Preservation of Strawberries and Cucumbers Packaged by Low density polyethylene film impregnated with antimicmbial agent, Scutellariae baicalensis extract (황금추출물을 함유한 항균성 포장필름을 이용한 딸기와 오이의 저장효과)

  • To develop a wrapping film, which suppresses the microbial decay through the storage and prolongs the selflife of fruits and vegetables, the antimicrobial packaging films were prepared and applied to the preservation of strtwberries and cucumbers. Low density polyethylene(LDPE) film of 50㎛ thickness was faricated with 1% of Scutellariae baicalensis extract. The LDPE film impregnated with Scutellariae baicalensis extract showed antimicrobial activity on the disk test against Bacillus cereus, Escherchia coli and Fusarium sp.. The antimicrobial film changed the color and light transmittance, but did not affect heat shrinkage, mechanical tensile strength and wattability. Strawberries and cucumbers were separately wrapped with packaging films in the state of closely-adhered packaging as well as modified atmosphere packaging(MAP). The wrapped strawberries and cucumbers were stored for 21 days at 5$\^{C}$ and for 40 days at l0$\^{C}$, respectively. For the packaged strawberries and cucumbers at 5$\^{C}$ and 10$\^{C}$, the LDPE film impregnated with Scutellariae baicalensis extract showed the reduced growth of total aerobic bacteria, molds and yeasts and did not give any negative effect on other quality attributes during storage in comparison with conttrol film without any additive.

Effect of Immersion Liquids on Quality Characteristics of Peeled Taro during Storage (박피 토란의 저장중 품질특성에 미치는 침지액의 영향)

  • This study was carried out to investigate the efficacy of two kinds of electrolyzed water with added 0.5% (v/v) citron juice, SAEW-CJ[Strong Acidic Electrolyzed Water with added Citron Juice, pH 2.57, ORP (oxidation-reduction potential) 1,122 mV, HClO 23.05ppm] and LAEW-CJ (Low Alkaline Electrolyzed Water with added Citron Juice, pH 4.67, ORP 997mV, HClO 42.55mV) as storing liquid for peeled taro. During storage at $5^{\circ}C$ until 30 days, SAEW-CJ and LAEW-CJ inhibited the growth of microorganisms more effectively than 0.2% (w/v) APS (aluminium potassium sulfate) and 0.85% (w/v) NaCl did. Total phenolic contents, PRO (polyphenol oxidase) activity, color differences value (${\Delta}E$) and vitamin C contents of peeled taro stored in SAEW-CJ and LAEW-CJ were lower than those stored in 0.2% APS and 0.85% NaCl. The hardness decrement of peeled taro stored in LAEW-CJ was lower than that of the others. In addition, the contents of moisture, crude protein, crude ash, total sugars, and reducing sugars were gradually decreased during storage. However, no difference by peeling methods or immersion liquid was found.

Effect of Feeding Thymus vulgaris Powder on the Productivity, Egg Quality and Egg Yolk Fatty Acid Composition in Laying Hens (Thymus vulgaris 분말의 급여가 산란계의 생산능력, 난품질 및 난황 내 지방산 조성에 미치는 영향)

  • The objective of this study was to evaluate the effects of feeding dried Thymus vulgaris powder (TVP) on the layer performance, egg quality and egg yolk fatty acid composition. Two hundred eighty eight, 35 weeks old Brown nicks were allocated in the cage for five TVP (0, 0.25, 0.5, 1.0 and 2.0%) diets with four replicates in each treatment. Each basal diet contained 16.0% CP and 2,800 kcal/kg ME and supplied to layers for 8 weeks. Egg production and egg weight were not statistically different but numerically increased in birds fed 2.0% TVP than other treatments. Egg mass was not consistent depending on the TVP addition levels in diets. Feed intake was significantly lower in TVP addition treatments than the control (p<0.05), however, feed conversion was not significantly differed among control and treatments (p<0.05). Dietary addition of 2.0% TVP showed high values on albumin height, Haugh unit and egg yolk color and they are 7.93, 86.79 and 7.20, respectively (p<0.05). Palmitic and arachidonic acids were remarkably lowered when 2.0% TVP added to basal diets and then fed to birds for 8 weeks, in contrast, significantly higher linolenic acid composition was determined in birds fed 2.0% TVP (p<0.05). As the results, the highest unsaturated fatty composition and UFA/SFA ratio were observed in 2.0% TVP treatment as compared to those of control and other treatments. Therefore, the results indicate that the Thymus vulgaris powder addition to basal diet tended to have positive effects on egg quality and egg yolk fatty acids composition, and the optimum addition of Thymus vulgaris powder may be 2.0%.

Effects of Optimized Co-treatment Conditions with Ultrasound and Low-temperature Blanching Using the Response Surface Methodology on the Browning and Quality of Fresh-cut Lettuce (반응표면분석법으로 최적화한 초음파와 저온 블랜칭의 병용처리 조건이 신선편이 양상추의 갈변과 품질에 미치는 영향)

  • Enzymatic action and microbial growth degrade the quality of fresh-cut lettuce. Browning, a bad smell, and softening during storage are the major forms of quality deterioration. Health-oriented consumers tend to avoid foods treated with chemicals to maintain their freshness. This study was conducted to evaluate the change in the quality of fresh-cut lettuce with combined low-temperature blanching (LB) and ultrasonication (US). The optimum condition was selected using the response surface methodology (RSM), through a regression analysis with the following independent variables; the ultrasonication time (X1), blanching temperature (X2), blanching time (X3), and dependent variable; ${\Delta}E$ value (y). It was found that the condition with the lowest ${\Delta}E$ value occurred with combined 90s US and $45^{\circ}C$ 90s LB (US+LB). The combined treatment group (US+LB) was stored at $10^{\circ}C$ for 9 days with the control group and each single-treatment group, with low-temperature blanching and ultrasonication. Overall, the US+LB group had a significantly high $L^*$ value, which indicates significantly low $a^*$, $b^*$, ${\Delta}E$, browning index, PPO, and POD activity values, and a low total bacteria count (p < 0.05). The US+LB group also had the highest sensory score (except for aroma and texture; p > 0.05).

Effects of Dietary Ground, Crumble and Pellet of Physico-chemical Properites on Broiler Meat (가루, 크럼블 및 펠렛사료 급여가 브로일러육의 이화학적특성에 미치는 영향)

  • This study was conducted to investigate the effect of nutrient level (metabolizable energy and crude protein, 2,843kcal/kg and 19.46% at 2 to 3 week, 3,072kcal/kg and 18.38% at 4 to 6 week, 3,109 kcal/kg and 17.26% at 7 to 8week, respectively, and feeding form was ground $\longrightarrow$ crumble $\longrightarrow$ pellet in control, ground $\longrightarrow$ crumble $\longrightarrow$ pellet in treatment 1, crumble $\longrightarrow$ crumble $\longrightarrow$ pellet in treatment 2, pellet $\longrightarrow$ pellet $\longrightarrow$ pellet in treatment 3 for broiler during 8 weeks. Also the effects of supplemented with charcoal(1%) in total mixed treatment feed was investigated. The crude protein, crude fat in broiler meat ranged from 22.22${\sim}$23.40%, and 0.30${\sim}$0.45%, respectively. Especially, treatment 2 was lower than other treatment (P<0.05). The heating loss tend to be increased at control. Shear force and pH tend to be decreased at T3(1.21kg, 5.89). Control and T2 were significantly lighter in color (‘L’) than the T1 and the ‘a’ ranged from 0.19${\sim}$0.85 and T1 was the lowest ‘b’ among other treatment. The panel test, texture, Aroma were not significantly among the an experimental group (P<0.05). Myristic acid and arachidonic acid of T1 was significantly higher than that other treatment and oleic acid, U/S(unsaturated/ saturated) rate T2 was significantly higher than other experimental group(P<0.05). Among amino acid, cystine, glutamic acid, valine, iso-leucine, leucine, lysine, arginine in T1 and T2 was higher than control and T3.

Effects of Dietary Organic Selenium Levels on Performance and Selenium Retention in Broiler Chickens and Laying Hens (유기태 셀레늄의 첨가가 육계 및 산란계의 생산성 및 셀레늄 축적에 미치는 영향)

  • Two experiments were conducted to investigate the effect of dietary organic selenium levels on performance and selenium retention in broiler chickens and laying hens. In experiment 1, the effects of dietary organic selenium levels on the weight gain, feed intake, feed conversion, and selenium retention of meat and liver in broiler chickens were investigated. For each growth phase, the basal diet was supplemented with 0 (control), 0.60, 1.20, 1.80 and 2.40 ppm Se from selenium yeast(SY). Weight gain, feed intake, and feed conversion were not affected by the selenium addition in diets. Breast muscle Se levels were linearly increased (P<0.05) as dietary Se level increased by SY. Selenium concentration of liver tissue was increased (P<0.05) in supplemental SY compared to the control, and was increased (P<0.05) in supplemental 1.20, 1.80 and 2.40 ppm SY compared to the 0.60 ppm SY. In Experiment 2, 12-week-experiment using Hy-Line laying hens (68 wk of age) was conducted to examine the effects of dietary organic selenium on egg Production, egg weight, daily egg mass, feed intake, feed conversion, egg quality, and selenium concentration of eggs. A corn-soybean meal basal diet was supplemented with 0 (control), 0.30, 0.60, 0.90 and 1.20 ppm Se from selenium yeast (SY). Egg Production was significantly improved(P<0.05) in supplemental 0.30 and 0.90 ppm SY compared to the control and 0.60 ppm SY during week 1 to 12, but daily egg mass, feed intake, and feed conversion showed no difference in supplemental SY and control. Haugh unit, yolk color and eggshell breaking strength showed no difference in supplemental SY and control. Eggshell thickess was significantly (P<0.05) higher in supplemental 0.60 and 1.20 ppm SY compared to the 0.90 ppm SY in week 9. Egg Se levels were linearly increased (P<0.05) as dietary Se level increased by SY.

Relationship between Sleep Disturbances and Cognitive Impairments in Older Adults with Depression (노인성 우울증 환자에서 수면 장애와 인지기능 저하의 관련성)

  • Objectives: Depression, sleep complaints and cognitive impairments are commonly observed in the elderly. Elderly subjects with depressive symptoms have been found to show both poor cognitive performances and sleep disturbances. However, the relationship between sleep complaints and cognitive dysfunction in elderly depression is not clear. The aim of this study is to identify the association between sleep disturbances and cognitive decline in late-life depression. Methods: A total of 282 elderly people who underwent nocturnal polysomnography in a sleep laboratory were enrolled in the study. The Korean version of the Neuropsychological Assessment Battery developed by the Consortium to Establish a Registry for Alzheimer's Disease (CERAD-K) was applied to evaluate cognitive function. Depressive symptoms were assessed with the geriatric depression scale (GDS) and subjective sleep quality was measured using the Pittsburg sleep quality index (PSQI). Results: The control group ($GDS{\leq}9$) when compared with mild ($10{\leq}GDS{\leq}16$) and severe ($17{\leq}GDS$) depression groups, had significantly different scores in the Trail making test part B (TMT-B), Benton visual retention test part A (BVRT-A), and Stroop color and word test (SCWT)(all tests p<0.05). The PSQI score, REM sleep duration, apnea-hypopnea index and oxygen desaturation index were significantly different across the three groups (all indices, p<0.05). A stepwise multiple regression model showed that educational level, age and GDS score were predictive for both TMT-B time (adjusted $R^2$=35.6%, p<0.001) and BVRT-A score (adjusted $R^2$=28.3%, p<0.001). SCWT score was predicted by educational level, age, apnea-hypopnea index (AHI) and GDS score (adjusted $R^2$=20.6%, p<0.001). Poor sleep quality and sleep structure alterations observed in depression did not have any significant effects on cognitive deterioration. Conclusion: Older adults with depressive symptoms showed mild sleep alterations and poor cognitive performances. However, we found no association between sleep disturbances (except sleep apnea) and cognitive difficulties in elderly subjects with depressive symptoms. It is possible that the impact of sleep disruptions on cognitive abilities was hindered by the confounding effect of age, education and depressive symptoms.

Effects of pH and Redox Conditon on Silica Sorption in Submerged soils (담수조건(湛水條件)에서 토양산도(土壤酸度)와 산화환원(酸化還元) 전위(電位)가 토양(土壤)의 규산흡착(珪酸吸着)에 미치는 영향(影響))

  • Silica sorption isotherm belonged to the C-type with weak L-type characteristics according to the classification system of adsorption isotherm. Silica sorption isothem fitted well to the Freundlich and Tempkin equation but not to the Langmuir equation. The color interference probably due to $Fe^{2+}$ during spectrometric silca determination by Molybdenum-blue method affected the sorption isotherm in reduced soils or low pH. Four parameters such as the intercept of Freundlich equation, the slope of Tempkin equation, the "Silica reactivity", and the "C-type slope", where the last two parameters were termed in the current study, were examined to assess treatment effects on silica sorption. Among them the "C-type slope" was found out to be the best parameter. The C-type isotherms showed the same high correlation coefficient as Freundlich and Tempkin equation when regressed to the sorption isothem. Plotting the C-type slope on a logarithmic scale vs. the pH showed high linearity. Using the "C-type slope" as a perameter, the pH and soil type affected the silica sorption while the effect of redox condtion was not significant. All Fe and Al extracted by the various reagents, and OM were highly correlated to silica sorption. Among them $Fe_d$ was identified as the highest influencing soil property. Since there is no equivalent reliable method to discriminate the forms of the soil Al-oxides their likely importance remains unclear.

Effect of Gamma-ray on Survival and Mutation Rates of Rooted Cuttings and Unrooted Cuttings in Rose (감마선 처리에 의한 장미 삽수의 발근 여부에 따른 생존율과 돌연변이 발생빈도)

  • This study was carried out to compare the survival and mutation rates and mutation spectrum by gamma-irradiation on rooted and unrooted cuttings of three spray type ('Lovelydia', 'Yellowbabe', and 'Haetsal') and two standard type ('Vital' and 'Aqua') cultivars in roses. Two groups, rooted and unrooted cuttings were gamma-irradiated at 70Gy for 24 hours. The irradiated rooted and unrooted cuttings were planted in a greenhouse, and survival, mutation rates and mutation spectrum were investigated 30 weeks after planting, respectively. As a result, survival and mutation rates of gamma-ray irradiated plants were 16.4%~50.8% and 0~5.1% for unrooted cuttings, and 39.4%~55.1% and 0.7%~7.4% for rooted cuttings, respectively. In conclusion, both survival and mutation rates were a little higher on rooted cuttings than on unrooted cuttings. However, when only survived plants after gamma-ray irradiation were considered, mutation rates were 0~10% and 1.8%~14.1% for unrooted cuttings and rooted cuttings, respectively, showing no significant difference. In addition, diverse variations on color and number of petals or shape of flowers were detected both in plants from rooted and unrooted cuttings, which indicated that there was no significant difference in mutation spectrum between two groups.

Effect of Temperature and Relative Humidity on the Storage Stability of Boiled- Dried Anchovy (건멸치의 저장 안정성에 미치는 온도 및 습도의 영향)

  • Changes in some qualities of boiled-dried anchovy during storage at $-18^{\circ}C$, $-3^{\circ}C$, $5^{\circ}C$, $10^{\circ}C$ and room temperature for 12 months were studied. The monolayer moisture contents were 8.12% and 5.88% at $5^{\circ}C$ and $25^{\circ}C$, respectively. Volatile basic nitrogen (VBN) content was found to be higher at $5^{\circ}C$ and $-3^{\circ}C$ than those values at $10^{\circ}C$, $-18^{\circ}C$ and room temperature. Lipid oxidative browing and Hunter color values of L, a and b were remarkably developed with increase of storage temperature. Judging from organoleptic evaluation boiled-dried anchovy could be preserved in acceptable condition for $4{\sim}6\;months$ at room temperature, $5{\sim}8\;months$ at $10^{\circ}C$, $8{\sim}10\;months$ at $5^{\circ}C$ and 12 months at 7 below $-3^{\circ}C$. During storage at room temperature for 5 months after 7 months storage at $5^{\circ}C$ and $-18^{\circ}C$. VBN concept was increased by 1.03 and 1.38. browning rate by 1.03 and 2.15, and a and b values by $1.21{\sim}1.60 $and $1.02{\sim}2.80$ times in comparison with the basic room temperature, respectively.
