흰점박이꽃무지에 발생하는 병원성 곰팡이 Metarhizium anisopliae에 대한 옻나무 추출액의 항진균 효과 (The Antifungal Effect of Rhus verniciflua Stokes against Metarhizium anisopliae on the Edible Insect, Protaetia brevitarsis (Coleoptera))

  • 흰점박이꽃무지(Protaetia brevitarsis) 유충은 동아시아에서 식용 및 약용으로 널리 사용되고 있다. 흰점박이꽃무지 수요 증가로 인해 유충의 대량 사육 방법이 필요하지만 좁은 공간에서 대량으로 유충을 사육할 경우 곤충 병원성 질병 감염에 취약해진다. Metarhizium anisopliae는 흰점박이꽃무지 유충에 치명적인 곤충 병원성 곰팡이 중 하나이다. 이를 저해하기 위해 항진균 성분이 함유된 옻나무(Rhus verniciflua Stokes) 추출액을 첨가하였고, 연구 결과 1% 옻나무 추출액을 첨가한 경우 녹강균에 의한 유충의 치사율이 유의미하게 낮았다. 또한 일반톱밥을 급여한 대조구에 비해 옻나무 추출액 처리구에서 유충의 무게가 더 무거웠고 유충 기간이 짧아지는 것을 확인하였다. 따라서 이 연구를 통해 곤충 병원성 곰팡이에 대한 옻나무 추출액의 항진균 효과를 확인할 수 있었으며 흰점박이꽃무지 유충 사육 시 옻나무 추출액을 첨가하여 급여한다면 병원성 곰팡이에 의한 유충의 치사율을 낮추고 증체량을 높이는 데 효과가 있을 것이다.

Techno-functional and rheological properties of Tenebrio molitor larvae protein by different extraction methods

  • Alkaline- or salt-assisted extractions have been widely used to extract edible insect proteins, however, there is a need for extraction techniques that balance cost-efficient production as well as preserving the protein properties. Mealworm proteins (Tenebrio molitor larvae) were extracted using three different extraction methods-alkali (AMP), salt (SMP), and water (WMP)-and then physicochemical and techno-functional properties were examined. AMP had high yield, protein, and amino acid contents, whereas WMP had high moisture, ash, and fat contents. SDS-PAGE showed a wide range of molecular weights in WMP whereas mostly low molecular weights were observed in AMP and SMP. AMP had poor protein solubilities compared to SMP and WMP across all pHs. AMP had enhanced water-holding capacity and emulsion stability, whereas WMP had improved oil-holding capacity and foaming properties. WMP formed a gel with and without the transglutaminase. The physicochemical and techno-functional properties demonstrated that water-soluble mealworm protein was superior to alkali-and salt-soluble mealworm proteins. Considering the cost efficiency and minimal impact on the environment as well, a cold press juicer could be utilized for mass production of mealworm protein compared to the conventional methods of protein extraction using alkali and salt.

Edible Insects as a Protein Source: A Review of Public Perception, Processing Technology, and Research Trends

  • This review summarizes the current trends related to insect as food resources among consumers, industry, and academia. In Western societies, edible insects have a greater potential as animal feed than as human food because of cultural biases associated with harmful insects, although the abundant characteristics of edible insects should benefit human health. Nevertheless, many countries in Asia, Oceania, Africa, and Latin America utilize insects as a major protein source. Using insects can potentially solve problems related to the conventional food-supply chain, including global water, land, and energy deficits. Academic, industry, and government-led efforts have attempted to reduce negative perceptions of insects through developing palatable processing methods, as well as providing descriptions of health benefits and explaining the necessity of reducing reliance on other food sources. Our overview reveals that entomophagy is experiencing a steady increase worldwide, despite its unfamiliarity to the consumers influenced by Western eating habits.

쌍별귀뚜라미 식품 용도 개발에 따른 절식조건 (Fasting conditions and dietary phenamena of edible cricket (Gryllus bimaculatus))

  • 본 연구는 사육용 쌍별귀뚜라미의 배변제거를 위한 절식시간을 알아보는 것을 실험 목적으로 하였다. 귀뚜라미는 현재 드디어 한시적 식품인정을 받았다. 따라서 식용 곤충으로서 국내시판을 위한 연구의 일환으로 귀뚜라미 생체 안의 배변을 제거하여 미생물의 번식을 예방하고 이취 제거와 맛을 향상시키기 위하여 본 쌍별귀뚜라미의 절식 실험을 실시한 결과 농가와 실험실에서 두 곳 모두 절식 2일째부터는 귀뚜라미의 습성에 의해 동족포식의 카니발리즘이 발동하여 귀뚜라미의 생체가 훼손되어 나감을 관찰 하였다. 쌍별 귀뚜라미 장내 분변을 현미경으로 살펴본 결과 1일째 이후 분변은 거의 없어지고 싸움으로 획득한 귀뚜라미의 팔다리 일부가 장내에 들어 있는 양상을 보여 1일이 귀뚜라미 장내 변이 거의 없어지는 시간임을 알 수 있어 생체 운송 배달시 1일이 걸리는 기간을 감안하면 절식시간은 1일이 적당하다고 사려 되어진다.

The fatty acid composition of edible grasshopper Ruspolia differens (Serville) (Orthoptera: Tettigoniidae) feeding on diversifying diets of host plants

  • Ruspolia differens (Serville) (Orthoptera: Tettigoniidae) is a highly valued edible grasshopper species in Africa. However, the effects of plant diets on lipid content and fatty acid composition of R. differens are not well understood. We tested the effects of four diets on the total lipid content and fatty acid composition of R. differens. Sixth instar nymphs of R. differens were reared on one, and mixtures of two, three, and six natural plant inflorescences. Individuals collected from the field constituted a control treatment. We extracted lipids and analyzed the fatty acid methyl esters using gas chromatography-mass spectrometry. We analyzed if the total lipid content, body weight, and fatty acid composition differed among diets and between the sexes using two-way ANOVAs and a PERMANOVA model, respectively. The total lipid content and weight of R. differens did not differ among the diets. The nine common fatty acids were palmitic (mean across treatments, 26%), oleic (22%), palmitoleic (18%), linoleic (13%), stearic (7%), myristic (6%), myristoleic (4%), ${\alpha}$-linolenic (2%) and arachidic acid (1%). The composition of fatty acids and the proportion of essential fatty acids significantly differed among the diets. The proportion of essential fatty acids was highest in the control treatment (21%) but low in less diversified (one to three feed) diets (12-13%). This study demonstrates that the fatty acid composition in R. differens can be influenced through diet. Thus, with dietary manipulations, using local plants in Africa, it is possible to produce R. differens with preferred high quality essential fatty acids for human consumption.

Effects of Edible Insect Powders as Meat Partial Substitute on Physicochemical Properties and Storage Stability of Pork Patties

  • In this study, physicochemical and antioxidant properties, and storage stability (1, 3, and 7 days) of pork patties added with edible insect powders (EIP) of four species (Larvae of Tenenbrio molitor, Protaetia brevitarsis seulensis, Allomyrina dichotoma, and Gryllus bimaculatus) as meat partial substitutes were investigated. Twenty percent of each EIP was added to pork patties, and four treatments were prepared. On the other hand, two control groups were set, one with 0.1 g of ascorbic acid and the other without anything. Adding EIP decreased water content but increased protein, fat, carbohydrate, and ash contents. In addition, the use of EIP increased the water holding capacity and texture properties as well as decreased the cooking loss. However, the sensory evaluation and storage stability were negatively affected by the addition of EIP. The 2,2-diphenyl-1-picrylhydrazyl radical scavenging activity had a positive effect on storage stability. It is believed that the addition of EIP resulted in high antioxidants due to the presence of polyphenol compounds in EIP. These results indicate that EIP has great potential to be used as meat partial substitute to improve the quality improvement and antioxidant in pork patties. However, in order to improve storage stability and consumer preference, further research is needed to apply it to patties by reducing the amount of EIP or adding auxiliary ingredients.

Proximate Content Monitoring of Black Soldier Fly Larval (Hermetia illucens) Dry Matter for Feed Material using Short-Wave Infrared Hyperspectral Imaging

  • Edible insects are gaining popularity as a potential future food source because of their high protein content and efficient use of space. Black soldier fly larvae (BSFL) are noteworthy because they can be used as feed for various animals including reptiles, dogs, fish, chickens, and pigs. However, if the edible insect industry is to advance, we should use automation to reduce labor and increase production. Consequently, there is a growing demand for sensing technologies that can automate the evaluation of insect quality. This study used short-wave infrared (SWIR) hyperspectral imaging to predict the proximate composition of dried BSFL, including moisture, crude protein, crude fat, crude fiber, and crude ash content. The larvae were dried at various temperatures and times, and images were captured using an SWIR camera. A partial least-squares regression (PLSR) model was developed to predict the proximate content. The SWIR-based hyperspectral camera accurately predicted the proximate composition of BSFL from the best preprocessing model; moisture, crude protein, crude fat, crude fiber, and crude ash content were predicted with high accuracy, with R2 values of 0.89 or more, and root mean square error of prediction values were within 2%. Among preprocessing methods, mean normalization and max normalization methods were effective in proximate prediction models. Therefore, SWIR-based hyperspectral cameras can be used to create automated quality management systems for BSFL.

사료첨가제로서 맥주박이 장수풍뎅이 유충의 생육에 미치는 영향 (Brewers' Dried Grain as a Feed Additive for the Korean Rhinoceros Beetle, Allomyrina dichotoma)

  • 장수풍뎅이 유충은 쌍별귀뚜라미와 갈색거저리 및 흰점박이꽃무지 유충과 함께 국내 식품의약품안전처의 식품공전에 일반식품원료로 등록되었다. 이에 곤충에 대한 종합적인 관리 시스템 개발이 요구되고, 이와 함께 양질의 곤충을 대량생산하기 위한 위생적이고 안전한 식용곤충 전용 먹이원 개발 등과 관련된 연구를 지속적으로 수행할 필요가 있다. 식품가공 부산물은 단백질, 지질, 무기질 및 기타 여러 가지 생리활성 물질을 함유하고 있어 가축 등 동물 사료의 대체 에너지원으로 활용되고 있다. 따라서 본 연구에서는 감귤박, 비지박, 대두박, 맥주박 등 4종의 식품가공 부산물을 첨가한 먹이원 급여에 따른 장수풍뎅이 유충에 미치는 효과를 비교하였다. 장수풍뎅이 3령 유충에 10% 맥주박을 첨가한 먹이원을 급여했을 때 가장 높은 생존율을 보였고, 유충의 무게 또한 대조구 대비 약 26% 증가된 것으로 나타났다. 유충기간에 있어서도 10% 맥주박을 첨가했을 때 약 120일로 대조구보다 28일 이상 단축되는 것을 확인하였다. 뿐만 아니라 10% 맥주박 첨가 실험구의 용무게와 용화율이 가장 높게 나타나는 것으로 보아 맥주박이 장수풍뎅이 사육용 사료 소재로서 충분히 활용될 가치가 있을 것으로 생각된다. 더불어 맥주박은 시중에서 쉽고 저렴하게 구매할 수 있어 곤충사육 농가에서 손쉽게 활용할 수 있으며, 식품가공 부산물을 친환경적으로 처리하고 식용곤충을 안전하고 경제적으로 사육하는 데 도움이 될 것으로 기대된다.

Defatting and Sonication Enhances Protein Extraction from Edible Insects

  • Edible insects are attracting growing interest as a sustainable source of protein for addition to processed meat and dairy products. The current study investigated the optimal method for protein extraction from mealworm larvae (Tenebrio molitor), cricket adults (Gryllus bimaculatus), and silkworm pupae (Bombyx mori), for use in further applications. After defatting with n-hexane for up to 48 h, sonication was applied for 1-20 min and the protein yield was measured. All samples showed a total residual fat percentage below 1.36%, and a 35% to 94% improvement in protein yield (%). In conclusion, defatting with n-hexane combined with sonication improves the protein yield from insect samples.

Growth performance of the edible mealworm species, Tenebrio molitor (Coleoptera: Tenebrionidae) on diets composed of brewer's yeast

  • Yellow mealworms (Tenebrio molitor Linnaeus) are very promising insects for the food and feed industry. Because mealworms are in the spotlight as an alternative protein source in the future, it is necessary to develop efficient rearing techniques for mass production. To evaluate the effects of brewer's yeast (BY) on the growth of mealworms, Tenebrio molitor Linnaeus, the mealworms were fed with wheat bran (WB) diets containing different levels of BY (0, 10, 30, 50, and 70%). Larval survival, larval weight, development time, pupal weight and eclosion rate were monitored for 12 weeks. The results showed that mealworms fed on the diets containing 30% and 50% of BY have significantly higher weight gain, specific growth rate and daily weight gain, and lower larval duration than fed the control diet (100% WB) and other BY diets (10% and 70% BY). Larval survival on the diets containing 30% and 50% of BY was higher than on control diet. Pupal weight and eclosion rate were not significantly different among all diets. In conclusion, we suggest feeding the diet containing 30% of brewer's yeast with wheat bran in order to increase the production of mealworms.
