백김치 숙성중 물리화학적 특성변화 (Changes in Physicochemical Properties of Baik-kimchi during Fermentation)

  • To elicit the effect of fermentation on food quality of the watery Chinese cabbage pickles without fish sauce and red pepper paste(Baik-kimchi), changes in physicochemical properties and microstructure of fiber components were studied. Better water holding capacity(WHC) was showed in Baik-kimchi fermented at $25^{\circ}C$ than that of Baik-kimchi fermented at 5$^{\circ}C$. WHC measured at pH 2 and 6 were ranged from 10.18 to 16.79g/g dried sample for Baik-kimchi fermented at $25^{\circ}C$ and 6.51~14.58g/g dried sample for sample for samples at 5$^{\circ}C$, respectively. The higher WHC was resulted in pH controlled freeze-dried sample to pH 6 than that measured in pH 2 sample. The settling volume(SV) and oil adsorption capacity(OAC) increased with fermentation period and kept the same value for a little while, but slightly decreased in the over ripening period. Baik-kimchi fermented at $25^{\circ}C$ exhibited more shrunk microstructure of parenchyma cell and xylem than those of Baik-kimchi fermented at 5$^{\circ}C$. The appearance of SDF of the both Baik-kimchi ripened at 5$^{\circ}C$ and $25^{\circ}C$ could give granular shape, whereas the overripened Baik-kimchi had smooth surface of SDF. On the other hand, the IDF retained the original shape during fermentation.

비닐하우스 이용 고추 건조 시 야간 원적외선등 조사량이 품질에 미치는 영향 (Effects of Far-infrared Irradiance at Night on Quality of Sunlight Dried Red Pepper (Capsicum annuum L.) in Plastic Houses)

  • 본 연구는 원적외선등 적정 조사량이 상품성과 건조 효율에 미치는 효과를 구명하기 위하여 실시하였다. 원적외선등 조사량은 대조구(관행), $250W{\cdot}6.6m^{-2}$, $250W{\cdot}3.3m^{-2}$, $500W{\cdot}3.3m^{-2}$ 등 4처리를 두었다. 고추 건조기간은 $500W{\cdot}3.3m^{-2}$$250W{\cdot}3.3m^{-2}$는 12일, $250W{\cdot}6.63m^{-2}$는 14일, 관행은 15일이었다. 주간 온도는 처리 간에 동일하였으며, 야간 최저온도는 원적외선등 처리구가 $29.5-37.2^{\circ}C$, 관행이 $23.8^{\circ}C$로 가장 낮았다. 건고추 상품 수량은 원적외선등 $250W{\cdot}3.3m^{-2}$ 처리에서 가장 우수하였으며, 원적외선등 조사 처리구가 대조구보다 7-14% 증가하였다. 상품과율은 원적외선등 조사 처리구에서 93.6-96.3%로 대조구 87.0-87.5%보다 높았다. 고추의 ASTA 값은 $250W{\cdot}3.3m^{-2}$, $250W{\cdot}6.6m^{-2}$, $500W{\cdot}3.3m^{-2}$, 관행 순으로 높았다. 캡사이신 capsaicin 함량은 처리 간에는 일정한 경향을 나타내지 않았다. 본 실험에서 얻어진 결과는 태양초 건조 기간 단축뿐만 아니라 고추의 품질 향상에 기여하리라 기대된다.

The Development of Cereal Bars with Dried Anchovy for Chinese Customer Using Check All That Apply (CATA) Analysis for Liking and Disliking

  • Today, energy bars are consumed not only as snacks but also as meal replacement foods. Convenience and nutritional supplementation are the main factors accounting for the increasing use of energy bars. Two hundred Chinese customers who attended the China Fisheries & Seafood Exposition in China, and had no inhibitions about consuming cereal bars were selected. The questionnaire was composed of CATA choices that selected both the reasons for liking and disliking four different types of cereal bars, namely topokki flavor (hot pepper paste), seaweed flavor, kimchi flavor, and ginseng flavor cereal bars with 10% of dried anchovy content produced by BadaOne Co. (Seoul, Korea). The purpose of the study was to investigate Chinese consumer's attitudes and acceptance of different flavored cereal bars containing protein and calciumrich anchovy. For the selected Chinese customers, the acceptance score for the seaweed flavor was the highest, followed by topokki, red ginseng, and kimchi. The acceptance for the topokki flavor was higher than for seaweed for the attributes of color except for general acceptance, flavor, aroma, and texture. The results of the survey showed that the acceptance of kimchi was the lowest, contrary to earlier predictions. The results of the Check All That Apply (CATA) analysis showed that the reasons for liking the seaweed & anchovy flavor were the most diverse, and there was no reason chosen for disliking this flavor. The reasons for liking this flavor were listed as sweet flavor, healthy, seafood flavor, malty flavor, texture, new/unique, and umami. In the case of topokki and kimchi, the reason for disliking the flavor was umami, and in the case of red ginseng, the ginseng flavor was the reason for both likes and dislikes. CA analysis showed that both the flavor and emotional factors were positive for seaweed & anchovy and topokki, but negative for red ginseng. As a result, seaweed & anchovy flavor, which is familiar to the Chinese people, should be the first cereal bar considered for a launch.

건고추의 저장 중 색소 및 신미성분에 대한 감마선과 훈증 처리의 영향 (Effects Gamma irradiation and Fumigation on Pigment and Pungent Components of Red Pepper during Storage)

  • 건고추의 새로운 검역 위생화 처리 방법을 연구하기 위하여 현행 상업적 조건의 methyl bromide (MeBr) 및 phosphine ($PH_3$) 훈증과 감마선 조사(5, 10 kGy)의 영향을 건고추의 수용성 색소, capsanthin 및 capsaicin에 대하여 처리 직후와 실온 8개월 저장 후에 비교하였다. 수용성 색소는 대조군과 감마선 조사군에 비해 훈증 처리군에서 갈색도(420nm)가 유의적으로 증가하였으며, 이 같은 경향은 과피와 씨에서 유사하게 나타났다. Capsanthin의 변화에서는 각처리군 간에 차이는 크지 않았지만 10 kGy 조사된 과피에서 다소 낮은 값을 보였다. 저장 8개월 후에는 전반적으로 유의적으로 감소하였고 과피에서의 변화($26.76{\sim}38.08%$)가 가장 두드러졌다. 건고추의 매운맛 성분인 carsaicin과 dihydrocapsaicin 함량은 대조군과 5 kGy 조사군 간에는 유의적인 차이가 없었으나, 훈증처리와 10 kGy 조사군에서는 함량이 감소되었다(p<0.005). 특히 8개월 실온 저장 후에는 전체적으로 매운맛 성분이 감소하였고, 대군에 비해 처리군의 변화가 크게 나타났다.

취학전(就學前) 아동(兒童)의 식품기호(食品嗜好)와 식습관(食習慣) 조사연구(調査硏究) (A Study on Food Attitude and Dietary Habits of Pre-school Children)

  • A group of 132 pre-school children with a mean age of six years and one month was the subjects of this investigation. These children were members of three nursery schools locating in Kwang-ju city. Each child's mother replied to a questionaire which included 42 food items and 4 questions. The results showed that the food preference of each child was variable and the group as a whole expressed more positive than negative feelings. The average number of foods liked per child was 22.9(range: $7{\sim}42$) among 42 food items. Peach, Apple, Strawberry, Laver, Egg, Tomato, Sweet Potato, Tangerine Orange and Beef were ranked in descending order of 'like' ratings. The average number of foods refused was 4.9 (range: $0{\sim}25$). Onion, Liver, Red Pepper Leaf, Root of Bellflower, Taro, Wild Seasame Leaf, Egg Plant, Cabbage, Water Cress and Bracken were ranked in descending order of 'refuse' ratings. The odor of hurting feelings, the hot taste and the flabby texture were the reasons why the children refused these foods. The average number of foods unexperienced was 4.4 (range: $0{\sim}14$). Kidney, Dried Small Whitebail, Tangle (DA SHI MA), Liver, SA RI Mushroom, Acorn Mook, Dried Fragrant Mushroom, Pine Agaric, Root of Bellflower and Ped Pepper Leaf were ranked in descending order of 'unexperience' ratings. Children's 'like' rating toward total foods was 57.3% and the 'refuse' rating was 11.7%. Among eight food groups, fruits showed the highest favority (91.4%) and mushroom showed the least (25.9%). The difference between male and female in the preference of total foods did not showed significant level. But the difference were significant in those of individual food groups; other vegetables, green and yellow leafy vegetables, mushrooms(above, p.<01), fishes and shellfish and sea weeds (above, p<.05). Children who had experienced meals missed rated 59.1% and 34.1% of these children missed meals once a week. The main reason for maels missed was due to the heavey snacks before meal time. Children who had snacks twice a day rated 45.6%. Main foods used as their snacks were starch foods (Cake, Biscuit, Sweet Potato) and citrous foods (Fruits, Apple, Tangerine).

경기도 음식문화의 연구 (Dietary Survey in Kyunggido Area)

  • This study was conducted to investigate the contemporary dietary life of residence in Kyunggi province. People living in Kimpo, Yoju districts(farm villages), Kapyung districts (mountain villages) and Hwasung districts (fishing villages) were selected for this research as subjects from August S to 19,1997. The results of the survey are summarized as follows: 1. Cooked rice was a staple food. However nuddles and soojaebees(soup with dough flakes) was taken as lunch or snacks but Juk(rice guel) or Dduk(rice cake) was not treated as a meal. 2. Dishes were consisted with soup or chigae, kimchi and namul(seasoned vegetables), and fishes, meats, salted sea foods, dried fishes, jangacchi(dried seasoning radish) were also taken by sometimes. 3. Soy sauce, bean paste, red pepper bean paste were made by every home even if they were very busy. 4. Festival days such as New Year's Day, daeborum(the 15th day of January), chusok(mid-autumn festival), and kosaa(October ceremony) and dongee(one of 24 seasons by lunar calendar) are skipped oftenly and slowly forgotten by people. They do not celebrate Samgin-nal(the third day of March), Buddha's birthday(the 8th day of April by lunar calendar), danoh(the 5th day of May), yoodoo(the 15th day of June), chilsok(the 7th day of July), Jungyang(the 9th day of September) and the last day of the year either 5. Due to improved kitchen system, we couldn't see the old kitchen devices.

Identification of FM001 as Plant Growth-Promoting Substance from Acremonium strictum MJN1 Culture

  • A plant growth-promoting substance, FM001, was isolated from the culture broth of Acremonium strictum MJN1. The purification steps included solvent extraction, adsorption chromatography using Diaion HP20, TLC on silica, and HLPC using a C-18 column. The purified FM001 enhanced rice seedling growth by $11.1\%\;and\;34.0\%$ of the dried weight of the shoots and roots, and also radish growth by $26.5\%\;and\;23.7\%$ of the top length and dried weight. FM001 also significantly promoted the growth of red pepper by increasing $32.7\%$ of fruit weight and $11.3\%$ as regards the height. FM001 consisted of C, H, O, N, and S, and its molecular weight was determined to be 537.78 Da. The structure of FM001 resembled brassinosteriods, and it would appear to have great potential as an effective bio-fertilizer.

동결건조 비빔밥을 이용한 방사선 멸균 우주식품 개발 (Development of Freeze-dried Bibimbap, Korean Cooked Rice with Red Pepper Paste, as a Space Food Sterilized by Irradiation)

  • This study evaluated the microbial population (total aerobic count, fungi) and organoleptic quality of freeze-dried bibimbap sterilized by gamma irradiation to develop the space food. An irradiation dose above 30 kGy was needed to sterilize the freeze-dried bibimbap, while organoleptic quality of the sample was significantly decreased by irradiation (p<0.05). However, it was observed that scores on overall acceptance of rehydrated bibimbap after irradiation were the highest, when vitamin C and paprika extract were added at 0.1%, respectively. Therefore, it was considered that the freeze-dried bibimbap could be developed as a space food, which meet microbial requirements and organoleptic quality through addition of vitamin C 0.1% and paprika extract 0.1% before gamma irradiation at 30 kGy.

국내산 고추를 이용한 육류용 고추분말 복합조미료 개발 및 관능특성 평가 (Development of Value-Added Seasoning Products with Korean Chile Peppers (Capsicum annuum L.) for Grilled Beef and Their Sensory Evaluation)

  • 한국산 고춧가루를 이용한 수출용 고부가가치 육류 고추분말 복합조미료를 개발 하였다. 한국산 고추분말가루를 이용하여 복합조미료 개발 시 한국산 고춧가루는 미생물의 부패정도가 적어 위생적이고 한국 고유의 재료인 유자, 단호박, 버섯을 혼합하여 외국 조미료에 비해 맛의 차별화를 두었다. 수출용 육류 고추복합조미료(AI)는 한국산 고춧가루(20%), 오레가노, 파슬리, 타임 등의 총 허브류(26.1%), 소금(11.4%), 버섯, 마늘, 각각 8.5%로 구성되었고 그 외 흑후추, 파프리카, 단호박, 유자 등을 첨가하여 제조하였다. 미국인을 대상으로 한 관능평가에서 AI(고춧가루, 오레가노, 파슬리, 타임, 흑후추, 소금, 버섯, 커리, 유자, 파프리카, 단호박 및 마늘)은 미국산 고추 복합조미료제품보다 높은 선호도를 나타냈다. 따라서 해외 시장에 적극적으로 대처할 수 있는 한국산 고추의 새로운 가공식품 분야로서 가능성을 제시하였다.

홍고추 꼭지 제거장치 개발 (Development of calyx-removing unit for non-dried red pepper)

  • 홍고추 꼭지 제거 장치를 설계·제작하고 실험을 통하여 성능을 검증하였다. 꼭지 제거 시 발생되는 최대 손실은 공급량 48g/s에서 15.5%를 나타냈으며 꼭지 중량 비를 감안한다면 실제 최대 손실율은 약 8.7%로 예상된다. 고추 이탈율은 공급량 87g/s에서 최대 35%를 나타냈으며, 꼭지 제거율은 공급량 48g/s에서 최고 66%를 나타냈다. 총 고추 투입량을 기준으로 환산한 꼭지 제거 수율은 최고 55%로 나타나 당초 예상했던 성능과는 차이를 나타냈다. 공급량 48g/s, 꼭지 제거율 66%, 손실을 28%, 1일 작업 시간 8시간을 기준으로 홍고추 꼭지 제거 능력을 계산하면 약 912kg으로 이는 인력에 의한 처리량의 약 1.5배에 해당한다.
