Holstein과 교잡종 거세우 및 처녀우의 성장발육, 사료이용성 및 도체특성 비교 연구 (Study on Comparison of Growth Performance, Feed Efficiency and Carcass Characteristics for Holstein and F1(Holstein ♀ x Hanwoo ♂) Steers and Heifers)

  • Holstein 및 교잡종(Holstein♀×한우♂)의 거세우 및 처녀우 각 8두씩 총 32두(평균체중, Holstein 거세우:196.9±25.2kg, Holstein 처녀우:163.4±11.3kg, 교잡종 거세우:169.6±24.9kg, 교잡종 처녀우 156.9±15.6kg)를 대상으로 7개월령부터 24개월령까지 비육시험을 실시한 결과를 요약하면 다음과 같다. 성장단계별 일당증체량은 육성기, 비육전기, 비육중기 및 비육후기에 각각 0.733~1.018(평균 0.869), 0.994~1.255(평균 1.094), 0.947~1.259(평균 1.122) 및 0.736~0.824kg(평균 0.790kg)으로 비육중기>비육전기>육성기>비육후기의 순으로 높았다. 그러나 전 비육기간의 일당증체량은 0.882~1.061kg(평균 0.957kg)으로 순종이 교잡종보다 0.072kg(7.3%), 그리고 성별로는 거세우가 처녀우에 비해 0.106kg(10.5%)이 더 증체되었다. 전 비육기간의 농후사료 급여수준은 체중의 1.9% 내외이고, 볏짚은 농후사료 급여량의 25% 수준이 바람직한 것으로 나타났다. 그리고 1kg 증체에 소요된 농후사료 및 TDN량은 순종이 교잡종보다 4.6%가 많았으며, 처녀우가 거세우보다 7.3%가 많아 순종보다는 교잡종이, 그리고 처녀우보다 거세우의 사료이용성이 높았다. 도체조사 결과, 등지방두께는 순종이 교잡종보다 엷었고, 등심단면적은 순종이 교잡종보다 적었다. 도체중 1kg에 대한 등심단면적은 순종보다 교잡종이, 그리고 거세우보다 처녀우가 넓었다. 그리고 육색은 교잡종보다 순종이 우수하였으나 성별에 따른 뚜렷한 차이는 없었다. 쇠고기의 물리화학적 특성에서 전단력, 가열감량 및 보수력 등과 관능검사 결과의 다즙성, 연도 및 향미 등은 순종보다 교잡종이, 그리고 거세우보다 처녀우가 우수하였다. 이상과 같은 결과들을 종합해 볼 때, 고급육생산은 순종보다 교잡종이, 그리고 거세우보다 처녀우가 유리하고, Holstein 및 교잡종의 거세우 및 처녀우 비육시 농후사료는 체중의 1.9%, 볏짚은 농후사료 량의 25% 수준에서 결정하는 것이 바람직 할 것으로 판단된다.

WATER DRINKING BEHAVIOUR OF STEERS FED EITHER FRESH CUT FORAGE OR FIRST CUT HAY

  • To study the effect of moisture content of the diet on drinking behaviour and the amount of water drunk, observations were made on 8 Holstein steers fed either fresh cut forage or first cut hay. The observations were made in a barn with a mean temperature of about $13^{\circ}C$. Drinking occurred mainly within 3 hours after feeding for the steers fed hay, while those fed soilage drank casually. Frequency of drinking (F) was related to the dry-matter concentration (DMC, %) of herbage: F = 0.47 (${\pm}0.09$) DMC - 6.5, $SE={\pm}0.4$, r = 0.86, P<0.01. Intake of drinking water for each 100 kg of live weight (IDW/100kg) for steers fed soilage was related to the dry-matter concentration: IDW/100kg = 0.55 (${\pm}0.06$) DMC - 8.7, $SE={\pm}0.3$, r = 0.94, P<0.01. The intake of water in each drinking period for animals fed fresh forage was curvilinearly related to the drinking frequency; for the hay-fed steers there was a negative linear relationship. When the drinking frequency for steers fed the fresh forage increased to the same as that observed for the hay, water intake in each drinking period was the same as found for the hay-fed steers.

Effects of forage level and chromium-methionine chelate supplementation on performance, carcass characteristics and blood metabolites in Korean native (Hanwoo) steers

  • A feeding trial was carried out to determine the effects of chromium methionine (Cr-Met) chelate and forage level over two years, $1^{st}$ fattening and $2^{nd}$ fattening period on growth parameters, carcass characteristics and blood metabolites of 46 Korean native (Hanwoo, Bos Taurus, $BW=183{\pm}44kg$) steers. Treatments were: 1) Steers in the low forage (LF) group were fed diets that consisted of 60% concentrate and 40% forage; 2) Steers in the high forage (HF) group were fed diets that consisted of 40% concentrate and 60% forage. Following the $1^{st}$ fattening period, steers ($BW=480{\pm}37.6kg$) were randomly assigned to four treatment groups: LF (40 F plus no Cr-Met supplementation in the $2^{nd}$ fattening period), LFCM (40LF plus added 400 ppb of Cr-Met during the $2^{nd}$ fattening period), HF (60 F plus no added Cr-Met during the $2^{nd}$ fattening period) and HFCM (60 F plus added 400 ppb of Cr-Met in the $2^{nd}$ fattening period). Dry matter intake of the treatment diets did not differ during the raising and $1^{th}$ fattening period (P > 0.05). The ADG in the raising period showed no difference between the 40 F and 60 F groups (P > 0.05). Carcass characteristics including rib-eye area and meat yield index were higher in HF than the other treatment groups (P < 0.05). The HF group tended to show a higher (P = 0.08) marbling score than the LF group whereas the HFCM group showed a higher marbling score than the LFCM group (P < 0.05). HDL was higher and LDL lower in groups fed with Cr-Met than in other groups whereas glucose showed the lowest value in HF group (P < 0.05). Triglyceride (TG), Cholesterol, PUN and total protein (TP) were the same among all treatment groups (P > 0.05). The Insulin concentration in the blood was significantly higher for the HFCM group than for the LF, LFCM and HF groups (P < 0.05). It is concluded that supplementation of chromium-methionine chelate could improve meat quality in beef steers.

EFFECT OF MOLDY AND NONMOLDY WHEAT STRAW TREATED WITH OR WITHOUT AMMONIA ON PERFORMANCE AND BLOOD SERUM CONSTITUENTS IN STEERS

  • Mold growth decreased nutritive value of wheat straw (WS). Mold increased DM (94 vs 98%) and ADF (51 vs 56%) contents and had no effect on natural detergent fiber (NDF). Crude protein and N values were decreased in moldy wheat straw, Mold increased insoluble N content of wheat straw (WS) from 21 to 27%. Ammoniation increased the CP of nonmoldy straw from 3.8 to 8.3% and moldy straw from (3.3 to 6.2%). Aspergillus and zygomycetes fungal species were most prevalent and total numbers were higher on moldy straw. Ammoniation decreased total numbers of fungal spores on nonmoldy and moldy WS. Ammoniation of moldy WS increased (p < 0.10) feed in take (1.8%) as compared with nonmoldy, ammoniated, nonmoldy and moldy WS. Steers fed moldy WS had lowest (p < 0.10) feed intake (1.3% of BW daily) compared with other diet. There was little difference (p < 0.10) in intake of nonammoniated vs. ammoniated WS. Steers fed moldy straw lost 6 kg BW. Ammoniated, nonmoldy straw elevated Blood Urea Nitrogen (BUN) (10.5 mg/dl). Alkaline Phosphatase (ALK) was greater in steers fed moldy VS nonmoldy straw (148 VS 95 U/liter. p < 0.10).

새송이버섯 수확 후 배지 발효산물 첨가급여가 한우 거세우의 성장과 도체등급에 미치는 영향 (Effect of the Dietary Supplementation of Fermented Spent Mushroom (Pleurotus eryngii) Substrates on the Growth Performance and Carcass Characteristics in Hanwoo Steers)

  • 본 실험에서는 새송이버섯 수확 후 배지 발효산물 첨가급여가 한우 거세우의 성장과 도체성적에 미치는 영향을 조사하기 위하여 비육기(17-24개월령) 한우 거세우 32두를 공시하여 30개월령까지 사양시험을 수행하였다. 공시동물은 30%의 새송이버섯 수확 후 배지 발효산물(F-SMS)이 첨가된 TMR 사료를 급여한 처리구와 시판 배합사료와 볏짚을 분리 급여한 대조구로 나누어 처리구별로 각각 16두씩 배치하였으며 한 우리($5{\times}6m$)당 4두씩 수용하였다. 30%의 F-SMS가 첨가된 TMR 사료의 영양 가치를 분석한 결과, 30%의 F-SMS가 첨가된 TMR 사료는 볏짚보다는 조단백질(11.67%)과 TDN(72.11%) 함량이 높게 나타났으나 시판배합사료와는 큰 차이가 없었다(p<0.05). 시험기간 동안 사료섭취량은 30%의 F-SMS가 첨가된 TMR 사료 급여구가 대조구보다 유의적으로 많았으나(p<0.05) 공시동물의 증체량에서는 처리구간에 큰 차이가 없었다. 육질등급에서는 30%의 F-SMS가 첨가된 TMR 사료 처리구(100%)의 1등급 이상 출현율이 대조구(87.5%)보다는 높게 나타났으나 육량등급에 있어서는 처리구별로 큰 차이가 없었다(p<0.05). 이상의 결과로 볼 때, Bacillus amyloliquefaciens CS47와 Saccharomyces cerevisiae로 발효시켜 기호성과 저장성이 개선된 새송이버섯 수확 후 배지는 한우 거세우의 원료사료로 사용 가능한 것으로 사료된다.

사료의 형태가 한우 거세우의 사료효율 및 도체성적에 미치는 영향 (Effect of Feed Type on Feed Efficiency and Carcass Characteristics of Hanwoo Steers)

  • 본 연구는 한우 거세우 95두 (평균체중 226 kg)를 이용하여 농후사료와 조사료 분리급여구, TMR구 그리고 TMR을 발효시킨 F-TMR구로 나누어 22개월동안 사육하여 도축하였을 때, 사료효율, 도체성적 및 경제성분석에 미치는 영향을 조사하기 위하여 실시되었다. 건물 및 TDN 섭취량은 육 비육 각 단계별로 F-TMR구에서 가장 많았다 (p<0.05). F-TMR구의 경우, 일일증체량은 육성기에는 처리구중 가장 적었으나, 비육후기에는 타 처리구에 비해 약 48%나 높았다 (p<0.05), 사료효율은 전 육성비육기간 동안 비슷한 수준으로 유지되었다. 도체중과 배최장근단면적에서는 F-TMR 급여구에서 가장 높았으나 (p<0.05), 등지방두께가 가장 얇았던 (p<0.05) 분리급여구에서 육량지수와 육량 A등급 비율이 높았다. F-TMR구의 근내지방도가 타구에 비해 현저히 (p<0.05) 증가되어 육질 1+등급이상 출현율이 96%에 달하였다. 경제성 분석에서 사료비는 F-TMR구가 분리급여구에 비해 40%가 증가되었으나 증체량과 육질등급의 향상으로 인하여 순수익은 29%나 증가되었다.

Correlation of Marbling Characteristics with Meat Quality and Histochemical Characteristics in Longissimus Thoracis Muscle from Hanwoo Steers

  • The objective of this study was to investigate the correlations of marbling characteristics, including marbling score, intramuscular fat (IMF) content, and fleck traits, with meat quality traits and histochemical characteristics of the longissimus thoracis muscle from Hanwoo steers. Marbling fleck characteristics, especially area, number, and fineness (F) index, measured by computerized image analysis were strongly correlated with marbling score and IMF content (p<0.05). However, coarseness (C) index and F/C ratio were somewhat limited relationships with marbling score. In contrast, the IMF content and the number of smaller white flecks increased with increasing lightness value (p<0.05). Moreover, beef with higher marbling scores showed lower cooking loss and Warner-Bratzler shear force value compared to beef with lower marbling scores (p<0.05). Regarding the muscle bundle traits, as number of bundle increased, number of marbling flecks increased (p<0.05), although most marbling characteristics did not have significant correlation with muscle fiber or bundle characteristics.

Effect of Supplemental Corn Dried Distillers Grains with Solubles Fed to Beef Steers Grazing Native Rangeland during the Forage Dormant Season

  • Two experiments were conducted to evaluate the effects of the level of corn dry distillers grains with solubles (CDDGS) supplementation on growing performance, blood metabolites, digestion characteristics and ruminal fermentation patterns in steers grazing dormant forage. In Exp. 1, of growth performance, 120 steers ($204{\pm}5kg$ initial body weight [BW]) were distributed randomly into 3 groups (each of 40 steers), which were provided with the following levels of CDDGS supplement: 0%, 0.25%, or 0.50% BW. All groups of steers were grazed for 30 days in each of 3 grazing periods (March, April, and May). Approximately 1,000 ha of the land was divided with electric fencing into 3 equally sized pastures (333 ha in size). Blood samples were collected monthly from 20 steers in each grazing group for analysis of glucose (G), urea-nitrogen (UN) and non-esterified fatty acids. Final BW, average daily gain (ADG) and supplement conversion (CDDGS-C) increased with increasing levels of CDDGS supplementation (p<0.05).The CDDGS supplementation also increased the plasma G and UN concentrations (p<0.05). In Exp. 2, of digestive metabolism, 9 ruminally cannulated steers ($BW=350{\pm}3kg$) were distributed, following a completely randomized design, into groups of three in each pasture. The ruminally cannulated steers were provided the same levels of CDDGS supplementation as in the growing performance study (0%, 0.25%, and 0.50% BW), and they grazed along with the other 40 steers throughout the grazing periods. The dry matter intake, crude protein intake, neutral detergent fiber intake (NDFI), apparent digestibility of dry matter (ADDM), crude protein (ADCP) and neutral detergent fiber (ADNDF) increased with increasing levels of CDDGS supplementation (p<0.05). The ruminal degradation rates of CP (kdCP), NDF (kdNDF) and passage rate (kp) also increased with increasing levels of CDDGS supplementation (p<0.05). Ruminal ammonia nitrogen ($NH_3$-N) and propionate concentrations also increased with increasing levels of CDDGS supplementation (p<0.05). However, acetate concentrations decreased with increasing levels of CDDGS supplementation (p<0.05). Liquid dilution rate increased with increasing levels of CDDGS supplementation but ruminal liquid volume decreased (p<0.05). On the basis of these findings, we can conclude that CDDGS supplementation enhanced the productive performance of cattle grazing native rangeland without negatively affecting forage intake, glucose and urea-nitrogen blood concentrations, ruminal degradation and ruminal fermentation patterns.

Effects of Combining Feed Grade Urea and a Slow-release Urea Product on Characteristics of Digestion, Microbial Protein Synthesis and Digestible Energy in Steers Fed Diets with Different Starch:ADF Ratios

  • As a result of the cost of grains, the replacement of grains by co-products (i.e. DDGS) in feedlot diets is a common practice. This change produces diets that contain a lower amount of starch and greater amount of fibre. Hypothetically, combining feed grade urea (U) with slow release urea (Optigen) in this type of diet should elicit a better synchrony between starch (high-rate of digestion) and fibre (low-rate of digestion) promoting a better microbial protein synthesis and ruminal digestion with increasing the digestible energy of the diet. Four cannulated Holstein steers ($213{\pm}4$ kg) were used in a $4{\times}4$ Latin square design to examine the combination of Optigen and U in a finishing diet containing different starch:acid detergent fibre ratios (S:F) on the characteristics of digestive function. Three S:F ratios (3.0, 4.5, and 6.0) were tested using a combination of U (0.80%) and Optigen (1.0%). Additionally, a treatment of 4.5 S:F ratio with urea (0.80% in ration) as the sole source of non-protein nitrogen was used to compare the effect of urea combination at same S:F ratio. The S:F ratio of the diet was manipulated by replacing the corn grain by dried distillers grain with solubles and roughage. Urea combination did not affect ruminal pH. The S:F ratio did not affect ruminal pH at 0 and 2 h post-feeding but, at 4 and 6 h, the ruminal pH decreased as the S:F ratio increased (linear, p<0.05). Ruminal digestion of OM, starch and feed N were not affected by urea combination or S:F ratio. The urea combination did not affect ADF ruminal digestion. ADF ruminal digestion decreased linearly (p = 0.02) as the S:F ratio increased. Compared to the urea treatment (p<0.05) and within the urea combination treatment (quadratic, p<0.01), the flow of microbial nitrogen (MN) to the small intestine and ruminal microbial efficiency were greater for the urea combination at a S:F ratio of 4.5. Irrespective of the S:F ratio, the urea combination improved (2.8%, p = 0.02) postruminal N digestion. As S:F ratio increased, OM digestion increased, but ADF total tract digestion decreased. The combination of urea at 4.5 S:F improved (2%, p = 0.04) the digestible energy (DE) more than expected. Combining urea and Optigen resulted in positive effects on the MN flow and DE of the diet, but apparently these advantages are observed only when there is a certain proportion of starch:ADF in the diet.
