Physicochemical Properties of Soybean Curd Residue Powder by Different Soybean and Drying Methods (콩의 종류와 건조 방법에 따른 비지 분말의 이화학적 특성)

  • This study compared the physicochemical properties of soybean curd residue and black soybean curd residue produced by hot air-drying and freeze-drying. Regardless of drying method, the crude protein, crude ash, crude fiber contents, pH, L, a, b color values and water soluble index were higher in soybean curd residue, whereas total polyphenol contents and antioxidant activity were higher in black soybean curd residue. Significant differences in water absorption index, oil absorption capacity and emulsion activity were observed between soybean curd residue and black soybean curd residue in freeze-drying. On the other hand, the emulsion stability was not significant difference in both hot-air drying and freeze-drying. The crude protein and crude fiber contents of soybean curd residue were not significant difference between hot-air drying and freeze-drying. Freeze-drying resulted in higher crude ash contents, pH, water absorption index, water soluble index, oil absorption capacity, emulsion activity and emulsion stability than hot-air drying. Hot-air drying have caused significantly higher water contents, water activity, total polyphenol contents and antioxidant activity in soybean curd residue than freeze-drying. In conclusion, soybean type and drying methods affect the physicochemical and quality characteristics of soybean curd residue, which could be important factors in the manufacture of processed foods.

Low-Temperature Synthesis of Spinel Powders by the Emulsion Technique (MgO-$Al_2O_3$-$SiO_2$계 요업원료의 제조 및 소결특성 -에멜젼법에 의한 Spinel 분체의 저온합성-)

  • Spinel powders were synthesized at the comparatively low-temperature range(800~90$0^{\circ}C$) by the emulsion-hot kerosene drying method and the effects of kerosene-evaporative conditions on powder characteristics were investigated. In emulsion drying, more unagglomerated and sinterable powders could be synthesized through rapid evaporation of emulsion at the higher kerosene temperature. The completion of formation reaction of spinel observed at the low-temperature range confirmed the high reactivity of powders. The relative theoretical density and the fracture toughness of spinel pellets sintered at 1$650^{\circ}C$ for 4hrs. were 98% and 2.1MN/m3/2, respectively.

  • The aim of this study was to investigate the effect of different wall material on the microencapsulation efficiency of microcapsules containing fish oil. The present work reports on the microencapsulation of fish oil by spray drying using hydroxypropyl methylcellulose (HPMC) 2910, maltodextrin, gelatin, sodium caseinate as wall materials. The emulsion stability was assessed by emulsion stability index value (ESI). The microstructural properties of microcapsules was evaluated by scanning electron microscopy (SEM) and microencapsulation efficiency (ME) was assessed by soxhlet method. The highest ESI and ME were observed in the case of a 1:1 gelatin/sodium caseinate ratio and 1:1 glycerin fatty acid ester/lecithin ratio, and ME of microcapsules was increased with increasing the ESI of emulsion. Thus, the stability of emulsion was a critical factor for the encapsulation of fish oil.

  • Alumina-zirconia composite powders for the purpose of improving fracture toughness and thermal shock resistance of alumina were prepared by the emulsion-kerosene drying method. The average particle size of composite powders was less then 1 $\mu\textrm{m}$ and their shapes were spherical. It was shown that the average particle size of composite powders decreased with the concentration of metal-salt in solution and the amount of span 80 added when preparing emulsions. The structure of all zirconia in composite powders heat-treated at 1200$^{\circ}C$ was a tetragonal form at room temperature. This result implied that fine zirconia particles were homogeneously dispersed in the alumina matrix.

  • 고순도의 Bi(Pb)-Sr-Ca-Gu-O 초전도 분말의 얻기 위하여 액상법의 하나인 이멀젼 건조방법이 응용되었다. 다양한 합성 변수 중 오일과 용액의 계면활설제의 혼합비율을 조정하여 고순도의 Bi(Pb)-Sr-Ca-Gu-O 초전도 분말을 성공적으로 얻을 수 있었다. 이 공정의 최적 혼합비율은 70:20:10이였다. 관측된 분말을 구형이었으며 마이크론 크기 이하의 균일한 크기를 보였다. 최적의 소결조건에 한에 $840^{\circ}C$ 50시간의 열처리를 통하여 거의 108K를 갖는 초전도 분말이 얻어졌다.

  • The powder preparation by using emulsion drying method, one of the chemical powder fabrication methods has the advantages; easy to control the chemical stoichiometry and to fabricate homogeneously fine particles. In the present study, the initial morphology and size distribution of the powder fabricated by using emulsion dry-ing method were controlled and were improved the homogeneity. By carefully controlling the mixing ratio of oil phase and aqueous solution and surfactant of preventing emulsion separation, the Bi(Pb)-Sr-Ca-Cu-O su-perconducting powders were prepared. The properties of the superconducting powder fabricated by this method and the microstructures and superconducting properties of the pelletized samples were investigated. The microstructures and electric properties of the tapes prepared by oxide powder-in-tube method were in-vestigated. The fabricated powder was spherical with less than 1$\mu$m but most of them was agglomerated with 2~5$\mu$m in size. The critical temperature of the pelletized sample annealed at 84$0^{\circ}C$ for 72 hours in oxygen par-tial pressure of 1/13atm in Ar atmosphere was 108K. And the critical current of the first and second annealed tapes in air prepared by oxide powder-in-tube process were 0.4A and 1.5A, respectively.

Preparation of the Cobalt Oxide Powder by Hot Petroleum Drying Method (석유증발법에 의한 Cobalt Oxide의 분말제조)

  • The characteristics of cobalt oxide powders prepared by hot petroleum drying method from the cobalt acetate were evaluated by DTA/TGA, XRD, BET, SEM and density measurement. The cobalt oxide powder could be prepared by hot petroleum drying of the emulsion of cobalt acetate salt solution and the subsequent thermal decomposition of the acetate at 300$^{\circ}C$. As the concentration of the salt solution and the calcination temperature of the dried powder increased, the surface area of the synthesized powder decreased due to the particle growth, so that after sintering the density and grain size decreased. For the same concentration of the salt solution, the surface area and sinterability of the powder by hot petroleum drying increased in comparision with those by conventional drying.

Preparation and Characterization of Demineralized Bone Particle Impregnated Poly(L-lactide) Scaffolds

  • In order to endow with new bioactive functionality from demineralized bone particle (DBP) as natural source to poly(L-lactide) (PLA) synthetic biodegradable polymer, porous DBP/PLA as natural/synthetic composite scaffolds were prepared and compared by means of the emulsion freeze drying and solvent casting/salt leaching methods for the possibility of the application of tissue engineered bone and cartilage. For the emulsion freeze drying method, it was observed that the pore size decreased in the order of 79$\mu\textrm{m}$ (PLA control) > 47$\mu\textrm{m}$ (20% of DBP) > 23 $\mu\textrm{m}$ (40% of DBP) > 15$\mu\textrm{m}$ (80% of DBP). Porosities as well as specific pore areas decreased with increasing the amount of DBR. It can be explained that DBP acts like emulsifier resulting in stabilizing water droplet in emulsion. For the solvent casting/salt leaching method, a uniform distribution of well interconnected pores from the surface to core region were observed the pore size of 80 ∼70 $\mu\textrm{m}$ independent with DBP amount. Porosities as well as specific pore areas also were almost same. For pore size distribution by the mercury intrusion porosimeter analysis between the two methods, the pore size distribution of the emulsion freeze drying method was broader than that of the solvent casting/salt leaching method due to the mechanism of emulsion formation. Scaffolds of PLA alone, DBP/PLA of 40 and 80%, and DBP powder were implanted on the back of athymic nude mouse to observe the effect of DBP on the induction of cells proliferation by hematoxylin and eosin staining for 8 weeks. It was observed that the effect of DBP/PLA scaffolds on bone induction are stronger than PLA scaffolds, even though the bone induction effect of DBP/PLA scaffold might be lowered than only DBP powder, that is to say, in the order of DBP only > DBP/PLA scaffolds of 40 and 80% DBP > PLA scaffolds only for osteoinduction activity. In conclusion, it seems that DBP plays an important role for bone induction in DBP/PLA scaffolds for the application of tissue engineering area.

Studies on the Physico-Chemical Properties on Several Chitosan Beads (몇 가지 키토산 비드들의 물리화학적 특성에 관한 연구)

  • Several chitosan beads were prepared by W/O emulsion and capillary extrusion methods. The surface structures were observed through SEM pictures, the surface areas were determined by BET method, the available amine contents were measured by picric acid titration method, and the results were correlated each other. The beads from W/O emulsion method were smaller in size but had higher hardness, surface area, and available amine contents than the ones from capillary extrusion method. Moreover, the surface area, available amine contents, apparent density and the hardness showed large differences according to the drying processes. As compared between the solvent dehydration and the freeze drying technique in W/O emulsion method, the former showed higher surface area, higher available amine contents and hardness than the latter. SEM pictures revealed that in case of solvent dehydration method, very small pores existed, whereas in case of freeze drying method, cell-like pores existed on the surface. The results of picric acid titration showed that the beads dried by solvent dehydration method were 10 times higher in amine contents than those from freeze drying method, and the amount of amine contents were increased as the surface area was increased. After fluorescamine was reacted with chitosan beads, the fluorescence labeled beads were observed through fluorescence microscope. The results showed that most of primary amine existed on the surface of beads and pores.
