돈육가공저장식품(豚肉加工貯藏食品)의 Nitrite 잔존량(殘存量)과 지방산패(脂肪酸敗) -가내제조(家內製造)한 Dry Sausage와 Dry Ham의 지방산패(脂肪酸敗) 및 저장성(貯藏性)과 Dry Ham의 기호도에(嗜好度)에 관(關)하여- (Residual Nitrite and Rancidity of Dry Pork Meat Products -A Rancidity and Storability of Home-made Dry Sausage and Dry Ham and Public Taste of Dry Ham-)

  • 돈육(豚肉)을 원료(原料)로 하여 가내제조(家內製造)한 dry sausage와 dry ham의 저장성(貯藏性)을 지방(脂肪)의 산패(酸敗)로서 측정(測定)하고 nitrite의 확산화효과(擴酸化酵果)를 조사하였다. 또한 dry ham에 대(對)한 기호도조사(嗜好度調査)를 하였다. 그 결과(結果)는 다음과 같다. 1. 주(主)로 지방(脂肪)의 산패(酸敗)에 기인하는 dry sausage와 dry ham의 저장성(貯藏性)은, POV 10을 기준치로 하였을 때 dry sausage는 35일(日) 정도, dry ham은 50일(日) 이내(以內)에 그 저장성(貯藏性)이 상실된다고 보인다. 2. 건조육제품(乾燥肉製品)의 NaCl 함량변화(含量變化)는 가공육(加工肉)의 숙성과정(熟成過程)을 그대로 반영(反映)하며, dry ham의 중량감소와의 상관계수는 0.85였다. 3. 대학생(大學生) 35명(名)을 대상(對象)으로 한 ham의 기호도(嗜好度)는 ‘먹을만 하다’거나 ‘맛없다’는 편이 66%나 되며, ‘술안주’로 좋겠다는 편이 60%로서 dry ham의 식생활(食生活)참여는 아직 힘든 것 같다.

교합장치용 아크릴레진의 표면경도와 굴곡강도에 대한 침수의 영향 (The Effect of Water Immersion on the Surface Strength and the Flexural Strength of the Acrylic Resin for Occlusal Appliances)

  • 측두하악장애 치료를 위해 사용되는 야간 이갈이 교합장치의 착용 여건을 in vitro 실험으로 재현함으로써, 수분 침윤 및 건조 주기 반복 처리가 교합장치용 레진의 표면경도와 굴곡강도에 미치는 영향을 알아보고자 하였다. 폴리메틸메타크릴레이트를 주성분으로 하는 교합장치용 레진을 사용하여 막대형의 시편을 제작하였다. 대조군 1로 사용되는 레진 시편은 $37^{\circ}C$에서 7일간 수분에 침윤시킨 후, 그리고 대조군 2의 레진 시편은 상온에서 7일간 건조한 상태로 유지한 후 각각 시편의 표면경도와 굴곡강도를 측정하였다. 실험군으로 사용되는 레진 시편을 $37^{\circ}C$에서 7일간 수분에 침윤 시킨 후, 하루 8시간 동안 침수를 시키고 16시간 동안은 상온에서 건조를 시키는 수분 침윤 및 건조 주기 처리를 30일 동안 계속 하였다. 이러한 주기적 처리 1일째, 7일째, 30일째에 시편의 표면경도와 굴곡강도를 측정하였다. 대조군과 실험군의 표면경도와 굴곡강도의 차이에 대해 통계분석을 하여 다음과 같은 결과를 얻었다. 1. 실험군과 대조군의 교합장치용 레진의 표면경도는 수분 침윤 및 건조 주기의 반복 처리에도 유의한 차이를 보이지 않았다. 2. 교합장치용 레진의 굴곡강도는 수분 침윤 및 건조 주기를 30일간 처리한 실험군이 1일째의 실험군 및 제1대조군에 비해 더 컸다. 이러한 결과를 측두하악장애 환자들에서 교합장치를 사용하고 보관하는 방법에 고려할 수 있을 것으로 사료된다.

Physicochemical properties of crust derived from dry-aged Holstein and Hanwoo loin

  • This study evaluated the quality characteristics of crust derived from dry-aged Holstein and Hanwoo loins and their effects on food as additives. With respect to physicochemical properties, we examined the proximate composition, pH value, salinity, color, water and fat absorption, emulsifying capacity, and swelling yield. The protein and ash contents in the Holstein crust were significantly higher than those in the Hanwoo crust (p < 0.0001). The fat content in the Hanwoo crust was significantly higher than that in the Holstein crust (p < 0.01). The salinity, lightness, and yellowness of the Hanwoo crust were significantly lower than those of the Holstein crust (p < 0.001). Furthermore, the pH value and emulsifying capacity of the Hanwoo crust were significantly higher than those of the Holstein crust (p < 0.001). The fat absorption of the Holstein crust was significantly higher than that of the Hanwoo crust (p < 0.001). The swelling yield of the Holstein crust was significantly higher than that of the Hanwoo crust at pH 3 and 4 (p < 0.001), whereas the swelling yield of the Hanwoo crust was significantly higher than that of the Holstein crust at pH 7 (p < 0.001). Principal component analysis of dry-aged Hanwoo, Holstein, and non-aged Holstein showed different flavor patterns for each sample. Finally, the results showed that the crusts derived from dry-aged Hanwoo and Holstein loins were suitable flavor enhancers.

필터팩을 이용한 서울과 춘천, 안면도의 건성 강하량 측정 (Measurement of Dry deposition at Seoul, Chunchon and Anmyon-do by Using Filter pack Method)

  • Atmospheric concentrations of acidic pollutant were measured by the 4 stage filter pak method at Chunchon and by the 3 stage filter pack method at Seoul and Anmyon-do from January to December 1998. The sample was collected for 24 hours on every Wednesday. Concentrations of particulate matters were highest at Anmyon-do. The particulate concentration was much higher during the warm season than other seasons. While the particulate concentration was higher during the warm season, the concentration of gaseous matter was higher in winter. Dry deposition flux was calculated by using reported deposition velocities and concentration of pollutants measured in this study. The dry deposition velocities used in this study for SO$_2$, SO$_{4}^{2}$, HNO$_3$,NO$_{3}^{-}$ and NH$_3$ were 0.29, 0.15, 2.08( 2.13 only for Anmyon-do), 0.20 and 1.00cm/sec, respectively. At Chunchon, annual sulfur flux originated from dry deposition was 384 kg/$textrm{km}^2$, and the flux from wet deposition was 782kg/$textrm{km}^2$. Dry deposition of sulfur was 33% of total sulfur deposition. The annual nitrogen flux originated from dry deposition was 1,892kg/$textrm{km}^2$. And the flux from wet deposition was 1,066kg/$textrm{km}^2$. Dry deposition of nitrogen was 64% of total nitrogen deposition. Dry deposition as well as wet deposition have to be considerd in the study on acidification of environment such as soil or watershed.

Assessment of Ruminal and Post Ruminal Amino Acid Digestibility of Chinese and Canadian Rapeseed (Canola) Meals

  • Two rapeseed meal samples (Sample A, hybrid 5900 and sample B, double low rapeseed No.4) obtained from China and one Canola meal sample obtained from a local crushing plant in Canada were used to investigate the amino acid degradability of rapeseed/Canola meal in rumen and amino acid digestibility of ruminal incubation residues by precision-fed rooster bioassay. Results show that in ruminal incubation the degradation rate of non amino acid nitrogen in crude protein is higher than that for amino acid nitrogen in crude protein, the results also suggest that the degradation rate of amino acid nitrogen in Chinese rapeseed meal sample B was lower than that for Canadian Canola, but that in Chinese rapeseed meal sample A is much close to that for Canadian canola meal. For all amino acids the digestibility of the bypass or residual protein as measured by the precision-fed rooster bioassay tended to be lower for Chinese rapeseed meal sample A than for sample B or Canadian canola meal which had similar digestibility values. However following a calculation of total amino acid availability, involving the digestibility of amino acids in the rumen and rooster bioassay the results are less contradictory. Results indicated that in traditional roasting-expelling process, heat treatment, especially dry heat treatmeat could decrease amino acids degradability in rumen of rapeseed/canola meal, but also may decrease total availability of amino acids of rapeseed/canola meal.

Preparation and Quality of Dried Yam Chip Snack Coated with Ascorbic Acid Cocrystallized Sucrose

  • The specific objectives of this study were to dry yam chips using microwave vacuum drying, freeze drying and hot air drying, then to coat the dried yam chips with ascorbic acid cocrystallized sucrose, and finally to compare the quality of yam chip snack foods with respect to drying and coating characteristics. The microwave vacuum dried sample showed the highest drying rates and much less surface damage than the hot air dried one did. The shape and color of the microwave vacuum dried/coated sample were allocated between those of the freeze dried/coated sample and the hot air dried/coated sample. The freeze dried/coated sample scored excessively low in organoleptic hardness and chewiness to be suitable as a snack. The hot air dried/coated sample was too deep in color, wrinkled, excessively high in organoleptic hardness and chewiness, and excessively low in mouthfeeling. Therefore, the microwave vacuum dried/coated sample presented the best overall attributes as a snack, with respect to organoleptic characteristics, shape, color, and drying rates.

울릉도 시추 코어의 상온 전기비저항과 물성 간의 상관성 (Electrical Resistivity at Room Temperature and Relation between Physical Properties of Core Samples from Ulleung Island)

  • 울릉도 지열조사 시추공에서 채취한 암석코어 중 약 20 m 간격으로 수집한 23개의 코어시료에 대하여 수포화 전기비저항과 건조 전기비저항, 건조밀도와 유효공극률을 측정하고, 암석코어 별 전기비저항 범위를 제시하였으며 물성간 상관성을 분석하였다. 암석코어의 건조과정 말미에 질소가스를 주입함으로써 습기의 공극내 유입 및 흡착을 지연시켜 건조 전기비저항을 측정할 수 있는 전처리 방법을 고안하였다. 측정된 물성 상호간의 상관성을 분석한 결과, 울릉도 암석코어의 건조밀도는 유효공극률과 매우 높은 상관성을 보였는데, 특히 '건조밀도 감소에 대한 유효공극률 증가율'이 암종에 따라서 큰 차이를 보여서 현무암질 화산쇄설암이 가장 크고 조면암질 화산쇄설암, 조면암의 순으로 작아진다. 따라서 울릉도 암석코어는 건조밀도와 유효공극률의 상관성 분석만으로도 암종 구별이 용이한 특징을 나타내었다. 수포화 전기비저항은 유효공극률 및 건조 밀도와 매우 높은 상관성을 보이는 반면 건조 전기비저항은 이들과 특별한 상관관계를 찾을 수 없었다.

새로운 ICP 장치를 이용한 고온 초전도체의 Dry Etching과 기존의 Wet Etching 기술과의 비교 (Comparison of the Existing Wet Etching and the Dry Etching with the ICP Process Method)

  • In this report, a new process for patterning of YBaCuO thin films, ICP(inductively coupled plasma) method, is described by comparing with existing wet etching method. Two 100㎛ wide and 2mm long YBaCuO striplines on LaAlO$_3$ substrates have been fabricated using two patterning techniques. And the properties were compared with the critical temperature and the SEM photography. Then, the critical temperatures of two samples were about 88 K, but the cross section of sample using ICP method was shaper than that using the wet etching method. ICP method can be used as a good etching technique process for patterning of YBaCuO superconductor.

  • The electrical effects of dry-etch on n-type GaN by an inductively coupled $Cl_2/CH_4/H_2/Ar$ plasma were investigated as a function of ion energy, by means of ohmic and Schottky metallization method. The specific contact resistivity(${\rho}_c$) of ohmic contact was decreased, while the leakage current in Schottky diode was increased with increasing ion energy due to the preferential sputtering of nitrogen. At a higher rf power, an additional effect of damage was found on the etched sample, which was sensitive to the dopant concentration in terms of the ${\rho}_c$ of ohmic contact. This was attributed to the effects such as the formation of deep acceptor as well as the electron-enriched surface layer within the depletion layer. Furthermore, thermal annealing process enhanced the ohmic and Schottky property of heavily damaged surface.

Implementation of a Dry Process Fuel Cycle Model into the DYMOND Code

  • For the analysis of a dry process fuel cycle, new modules were implemented into the fuel cycle analysis code DYMOND, which was developed by the Argonne National Laboratory. The modifications were made to the energy demand prediction model, a Canada deuterium uranium (CANDU) reactor, direct use of spent pressurized water reactor (PWR) fuel in CANDU reactors (DUPIC) fuel cycle model, the fuel cycle calculation module, and the input/output modules. The performance of the modified DYMOND code was assessed for the postulated once-through fuel cycle models including both the PWR and CANDU reactor. This paper presents modifications of the DYMOND code and the results of sample calculations for the PWR once-though and DUPIC fuel cycles.
