The Effectiveness of Nutrition Education Provided by Dietitians in Child Care Centers (보육시설의 영양사 배치를 통한 영양교육 및 효과 평가)

  • The purpose of this study was to evaluate the effectiveness of nutrition education with nutrition services provided by dietitians who were placed in child care facilities from the Korean Dietetic Association. For this, we investigated the levels of nutrition knowledge and dietary intakes of children who attended child-care centers as well as dietary practices of children assessed by their parents. The treatment for children consisted of nutrition education and food service activities that are provided by the dietitian who have 3 to 5 years experience. Nutrition education was implemented during 10 weeks, 20 times, and a total 400 min and it's effectiveness was evaluated by questionnaire. Data were obtained for 123 children aged 4 to 5 years old who attended four child-care centers, one for a control group and 3 for intervention groups. Dietary intakes were investigated by measuring one-serving size and plate waste a of child for one-day dietary records before and after nutrition education. The levels of nutrition knowledge of children improved showing 70.80 points before to 83.45 points after nutrition education (p<0.001). Dietary intakes of the children after nutrition service increased significantly on cooked rice (133.66 g), Kimchi (19.41 g), side dish of meat/fish (48.40 g), and side dish of vegetables (24.88 g). Dietary practices of children after treatment also improved especially 'eat diverse meat, fish, egg, and bean' and 'never leave plate waste'. To summarize, this study pointed out that nutrition service and nutrition education provided by dietitians had influences on increases of the nutrition knowledge, dietary intake, and dietary practices. Therefore, placement of dietitians needs to extend to child care facilities from the 100 persons-over-capacity facility to the 50 persons-over-capacity facility, for providing professional service such as nutrition education and nutrition counseling.

Design and Vibration Analysis of Tri-axis Linear Vibratory MEMS Gyroscope

  • In this study, the design of a tri-axis micromachined gyroscope is proposed and the vibration characteristic of the structure is analyzed. Tri-axis vibratory gyroscopes that utilize Coriolis effect are the most commonly used micromachined inertial sensors because of their advantages, such as low cost, small packaging size, and low power consumption. The proposed design is a single structure with four proof masses, which are coupled to their adjacent ones. The coupling springs of the proof masses orthogonally transfer the driving vibrational motion. The resonant frequencies of the gyroscope are analyzed by finite element method (FEM) simulation. The suspension beam spring design of proof masses limits the resonance frequencies of four modes, viz., drive mode, pitch, roll and yaw sensing mode in the range of 110 Hz near 21 kHz, 21173 Hz, 21239 Hz, 21244 Hz, and 21280 Hz, respectively. The unwanted modes are separated from the drive and sense modes by more than 700 Hz. Thereafter the drive and the sense mode vibrations are calculated and simulated to confirm the driving feasibility and estimate the sensitivity of the gyroscope. The cross-axis sensitivities caused by driving motion are 1.5 deg/s for both x- and y-axis, and 0.2 deg/s for z-axis.

Distribution and reproductive aspects of the pandalid shrimp, $Pandalus$ $eous$, in the deep sea of the East Sea, Korea

  • The objective of the study was to investigate if reproductive characteristics of $Pandalus$ $eous$ affect the depth distribution in the East Sea of Korea. $P.$ $eous$ was found at depths of 500-900 m in the East Sea of Korea, with the highest percentage occurrence (34%) at 500 m. A negative correlation was observed between the number of individuals and the depth. The overall sex ratio also turned out to be significantly correlated with depth. On average, the larger individuals (bigger than 26.37 cm), which included transitional, female, and ovigerous females, were mostly distributed at 700 m depth. The percentage of males increased by depth and ovigerous females were mainly distributed in the shallow water (300 m) during winter. Ovigerous females were not found at 900 m, which is the deepest depth range in this study. The percentage of transitional individuals was greatest at 500 m and decreased gradually with depth. All ovigerous female individuals were of the spent ovarian stage in winter. Female numbers in the ripe ovarian stage increased with depth and immature females rarely appeared. The gonadosomatic indices of the nonovigerous females and ovigerous females were highest at 700 m in depth. The mean egg size of $P.$ $eous$ was $0.83{\pm}0.11mm^3$ in the non-eyed stage and $0.93{\pm}0.17mm^3$ in the eyed stage.

Food Organisms and Feeding Selectivity of Postlarvae of Slimy (Leiognathus nuchalis) in Kwangyang Bay, Korea (광양만 주둥치 (Leiognathus nuchalis) 후기자어의 먹이생물과 선택성)

  • To investigate the food organisms and feeding selectivity of slimy (Leiognathus nuchalis) during the postlarval stage, the gut contents of the fish, captured in Kwangrang Bay in 1995, were observed. The food organisms in the gut were composed of copepod egg and nauplius, Tintinnopsis spp. and Codonellopsis sp. The indices of relative importance (IRI) indicated that Tintinnopsis spp. was the most dominant food item ($80.6\%$), and copepod nauplius was the next ($18.5\%$). Tintinnopsis spp. was the most favorite food item: it occupied $73.8\%$ of gut contents, though it did $39.2\%$ of microzooplankton in the surrounded water. The composition of copepod nauplius was higher in the larvae shorter than 2.0 mm NL. As slimy larvae grew, the size of food organisms in the gut was not changed, and their number increased, and the selectivity for food items increased.

Major Dietary Patterns and Their Associations with Socio-Demographic, Psychological and Physical Factors Among Generally Healthy Korean Middle-Aged Women (건강한 한국 중년 여성에서의 주요 식이패턴과 인구.사회적, 심리적, 신체적 요인 간의 연관성)

  • This study was conducted to identify major dietary patterns of generally healthy Korean middle-aged women and to examine associations of the dietary patterns with socio-demographic, psychological, and physical characteristics. Data were drawn from the 2001 Korean National Health and Nutrition Examination Survey (KNHANES), which is an ongoing national surveillance system. Healthy female subjects aged 40-64 years and provided the health interview examination and food frequency questionnaire (FFQ) data were included. We conducted factor analysis based on daily mean intake frequency of 26 food groups and identified 3 major dietary patterns, healthy, convenient, and alcohol-animal. The healthy pattern was characterized by higher intakes of fish, seafood, poultry, mushroom, seaweed, vegetable, tomato, potato, and fruit, the convenient pattern by processed meat and fish, ramen, noodle and rice cake, sweet snack, egg, bread, and fast food, and the alcohol-animal pattern by alcohol, poultry, meat, and fish. The healthy pattern was significantly related with higher socio-economic status, more stable family structure, healthier mentality, and sounder status of anthropometric and biochemical variables. Those with higher factor scores for the convenience pattern were found to be younger and having higher socio-economic status, higher subjective levels of health, and lower subjective levels of worry on health. Several physical characteristics significantly improved as the levels of the convenience pattern increased. The alcohol-animal pattern was significantly associated with several socio-demographic characteristics including a low education level, a young age, a small family size, and blue-collar jobs. Public health policy makers can utilize the study findings to select prior target populations with higher needs and to tailor dietary behavioral messages to lower chronic disease risks among Korean middle-aged women.

Comparison Between Semi-Quantitative Frequency Methods and 7-day Dietary Records Methods in Food and Nutrition Intake Status For Hemodialysis Patients (혈액투석환자 대상 반정량적 식품섭취빈도 조사법과 7일간 식사기록법을 이용한 일상 식품과 영양소 섭취수준 비교)

  • Objectives: The valid assessment of food and nutrients intakes using appropriate dietary intake method is necessary to improve the nutritional status of the hemodialysis (HD) patients. This study was conducted to compare the method between newly developed, semi-quantitative food frequency questionnaire (Semi-FFQ) and 7-day dietary records (7-DRs) for hemodialysis patients. Methods: We conducted both methods on 53 maintenance HD patients in two university hospitals. We calibrated the frequency, portion size and daily intake of 47 food items reported in Semi-FFQ. The food and nutrients intake was compared and the correlation of the two methods was analyzed. Also each nutrient intake was compared to recommended dietary allowance for Korean (KDRIs) and recommended nutrient reference value for HD patients. Results: Energy and energy-yielding nutrients intakes were significantly higher in the two methods (p<0.01). These support the possible reliability between Semi-FFQ and 7-DRs that is similar with regard to most mineral and vitamin intakes. Thus, the Semi-FFQ used in this study for the assessment of nutrient intakes of HD patients can be reliable for the assessment of the nutrient intake along with the 7-DRs. The correlation coefficients were higher for foods consumed daily, such as steamed rice, meat and chicken, bean, egg, milk, coffee and alcohol than for those of foods eaten rarely (p<0.01). Conclusions: The Semi-FFQ used in this study can be a reliable tool for the assessment of the HD patients' nutrient intake along with the 7-DRs, despite its limitations.

Non-Viral Transgenesis via Direct In Ovo Lipofection in Quail (비바이러스 In Ovo 직접주입법에 의한 메추리 형질전환 시스템)

  • Transgenic animals have been widely used for developmental biology studies, as disease models, and even in industry such as transgenic bioreactor animals. For transgenic birds, quail has the great advantages of small body size, short generation time, and frequent egg production. To date, retroviral or lentiviral transduction has been used to generate transgenic quail for various purposes. However, the efficiency of transgenic offspring production with these methods is relatively low and viral vector usage has safety issues. Unfortunately, non-viral transgenesis has not been established in quail due to a deficiency of stem cell and germ cell culture systems. In this study, we established a direct in ovo lipofection method that could be used to create transgenic quail without germline-competent cells or viruses. To optimize the injection stage during embryo development, the liposome complex (containing piggyBacCMV-GFP and transposase plasmids) was introduced into an embryonic blood vessel at 50 hr, 55 hr or 60 hr. GFP expression was detected in various tissues (heart, kidney, liver and stomach) on day 12 of incubation under a fluorescence microscope. Additionally, GFP-positive cells were detected in the recipient embryonic gonads. In conclusion, the direct in ovo lipofection method with the piggyBac transposon could be an efficient and useful tool for generating transgenic quail.

Morphological and Molecular Characterization of Toxocara apodemi (Nematoda: Ascarididae) from Striped Field Mice, Apodemus agrarius, in Korea

  • Adult ascarid worms from the field mice, Apodemus agrarius, were observed with a light and scanning electron microscope, and molecularly analized with 18S rRNA gene. In the scanning electron microscope, 3 prominent labia were present in the anterior end of male and female worms, but the interlabia and gubernaculum were absent. Scanning electron micrographs showed cervical alae as vestigial organs that looked like a slightly uplifted superficial sewing stitch. Total 6 pairs of post-cloacal papillae were observed on the tail of the male worms. The tail of female worms was blunt and conical shape with a spine-like structure, mucron. The eggs were sub-globular, coated with the albuminous layer and 73 by 82 ㎛ in average size. The superficial pits of T. apodemi egg (mean 8.6×6.7 ㎛) are obviously bigger than those of Toxocara spp. The partial sequence of 18S rRNA showed the sequence homology of Toxocara canis (99.6%), Toxocara cati (99.4%), Toxascaris leonina (99.4%), and Toxocara vitulorum (99.2%). Conclusively, it was confirmed that ascarid nematodes, Toxocara apodemi, recovered from striped field mice in Korea are taxonomically conspecific relationship with genus Toxocara and genetic divergence from other Toxocara species.

Developing Breakfast Menus for Most Easily Breakfast-Skipping Groups (아침결식 위험집단을 위한 아침 균형식단 개발)

  • This study was conducted to develop the standard breakfast menu for those weak groups having insufficient breakfast intake. The following three target groups are classified as: 16-19 years old high school male student, 20-29 years old female who have job or college students, 20-29 years old male or female who have job (double income family). While developing menus for each target groups, we applied several basic guidelines for meal planning as follows: Nutrient intake level was set to $\graction one-Third$ of RDA, while the energy level to $\fraction one-quarter $ of RDAs. Most Sequent meal pattern of Koreans was adapted; Suitabilities of appropriate serving size and cost for middle-income families were considered; Domestic foods and ingredients were used. We developed 24 menus summed by 2 menus for each season and three target groups. When evaluating the menus, most of the breakfast menus were sufficient of nutrients as a meal for the subjects. Three food groups such as grain/starch group, meat/fish/egg/bean group, vegetable/fruit group were included in all menus. Even though milk/dairy products group was not excluded for some menus, other calcium substitutes like anchovies were used. Oil/nut/sugar group was used to a minimum. The average number of foods for each menu was 12.8, which ranged from 10 to 17 depending on the menus. The average weight of the menus including soup was 822 g, 633 g and 730 g for each target group, respectively. The average price of the menu ranged from 2,000 to 3,500 won per person. The above results could be applied at home as well as foodservice institutes and furthermore could offer information for developing breakfast-substituting food products.

Effects of Larval Grafted Age for Artificial Queen-rearing on Queen Reproductive Potential and Growth of Apis cerana Colony

  • Queen honey bees (Apis cerana) can be reared artificially on demand by the use of grafting technique. The technique consists of grafting young worker larvae into queen cell cups and raising in a queenless strong colony. As the age of grafted larvae for queen rearing exhibited several aspects related to quality and reproductive potential of queen, this study were conducted to investigate the influence of age of grafted larva on morphological characteristics and lifespan of queen, and the growth of colony she headed. Our results demonstrated that queens reared from young worker larvae (i.e., less than 1-day old larvae) were significantly larger in size (i.e., body weight and thorax width) than that of queens reared from 2-day old worker larvae. Moreover, queens reared from younger worker larvae initiated egg-laying earlier, stored more spermatozoa in spermatheca and had a longer lifespan compared to queens raised from older worker larvae. We also found a significant positive effect of queen grafting age on the production of worker and drone brood, adult worker population in colonies headed by queens reared from younger larvae. These findings suggested that rearing queens from brood grafted at the earliest possible age could increase the reproductive potential of queen as well as fitness of colony she head.
