Effect of Modified Atmosphere Packaging Varying in CO2 and N2 Composition on Quality Characteristics of Dry Fermented Sausage during Refrigeration Storage

  • The current study investigated the effects of the most suitable modified atmosphere packaging (MAP) on the physicochemical, microbiological, and sensory properties of fermented dry sausages during 45 days of refrigeration (4℃) storage period. Treatments were vacuum-packed (control), 25% CO2/75% N2 (MAP1), 50% CO2/50% N2 (MAP2), 70% CO2/30% N2 (MAP3), and 100% CO2 (MAP4). All MAP samples regardless of their CO2 composition significantly (p<0.05) decreased in pH, aw, total plate count, and lactic acid bacteria count values as compared to the vacuum-package during storage. The Enterobacteriaceae count in all MAP packaging was significantly (p<0.05) lower than the vacuum-packed samples and counts in MAP3 and MAP4 samples were markedly (p<0.05) lower than all other treatments in prolonged storage of 15 and 45 days. Based on the thiobarbituric acid reactive substance content at day 15 and 30 storage time, treatments are ranked as follows: Vacuum-packed>MAP1>MAP2>MAP3>MAP4. The a* of MAP4 was higher than all other treatments. In the final storage days, no variation was exhibited (p>0.05) among treatments in lactic acid aroma and sourness, and MAP2 samples had the lowest (p<0.05) overall acceptability. The use of MAPs with an increase in the CO2 from MAP1 to MAP4 samples can help in better microbial inhibition than vacuum package, and 70% CO2/30% N2 (MAP3) and 100% CO2 (MAP4) were effective to maintain several quality parameters (aw, pH, microbial inhibition, stability against lipid oxidation, and instrumental color traits) and extend the shelf life of dry fermented sausage.

  • In the construction of subsea oil and gas developments, it is increasingly common that subsea oil and gas equipment will be installed in subsea well before final hookup and production. Installation of wellheads, subsea hardware, pipelines, and surface facilities (platforms, FPSO, FLNG, connected terminals, or gas plants) are increasingly driven by independent cost and vessel availability schedules; this gives rise to requirements that the subsea facilities must be stored in the seabed for a specific time. In addition, schedule delays, particularly in the installation or startup of the connected platform, FPSO, FLNG, or onshore plant may cause unexpected extensions of the intended storage period. Currently, there are two methods commonly used for storage subsea facilities in the seabed: dry parking and wet parking. Each method has its own risks, challenges, and implications for the facility life and its integrity. The corrosion management and preservation method selection is a crucial factor to be considered in choosing the appropriate storage method and achieving a successful seabed storage. An overview of those factors is presented, along with a discussion on the internal corrosion threats and assessments.

Quality Characteristics of Sprout Ginseng Paste added Dry Oyster and Dry Shrimp (굴과 새우를 이용한 새싹삼 페이스트의 품질특성)

  • Sprout ginseng paste were prepared with pine nut, dry oyster and dry shrimp to examine the antioxidant properties(total polyphenols, total flavonoids, and electron donating ability) and sensory test(attribute difference and acceptance). Sprout ginseng paste were measured based on color value, pH, viscosity, total bacteria cell numbers for 0 and 20 days at $4^{\circ}C$. The higher total polyphenol and total flavonoid content of sprout ginseng paste added with pine nuts, dry oyster, and dry shrimp were higher antioxidant capacity. DPPH radical scavenging activity was increased from 52.2% (SGP0) to 79.5.0 % with SGP5. The attribute test results reveal that the color intensity, bitter taste, and oily taste were decreased in SGP3 to SGP6. Taste, flavor, and coarseness did not show significant difference in SGP0 to SGP6. Thickness and After taste were increased in SGP4 to SGP6. The preference test results reveal that the appearance, flavor, and texture level did not show significant difference in SGP0 to SGP6. Taste and overall preference were increased in SGP4 to SGP6. L value, pH, decrease while a value and b value show no change in sprout ginseng paste with pine nut, dry oyster and dry shrimp. Total cell number was not detected during storage.

Growth characteristics and variation in component of sweet potato (Ipomoea batatas) cultivars according to cultivation period

  • Cultivated varieties of sweet potato were from dry texture type to tender texture type on the basis of consumer preferences. There are many differences in the quantity of sweet potato, starch content, pigment, and sugar content depending on the cultivation season and area, even in the same variety. Therefore, in this study, we attempted to establish optimum time of harvesting through growth characteristics and variation in component like starch, sugar, polyphenol and flavonoid. Four sweet potato varieties were used in this experiment. Among them, Jinhongmi (JHM) & Yulmi (YM) were as dry texture type and Pungwonmi (PWM) & Hogammi (HGM) were as tender texture type. Sweet potatoes were transplanted on 23 May, 2016 and were investigated storage root weight and component contents every 20 days from 60 days to 120 days and surveyed yield at 110, 120, 130 days after transplantation. Result revealed that storage root weight of YM, JHM, and HGM were 30.1, 38.9, 20.8 g respectively in 60 days after transplanting. Storage roots of PWM gerw faster with the weight of 88.2 g. In 120 days after transplanting, storage root weight varied from 88.3 to 118.7 g, HGM was the smallest, and PWM was the largest. Sugar contents of sweet potato ranged from 21.0 to $23.8Brix^{\circ}$ in 60 days after transplanting and from 27.5 to $30.78Brix^{\circ}$ in 120 days after transplanting. In particular, the sugar content of HGM was the highest over $30Brix^{\circ}$ after 80 days. The starch content of dry texture type (YM, JHM) increased from 15.5% to 20.4% and tender texture type (PWM, HGM) increased from 11.0% to 17.3%. Starch content tended to be high in dry type sweet potatoes. The content of polyphenol and flavonoid were highest in 60 days after transplanting and was reduced according to cultivation period. The total yield of PWM was high as 3,154 kg/10a and large storage root of over 250 g accounted for 47.4% in 110 days after transplanting. Storage root (YM, JHM, HGM) of 81~150 g accounted for 34.9% ~ 43.2% in 120 days after transplanting. These are the most marketable. Because consumer in Korea prefers small, round and about 100g size sweet potato. The ratio of large storage root (over 250 g) were increased in all varieties at 130 days after transplanting. Therefore, it is considered appropriate to harvest PWM at 110 days and YM, JHM, HGM at 120 days after transplanting, which planted in late May.

Optimum Storage Temperature for Spring Sowing of Panax ginseng Seeds (봄파종을 위한 인삼 종자 저장 적정 온도 연구)

  • Background: Usually ginseng seeds are sown during autumn and spring. Sowing in spring often results in poorer seedling establishment than in autumn. One of the reasons for poor germination could be cold-treatment condition for breakage of physiological dormancy during winter. Here we tested the effects of storage temperature used during cold treatment on germination. Methods and Results: Germination properties were observed after dehiscent seeds were stored as wet and dry at 2℃, -2℃, -3.5℃ and alternating temperature (AT). Seed dryness and storage temperature affected germination properties (p < 0.01). Wet and AT condition germinated highest, and wet and -3.5℃ condition germinated lowest, which was 91.2% and 1.4% respectively. Mean germination time (MGT) of the wet and AT condition was faster than other treatments at 2.4 days, and the dry and -2℃ condition was the longest. Germination performance index (GPI) was highest for wet and AT condition (37.7%) and the lowest for wet and -3.5℃ condition (0.5%). The growth of above-ground and below-ground were the best for wet and 2℃ condition, and wet seeds showed better growth than dry seeds (p < 0.01). Conclusions: For cold treatment, ginseng seeds may not be stored below -2℃ for successful germination during spring sowing.

  • One of the practical limitations with the use of liposomes for delivery of the pharmaceutical substances such antigens is that liposomes are relatively unstable in storage. In order to extend the stability of liposome in storage without affecting their functional activity, solution-type liposomes were dehydrated to form a structurally intact dry liposomes. Comparative immunological evaluation was carried out for both dry and solution-type liposomes containing gag-V3 chimera, consequently it was found that dry liposomes elicited both humoral and cellular response as efficiently as solution-type liposemes did against the same gag-V3 antigen. Especially, long-term stability of the liposomes was remarkably enhanced by the dehydration made to loposomes without a significant change in its ability to elicit immune response in vivo. These results indicate that dry pH-sensitive liposome may become an effective delivery and adjuvant system for general vaccine development.

A Study on Mechanical Behaviors of Granite and Sandstone at Low Temperature (저온하에서의 화강암, 사암의 역학적 거동에 관한 연구)

  • To stabilize the energy price, the more storage facilities of energy are required and among the storage methods of LPG and LNG, the method of storage at low temperature under normal confining pressure is considered. It is needed to understand the mechanical and thermal characteristics of rock under temperature variation so that the behaviors of rock can be predicted. In this paper, the variation of the rock charateristics of the Hwangdeung granite and the Boryung sandstone is studied at low temperature. The mechanical characteristics of rock under low temperatures are that as temperature decreased, unaxial compression strength and Young's modulus increased for Hwangdeung granite; strength and Young's modulus in wet condition were greater than those in dry condition. In the case of Boryung sandstone, as temperature decreases unaxial compression strength and Young's modulus increase but decrease below -10$0^{\circ}C$ in dry condition and below -16$0^{\circ}C$ in wet condtion. The mechanical characteristics of rock after cooling to previous temperature and thawing are that uniaxial compression strength and Young's modulus decrease as temperature decreases. Uniaxial compression strength and Young's modulus in wet conditon decrease more than those in dry condition. Brazilian tension strength decreases as temperature decreases.

Quality Characteristics of Sulgitteok Using Dry Non-Glutinous Rice Flour with Added Various Sweeteners (당류의 종류를 달리한 건식 쌀가루 설기떡의 품질특성)

  • The purpose of this study was to identify appropriate sweeteners that could improve the dryness, while reducing calorie by adding various sweeteners to Sulgitteok using dry non-glutinous rice flour. Of six sweeteners (sucrose, trehalose, honey, acesulfame K, oligosaccharide, and erythritol) added, Sulgitteok with acesulfame K had the highest moisture content, whereas Sulgitteok with trehalose had the lowest moisture content. The moisture content of all samples were decreased when storage period was increased except the sample added with trehalose. Sulgitteok with erythritol had the highest L-value, whereas Sulgitteok with oligosaccharide had the lowest L-value. The L-value and b-value of Sulgitteok samples decreased when storage period was increased. Sulgitteok with trehalose had the highest hardness, whereas Sulgitteok with oligosaccharide had the lowest hardness. The hardness increased in all samples when storage period was increased. Sulgitteok sweetened with acesulfame K and honey had the highest acceptance.

Allowable peak heat-up cladding temperature for spent fuel integrity during interim-dry storage

  • To investigate allowable peak cladding temperature and hoop stress for maintenance of cladding integrity during interim-dry storage and subsequent transport, zirconium alloy cladding tubes were hydrogen-charged to generate 250 ppm and 500 ppm hydrogen contents, simulating spent nuclear fuel degradation. The hydrogen-charged specimens were heated to four peak temperatures of $250^{\circ}C$, $300^{\circ}C$, $350^{\circ}C$, and $400^{\circ}C$, and then cooled to room temperature at cooling rates of $0.3^{\circ}C/min$ under three tensile hoop stresses of 80 MPa, 100 MPa, and 120 MPa. The cool-down specimens showed that high peak heat-up temperature led to lower hydrogen content and that larger tensile hoop stress generated larger radial hydride fraction and consequently lower plastic elongation. Based on these out-of-pile cladding tube test results only, it may be said that peak cladding temperature should be limited to a level < $250^{\circ}C$, regardless of the cladding hoop stress, to ensure cladding integrity during interim-dry storage and subsequent transport.

CFD Analysis of Natural Convection Flow Characteristics of Various Gases in the Spent Fuel Dry Storage System

  • Objective of this study is to compare the inherent characteristics of natural convection flow inside the canister of spent fuel dry storage system with different backfill gases by utilizing computational fluid dynamics (CFD) code. Four working fluids were selected for comparison study. Helium currently used backfill gas for canister, air, nitrogen, and argon are frequently used as coolant in many heat transfer applications. The results indicate that helium has very distinct conductive behavior and show very weak natural convective flow compared to the others. Argon showed the strongest natural convective flow but also the worst coolability. Air and nitrogen showed similar characteristics to each other. However, due to difference in Prandtl number, nitrogen showed more effective natural convective flow. These results suggest that experimental validation for the nitrogen is needed to investigate the potential coolability other than currently commercially used helium.
