This study was to investigate the amino acid, free amino acid and fatty acid composition of chicken breast muscle and legs muscle by different raising periods (30, 36 and 42 days). In amino acid composition, the glutamic acids were 3.63% at 30 days, 3.63% at 36 days and 3.54% at 42 days in the breast muscle. The glutamic acid contents in the breast and leg muscle were decreasing tendency as raising periods increased. The total free amino acids were 370.6 mg at 30 days, 235.9 mg at 36 days and 246.3 mg at 42 days in the breast muscle, and those were 470.16 at 30 days, 326.4 mg at 36 days and 321.9 mg at 42 days in the leg muscle. Total contents of free amino acids were higher in chicken legs muscle than in chicken breast muscle. The linoleic acids, the most essential fatty acid, were contained 17.84% at 30 days, 17.84% at 36 days and 20.33% at 42 days in chicken breast muscle. These results indicated that the fatty acid composition increased as raising periods increased. There were 0.69% DHA (Docosahexaenoic acid) in chicken breast muscle at 30 days, 0.96% at 36 days and 1.29% at 42 days. From these results, the DHA contents in chickens were also increased as raising periods increased.

Most of carotenoprotein complexes have been extracted by using buffered solutions. However, in this study carotenoprotein from the muscle of Blue mussel(Mytilus edulis) was extracted by a detergent such as Triton X-100. It was purified and characterized by $20\%$ (w/v) $(NH_4)_2SO_4$, DEAE-cellulose ion exchange and Sephacryl S-300 gel filtration. The carotenoprotein(${\lambda}_{max}=462nm$) had an approximate M. W. of 372KDa(gel filtration). SDS-PAGE analysis of the carotenoprotein indicated the presence of four polypeptides of 60KDa($23.70\%$), 46.9KDa($9.14\%$), 26KDa($49.14\%$) and 13KDa($18.02\%$). Carotenoprotein denaturated by treatment with SDS to a final concentration of $0.2\%$ (w/v) caused a hypsochromic shift of ${\lambda}_{max}$ from 462nm to 456nm. The carotenoprotein contained lipids as structure units. The amino acid composition of the carotenoprotein contained large essential amino acid amounts of $62.8\%$, and the content of threonine($35.9\%$) was higher than other amino acids, but histidine, methionine and proline were not present. In the carotenoprotein, the major fatty acids were $C_{16:4},\;C_{16:0},\;C_{20:5}\;and\;C_{22:6}$. The percentages of polyunsaturated fatty acids($62.4\%$) were higher compared to other fatty acids(saturated fatty acids $19.6\%$, monounsaturated fatty acids $18.0\%$). Carotenoid was extracted from the carotenoprotein by acetone and it was separated into five different components by preparative TLC(benzene:petroleum ether:acetone=69:17:14). The major components of carotenoid were mytiloxanthin($74.79\%$) and 3,4,3'- trihydroxy-7',8'-didehydro-${\beta}$-carotene($18.26\%$), and they were at least presented as prosthetic groups of carotenoprotein.
This study was carried out to compare the major nutrient components and antioxidant activities of Stachys sieboldii Miq leaf and root powders. For proximate compositions, crude protein and crude fat contents of leaf powder were higher than those of root powder, whereas contents of crude ash and carbohydrates were lower in leaf powder. The content of glutamic acid was greater in amino acids of leaf and root powders, and contents of total amino acids and essential amino acids were higher in leaf powder compared with root powder. Root powder contained a higher level of total unsaturated fatty acids than leaf powder. Total contents of organic acids were higher in leaf powder; tartaric acid was the major organic acid in leaf powder, and malic acid was the major organic acid in root powder. The content of vitamin A was higher in leaf powder than in root powder. However, vitamin E content was higher in root powder than in leaf powder. Total mineral contents of leaf powder were higher than those of root powder, and mineral contents of leaf and root powders were in the order of K>Ca>Mg. Extract yields of leaf and root powders were 27.21% and 58.51%, respectively. Total polyphenols and total flavonoids of leaf extract were 236.35 mg/g and 1.90 mg/g, respectively, which were higher than those of root extract. The $IC_{50}$ values of leaf and root ethanol extracts based on DPPH hydroxyl scavenging were 0.69 mg/mL and 5934.31 mg/mL, respectively, and antioxidative activities of ethanol extracts from all Stachys sieboldii Miq parts dose-dependently increased. These results suggest that Stachys sieboldii Miq can be recommended as an edible functional food material.
A total of 50 individual catfish, the Tra (Pangasius hypophthalmus) cultivated in either floating cages (Tra-c) or in ponds (Tra-p) and the Basa (Pangasius bocourti) raised in three floating cages, were collected in two of the Mekong Delta provinces. The caudal fin of each individual fish was used for protein electrophoresis employing the SDS-PAGE method. The one fillet sides were used as a representative sample to determine the dry matter (DM), crude protein (CP), ether extract (EE) and amino acids (AAs). The catfish oil was extracted from the belly fats, and the fatty acid (FA) composition was analyzed. There were 21 bands of the Tra and the Basa. Protein bands of the two varieties were 28.6-33.3% polymorphic, while polymorphic individuals of the Tra ranged from 80.0 to 100.0%, and the Basa was 90.0% polymorphic. The phenotypic diversity (Ho) of the Tra ranged from 1.71 to 1.80, while the Basa ranged as high as 2.14%. Diversity values (H$_{EP}$) for genetic diversity markers were equal in the Tra and the Basa. The sum of the effective number of alleles (SENA) of both varieties ranged from 3.40 to 3.83 for the Basa and the Tra, respectively. The lower values of Ho and SENA, as compared with those of the fresh water prawn (Macrobrachium equidens) in the area, would suggest that the species with the low values will become extinct due to inbreeding; the gene pools of each observed population were below a suitable threshold. Many of the differences in the nutritional values of the Tra-c, the Tra-p and the Basa were measured; their nutrient values were comparable to fishmeal or fish oil. Most of the DM, CP, and EE were higher in the Tra, especially in the Tra-c. The essential AA content, especially that of lysine, was highest in the Tra-c, next highest in the Tra-p, and lowest in the Basa. Therefore, the amino acid patterns were closer to the ideal patterns in the same sequences. In contrast, the essential FAs were concentrated in the Basa fish oil. It was found that suitable selection of parents for seed production is required to avoid inbreeding. Catfish may be valuable sources of nutrition for both humans and animals, and the differences in their nutritional values by variety and/or management must be taken into account.

We quantitated the major chemical components of ramie leaves (Boehmeria nivea L.) powder. The proximate compositions (all w/w) was 5.42% moisture, 28.15% crude protein, 6.95% crude fat, 15.27% crude ash, and 54.79% carbohydrate, respectively. The total, insoluble, and soluble dietary fiber contents were $39.66{\pm}1.84g/100g$, $20.32{\pm}2.02g/100g$, and $19.34{\pm}2.84g/100g$, respectively. The major free sugars were glucose, galactose and lactose. Seventeen amino acids were isolated. Essential amino acids constituted 44.65% of the total. When free amino acid levels were evaluated, 25 kinds of components were detected, of which 18.15% were essential. Only caproic acid methyl ester and pentadecanoic acid were detected when fatty acid examined. Purpose : Obesity is known to be associated with hypertension, dyslipidemia, and fatty liver and is thought to be associated with increased levels of free fatty acids. One of the strategies for decreasing free fatty acid levels is stimulation of hepatic lipid oxidation with L-carnitine. Carnitine is an essential cofactor for transport of long-chain fatty acid into mitochondria for oxidation. This study was designed to evaluate the changes of serum fatty acids and carnitine levels after exogenous injection of L-carnitine. Methods : Sprague Dawley rats were divided into two groups. Group A was control. Group B was given intraperitoneal injection with L-carnitine(200 mg/kg) daily for two weeks. Serum lipid (total cholesterol, triglyceride, HDL-cholesterol, LDL-cholesterol) and fatty acid levels were analyzed on the first day of the first and second weeks after injection of L-carnitine. Total, free, and acyl carnitine levels also were performed by a enzymatic cycling techniques at the same day intervals. Results : There was no significant difference between the two groups in total cholesterol, HDL-cholesterol, LDL-cholesterol levels before and after the administration of L-carnitine. But triglyceride levels were significantly decreased at the first week in group B compared with group A. Among free fatty acids, linoleic acid showed significant decrement(A group : $131.3{\pm}31.3mg/dL$ vs B group : $90.0{\pm}7.0mg/dL$) at the first week. Total, free, and acyl carnitine levels showed significant increments at all days intervals, but only free carnitine showed significant increments according to cumulative doses of carnitine. Conclusion : Plasma linoleic acid, a long-chain fatty acid, showed significant decrement after administration of L-carnitine in the first week. This may suggest that L-carnitine can be used as an antilipidemic agent for obese patients. A prospective study will investigate obese children in the future.

The salted-dried mullet (Mugil japonicus) roe is a kind of traditional food particulary in the area of Young-am gun, Chunnam province. The manufactruring method was that the fresh roe was salted by clean wasters, drained, shaped a flat piece with 1.2cm thickness by pressing, and spreaded sesame oils on the surface of the salted roe periodically during wind drying for 20 days. The dried roe was blanched in heated water$(80^{\circ}C/3min.)$ and packaged the dried product for the cooling storages. The fractional compositions of free lipid were 40% of neutral lipids, 12% of glycolipids and 9% of phospholipids and those of bound lipids were 13% of neutral lipids, 10% of glycolipids and 13% of phospholipids in wind drying method. The major fatty acids of the neatral lipids were $C_{16:0},\;C_{18:0},\;C_{18:2},\;C_{18:2}\;and\;C_{20:0}$ which was consisted of free and bound lipids. As the major fatty acid amount of neutral lipids was 30.1% in free lipid, and 11.0% in bound lipid, the nsaturated fatty acid degree(TUFA/TSFA)was 1.12-1.14, the polyenoic acid degree (TPEA/TMEA), 0.32-1.20 and the total essential fatty acid (TEFA), 11.33%.

Nutritional compositions of Korean traditional actinidia (Actinidia arguta) cultivars, such as Otumsense, Chiak, and Skinny green, were investigated as high value-added food substances. Among minerals, K content of three cultivars was the highest, and P, Ca, and Na contents were relatively higher than those of other minerals. Contents of essential amino acids were analyzed as follows: Otumsense (198.48 mg/100 g), Chiak (413.50 mg/100 g), and Skinny green (270.07 mg/100 g). Total amino acids of Chiak were the highest among the three cultivars, and major amino acids of the three cultivars were glutamic acid and aspartic acid. Analysis of fatty acids showed that major fatty acids were palmitic acid as a saturated fatted acid and ${\alpha}$-linoleic acid as an unsaturated fatty acid in the three cultivars. Glucose and fructose were major free sugar constituents in the three cultivars. Total free sugar content of Otumsense was relatively higher than others. Finally, niacin and vitamin $B_6$ of Skinny green (1.55 mg/100 g, 1.92 mg/100 g) were the highest among the cultivars. However, ${\beta}$-carotene as a vitamin A precursor ($3.82{\mu}g/100g$) and vitamin C as a natural antioxidant substance (47.18 mg/100 g) of Otumsense cultivar were the highest.
Milk and milk products, especially the cow's milk and cheese, have been used since the ancient time. Because they contains almost all kinds of nutrients that are necessary for human beings except for iron, n-3 fatty acid, and vitamin C. Milk is an excellent dietary source of protein, calcium and phosphorus. The biological value of milk protein is as high as those of red meat and eggs. So cheese, a food processed from concentrated milk protein, is highly recommended food for the patient of diabetes mellitus. Because the major form of milk lipids is n-6 fatty acid, milk and milk products may not be a good food for the patients of cardiovascular disease. But the nutritional quality of milk lipids cannot be inferior to those of margarine, fish oil, and vegetable oil. Milk has been produced commercially since 1936 in Korea. The most popular milk product is a drink milk now in Korea. But according to the change of dietary pattern the consumption of yoghurt and cheese has been enormously increased during the last 20 years. As the soy sauce, tofu, and soy been paste have been the fundamental seasoning and source of protein in Korea, milk and cheese have consisted the essential flavor of western cuisine. But the basic idea for the usage of protein, peptides, and amino acids are the same. We found that milk and milk products can be nicely added in many Korean dishes such as Juk, Mandoo, Jeon, and Bindeatuk for the diversity of traditional flavor.
To elucidate the mechanisms by which algal food quality affect Daphnia growths, we measured carbon incorporation rates and respiration rates of Daphnia magna with Cryptomonad Rhodomonas minuta, green algae Scenedesmus acutus and cyanobacteria Synechococcus sp. with varying physiological states as food. Carbon assimilation rates were high with R. minuta and S. acutus and low with Synechococcus sp. showing a similar pattern to the growth rate pattern. There was no clear difference among respiration rates of three algal species. Carbon assimilation rates and respiration rates of D. magna appeared to be independent on Molar C:P ratios in algal foods. Carbon growth efficiencies (incorporated carbon per assimilated carbon amount) were lower when D. magna fed with Synechococcus sp. than fed with R. minuta or S. acutus. Analysis of variance results show that carbon assimilation rates which were sum of incorporation and respiration rates and carbon growth efficiencies were only dependant on species affiliation. Overall, our results showed that algal species with varying ${\omega}3$ polyunsaturated fatty acid content led different carbon incorporation rates and overall carbon assimilation rates of D. magna.
