가정용 냉장고에서 동결저장 중의 가리비의 품질 변화 (Quality Changes of Frozen Scallop[Patinopecten yessonensis(Jay)] Stored in theDomestic Refriogerator)

  • Scallop, Patinopecten yessonensis(Jay), cultivated in the cold east coast of Kwangwon region, Korea, is expected to be producted to about 50,000 tones in 2000 year. Freezing is one of the most effective methods applied for soraging seafoods. But, the domestic refrigerator with an automatic defrost system shows the temperature fluctuation during defrosting, thus might result in the deterioration of the frozen foods. In this study, the domestic refrigerator with an automatic defrost system, temperature fluctuation from -18 to -5$\pm$1$^{\circ}C$ and fluctuation intervals from 16 to 20 hr, was used for storing scallop. pH was decreased rapidly after 3 month storage, while the content of amino nitrogen was increased continuously. The TMA content of open state was increased very rapidly on 3 month storage and then increased slowly, whereas that of vinyl package increased slowly. The VBN content was increased almost constantly with no significant differences between storage methods. The TBA content was increased up to 3 month storage with the higher value in open state than vinyl package in the beginning periods of storage, and then decreased very rapidly. The number of total viable cell was increased continuously during storage with higher number in open state than vinyl package. The estimated shelf-lives of frozen scallop with open state and vinyl package stored at -18$^{\circ}C$ in the domestic refrigerator with an automatic defrost system were 3.55 and 3.78 months, respectively.

  • Animation technique from the PIV database is particularly emphasized to give macroscopic and Quantitative description of complex flow fields. As an example, an experimental study was carried out investigate the fundamental (low characteristics of the freezer with the domestic refrigerator. Optimized cross correlation identification to obtain velocity vectors is implemented by direct calculation of correlation coefficients. Image intensifier CCD camera to cope with illumination problem is arranged for the accurate PIV measurement of large flow field. As a results, continuous pictures of the spatial distribution of the instantaneous and time-mean velocity distribution are displayed in real-time sense.

가정 내 주방용품 및 기구의 위생실태 및 미생물학적 분석 (Sanitation Assessment and Microbiological Analysis of the Domestic Kitchen Utensils)

  • This study was conducted to evaluate the sanitation level and use of dish cloths, chopping board, and drawer in the refrigerator in 50 university students' houses located in Seoul and Kyonggido. The survey questionnaire evaluated general information, frequency of the washing, cleaning method, drying method and the associated factors. The highest percentage of the cleaning and drying methods of dish cloths were “boiling(76.0%)”, and “dry in the kitchen or on the sink(78.0%)”, respectively. For the chopping board and drawer in the refrigerator, the highest percentage of cleaning method was “use detergent” and drying method was “dry in the kitchen”. The mean of coliforms for dish cloths, chopping board, and drawer in the refrigerator was 4.46${\pm}$1.95 log CFU/100 $cm^2$, 3.92${\pm}$1.64 log CFU/100 $cm^2$, 3.48${\pm}$2.01 log CFU/ 100 $cm^2$, respectively. Salmonella spp. were not detected from all samples. But E. coli were detected from dish cloths(4.0%) and S. aureus were detected from dish cloths(16.0%), chopping board(12.0%), and drawer in the refrigerator(8.0%). The results of microbiological test of kitchen utensils indicated that the sanitary conditions of dish cloths, chopping board, drawer in the refrigerator should be improve promptly.

냉장고 내부의 냉기 유동특성에 관한 3차원 해석(I) (3-Dimensional Calculation on Cold Air Flow Characteristics in a Refrigerator)

  • A numerical study has been performed on flow characteristics in a domestic refrigerator whose size is $540mm{\times}1,530mm{\times}680mm$, considering existence of a fan and evaporator. The flow field has been simulated with the low Reynolds number $k-\bar{\varepsilon}$ turbulent model and SIMPLE algorithm based on the finite volume method. The region of fan which makes driving force for cold air distribution was modeled as a region in which momentum sources are generated uniformly. The concept of the distributed pressure resistance was applied to describe the momentum loss from evaporator. The result showed that the rate of cold air distribution into freezing room and cold storage room was almost 7 : 3.

식중독 발생 위해인자로서 가정용 냉장고의 온도에 대한 확률분포 분석 (Statistical Probability Analysis of Storage Temperatures of Domestic Refrigerator as a Risk Factor of Foodborne Illness Outbreak)

  • 본 연구는 국내에서의 가정내 냉장고 온도에 대한 조사를 수행하여, 현 시점에서의 냉장고에서의 식품보관 온도분포를 추정하였고, 이를 MRA(미생물 위해평가: Microbial risk assessment)의 입력변수로 활용할 수 있도록 적정 확률분포 모델을 제시하였다. 일반적으로 가정내 냉장고에서의 식품 보관온도는 식중독 발생 등에서 있어 중요한 위해인자로 작용하는 것으로 알려져 있다. 조사대상 가구는 총 139가구이었으며, 조사기간은 2009년 5월에서부터 9월까지 data logger를 이용하여 측정하였다. 조사된 냉장고 온도의 평균은 $3.53{\pm}2.96^{\circ}C$로, $5^{\circ}C$ 이상은 23.6%로 나타났다. 수집된 온도자료는 @RISK를 이용, 적합성 검정(GOF: K-S와 AD test)을 수행하여 적정 확률분포모델에 대해 추정하였고, 이중 LogLogistic(-10.407, 13.616, 8.6107)분포 모델이 가장 적절한 국내에서의 가정내 냉장고 식품보관 온도분포 모델로 나타났다. 이 확률분포 모델은 MRA적용에 있어 노출평가에서 입력변수로서 직접적 활용이 가능하다고 할 수 있겠다.

모세관 변경에 따른 가정용 소형 멀티 냉동시스템의 성능에 관한 연구 (A Study on the Performance of a Domestic Small Multi Refrigerator According to a Capillary Tube Change)

  • This paper is an experimental study on the performance according to a capillary tube diameter and length in a domestic small multi refrigerator[kimchi refrigerator]. Pressure drop in a capillary tube is predicted by theoretical analysis and experimental method as the reduction of capillary tube diameter from 0.74 to 0.6 mm. The differences between experimental results and analytical results are mainly caused by friction factor in a capillary tube. Because there are no adequate equations used to calculate pressure drop of capillary tube diameter under 1.0mm. The empirical equations necessary for interpretation of capillary tube were derived from capillary tube test results data using curve fitting method. This study shows that the optimized designs of system, which is capillary tube length and refrigerant charge amount, are 2000mm, 83g at the capillary tube diameter 0.6mm and 3000mm, 73g at the capillary tube diameter 0.74mm. And capillary design tools and system matching techniques necessary for development of the kimchi refrigerator were also developed through this study.

소형 냉장고용 왕복동식 압축기의 열전달에 관한 수치해석 연구 (A Numerical Study on Heat Transfer in a Reciprocating Compressor for a Domestic Refrigerator)

  • An analytical model was developed using the lumped mass parameter method to estimate temperature distribution of metal parts and refrigerant of the hermetic reciprocating compressor, All of the lumped mass has been equated with the first law of thermodynamics. In the delivered equation, correlations of heat transfer coefficient in the heat transfer equation were taken from open literature. The equations are solved by Gauss-Jordan method simultaneously. To verify the developed numerical program, an experiment was conducted with a domestic refrigerator. The compressor which had been installed at the bottom of the experimental refrigerator was modified to measure internal temperature. Model verification test was conducted at $30^{\circ}C$ outdoor temperature with variation of compressor cooling conditions. As a result, there is a good consistency between calculated temperature and measured one.

열전도성 플라스틱을 이용한 김치냉장고용 열교환기에 관한 연구 (Research on the Heat Exchanger for Kimchi Refrigerator Using Thermal Conductive Plastic)

  • The kimchi refrigerator is the electric home appliance which is used for the maturing and preserving of the kimchi in domestic and foreign market. The kimchi refrigerator is composed in 3 main parts as insulation. kimchi container, machinery room. The heat exchanger of kimchi refrigerator is made of aluminum and the other parts are made of steel and polymer. Also, kimchi refrigerator is expensive and heavy as compared with same class of refrigerator until now. In the present study, the possibility to replace heat exchanger from aluminum to thermal conductive plastic was analyzed and experimented. The thermal conductive plastic has $10{\sim}100$ times heat conductivity than that of normal plastic. It is known that heat transfer process is dependent not only conduction but convection or radiation. Thermal conductivity of the applied material in this research is over than 2 W/mK, thermal conductivity doesn't play a vital role on heat transfer. In this study, temperature is the most important parameter on the kimchi refrigerator and the temperature of kimchi refrigerator's heat exchanger was measured and compared with the temperature calibrated by CFD analysis on the inside wall of the kimchi refrigerator. It is important to keep constantly the inside temperature of the Kimchi refrigerator. Besides numerical analyses for the new thermal conductive plastic for heat exchanger were executed with the various height of evaporation tube. A series of experiments were conducted to compare the performance of the two heat exchanger made of aluminum and thermal conductive plastic at the same condition and certified the possibility of the thermal conductive plastic. According to these results, it was confirmed that the conventional aluminium heat exchanger can be replaced by thermal conductive plastic successfully.

나선형 핀-튜브 증발기를 적용한 냉장고의 성능 특성에 관한 연구 (Study on Performance Characteristics of Spiral Fin-Tube Evaporator Applied to Domestic Refrigerator-Freezers)

  • 본 연구는 평판 핀-튜브 증발기와 나선형 핀-튜브 증발기를 적용한 가정용 냉장고의 성능특성 비교를 통하여 기존에 사용하고 있는 핀-튜브 증발기를 나선형 핀-튜브 증발기로 대체할 수 있는 가능성을 고찰하는데 그 목적이 있다. 실험은 2단 15열의 평판 핀-튜브 증발기와 2단 15열에서 2단 11열까지 열 수를 단계적으로 감소시킨 3종류의 나선형 핀-튜브 증발기를 실제 냉장고에 적용하여 수행하였다. 핀-튜브 증발기의 열 수가 감소할수록 냉동시스템의 최적 냉매 충전량은 감소하였으며, 2단 13열과 2단 11열의 나선형 핀-튜브 증발기를 장착한 냉장고의 소비전력은 기존 2단 15열의 평판 핀-튜브 증발기를 적용한 냉장고 대비 각각 1.5%와 2.8% 감소하였다. 또한 내착상 실험결과 나선형 핀-튜브 증발기가 기존 평판 핀-튜브 증발기와 비교하여 같은 착상조건에서 3~7% 향상된 냉각능력을 보였다. 냉각속도 실험에서는 모든 증발기는 동등수준의 성능을 나타내었다.

Microbial Contamination in Kitchens and Refrigerators of Korea Households

  • 본 연구는 경기도, 인천 및 서울 지역에 있는 50 곳의 가정 내 주방을 대상으로 미생물학적 오염 정도에 대해 조사하여 가정 내 주방 위생 관리 실태를 평가하고자 하였다. 행주, 냉장고 칸, 도마의 대장균군과 다양한 병원성 미생물의 존재 여부에 대한 실험을 실시하였다. 주방기구의 대장균군을 분석한 결과, 행주는 $4.8{\pm}1.84log\;CFU/100g$, 검출률 94.0% (50건 중 47건)의 값을 나타내었고, 냉장고 칸은 $4.11{\pm}1.65log\;CFU/100cm^2$, 검출률 96% (50건 중 48건), 도마는 $4.04{\pm}1.53log\;CFU/100cm^2$, 검출률 90.0%(50건 중 45건)로 나타났다. 병원성 세균의 오염 실태를 조사한 결과, E. coli는 행주에서 6.0%, 냉장고 칸에서 2.0%의 검출률을 보였으며, Listeria monocytogenes 같은 경우에는 냉장고 칸에서 4.0%의 검출률을 보였다. Salmonella spp.과 Campylobacter jejuni의 경우에는 모든 시료에서 검출되지 않았으나 Staphylococcus aureus의 경우에는 행주, 도마, 냉장고 칸에서 각각 42.0%, 24.0%, 28.0%로 모두 높은 검출률을 보여 위생관리 소홀의 심각성을 나타내었다. 가정 내 주방용품 및 기구의 미생물학적 분석 결과 전반적으로 위생상태가 불량한 것으로 평가되었으며 행주 및 도마, 냉장고 칸에서 위생지표세균인 대장균군과 병원성 세균인 황색포도상 구균의 높은 검출률을 보여 가정 내 주방의 위생관리가 잘 되고 있지 않음을 시사하였다. 본 연구를 통해 가정 내 주방에서의 위생 관리와 사용실태에 대한 인식이 변화되어 가정에서도 위생 관리의 중요성이 강조되어야 할 것이다.
