Chemical Compositions and Microscopic observation of White Powder Formed in the Surface of Dried Persimmon (곶감표면에 생성되는 백색분말의 화학조성 및 현미경적 관찰)

  • Chemical composition and microscopic observation of white powder developed in the surface of dried persimmon which produced in several region in Korea were studied. Sugar content in flesh of dried persimmon was $56{\sim}59%$ and composed of glucose and fructose. White powder developed in the surface of dried persimmon was composed of sugar 84.6%, moisture 12.5% and insoluble matter 2.7%, respectively. The major sugar of white powder was glucose with 83.3% and fructose was 16.7%. With scanning electron microscopic obsevation, white powder was seen the shape like a plate, flower, needle and horn, and it was similiar to the shape of recrystalized glucose after hydration. White powder in surface of dried persimmon was seemed that glucose and fructose in flesh were migrated with moisture to drying surface during drying process and glucose was crystalized in the surface of dried persimmon.

Soil Water Characteristic Curve Using Volumetric Pressure Plate Extractor Incorporated with TDR System (TDR 측정시스템이 도입된 압력판 추출 시험기를 이용한 흙-함수특성곡선 연구)

  • The purpose of this study is to measure the volumetric water content of unsaturated soils during drying and wetting process by using volumetric pressure plate extractor (VPPE) incorporated with time domain reflectometry (TDR). The VPPE consists of a pressure cell, a pressure regulator, a burette system and a TDR probe. Two samples with different initial void ratios were prepared in the pressure cell, and the air pressure at the range of 0.1 kPa - 50 kPa was applied to adjust the matric suction by the pressure regulator. The burette system was used to measure the volumetric water content change of the sample according to the matric suction. In addition, the TDR probe, installed in the cell, was used to evaluate the dielectric constant from the reflected signal of the electromagnetic wave at the probe. The volumetric water content of specimen was estimated by the empirical equation between the volumetric water content and dielectric constant, which was calibrated with the Jumunjin sand. The test results show that the volumetric water content calculated by TDR probe is strongly correlated to the measured value by burette system. The hysteresis occurs during drying and wetting process. Furthermore, the degree of hysteresis reduces in the repeated process. This study suggests that TDR may be effectively used to evaluate the water content soil for the determination of water characteristic curve of unsaturated soils.

Fabrication and characterization of 3-D porous scaffold by polycaprolactone (폴리카프로락톤을 이용한 3차원 다공성 지지체 제조 및 특성 분석)

  • This study was a preparatory experiment aimed the development of membrane scaffolds for tissue engineering. A PCL composite solution contained sodium chloride(NaCl). PCL porous membrane scaffolds were formed on a glass casting plate using a film applicator and immersed in distilled water to remove the NaCl reaching after drying. NaCl was used as a pore former for a 3 dimensional pore net-work. The dry condition parameters were $4^{\circ}C$, room temperature (RT) and $40^{\circ}C$ for each different temperatures in the drying experiment. SEM revealed the morphology of the pores in the membrane after drying and evaluated the in vitro cytotoxicity for basic bio-compatibility. The macro and micro pores existed together in the scaffold and showed a 3-dimensional pore net-working morphology at RT. The in vitro cytotoxicity test result was "grade 2" in accordance with the criterion for cytotoxicity by ISO 10993-5. The dry condition affected the formation of a 3 dimensional pore network and micro and macro pores. Therefore, these results are expected provide the basic process for the development of porous membrane scaffolds to control degradation and allow drug delivery.

Combustion Characteristics of Wood Specimens Treated with Methylenepiperazinomethyl-Bis-Phosphonic Acid (Mn+)s (메틸렌피페라지노메틸-비스-포스폰산 금속염으로 처리된 목재 시험편의 연소특성)

  • This study was performed to test the combustive properties of pinus rigida specimens treated with methylpiperazinomethyl-bis-phosphonic acid $M^{n+}$ ($PIPEABPM^{n+}$)s and methylpiperazinomethyl-bis-phosphonic acid (PIPEABP). Pinus rigida Plates were painted in three times with 15 wt% $PIPEABPM^{n+}s$ and PIPEABP solutions at the room temperature respectively. After drying specimen treated with chemicals, combustive properties were examined by the cone calorimeter (ISO 5660-1). It was indicated that the specimens treated with $PIPEABPM^{n+}s$ showed the lower speed to peak mass loss rate ($MLR_{peak}$), (0.104~0.121) g/s than that of PIPEABP plate. In adition, the specimens treated with $PIPEABPM^{n+}s$ showed both the lower total smoke release rate (TSRR), (224.4~484.0) $m^2/m^2$ and $CO_{mean}$ production (0.0537~0.0628) kg/kg than those of PIPEAB plate. Especially, for the specimens treated with $PIPEABPM^{n+}$ by reducing the smoke production rate except 2nd-smoke production rate (2nd-SPR), (0.0254~0.02270) g/s treated with $PIPEABPNi^{2+}$, 2nd-SPR (0.0117~0.0146) g/s was lower than that of PIPEABP plate. Thus, It is supposed that the combustion-retardation properties were improved by the partial due to the treated $PIPEABPM^{n+}s$ in the virgin plate.

In particular, for the specimens treated with $PIPEABPM^{n+}$ by reducing the smoke production rate, the second-smoke production rate (2nd-SPR) $(0.0117{\sim}0.0146)m^2/s$ was lower than that of PIPEABP plate. It can thus be concluded that combustion-retardation properties of the treated $PIPEABPM^{n+}s$ were partially improved compared to those of the virgin plate.

Combustive Properties of Medium Density Fibreboard (MDF) Specimens Treated with Alkylenediaminoalkyl-Bis-Phosphonic Acid Derivatives (알킬렌디아미노알킬-비스-포스폰산 유도체에 의해 처리된 중밀도섬유판의 연소성)

  • This study was performed to test the combustive properties of Medium Density Fibreboard (MDF) specimens treated with piperazinomethyl-bis-phosphonic acid (PIPEABP), methylpiperazinomethyl-bis-phosphonic acid (MPIPEABP), and N,N-dimethylethylenediaminomethyl-bis-phosphonic acid (MDEDAP). MDF Plates were painted in three times with 15 wt% solution of the alkylenediaminoalkyl-bis-phosphonic acids at the room temperature, respectively. After drying specimen treated with chemicals, combustive properties were examined by the cone calorimeter (ISO 5660-1). It was indicated that the specimens treated with chemicals showed the later time to peak mass loss rate ($TMLR_{peak}$) = (340475) s than that of virgin plate by reducing the burning rate. In adition, the specimens treated with chemicals showed the higher $CO_{mean}$ production (0.0883~0.0963) kg/kg than that of virgin plate. Especially, the specimens treated with chemicals showed the higher mean smoke extinction area ($SEA_{mean}$) ($5m^2/kg{\sim}21.5m^2/kg$) than that of virgin plate. Thus, It is supposed that the combustion-retardation properties were improved by the partial due to the treated alkylenediaminoalkyl-bis-phosphonic acids in the virgin MDF Plate. However, It gave a negative effect on smoke reduction.

Combustion-Retardation Properties of Pinus rigida Treated with Ammonium Salts (암모늄염으로 처리된 리기다 소나무의 난연성)

  • This study was performed to test the combustion-retardation properties of Pinus rigida-based materials by the treatment of ammonium salts. Pinus rigida plate was soaked by the treatment with three 20 wt% ammonium salt solutions consisting ammonium sulfate (AMSF), monoammonium phosphate (MAPP), and diammonium phosphate (DAPP), respectively, at the room temperature. After the drying specimen treated with chemicals, combustion properties were examined by the cone calorimeter (ISO 5660-1). When the ammonium salts were used as the retardant for Pinus rigida, the flame retardancy improved due to the treated ammonium salts in the virgin Pinus rigida. However the specimen shows increasing CO over virgin Pinus rigida and It is supposed that toxicities depend on extents. Also, the specimen with ammonium sulfate showed both the lower total smoke release (TSR) and lower total smoke production (TSP) than those of virgin plate. Among the specimens, the sample treated with diammonium phosphate showed a strong inhibitory effect of combustion.

Evaporation Theory for Reclaimed Clay (준설 점토 지반에서의 증발 이론 개발)

  • Desiccation of a soil is basically the removal of water by evaporation, which is controlled by evaporativity and evaporability. Surface evaporation improves the trafficability which is essential for the access of construction equipment in the area reclaimed with soft clay. The existing traditional methods for evaluating evaporation can not account for the deformation of reclaimed soft soils during evaporation. Therefore, a theoretical model for predicting the rate of evaporation from the surface of a deformable material is proposed. The model is based on a system of equations for coupled heat and mass transfer in unsaturated soils. The modified pressure plate extractor test and glass desiccator test were carried out to obtain the soil-water characteristic curve for a deformable soil. The column drying test was conducted to investigate one dimensional water flow, heat flow and evaporation in the surface. A finite difference program was developed to solve the coupled nonlinear partial differential equations, which permit the study of water, vapor and heat flows in the deformable soil. Comparison between measured and simulated values shows a reasonably good matching between the two.

Quality Properties of Beef Jerky Replaced Salt with Soy Sauce, Red Pepper Paste and Soybean Paste during Storage

  • The aim of this study was to investigate the quality properties of beef jerky replaced salt with soy sauce, red pepper paste, and soybean paste. The quality properties of beef jerky including final water activity ($a_w$), moisture content, pH, color, shear force, total plate counts, thiobarbituric acid reactive substance (TBARS) values, and sensory evaluations were investigated. The sliced beef samples were marinated in salt (control), soy sauce (T1), red pepper paste (T2), and soybean paste (T3) for 24 h and then dried at $70^{\circ}C$ for 6-8 h. The water activity of finished beef jerky varied from 0.72 to 0.70. The water activity for control and T1 samples decreased more rapidly as drying proceeded up to 6 h. The samples with salt replacement showed a lower pH and lightness than the control (p<0.05). The T1 sample showed a significant decrease in total plate counts after 21 d of storage (p<0.05). The TBARS for all treatments increased with storage days (p<0.05). The TBARS were significantly lower in T2 and T3 samples compared to control and T1 until 21 d of storage (p<0.05). The samples with salt replacement showed a lower intensity of saltiness than the control. Sensory evaluations found that the replaced soy sauce of beef jerky samples had better overall acceptability scores than the other treatment samples. It was concluded that replacing salt with soy sauce can delay lipid oxidation and enhance the sensory acceptance of beef jerkies.

Studies on the Hand Hygiene Practices of Food-Service Businesses Workers: A Comparison of Full-time and Part-time Workers (외식업소 종사자의 손 위생관리에 관한 연구)

  • Objectives: This study was performed in order to investigate hand hygiene practices among food-service businesses employees based on the awareness of hand-washing and load of indicator bacteria on their hands. It focused on the comparison of full-time and part-time workers in food-service workplaces. Methods: A direct-interview questionnaire survey and microbiological analysis were carried out with sixty workers each. Samples for microbiological analysis were collected through a modified glove-juice method from the hands of the food-service workers and were analyzed for aerobic plate count, total coliform, fecal coliform, Escherichia coli, Staphylococcus aureus, and Salmonella spp. Microbiological analysis was done according to the Food Code of Korea. Results: Significant differences (p<0.01) were found in the survey between the full-time and part-time workers in hand-washing frequency, use of hand-washing agents, and hand-drying methods. More full-time workers responded to washing their hands after preparing food, after visiting outside, after handling raw materials, and before putting on gloves/when changing gloves than did part-time workers (p<0.05). No remarkable difference was found in bacterial load on the hands except in the aerobic plate count between the two groups. The detection of E. coli, S. aureus, and Salmonella spp. on the hands of some food-service workers in both groups revealed poor hand hygiene practices. Conclusions: The results of this study indicate that there is a need for training programs in order to improve hand hygiene practices and strict hand hygiene compliance by food-service workers.
