푸드뱅크(Foodbank) 사업 수혜자의 실태 분석 및 이용편익 평가 (Investigation of the Conditions and Evaluation of the Benefits of the Foodbank Program from the Recipients Perspective)

  • The purposes of this study were to: (a) investigate the characteristics of recipients' of the non-government foodbank program, (b) examine the health and dietary related conditions of them, and (c) evaluate the benefits and effectiveness of the foodbank program from the recipients' perspective. A total of 21 groups (n = 755) and 75 individual recipients participated in the survey. The main results of the study were as follows; (a) Generally, the individual recipients were 74-year-old female, livelihood protectee, and those who received government assistance or funds from private donators as their source of livelihood. (b) The ages of group recipients varied widely, and they also received government assistance or funds from private donators as their source of livelihood. (c) Most of the donated foods were bakery and confectionery Items. rice, and milk and other dairy products. (d) Benefits such as the decrease in the recipients' food expenses and an enhancement of their nutritional statuses were identified. (Korean J Community Nutrition 8(2) : 231∼239, 2003)

푸드뱅크 조리기탁식품의 안전성 확보를 위한 위생관리 실태 평가 (Evaluation of the Perceived Performance on Sanitary Management of Cooked Foods in Foodbanks)

  • A survey was implemented to suggest basic data for assuring the safety of cooked foods in foodbank operations. A questionnaire consisted of total 48 items including general characteristics, basic inputs and perceived importance/performance of sanitary management. One hundred twenty-eight responses among the 267 nationwide foodbanks were used for the statistical analysis. About forty-one percent of foodbanks was operated a period of 1-3 years and 43.0% of them were managed by social welfare organizations. The number of staff was only 0.5 person per operation with the whole responsibility and 1.0 with additional work, and thus most of the work was managed by volunteers. Job satisfaction was shown to be moderate and was affected by specialty and salary mostly. The facilities and equipment in foodbanks were not enough to operate and freezers/refrigerators were the top priority to supplement. Most of the respondents attended a nationwide level sanitary education program (79.7%); but complained not enough frequency of education (90%). The sanitary status of the donated foods was considered as satisfactory but some safety practices had to be improved, including personnel expenses and operating costs in the district level, a sanitary awareness of the donors and a general management of the facilities arid equipment. An assessment on sanitary management resulted in an overall average of 4.45 out of 5 points in importance and 3.85 in performance showing the high level of sanitation perception in foodbank managers. From the IPA analysis, the fields found to be improved were sanitation management during cooking and temperature control as well as cleanliness and sanitation of both transport vehicle and refrigerator/freezer. To secure the food safety in foodbanks, consequently, personnel support, supplement of facilities and equipment, intense sanitation education and development of sanitation management program is needed.

한국 전통 발효식품의 원료에서 채집된 Rhizopus속의 분류학적 관찰 (Taxonomic Observations of the Isolates of Rhizopus species Inhabiting at the Raw Materials for Korean Traditional Fermented Foods in Korea)

  • The isolates of Rhizopus collected from Korean traditional fermented food meju and nuruk, were compared with the well known species of Rhizopus donated. The isolates of Rhizopus were identified with the numerical analyses calculated from RAPD-DNA bands, and confirmed with the microscopic observations of morphological features on PDA. The isolates of R. oryzae purchased were segregated through the results of RAPD or the morphological features. The species of R. nigricans, known as an illegitimate species, were different from those of R. stolonife and it is estimated that they are species of Rhizopus, again. According to microscopic observations and the result of RAPD, Some isolates of R. oryzae purchased belong to R. nigricans and are completely different from R. oryzae in their growth. The isolates of R. nigricans included with several isolates of R. oryzae identified for the different phenotypes and were heterogenous. The isolate of R. oligosporus were speculated to be different from morphological features of Rhizopus, but to be similar to the species of Absidia on the apophysis of sporangium. Its sporangiophore or mycelium was observed to be dark black, but the sporangia were not in those of R. oligosporus. The isolates collected from Korean traditional nuruk showed genetic diversity, and also considered to be different tastes in Korean rice wines.

경기지역 주부 연령대별 된장 소비패턴 (Generational Differences in Doenjang Consumption Patterns in Gyeonggi area)

  • Marketing of traditional doenjang (a kind of fermented soybean product) is now focusing on its health advantages, being proven to have anti-viral, anti-cancer and anti-oxidant effects. The purpose of this study is to investigate the consumption patterns of traditional doenjang in the households managed by different generations of women living in Gyeonggi area. Six hundred housewives answered the questionnaire. Statistical analyses were performed on 590 subjects using SAS (ver 8.1). Chi-square tests and General Linear Models were used. The age distribution of housewives was as follows: 42.9% were in their 30s; 40.9% were in their 40s; and 16.2% were in their 50s. 57.5% of subjects graduated with high school education while 72.8% of subjects did housework only. Overall, 47.2%, prepared their doenjang themselves, while the remainder purchased it or received it from relatives. This percentage differed however according to age group, as self-preparation of doenjang was found in only 22% of housewives in their 30s, but increased to 83% of subjects in their 50s. 53.4% of subjects had their doenjang donated to them by relatives, compared with only 3.1 % of subjects in their 50s. Most of dishes using doenjang were soups and stews. Those housewives in their 50s made significantly higher use of doenjang in soup, wrapping vegetables (ssamjang), seasoning, and flat cake (jangttok). Doenjang dishes were prepared for the husband in the family 59.2% of the time, followed by housewives 15.4% of the time. Annual consumption of doenjang was 5.1kg. and Kanjang was 4.4L per household; there was no significant difference between the age groups respecting annual consumption. From such results, we may assume a decrease in home-made doenjang among younger generations and an increase in the amount of purchased doenjang. We can predict an increased need for doenjang of better quality. Also the development of new products such as ready-to-eat or fast food variants would better serve the trend towards convenience.

독성 및 약물대사 연구를 위한 한국인 부분 간 유래 간세포의 품질 및 활용성 평가 (Quality and Availability Evaluation of Human Hepatocytes Isolated from Resected Partial Livers for Toxicology and Drug Metabolism Studies in Korea)

  • Demand for in vitro pharmacological evaluation and toxicity test using human hepatocytes has been increasing. In USA and Europe, human hepatocytes obtained from donated whole liver unsuitable for transplantation were distributed to researchers and deposited in cell bank facility as cryopreserved vial. In Korea, however, incidence of transplantation- inappropriate whole liver has been quite low and the whole livers almost have so severe liver disease such as fatty or fibrotic liver that cannot meet the demand. In this study we aimed to isolate human hepatocytes from liver resection surgery-originated partial liver, and assure the isolated human hepatocytes and its cryopreserved hepatocytes to be qualified for the in vitro pharmacological evaluation and drug toxicity tests. We compared those with commercially available human hepatocyte, BD $GenTest^{TM}$ by cell morphology, hepatic gene expression, urea synthesis, albumin secretion, ammonia removal, and cytochrome P450 induction activities. Changes in hepatotoxic gene expression after cryopreservation are evaluated with a typical hepatotoxic drug, acetaminophen. Consequently, the fresh hepatocytes from the partial liver and its cryopreserved hepatocytes expressed their intrinsic hepatic functions well and showed equal hepatotoxicity gene expression trend regardless to cryopreservation. Therefore, liver resection surgery-originated partial liver can be used as a useful source of human hepatocytes for various pharmacological and hepatotoxicity test.

Mammaglobin 유전자 재조합 및 발현에 관한 연구 (Cloning and Expression of Mammaglobin Gene)

  • Mammaglobin은 uteroglobin 유전자와 상동성을 가지는 분비 단백질로 인체 유방암 조직에서 과발현된다. 이 단백질은 유방암의 진단, 전이 정도의 진단, 또는 수술 및 항암치료 후 재발 정도의 검색을 위한 하나의 표식자로 가능성을 갖는다. 본 연구는 mammaglobin 유전자를 클로닝하여, 대장균으로부터 발현하고, 발현된 mammaglobin 단백질을 분리하고, 분리된 단백질을 이용하여 항체를 생산하고, 분리된 항체가 mammaglobin에 대한 특이 반응을 갖는지를 확인하였다. 유방암 환자의 조직을 얻은 후 이 조직에서 RNA를 분리한다. 이 RNA로부터 RT-PCR법으로 mammaglobin 유전자를 클로닝하였다. 증폭된 유전자를 NcoI 과 XhoI으로 절단한 후 벡터에 끼워 넣은 후 대장균에 형질 전환시키고 DNA 염기 서열을 결정하였고, 기존의 mammaglobin 유전자의 염기서열과 비교한 결과 동일한 유전자임을 확인하였다. Mammaglobin의 세포 내 발현, 신호 펩타이드를 이용한 분비발현을 위해 pET30, pET20, pET32 벡터를 각각 이용하였다. 3개의 발현시스템으로부터 단백질이 과 발현됨을 확인할 수 있었다. pET30 벡터를 이용하여 성공적으로 발현된 mammaglobin 단백질을 분리할 수 있었다. Ni-NTA affinity chromatography에 이은 DEAE-ion exchange chromatography 분리 방법에 의해 수용성 발현 단백질인 thioredoxin-mammaglobin을 정제할 수 있었고 이 융합 단백질로부터 enterokinase를 이용하여 mammaglobin 단백질만을 분리하였다. 토끼에 분리된 mammaglobin을 complete adjuvant와 혼합하여 면역한 후 두 번 boosting하여 polyconal 항체를 얻었다. Westernblot immuno 분석을 한 결과 생산된 항체가 mammaglobin 단백질과 특이적 항원항체반응을 보임을 관찰하였다. 향후 이 항체를 이용하여 진단용 시약의 개발이나 항암제 개발 등을 위해 연구가 진행될 것이다.

구한말 민간 빈민구제시설 진민소[賑民所]에 관한 연구 (Study on Jinminso as an Indoor Relief Institution)

  • 본 연구는 구한말 민간 빈민구제시설로 보이는 진민소에 관한 연구이다. 연구의 목적은 진민소 관련 사료의 발굴과 발굴된 사료의 객관적인 분석 및 해석이다. 연구를 위해 진민소로 인터넷 검색이 가능한 사료들을 검색했으며, 관찬사료 11개와 민간사료 40개를 찾았다. 분석결과 진민소는 민간에서 민간의 자본으로 조선사람들이 스스로 설립한 민간 구빈 시설이었다. 전 승지였던 고운정과 교원 윤태진 등 16명이 1898년 6월 25일 서소문 전 선혜청 자리에 설립하였다. 설립비용은 16명이 추렴한 각 2만냥과 시골부인들의 의조금 10만냥으로 총 42만냥의 민간자금이었다. 설립취지는 곤궁한 사람을 불쌍히 여기시는 황제의 구휼부담의 분담이었으며, 백성들이 유망하는 것을 좌시할 수 없는 동포의 의리로 볼 때 빈부가 비록 다르더라도 사랑하고 보호해야겠다는 마음이었다고 밝히고 있다. 약 300명에게 밥과 옷을 지급하고, 치료 및 장례를 진행하였다. 그러다 같은 해 10월 27일 고종황제로부터 혁파의 명을 받아 폐쇄되었다. 이후 1899년 3월 20일경 재설치되었는데, 고운정에 의해 추진되었으며, 운영은 정부에서 하였다. 장소는 종로 전 감옥의 자리였다. 진민소는 비록 짧은 기간동안 존재했었지만, 빈민구제가 주로 정부의 역할이었던 때 정부 진휼기관인 진휼청이 폐지된 상태에서 민간이 설립, 운영한 시설이다. 갑오개혁으로 진휼청이 폐쇄되면서 정부가 해야 할 진휼이 체계적으로 이루어지지 않아 기민구휼이 문제였던 시점에 세워진 진민소는 그 존재 자체만으로도 사회복지역사에 있어 큰 의의를 갖는다.
