Varietal Difference of Eating Quality after Storage in Room Temperature (벼 상온 저장시 식미관련 특성의 품종간 차이)

  • Rice ageing describes the changes in physical and chemical properties of rice grains during storage that alter the eating quality of rice. The prevention of deterioration in palatability of rice during storage is important for stable supply. In this study, We conducted to select the variety with superior palatability after storage at room temperature. 'Yeonghojinmi' had much higher head rice ratio of milled rice than that of 'Ilmi', 'Junam'and 'Hwayeong'at similar moisture content of approximately 15%. Grossiness and stickiness were higher in 'Yeonghojinmi' than that of the others. Meanwhile, yellowness(b value) of cooked rice was lower in 'Yeonghojinmi' than that of the others. Of the four varieties, Yeonghojinmi was maintained good eating quality after storage in room temperature, which also contributed to differences in palatability, such as protein content, glossiness, stickiness and color of cooked rice.

Association between Dietary Quality Based on the Korean Healthy Eating Index and Nonalcoholic Fatty Liver Disease in Korean Adult Women: Using Data from the Sixth (2013-2015) Korea National Health and Nutrition Examination Survey (중년여성에서 식생활평가지수에 의한 식사의 질과 비알코올 지방간질환 발생과의 연관성: 제6기(2013-2015) 국민건강영양조사 자료 이용)

  • We performed a study to examine the association between diet quality and nonalcoholic fatty liver disease (NAFLD). Our study included 3,586 women aged 40-64 years who participated in the sixth Korea National Health and Nutrition Examination Survey. The study subjects were classified into the NAFLD group (n=816) and the normal group (n=2,770) using the hepatic steatosis index. The anthropometric indices, blood profiles, and dietary intake data of the subjects were obtained. The waist circumference, body mass index, and the serum levels of triglycerides, fasting blood sugar, HbA1c, and systolic and diastolic blood pressures were higher in the NAFLD compared to the normal groups (p<0.001, respectively). The intakes of protein (g/kg body weight, p<0.001), potassium (p<0.001), and vitamin A (p=0.006) were significantly lower in the NAFLD group. It was observed that the higher the total Korean Healthy Eating Index score, the lower the risk of NAFLD. A reverse relationship was shown between the NAFLD risk and the intakes of total fruits, total vegetables, vegetables excluding Kimchi and pickled vegetables, meat, fish, eggs and beans. Therefore, it is recommended that middle-aged women in Korea increase their intakes of fruits, vegetables, and foods high in protein for the proper management of NAFLD.

  • This study assessed the beauty care behavior and the dietary attitudes, eating behaviors, and dietary quality related to beauty care in accordance with the level of interest in beauty care by examining 558 female high school subjects in the Incheon area. The study aimed to identify the interest in beauty care on the part of adolescent girls that impacts their dietary life and provide basic data for nutrition education forming desirable dietary habits. The interest in beauty care on the part of female high school students is relevant to dietary life and dietary attitude, with the high-level interest group attempting to use diet foods more frequently and attempting weight control because of their low satisfaction with their body type. On the other hand, a high level of interest in appearance failed to lead to the practice of a varied and balanced dietary life. Therefore, nutritional education is necessary to avoid a high level of interest in beauty care, leading to an incorrect perception of body shape and excessive weight control. Furthermore, nutrition education is necessary to link interest in appearance to the beauty of a healthy body based on nutritional balance by connecting the interest in appearance to a varied and balanced dietary life that goes beyond the category of practice.

A Study on the Eating Behaviors and Characteristics of Consumption Propensities on Dining out as Perceived by Silver Generation in Seoul (서울지역 실버고객들의 외식식습관과 소비행동 속성에 관한 연구)

  • This study concentrated on the dining out consumption behaviors, dining out selection attributes, and changes in eating habits of silver generation. Total 216 residents in metropolitan area were employed for statistical analysing. The results are as follows. First, as the result of t-test and ANOVA showed that female and higher academic background tended to regularly take high level of fruits, vegetables, meat, and fish eating habits. These results identified that dining out culture and dietary lifestyle are closely linked. Second, as the result of difference in dining out consumption attitudes on eating habit of silver generation, consumers who have better eating behaviors tended to consider the physical environment, variety of menu, and service quality when they choose a restaurant. Third, as the result of analysis on changes in dining out consumption behavior based on eating behavior of silver consumers, groups differences were found from only the source for information on dining out business and standard variable in selection of dining out business. Fourth, physical environment, variety of menu, business quality, and service were indicated as significant selection attributes of dining out among silver peoples. Fifth, dining out consumption behaviors of silver consumers were developed through newspapers, magazines, and previous visiting experiences. In conclusion, the results of present study showed that silver consumers tend to select a restaurant based on word-of-mouth and various factors related to experiences. Hence, various promotional activities are necessary for the business succession.

Evaluation of diet quality according to the eating-out patterns of preschoolers and school-aged children in South Korea: based on data from the 2016-2018 Korea National Health and Nutrition Examination Survey (우리나라 유아 및 학령기 아동의 외식패턴에 따른 식사의 질 평가: 2016-2018 국민건강영양조사 자료 활용)

  • Purpose: This study examined the eating-out patterns of Korean infants and school-aged children and compared diet quality. Methods: Data were obtained from the 2016-2018 Korea National Health and Nutrition Examination Survey. The subjects were 306 children aged 3 to 11 years old that ate dinner at restaurants. Percentage energy intakes of 24 food groups were calculated, and cluster analysis was used to identify eating-out patterns. Diet quality was assessed by calculating percentage energy and nutrient intakes using one-third of the 2015 Dietary Reference Intakes for Korean (KDRIs), nutrient adequacy ratio (NAR), mean adequacy ratio (MAR), and index of nutritional quality (INQ). Results: Cluster analysis identified 2 eating-out patterns, that is, a 'rice-centered' (53%) and a 'mixed diet' (47%) pattern. For those with the mixed diet pattern, ratios of carbohydrates, protein, and fat to total calories were 48:20:31, whereas for the rice-centered pattern, ratios were 62:15:21 (p < 0.001). Intakes of energy and most nutrients in the mixed diet pattern were excessive, but the intakes of the most nutrients in the rice-centered pattern were much lower than their KDRIs. MARs were higher for the mixed diet pattern than the rice-centered pattern (0.74 vs. 0.66) (p < 0.001), and INQs for vitamin C (p = 0.007) and calcium (p = 0.018) were lower for the rice-centered pattern, whereas INQ for iron (p = 0.003) was lower for the mixed diet pattern. Conclusion: The quality of meals for infants and school-aged children depended on eating-out patterns, but the rice-centered and mixed diet patterns both failed to provide an appropriately balanced meal pattern. The results of this study suggest that healthy menus need to be developed for children in restaurants.

Lodging Liability and Response to Paclobutrazol Application of High Eating Quality Japonica Rice Varieties (밥맛이 좋은 Japonica 벼 품종들의 도복저항성과 도복경감제 paclobutrazol에 대한 반응)

  • Most of the japonica rice varieties preferred for high eating quality are liable to lodging even under moderate rate of nitrogen application. This lodging liability has been a critical limit even for proper evaluation of physio-logical characteristics of those varieties exhibitable under higher nitrogen levels. Use of recent inhibitors of gibberellin biosynthesis such as ‘Pac1obutrazol’ may allow us to overcome this barrier. The responses of four high eating quality varieties to nitrogen application to the level of 150kg N per ha were evaluated with and without use of Paclobutrazol in comparison with a non-lodging, improved short japonica, Dongjin and a non-lodging, high yielding indica x japonica Milyang 23. The four were Damageum (the best eating quality in the 1930s), Nongrim 6 (the best in the 1960s), Chuchung (the best since 1970s), Koshihikari (the best in Japan since 1960s). As expected increased application of nitrogen increased plant height, length of the 3rd internode, and lodg-ing liability, being measured as culm breaking load, in all varieties tested and caused actual lodging in the fiel from the 50kg Nfha level in Damageum and Koshihikari and at the level of l50kg Nfha in Nongrim 6. Applica-tion of Pac1obutrazol (0.6%G) 15 days before heading reduced plant height, length of the 3rd internode and lodging liability being measured as culm breaking load in all varieties tested. However, the application of Pac1obutrazol during active tillering stage resulted in decreased culm breaking load in Damageum, Nongrim 6, and Koshihikari in spite of the decreased plant height and culm length as in the other varieties. Maximum yield was obtained with 100kg Nand 30kg Pac1obutrazol at 15 days before heading in Nongrim 6, 150kg N and 30kg Pac1obutrazol at 15 days before heading in Damageum, and 150kg N and 20kg Paclobutrazol at 20 days after transplanting plus 30kg Paclobutrazol at 15 days before heading in the variety Koshinhikari and Chuchung. Under a sensory evaluation of cooked rice, the four high eating quality varieties were not different in rank and Paclobutrazol treated rice was not distinguished from the untreated in eating quality.

Food security and diet quality among urban poor adolescents in Kuala Lumpur, Malaysia

  • BACKGROUND/OBJECTIVES: This study aimed to examine the food security status of urban poor adolescents and its association with diet quality. SUBJECTS/METHODS: A cross-sectional survey was conducted among 188 adolescents aged 13-18 yrs living in Kuala Lumpur, Malaysia. Household food insecurity and dietary intake data were collected using the Radimer/Cornell hunger and food insecurity instrument and 2-day 24-h dietary recalls, respectively. Diet quality was determined using the Malaysian Healthy Eating Index (HEI). Weight and height were measured and body mass index-for-age, as well as height-for-age z scores were calculated. RESULTS: The present study revealed that 47.9% of the adolescents experienced household food insecurity, 24.5% experienced individual food insecurity, 18.6% household food security, and 9.0% child hunger. The mean score of diet quality was 56.83 ± 10.09, with a significantly lower HEI score among food insecure adolescents (household food insecure, individual food insecure, and child hunger) than household food secure adolescents (P = 0.001). The differences between food secure and food insecure households were found to be significant for energy (P = 0.001) and nutrients including proteins (P = 0.006), carbohydrates (P = 0.005), dietary fiber (P = 0.001), folate (P < 0.001), and vitamin C (P = 0.006). The multiple linear regression showed that adolescents who experienced food insecurity (β = -0.328; P = 0.003) were found to be significantly associated with poor diet quality (F = 2.726; P < 0.01), wherein 13.3% of the variation in the diet quality was explained by the food security status. CONCLUSIONS: Experiencing food insecurity contributed to poor diet quality among urban poor adolescents. Further longitudinal studies are needed to comprehensively understand this association to improve food insecurity and diet quality among urban poor communities.

Association between diet quality and untreated dental caries: results from the Korea National Health and Nutrition Examination Survey

  • BACKGROUND/OBJECTIVES: Few studies have provided evidence of the association between diet quality and dental caries. This study aimed to examine the association between diet quality and untreated dental caries in a Korean representative population. SUBJECTS/METHODS: The study population included a sample of 13,815 participants, aged ≥ 19 from the Korea National Health and Nutrition Examination Survey during 2013-2015. The explanatory variable was diet quality and the outcome variable was untreated dental caries. Untreated dental caries were defined by the number of decayed teeth recorded according to the criteria established by the World Health Organization. Diet quality was defined by using the Korean Healthy Eating Index (KHEI) through the 24-h recall methods. We assessed the association between diet quality and untreated dental caries while adjusting for age, sex, education, income, smoking status, dental visits, toothbrushing frequencies, obesity, and diabetes mellitus. RESULTS: The mean overall KHEI scores in the untreated dental caries group were significantly lower than those in the group without untreated dental caries. Significant differences were observed in the untreated dental caries group based on the KHEI quartiles (P < 0.001). After adjusting for potential confounders, the quartiles of KHEI scores showed an association with untreated dental caries, demonstrating a dose-effect trend (odds ratio [OR], 1.57; 95% confidence interval [CI], 1.35-1.84 for 1st quartile; OR, 1.38; 95% CI, 1.19-1.59 for 2nd quartile; OR, 1.32; 95% CI, 1.14-1.53 for 3rd quartile; reference quartile highest]). CONCLUSIONS: The findings indicated an inverse association between diet quality and untreated dental caries in Korean adults. Healthcare providers should take into account the significant role of diet quality in preventing and managing oral health.

Factors Associated with the Beautician's Dyspepsia (미용사의 소화장애 관련요인)

  • Objectives: This study was conducted to analyze the general properties of beauticians and to analyze correlation between their experiences of indigestion and relevant factors and thus to provide basic data to prevent obstacles to beautician's health. Methods: A self-administered survey on 257 female beauticians in Daegu from March 15 to May 30, 2005 was conducted. Cross-link analysis was used to examine indigestion in relation to the general properties of beauticians, and correlation analysis was used to determine the level of relationship between indigestion and relevant factors, and multiple regression analysis was used to determine the degree of effects of relevant factors on indigestion. Results: The results can be summarized as follows: 1. As for indigestion by general properties and beauty-related properties, there were significant differences in gender(p<0.01), age(p<0.05) and marriage status(p<0.05) among general properties and there were significant differences in the number of holiday(p<0.05), beauty culture career(p<0.01), and the degree of satisfaction on duty(p<0.001) among beauty-related properties. As for indigestion by eating habit and health-related properties, there were significant differences in the degrees of regular eating(p<0.001) and regular living habit(p<0.001), and eating speed(p<0.01). 2. Factors relevant to the eating habit showing significant correlation with indigestion were regular eating habit, taking well-balanced nutrition, and taking salty food. Among them, the regular eating habit was shown to be the most relevant with the correlation coefficient of -0.253(p<0.01). The general and beauty-related factors showing significant correlation with indigestion were beauty culture career, number of holiday, and regular living habit. And regular living habit was shown to be the most relevant with the correlation coefficient of -0.260(p<0.001). 3. Results from the regression analysis showed that relevant factors having significant effects on indigestion were gender, beauty culture career, satisfaction on duty, eating speed, regular eating habit and regular living habit. And satisfaction on duty was found to have the greatest effect on indigestion. Conclusions: The findings of this study could be effectively used to develop a practical management strategy to prevent $beauticia{\acute{n}}s$ indigestion, and to promote $beauticia{\acute{n}}s$ health, and ultimately to improve the $beauticia{\acute{n}}s$ quality of life.

Effect of Period and Storehouse-Grade in Grain Storage and Degree of Milling on the Sensory Taste of Cooked Rice (벼의 저장에 있어 저장기간, 창고등급 및 도정도가 밥맛에 미치는 영향)

  • The changes in fat acidity of brown rice and eating quality of rice during long term grain storage of unhulled rice were evaluated for the government managed rices. The Tongil type rice grains had consistently significantly lower fat acidity during three and half year storage than the Japonica type rice. On sensory evaluation of the fresh milled cooked rice the eating quality of the long term stored rices, 1987, 1988, and 1989 produce Tongil did not differ much each other even though increase in fat acidity by year of storage. The Japonica rices produced in 1989 and 1990 in different locations and stored there also did not differ much in eating quality. The grains stored in storehouses of super grade did not differ significantly from those stored in the first grades, but the grains stored (4 $^{\circ}C$, RH 50%) grains have kept the eating quality almost same as the fresh grains even after two and half years. A higher degree of milling did not improve significantly the sensory taste of cooked rice of the grains long term stored.
