병원 위탁급식 품질관리를 위한 품질평가도구 개발 (The Development of a Quality Measurement Tool for a Contract-Managed Hospital Foodservice)

  • The purposes of this study were: a) to develop the a quality measurement tool for the contract-managed hospital foodservice, and b) to evaluate their performance with the developed quality measurement tool, and c) to verify the reliability and validity of the quality measurement tool. The developed quality measurement tool comprised two parts, which were foodservice management and medical nutrition care service. The foodservice management part was classified into six functional categories which were Menu, Procurement and Storage, Production and Distribution, Facility and Utility, Sanitation and Safety, and Management and Evaluation. The medical nutrition care service part indicated the medical nutrition care provided. Quality measurement tool had 91 standards and 324 indicators. The quality measurement tools were distributed to the hospital foodservice manager employed by the foodservice company. The 324 indicators were measured by foodservice manager on the 5-Likert-type scales, and then adapted to a 100 point scale. The SPSS Ver. 11.0 was used for statistical analysis. The categories whose scores were evaluated as being high were Procurement', General Sanitation', Personal sanitation' and Waste' and the categories whose scores were evaluated as being low were Diet Order Manual', Standard Recipe', Appropriateness (Facility and Utility)', Check (Facility and Utility)'and Information Management'. All the categories of medical nutrition service were evaluated as having seriously low scores. Therefore, it was necessary for the contract-managed hospital foodservice to improve its performance in the area of medical nutrition care service. For the verification of the developed quality measurement tool, the reliability obtained by calculating Cronbach's α was 0.8747, and the content validity was also proved by scrutiny of the modification of the Professional group's techniques. 패밀리레스토랑의 욕구체계 기반 고객가치가 고객만족, 행동의도에 미치는 영향: 4×4 매트릭스 욕구체계를 중심으로 (Needs-Based Customer Value Effects of Family Restaurants on Customer Satisfaction and Behavior Intention)

  • Purpose - A pre-study on service quality-based customer value is conducted with the path structure (perceived value of service quality→customer satisfaction→behavior intention) based on the hierarchical model of service quality including interaction and outcome quality, physical environment quality and the SERVQUAL model of process quality, namely, reliability, responsiveness, assurance, empathy, and tangibles. In addition, customer value in the service industry is studied by dividing into the two-way structure of utilitarian and emotional values. This study classifies customer values of family restaurants through the customer value model based on the 4×4 matrix needs system of Jeon and Kim (2009). It illustrates the path structure of customer value→customer satisfaction→behavior intention targeting college students in order to generalize the customer value system of family restaurants. Research design, data, and methodology - This study established seven hypotheses based on the relationship between each type of customer value (food quality, convenience, social, emotional, interior quality, service encounter, and purchasing) and customer satisfaction, and the relationship between customer satisfaction and behavior intention. The study data were collected from students in the Department of Business and Tourism at Kimpo University. In all, 294 survey papers were returned of the 300 distributed: 253 pieces were used in the final analysis excluding 41 with insufficient and less effective answers. For statistical analysis, the statistics software package SPSS 15.0 was used. Results - The results of the analysis are as follows: first, the customer values of family restaurants are classified by seven customer values: goods quality value, emotional value, convenience value, social value, purchasing value, service encounter value, and inner quality value. Second, emotional value, purchasing value, service encounter value, and inner quality value had positive impact on customer satisfaction. In particular, purchasing value through being included in functional value was not classified in the previous study; however, this study could classify and generalize this value in a new way. Finally, customer satisfaction had a positive impact on behavior intention. This showed that college students had behavior intention - repurchase intention and word-of-mouth - because they could be content with the food items on the menu and the service provided by employees. Conclusions - The main points based on the above-mentioned results are as follows. This study with college students as study subjects could be classified into four dimensions, namely, generic value, usage value, purchasing value, and physical value and seven sub-dimensions on customer values of family restaurants based on a 4×4 matrix needs system. Then, to confirm its generalization, the path structure of customer value→customer satisfaction→behavior intention was verified. While existing pre-studies used simplified values by classifying restaurant values largely as utilitarian value and hedonic value, this study classified various forms of customer value, and that customer value especially could be expanded by adding purchasing value. As a result, it is shown that marketers need to diversify their customer services because this study proved that customer values can be classified in various ways based on customer needs.

국내 참외의 수확 후 관리 및 포장기술 연구 (Current Research Status of Postharvest and Packaging Technology of Oriental Melon (Cucumis melo var. makuwa) in Korea)

  • 본 총론은 주로 더운 여름에 집중 출하되고 있는 국내 참외에 대한 소비 판매 증대를 위한 품질개선을 위한 수확 후 관리 기술 및 포장재 적용 현황을 고찰하였다. 최근 재배 생산, 유통, 판매 측면에서 고품질 참외 상품화를 위한 수확 후 선별, 예냉, 저장, 유통, 포장 등 다양한 전처리 과정을 통한 과실 품질의 많은 향상을 보이고 있다. 참외 저장은 품종에 따라 다르겠지만 일반적으로 90-95% 상대습도에 7-$10^{\circ}C$ 온도의 저온 조건이 적당하며, 수확된 참외의 고품질 유지를 위하여 저온 장해를 받는 온도 조건에서 보관해서는 안 된다. 수확 후 에틸렌의 발생을 억제를 위한 1-MCP 처리, 활성물질을 가지는 기능성 포장재, 참외의 호흡률을 고려한 CA저장 및 MA 포장은 2-3% 산소 및 5-10% 이산화탄소 조건이 참외의 적정 저장 조건으로 볼 수 있다. 이러한 수확 후 관리 처리 기술의 적용 등은 참외 품질 유지와 저장 기간을 늘일 수 있을 것으로 기대되며, 특히 유통 및 저장에서 취급 중 발생할 수 있는 상품성 저하에 대해 효과적이며 안정적으로 적용할 수 있다. 현재 고품질 참외 제품에 대한 다양한 첨단 선도유지 처리 기술이 연구 진행되고 있지만 품종, 수확시기, 그리고 판매 환경조건 등을 고려한 연구가 필요하며, 국내 참외의 국제 경쟁력을 가지기 위하여 해외 제품과의 브랜드 차별화를 위한 전략적인 연구가 지속적으로 필요하다고 판단된다.

MA포장용기를 이용한 딸기 및 상추의 품질 안전성에 관한 연구 (A Study on the Quality and Safety of Strawberries and Lettuce Using MA Packaging Container)

  • As of 2018, total yield of lettuce and strawberry amounted to 93,543 tons (representing 1.0 percent) and 183,639 tons (2.0 percent), respectively, among total yields worth 9,185,889 tons in South Korea. Lettuce is affected by a combination of numerous elements such as varieties, cultivation methods and pests during each growth phase (Lee et al., 1999). It is mainly cultivated in spring and fall. Especially due to respiration rate after harvest leading to reduced quality and poor storage, maintaining annual supply is unavailable (Jang et al., 2018). With the distribution of new varieties, forcing culture and indoor insulated facilities for plant cultivation during winter, strawberries are produced every year except for late summer and early fall. Due to active respiration, transpiration, soft flesh and high water content, the fruit is vulnerable to go bad and got rotten compared to other fruits. Furthermore, it is difficult to maintain freshness due to the possibility of softening, discoloration and fungi (Lee et al., 2012). In this regard, developing improved storage and package techniques is needed to ensure maintaining quality and safety even just two to three days after harvest. In order to ensure improved quality and safety of strawberries and lettuce after harvest, the present study applied a modified atmosphere packaging (MAP) technology (Mostofi et. al., 2008). Going forward, it compared the quality and safety of the two products while being stored in a way that put them in an MAP-applied container and a plastic container at room temperature and 4 degree Celsius.

하천 생태학의 발전과 우리나라 하천 연구의 현황 (The Development of Stream Ecology and Current Status)

  • The development of stream ecology, especially the progress of that field in North America, has been briefly reviewed, and stream studies in Korea were analyzed through literature survey. During the last two decades, theoretical advances in stream ecology and understanding of the structure and function of stream ecosystem were made from the studies mainly in North America. Early studies (1960-1970) focused on determination of the environmental factors controlling the distribution and abundance of organisms dwelling in streams. Introduction of conceptual development, such as the functional feeding concept, river continuum concept, and nutrient spiraling was notable in the late 70's and the 80's. For last 20 years, experimentation approaches to apply ecological principles were very fruitful in the understanding of community structure. Even though studies on the stream ecosystem is Korea have a long history, most of works were concentrated on limited subjects: water quality, abundance and distribution of aquatic insects and fishes. Basic ecological attributes of stream organi는 and test of ecological principles have rarely been a subject of research topics. We must concentrate our effort to enhance our understanding of stream and river ecosystem through qualitative, experimental and interdisciplinary approaches.

  • The main objective of this study is to investigate the correlation of chemical structure and cetane number of reformed diesel fuels by ultrasonic irradiation. In order to analyze the effect of the chemical structure and the cetane number of reformed diesel fuels by ultrasonic irradiation, $^1H-NMR$ was used. From the study, following conclusive remarks can be made. 1) BI(=Branch Index), aromatics percentages, and $H_{\alpha}(={\alpha}-methyl$ functional group) of the reformed diesel fuels by ultrasonic irradiation decreased more than those of the conventional diesel fuel. 2) All the cetane numbers which were calculated from carbon type structure and hydrogen type distribution of the reformed diesel fuels increased more than those of the conventional diesel fuel. 3) Using predicated equation of cetane number caculated from carbon type structure is more reasonable than that caculated from hydrogen type distribution 4) BI, aromatics percentages, and $H_{\alpha}$ on both of conventional fuel and reformed diesel fuels by ultrasonic irradiation are inversely proportional to cetane number on these fuels.

기능성소화불량의 식적설문지 개발과 신뢰도 및 타당도 검정 (Development of a Food Retention Questionnaire for Functional Dyspepsia and the Analysis of Its Reliability and Validity)

  • Objectives: Several pattern diagnosis questionnaires have been developed to objectify the process of pattern diagnosis in Korean medicine. In this context, this study aimed to develop a food retention questionnaire for functional dyspepsia (FRQ-FD) by modifying the previously developed food retention questionnaire (FRQ) and to verify its reliability and validity. Furthermore, this study aimed to identify the optimal cut-off value of the FRQ-FD for standardization and use in clinical situations. Methods: To develop the FRQ-FD, we extracted the major symptoms of food retention pattern for functional dyspepsia from Chinese/Korean medicine textbooks and requested an importance survey from experts using the Delphi method. The first draft of the FRQ-FD was composed of 25 questions comprising 8 questions from the textbooks and the Delphi method and 17 questions from the FRQ already developed in 2013. To analyze its reliability, validity, and optimal cut-off value, 60 subjects were enrolled in this study from June 25 to August 13, 2018. Thirty patients were diagnosed as both functional dyspepsia and food retention pattern, and 30 healthy participants were not. All participants were requested to fill up the FRQ-FD, Stomach Qi Deficiency Questionnaire (SQDQ), Scale for Stomach Qi Deficiency pattern (SSQD), visual analog scale (VAS) for dyspepsia, Nepean Dyspepsia Index-Korean version (NDI-K), and functional dyspepsia-related quality of life (FD-QoL). Results: No statistically significant differences were found in sex distribution, age, and body mass index between the patient group and the control group. As five questions affected the reliability negatively and three questions affected the clinical validity negatively, we decided to exclude the eight questions upon further investigation. The Cronbach's ${\alpha}$ coefficient of the revised FRQ-FD (17 items) was 0.899, and its clinical validity was verified. Construct validity was analyzed by factor analysis and produced five factors. Statistically significant positive correlations were found between the revised FRQ-FD and the other dyspepsia scales, namely, SQDQ, SSQD, VAS, NDI-K, and FD-QoL. VAS and NDI-K especially had strong positive correlations with FRQ-FD. Conclusions: The FRQ-FD developed in this study can provide fundamental reliability and validity for a pattern diagnosis questionnaire. FRQ-FD can help to diagnose food retention pattern in functional dyspepsia patients. Further studies are required to inspect several statistical factors.

충청남도 내륙습지 특성 및 기능평가 (Characteristics and Function Assessment of Inland Wetlands in Chungnam Province)

  • This study was surveyed from May to October, 2008 in order to classify type distribution and evaluate the function of inland wetland as a ecological axis in Chungnam province. Assessment was done by modified-RAM (Rapid Assessment Method). RAM is consisted of total 8 functions and divided into high, moderate, low. The conservation grade of RAM is divided into 4 grades; absolute conservation, conservation, improvement and restoration. Throughout survey on total 13 wetlands of Lacustrine, Palustrine wetland which are distributed in Chungnam province, their function was assessed. As result, the 2 wetlands were judged as absolute conservation grade by assessment of 8 functional contents, and 7 sites were improvement wetlands and 4 sites were conservation wetlands. The function of wetlands assessed as conservation grade showed high in water quality protection and improvement. Also, showed high in vegetation diversity, wildlife habitat and aesthetic recreation. Meanwhile, showed low in Water quality purification, Shoreline/Stream Bank Protection. Of wetlands evaluated as conservation grade, Jeong-juk Ji and Dun-ri reservoir were assessed as absolute conservative area. These wetlands are essential to be managed continuously as a area having high ecological value. Farther, these wetlands will be done as a axis of ecological network related to 'Kumbuk jeongmaek' ecosystem.

$^{60}Co\;\gamma$선과 10MV X선의 조사면 밖의 선량분포에 관한 연구 (A Study on Dobe Distribution outside Co-60 $\gamma$ Ray ana 10MV X Ray Fields)

  • The peripheral dose, defined as the dose outside therapeutic photon fields, which is responsible for the functional damage of the critical organs, fetus, and radiation. induced carcinogenesis, has been investigated for $^{60}Co\;\gamma$ ray and 10 MV Xray. It was measured by silicon diode controlled by semiautomated water phantom without any shielding or with lead plate of HVL thickness put horizontally or vertically to shield stray radiations. Authors could obtain following results. 1. The peripheral dose was larger than $0.7\%$ of central axis maximum dose even at 20cm distance from field margin. That is clinically significant, so it should be reduced. 2. Even for square fields of 10 MV Xray, radial peripheral dose distribution did not coincide with transverse distribution, because of the position of collimator jaws. 3. Between surface and $d_m$, the peripheral dose distributions show a pattern of the dose distribution of electron beams and the maximum doss was approximately proportional to the length of a side of square field. 4. The peripheral doses depended on radiation quality, field size, distance from field margin and depth in water. Distance from field margin was the most important factor. 5. Except for near surface, the peripheral dose from phantom was approximately equal to that from therapy unit. 6. To reduce the surface dose outside fields, therapist should shield stray radiations from therapy unit by lead plate of at least one HVL for 10 MV X-ray and by bolus equivalent to tissue of 0.5cm thickness for $^{60}Co$. 7. To reduce the dose at depth deeper than $d_m$, it is desirable to shield stray radiations from therapy unit by lead.

인천지역 백화점 유통 계란의 위생적 품질상태 (Hygienic quality of eggs in the department food stores in the Incheon Metropolitan area)

  • 본 조사는 계란 유통실태 및 위생상태를 파악하여 품질향상과 위생관리에 도움이 되는 자료를 제공하고자, 2001년 3~4개월에 인천광역시 5개 백화점 식품매장에서 총 57종의 계란을 구입하여 조사하였다. 계란의 포장은 10개 이하의 소량 단위포장 비율이 높았고, 전 품목을 실온에서 보관하였다. 유통기한은 40종(70.2%)이 28일 이상으로 표기하였다. 유통되는 특수란은 31종(54.4%) 이었다. 유통기한과 산란일자는 모든 품목에서 표시되었으며 주로 상표나 난좌에 표기되었다. 내용량에 대한 표시는 38종(66.6%)만이 실시하였다. 난각에 분변이나 털이 있는 경우 27건(9.5%), 난각이 기형이거나 깨진 경우 11건(3.9%), 난 내용물에 혈반이나 육반등의 이물이 있는 경우는 42건(14.7%), 상한 계란은 5건(1.8%)이 유통되었다. Haugh Unit(HU)검사결과 평균은 56.1이었으며, HU 31 미만의 품질저하 계란은 18개(6.3%)이었고,총 57종 중 12종(21.1%)에서 1개 이상의 품질저하 계란이 조사되었다. 난각의 일반세균 오염수준은 <10-8.2$\times$$10^3$cfu/ml로 고르게 분포하였고, 대장균은 8건(4.7%)이 검출되었다. 총 28개의 계란(난황)에서 Salmonella enteritidis는 검출되지 않았고, 계란에 잔류하는 항생물질은 1종에서 테트라사이클린 계열이 검출되었다. 그 동안 위생관리의 사각지대에 있었던 계란에 대한 품질관리와 유통개선을 위한 법적, 제도적 근거가 마련되면, 계란의 표시 및 품질기준 등 사양관리에서부터 유통단계에 이르는 전반적인 안전성 관리방안이 검토되고 보완되어야할 것이다.
