장기간이 경과할수록 증가하는 경향을 보였다.
