This study examined the effects of Cornus fructus addition to suger snap cookies on WRC (water rentention capacity) and AWRC (alkaline water retention capacity). WRC and AWRC increased as more Cornus fructus powder was added, whereas the sedimentation value and Pelshenke value decreased. Regarding cookie color, L value decreased, whereas the a and b values increased. As the cookie diameter became smaller, thickness increased and spread factor decreased. Hardness of the cookies decreased, and preference was highest for cookies with 5% added Cornus fructus. The preferences for cookies were in the following order: 7% < 3% < 1% < 0% < 5% addition. In conclusion, addition of less than 5% Cornus fructus powder was the most desirable. To complement cookie appearance, it seems necessary to adjust the water content of Cornus fructus powder or add an emulsifier.
This study compared the nutritional value of quinoa cultivated in different regions, i.e., Peru (PQ), United States (UQ), and Korea (KQ), focusing on their proximate and nutrient compositions and functional components. Moisture, protein, lipid, and ash contents were highest in KQ, and the carbohydrate content was the highest in UQ. KQ had the highest amount of total amino acids, especially lysine. KQ had the lowest levels of Na but the highest levels of K, P, Fe, Mg, Zn, and Mn. The antioxidant compounds, quercetin and kaempferol were not detected in KQ, which consequently had the lowest total phenolic and total flavonoid contents (TPC and TFC, respectively). These values were comparatively higher in UQ. Meanwhile, PQ had the highest TPC and TFC values as well as kaempferol content, but lacking quercetin. These results demonstrate that the nutritional value of quinoa varies according to the region in which it is cultivated.
The effect of dietary pectin, tangerine pulp meal, propionate, lactate or fumarate on cholesterol (C) and triacylglycerol(TG) levels in the serum and liver, and the effect of pectin on dietary C absorption were studied in a series of three experiments. Mature female Sprague Dawley rats were fed a control diet or diets containing 5% pectin, 5% tangerine pulp meal, 3% propionate, 3% lactate 3% fumarate, or 10% pectin. Serum total C levels were lower(p<0.05) in rats fed the diet containing 5% pectin than in control rats after a 4-week feeding period(93.8 vs 119.2mg/100mL). Serum HDL, LDL+VLDL C levels were not different among diet groups. Liver total C level was also lower(p<0.05) in rats fed the diet containing 5% pectin than in control rats, but liver TG level was not influenced by diet. Dietary propionate, lactate or fumarate did not reduce serum C, indicating that propionate is not a regulator of serum C. However, dietary pectin(10%) increased fecal excretion of dietary C(or its metabolites) more than 70% over a control value. Our data indicate that dietary pectin reduces serum and liver C levels by increased fecal secretion of dietary C, but not by its fermentation product propionate or other gluconeogenic substrates. This study was conducted to investigate the dietary habits and assess the dietary intake of preschool children. Food habit, preference and nutritional supplement status were investigated using a questionnaire answered by the mothers of 453 subjects aged 3 to 6 years old. Also, a dietary intake survey using a 24-hour recall method was performed by mothers of the children. It was found that 81.2% of subjects had milk, dairy products, cookies, fruit and bread between meals once or twice per day. As well, 60.3% of subjects had an unbalanced diet and 20.7% had an overeating habit. Thus, unbalanced diet was a serious problem for many of the subjects. Due to weight controls, digestion problems and allergies, 11.7% of subjects had special dietary consideration. And 26.4% of subjects were using nutritional supplements. From the 24-recall survey, it was found that all nutrient intakes were higher than the Korean RDA except calcium and vitamin A. Nutrient intakes for protein, calcium, phosphorus and vitamin B2 were significantly different by sex, and also increased with age but not significantly. Children received 35% of daily energy, 44% of daily fat and 52% of daily calcium from snacks, so snacks clearly play an important role in dietary intake. The average number of foods consumed per day by subjects was 17.6 and that dishes was 11.0. Most children consumed 4 or 5 food groups per day. In conclusion, the dietary intake of children aged 3 to 6 were deemed adequate judging from nutrient intake and dietary diversity. More attention should be paid to the nutritional value of snacks in this age group.
This study evaluated the quality characteristics and antioxidant activities of Spergularia marina L. Griseb powder from halophyte plants added to noodles at ratios of 0%, 0.5%, 1.0%, 1.5%, and 2.0% in order to examine its applicability as a substitute for salt. For quality characteristics of noodles with Spergularia marina L. Griseb powder, pH increased (p<0.05) and salinity decreased (p<0.01) with higher added Spergularia marina L. Griseb powder content. Water absorption ratio decreased (p<0.01) while turbidity decreased (p<0.001) with greater addition of Spergularia marina L. Griseb powder. However, volume expansion ratio increased with greater addition of Spergularia marina L. Griseb powder, but there was no significant difference. For chromaticity, L value and a value decreased (p<0.001) while b value increased (p<0.001) with greater addition of Spergularia marina L. Griseb powder. For texture, hardness (p<0.001), gumminess (p<0.001), and cohesiveness (p<0.01) increased with greater amount of added Spergularia marina L. Griseb powder; however, there were no significant differences in adhesiveness, springiness, and chewiness according to the amount of added Spergularia marina L. Griseb powder. In the sensory evaluation, for color, the score was 5.55 points when 1.5% Spergularia marina L. Griseb powder was added, which was the best preference (p<0.001); for flavor, preference was best (5.64 points) when 2.0% Spergularia marina L. Griseb powder was added; for taste, preference was best (5.36 points) (p<0.001) when 2.0% Spergularia marina L. Griseb powder was added; for overall preference (overall quality) the score was 5.55 points when 1.0% Spergularia marina L. Griseb powder was added, which was the best preference (p<0.001). For antioxidant activities, antioxidant activities including total phenol content, total flavonoid content, and DPPH free radical scavenging activity increased (p<0.001) with the amount of added Spergularia marina L. Griseb powder. As a result of the above research, preference was the highest and quality was excellent overall when 1.0% Spergularia marina L. Griseb powder was added. Thus, addition of 1.0% Spergularia marina L. Griseb instead of salt would be desirable.
The purpose of this study was to investigate recognition and buying practices of street-vended foods among college students in Chungbuk Area. A general dietary practices including snacks, related factors of buying street-vended foods were analyzed. The results showed that many students had irregular dietary habit, especially more than eighty percent of them skipped breakfast. More than sixty percent of students had frequent snacks. It was investigated that college students ate street-vended foods two or three times per week. The order of frequent choice of street-vended foods was rice cake with pasted red pepper(51.9%), sweet and sour pork(19.7%), sundae(5.7%). In microbiological examination, MPN of Coliform and CFU of standard plate count was over a standard value respectively, and acid value of frying oil revealed over value for maximum limitation point. Therefore, food and equipment in street-vended food store was evaluated as poor sanitation status. Most of college students have opinion that street-vended food store must be kept the line. In conclusion, nutrition education for college students should be required to protect them from unsafe street-vended foods.
The feeding effects of Herba hottuynia extracts on the lipids profiles and the content of TAB-reactive substances were evaluated in rats fed a high cholesterol diet. Hot water or ethanol extracts of the dried leave were evaporated and lyophilized . The experimental animals wer edevided to four groups and fed the following diets for 4 weeks : BAsal (cholesterol-free diet), CHOL(cholesterol-enriched diet),CW (cholesterol plus water extract) and CE(cholesterol plus ethanol extract). Dietary cholesterol increased significantly the activities of serum GOT and GPT, but the extracts feeding (0.5% of diet) did not influence the activities induced by dietary cholesterol. Although dietary cholesterol increased significantly the concentrationof serum andliver cholesterol, it tended to decrease the concentation of serum triglycerides. CHolesterol feeding had a lowering effect on the lipid peroxidation value of serum, but not inliver.Furthermore, the extracts feeding, especially water extract, decreased markedly the liver peroxidation value. The results suggest that Houttyunia cordata extracts have an in vivo antioxidant effect, judged from the TBA value in the liver rats fed a high cholesterol diet.
Anthropometric measurements, particularly weight and height, are the most commonly employed measures of nutritional status in epidemiologic studies because of their simplicity and ease of collection. However, the usefulness of the anthropometric indicator is controversial. The aim of this study was to evaluate the usefulness of the anthropometric indicator to represent the nutritional status of individual adult in epidemiologic studies. In order to evaluate the usefulness of the anthropometric indicator to represent the nutritional status of individual, the validity in terms of sensitivity and specificity of anthropometric indicators was estimated by comparing the biochemical indicators to the reference indicators. The relative validity of dietary intake indicators was also measured for comparison between the three indicators of biochemistry, anthropometry and dietary assessment. The results showed that sensitivity of weight and height and dietary indicators were 16.7 an 50.5, respectively comparing the reference value of 100 as biochemical indicator in identifying anemic adults. Whereas the sensitivity of weight and height and dietary indicators were 63.6 and 36.4, respectively comparing reference value of 100 in identifying hyperlipidemic individuals(obesity). In conclusion, the validity of weight and height is much lower than that of biochemical indicator, burt weight and height still has some usefulness in identifying anemic individuals. Especially, it is more useful in identifying hyperlipidemic individual adults thant in identifying anemic individuals.
An experiment was conducted with male broiler chicks to determine the effect of different dietary phosphorus sources and evaluate the biological availability of phosphorus sources. The biological availability of phosphorus from dicalcium phosphate (DCP) was used as a reference standard (100%) compared to defluorinate phosphate (DFP). DCP and DFP was supplemented to a corn-soy basal diet at levels of 0.05, 0.15, 0.25, 0.35%. Each of 24 pens of 10 male broiler chicks with three replications was used for three weeks. The results indicated that weight gain, feed in-take, feed efficiency, nonphytic phosphorus (NPP) and tibia ash were significantly different among treatments. Dietary supplemental phosphorus of DFP improved weight gain, NPP intake and feed efficiency consistently, whereas supplements of DCP did not show consistent increase. Regression equations was used for the availability of DPP compared with DCP when percent bone ash was a function of total phosphorus in the diet. The percent (%) bone ash of DFP groups compared to that of DCP groups showed a value of 59.98% as a slope ratio. DFP indicated lower biological availability compared to DCP, but it's dietary supplementation tended to increase bone ash and maximize the growth of young broiler chicks.
A study was conducted to develop a new analytical method to quantitate chicken dietary fiber (CDF). Four types of grain diets and 2 types of forages were used. Three broiler chicks at eight weeks of age were used in the Latin square design to estirnate the in vivo digestibility. Six quantitative analytical methods (Southgate method, total dietary fiber or TDF, acid detergent fiber or ADF, neutral detergent fiber or NDF, crude fiber or CF) including CDF were compared in this study. ADF, NDF and CF contained the lowest amount of the unavailable carbohydrate(UC). The value of TDF was higher than the values of ADF, NDF and CF and lower than CDF and the Southgate method. The value of NDF showed the lower values than the CDF, Southgate fiber and TDF. The recovery rate of the fiber in the feces was high in the TDF, ADF, NDF and CF, while CDF and Southgate fiber showed lower recovery rates. TDF, NDF, ADF, or CF can replace chromium in the digestibility test, while the CDF and Southgate fiber can not replace chrorniurn. The digestibility of TDF, NDF, ADF and CF in the chicken showed negative values or values close to zero depending on the types of feed but the digestibility of CDF and Southgate fiber showed relatively high positive values.
