식품 Selenium이 납중독된 흰쥐에 있어서 $\delta$-Aminolevulinic Acid Dehydratase 활성에 미치는 영향 (Effect of Dietary Selenium on $\delta$-Aminolevulinic Acid Dehydratase Activity in Lead Poisoned Rats)

  • 식이 셀렌이 납섭취에 따른 흰주의 혈액 및 간장중의 $\delta$-Aminolevulinic Acid Dehydratase(ALAD)활성 저해에 미치는 영향을 알아보기 위하여 체중이 141$\pm$5g이 되는 Sprague-Dawley 종 숫쥐를 식이내 납함량을 0(대조군), 200, 1,000, 2,000, 5,000ppm으로 달리하고, 다시 0.5ppm의 셀렌을 첨가한군과 비첨가군등 9군으로 나누어 4주간 사육한 후 체중증가, 식이효율, 혈중hemoglobin, hematocrit치, 혈액 및 간장중의 ALAD 효소활성, 그리고 뇨증 aminolevulinic acid(ALA)의 배설량을 측정한 결과는 다음과 같다. 1. 식이섭취량은 대조군과 납식이군과 별 차이가 없었고, 식이효율 및 체중증가량은 2,000, 5,000 ppm 납식이군이 유의적으로 낮았으나, 셀렌을 첨가했을 때는 대조군과 차이가 없었다. 2. 장기의 무게는 200, 1,000ppm 납식이군에서 신장의 무게가 대조군에 비해 비대했으나, 셀렌을 첨가했을때는 타실험군과 차이가 없었다. 3. Hemoglobin 함량과 hematocrit치는 납함량이 높을수록 대조군에 비해 감소하였으나, 납함량이 1,000, 2,000ppm군에서는 셀렌을 첨가했을때 비첨가군에 비해 증가되었다. 4. 혈액중 ALAD효소 활성은 납함량이 증가될수록 대조군에 비해 ALAD활성이 현저히 감소되었고 200, 1,000, 2,000ppm 군에서는 셀렌을 첨가했을때 비첨가군에 비해 그 활성이 증가되었다. 간장중의 ALAD효소 활성도 혈액에서와 같은 경향으로 납함량이 즐가될수록 감소되었으나, 혈액에서 보다는 ALAD 활성 감소가 적었으며 셀렌을 첨가한 경우 모든 식이군에서 비첨가군에 비래 ALAD 활성이 증가되었다. 5. 뇨중의 ALA 배설량은 ALAD활성과는 반대로 식이내 납함량이 높을수록 그 배설량이 증가되었고, 셀렌 첨가군에서는 그 배설량이 감소되었다.

Effects of Dietary Selenium, Sulphur and Copper Levels on Selenium Concentration in the Serum and Liver of Lamb

  • Thirty-two lambs were distributed in eight treatments under $2{\times}2{\times}2$ factorial experiment to compare the effects of two levels of selenium (0.2 to 5 mg/kg dry matter [DM]), sulphur (0.25% and 0.37%) and copper (8 and 25 mg/kg DM) levels on selenium concentration in liver and serum of lambs. A liver biopsy was done on all animals and blood samples were collected from the jugular vein prior to the beginning of the treatments. The blood was sampled every thirty days and the liver was sampled after 90 days, at the slaughter. Increasing differences were noticed during the data collection period for the serum selenium concentration, and it was found to be 0.667 mg/L in animals fed with 5 mg Se/kg DM and normal sulphur and copper concentrations in their diet. However, a three-way interaction and a reduction of selenium concentration to 0.483 mg/L was verified when increasing copper and sulphur concentration levels to 25 ppm and 0.37% respectively. The liver selenium concentration was also high for diets containing higher selenium concentrations, but the antagonist effect with the increased copper and sulphur levels remained, due to interactions between these minerals. Therefore, for regions where selenium is scarce, increasing its concentration in animal diets can be an interesting option. For regions with higher levels of selenium, the antagonistic effect of interaction between these three minerals should be used by increasing copper and sulphur dietary concentrations, thus preventing possible selenium poisoning.

유기태 셀레늄의 첨가가 육계 및 산란계의 생산성 및 셀레늄 축적에 미치는 영향 (Effects of Dietary Organic Selenium Levels on Performance and Selenium Retention in Broiler Chickens and Laying Hens)

  • 유기태 셀레늄의 수준별 첨가가 육계 및 산란계의 생산성에 미치는 영향을 구명하고, 닭고기와 계란 내의 셀레늄 축적에 미치는 효과를 알아보기 위하여 2차례의 시험을 수행하였다. 시험 1은 selenium yeast로 셀레늄을 0.60, 1.20, 1.80 및 2.40 ppm을 첨가하였을 때 육계의 사료 섭취량, 증체량, 사료 요구율 및 가슴근육과 간 내의 셀레늄 축적에 미치는 영향을 조사하였다. 증체량, 사료 섭취 량 및 사료 요구율은 대조구를 포함한 모든 처리구에서 차이가 없었으며, 가슴살의 셀레늄 함량은 대조구에 비하여 유기태 셀레늄의 첨가 수준을 증가시킬수록 높았다(P<0.05). 간조직의 셀레늄 함량은 대조구에 비하여 유기태 셀레늄을 첨가한 모든 처리구에서 높았으며(P<0.05),특히 유기태 셀레늄을 1.20 ppm이상 첨가할 경우에는 효과가 크게 나타났다(P<0.05). 시험 2에서는 유기태 셀레늄의 첨가 수준이 산란계의 생산성 및 계란 내 셀레늄의 축적에 미치는 영향을 구명하기 위하여 selenium yeast로 셀레늄을 0.30, 0.60, 0.90 및 1.20 ppm을 첨가하였을 때 산란율, 난중, 사료 섭취 량, 사료 요구율, 난질 및 계란 내 셀레눔 함량을 조사하였다. 산란율은 유기태 셀레늄 0.30 ppm과 0.90 ppm 첨가구에서 높았으나(P<0.05), 1일 산란량, 사료 섭취량 및 사료 요구율은 대조구를 포함한 모든 처리구에서 차이가 없었다. Haugh unit는 대조구를 포함한 모든 처리구에서 차이가 없었으나, 난각 두께는 유기태 셀레늄 0.60 및 1.20 ppm첨가구가 각각 385 및 $386{\mu}m$으로 유기태 셀레늄 0.90 ppm 첨가구의 $368{\mu}m$에 비하여 유의적으로 두꺼웠다(P<0.05). 계란 내 셀레늄 함량은 유기태 셀레늄 첨가 수준을 높일수록 더욱더 증가하였다(P<0.05).

Effects of Dietary Selenium Supplementation on Growth Performance, Selenium Retention in Tissues and Nutrient Digestibility in Growing-finishing Pigs

  • This experiment was conducted to investigate the effects of selenium (Se) sources and levels on growth performance, nutrient digestibility and Se retention in growing-finishing pigs. A total of 56 crossbred pigs ([$Landrace{\times}Yorkshire$]${\times}$Large White) with average $28.5{\pm}0.2kg$ BW were allotted to 7 treatments on the basis of sex and weight in two replicates and four pigs per pen. A $2{\times}3$ factorial arrangement of treatments was used in a randomized complete block (RCB) design. Two sources of Se (selenite Se or Se-enriched yeast) were added at 0.1, 0.3 and 0.5 mg/kg to each treatment diet. A basal diet without Se supplementation was the seventh treatment group. Three pigs per treatment were randomly selected and samples of loin, liver, pancreas and a kidney were collected, frozen and later analyzed for Se. The digestibility trial was conducted to evaluate the apparent absorption and retention of Se and availability of other nutrients. Growth performance was not affected by dietary sources and levels of Se. No growth retardation was observed in the 0.5 mg/kg dietary Se treatment group regardless of Se sources. The Se concentration of serum in Se supplemented groups was increased compared with the control group (p<0.01). During the growing and finishing phase, Se in serum was clearly increased when organic Se was provided (p<0.01). Interaction of Se source ${\times}$ Se level was observed in Se concentration of loin, liver and pancreas of the pigs at the end of experiment. Selenium retention in the liver, kidney, pancreas and loin of pigs was increased as dietary Se level increased and was higher when pigs were fed organic Se resulting in an interaction response (p<0.01). Nutrient digestibilities were not affected by dietary Se sources or levels. No dietary Se source ${\times}$ Se level interaction was observed in nutrient digestibility. The results from this experiment indicated that dietary Se sources and levels affected the distribution of Se in the body of growing-finishing pigs. Organic source of Se, such as Se-enriched yeast resulted in higher serum and tissue Se concentration compared to inorganic form, while no beneficial effects on nutrient digestibility were observed from dietary Se supplementation in growing-finishing pigs.

철분의 과잉섭취시 셀레늄 섭취수준이 철분과잉 축적에 대한 예방효과에 관한 연구 (Preventive Effect of Selenium Supplementation on Iron Accumulation of Rats Fed Diets Containing High Levels of iron)

  • The purpose of this study was to investigate the effect of selenium supplementation of iron accumulation of rats fed diets containing high levels or iron. Sixty male Sprague-Dawley weaning rats were fed with diets containing various levels of iron(adequate : 35ppm, 2-fold : 70ppm, 4-fold : 140ppm) and selenium(adequat : 0.05ppm and high : 0.05ppm) for 12 weeks. Feed intakes of 2-fold and 4-fold iron groups were higher than that of adequate iron group. There was no difference body weight gain across iron and selenium containing diet groups. Hemoglobin level was increasd with iron increment and decreased with selenium supplementation. Iron contents in serum and tissues were increased as iron intake was increased. Liver iron content was decreased with selenium supplementation. Selenium content in liver was decreased with iron increment and increased with selenium supplementation. In the case of iron balance, iron excretion through urine and feces was significantly increased as iron intake was increased. However, apparent absorbability and retention rate of iron were not significantly affected by dietary iron or selenium.

영양과 훈련이 흰쥐의 운동지구력과 혈청성분에 미치는 효과;Selenium을 첨가한 고지방식이를 중심으로 (Effect of Nutrition and Exercise Training on the Endurance and the Serum Lipid Components in Rats;Selenium Added High Fat Diet)

  • The effects of exercise and selenium added high fat diet on edurance and serum lipid components were studied in rats. A total of 72 male Sprague-Dawley ($150{\pm}35g$, body weight) were divided into trained group and untrained group and were bred for 7 weeks. Each group had 6 different dietary subgroups; namely, basal diet, 20% shortening and 20% soybean oil subgroup and selenium (0.01mg%) added each subgroups. Exercises of 8-min treadmill running and 10-min swimming were given to the trained group every other day during the experimental period while only treadmill running was given to the untrained group during the last week. The amounts of food intake, changes in body weight and endurance were determined once a week and serum lipid components were measured before and after experimental period. Following are the results obtained : 1) The untrained group took a slightly larger amount of food than that in the trained group. The food efficiency is, however, higher in the trained group. Body weight increased more in untrained group, while high fat diet resulted in greater increment in body weight than that in normal diet groups. 2) The trained group showed remarkably longer endurance than the untrained group and selenium added high fat diet enhanced the effect. 3) The trained group showed lower blood level of T-chol., TG and TG/PL than the untrained group. All the other blood values of HDL-chol., PL, MDL-chol./T-chol., HDL/LDL and A/G ratio were higher in trained group. 4) Soybean oil added dietary groups exibited lower blood levels of T-chol., TG, TG/PL and A/G than those in shortening added dietary groups. On the contrary, the former groups showed higher blood HDL-chol., PL., HDL, HDL-chol. and HDL/LDL ratio than those of soybean oil added dietary groups. 5) $LDH_5$ was the most abundant one among serum LDH isozymes. The electrophoretic pattern of serum LDH isozymes was not changed by exercise training and selenium added high fat diet. 6) Exercise training lowered blood GOT and TBA. These effects were enhanced by soybean oil added diets. From the above results it was concluded that a regular and long term exercise training as well as a small amount of selenium added high fat diet result in reduction of body weight and TBA and improve dietary efficiency and physical endurance in rats.

α-Tocopherol과 Selenium의 첨가 급여가 육계의 생산성 및 닭 다리육의 이화학적 특성에 미치는 영향 (Effects of Dietary Supplementation of α-Tocopherol and Selenium on Performance and Physicochemical Properties of Chicken Thigh Meat)

  • 본 실험은 ${\alpha}$-tocopherol(0, 50, 100, 200 IU/kg)과 selenium(0.3 ppm) 및 ${\alpha}$-tocopherol 100 IU/kg과 selenium 0.3 ppm을 혼합 급여한 육계의 생산성, 계육의 일반 성분, pH, TBARS, WHC, 전단력, 육색 및 지방산 조성에 미치는 영향을 알아보고자 수행하였다. 육계 360수를 공시하여 대조구와 ${\alpha}$-tocopherol 50 IU/kg 급여구를 T1, ${\alpha}$-tocopherol 100 IU/kg 급여구를 T2, ${\alpha}$-tocopherol 200 IU/kg 급여구를 T3, selenium 0.3 ppm/kg 급여구를 T4, ${\alpha}$-tocopherol 100 IU/kg과 selenium 0.3 ppm/kg 급여구를 T5 등 6개 처리구로 나누어 5주간 사양한 후 다리살 근육을 분석하였다. 육계의 증체량, 사료 섭취량 및 사료 요구율은 처리구간에 유의성이 없었다. 계육의 일반 성분중에 수분과 조단백질, 조회분은 처리구간에 유의성이 없었고, 조지방 함량은 대조구와 T1보다 처리구에서 높았다. pH, 보수성과 전단력은 모든 처리구에서 유의성은 없었다. TBARS는 대조구와 T1은 유의한 차이가 없으나, ${\alpha}$-tocopherol과 selenium 급여구에서 낮았으며, 특히 혼합급여구인 T5에서 TBARS 값이 유의하게 낮았다. 육색중 CIE $L^*$값과 $b^*$값은 처리구간에 유의성이 인정되지 않았으나, CIE $a^*$값은 T2, T3, T5에서 높았다(P<0.05). 지방산의 분석 결과, ${\alpha}$-tocopherol의 급여로 palmitic acid는 감소하고, oleic acid, linileic acid는 증가하여 포화지방산 함량은 줄고, 불포화지방산 함량이 증가하는 결과로 나타났다(P<0.05). 이상의 결과를 종합적으로 고찰해 볼때 ${\alpha}$-tocopherol과 selenium를 육계에 급여하면 육색과 지방의 산화를 억제하는 효과가 있음을 확인할 수 있어 계육의 저장성을 개선할 가능성이 있을 것으로 기대된다.

대학 여자 운동선수의 셀레늄 및 아연 영양상태 (Assessment of selenium and zinc status in female collegiate athletes)

  • 본 연구는 여자 대학선수들의 혈청 셀레늄과 아연 수준을 일반 여대생과 비교 평가하고, 열량영양소 및 항산화영양소 섭취와의 관계를 평가하고자 하였다. 본 연구는 체육대학의 여자 에어로빅 및 유도선수와 운동을 규칙적으로 하지 않는 일반 여대생을 대상으로 식사섭취 조사와 혈청의 두 미량 무기질의 농도를 측정하였다. 에너지 섭취량은 에어로빅과 유도선수가 각각 2,151.0 kcal와 2,347.7 kcal를 나타내어 일반 여대생에 비해 유의적으로 높았다 그러나 체중 1 kg당 하루 에너지 섭취량은 선수와 일반 여대생간에 유의적 차이가 없었지만 유도선수의 경우 35.8 kcal에 불과하였다. 지질 섭취량은 일반 여대생에 비해 두 선수군에서 유의적으로 높은 반면에, 단백질과 탄수화물의 섭취량은 선수와 일반 여대생 사이에 유의적 차이는 없었다. 지질 중 포화지방산 섭취는 유도선수가 일반 여대생에 비해 유의적으로 높은 섭취를 보였다. 비타민 A, E와 비타민 C의 섭취량은 에어로빅 선수가 일반 여대생에 비해 유의적으로 높으며 INQ도 1이상을 보였다. 그러나 유도선수의 경우 비타민 A와 C의 INQ가 1이하를 나타내어 비타민 A와 C의 영양적 질이 부적절함을 보였다. 철의 섭취량은 에어로빅 선수가 일반 여대생에 비해 유의적으로 높았으나, 셀레늄과 아연 섭취는 유의적 차이가 없었다. 그러나 철과 아연의 INQ는 유도선수에서 유의적으로 낮았다. 에어로빅과 유도선수의 셀레늄의 평균 섭취량은 각각 $106.2{\mu}g$$101.9{\mu}g$를 나타내었고, 아연 섭취량은 각각 10.7 mg과 9.3 mg으로 일반 여대생과 비교하여 유의적 차이는 보이지 않았다. 혈청 셀레늄의 평균 농도는 유도선수가 $10.7{\mu}g/dl$을 보여 에어로빅 선수에 비해 유의적으로 낮았지만 이 들 중 셀레늄 결핍자는 없었다. 에어로빅과 유도선수의 평균 혈청 아연농도는 각각 $96.1{\mu}g/dl$$90.2{\mu}g/dl$으로서 일반 여대생과 유사하였지만, 에어로빅에서는 아연 결핍이 없으나 유도선수에서 아연 결핍율은 각각 14.3%를 보였다. 혈청 셀레늄농도의 변이는 나이 포화지방산, 비타민 E와 셀레늄 섭취에 의해 35.5%를 설명할 수 있으며, 나이를 제외한 식사요인에 의해서 33.3%를 설명할 수 있었다. 혈청 아연농도의 변이는 포화지방산 섭취에 의해 14.7%를 설명함으로써, 특히 포화지방산 섭취가 두 미량 무기질의 혈청 수준에 부정적인 영향을 줌을 보였다. 결론적으로 여자 대학선수들의 인체 셀레늄 상태는 양호하나 일부 선수에서 아연 영양부족이 우려되며 두 미량 무기질 수준을 유지하기 위해 포화지방산의 섭취를 줄이는 영양개선이 필요함으로 보였다. 나아가 셀레늄의 식사섭취와 인체 수준과의 관계를 명확하게 평가하기 위해서는 식사를 통한 셀레늄 섭취의 정확히 평가가 필요하며, 이에는 식품의 셀레늄 데이터베이스의 개선이 필요한 것으로 사료되며, 아연 영양상태 관련인자를 평가하기 위해서는 아연의 생체 이용률을 고려하는 자료가 필요할 것이다.

가토(家兎)에서 nitrite에 의한 methemoglobinemia에 미치는 selenium의 영향(影響) (Protective influence of selenium on nitrite-induced methemoglobinemia in rabbits)

  • The protective of influences of sodium selenitc ($Na_2SeO_3$) against the methemoglobinemia with sodium nitrite were investigated on hemoglobin, methemoglobin, glutathione peroxidase and NADH-methemoglobin reductase activity in rabbits which were given 0,1,3 and 9ppm sodium selenite of drinking water for a week. Dietary selenium did not alter total hemoglobin in the blood of rabbits. Selenium was found to decrease nitrite-induced methemoglobin in a dose-dependent manner. The glutathione peroxidase activity was also increased by selenium in all the experimental groups. However, the NADH-methemoglobin reductase activity by selenite did not show significant differences as concerns the methemoglobinemia. These results showed that selenium could inhibit nitrite-induced methemoglobinemia. Its influence of inhibition is suggested that the effect of the reduction of methemoglobin was greatly stimulated by glutathione peroxidase activity.

Effects of dietary methyl sulfonyl methane and selenium on laying performance, egg quality, gut health indicators, and antioxidant capacity of laying hens

  • Objective: This study investigated the effects of dietary methyl sulfonyl methane (MSM) and selenium (Se) on the laying performance, egg quality, gut health indicators, egg yolk Se content, and antioxidant markers in laying hens. Methods: One hundred ninety-two 73-wk-old laying hens were randomly divided into four groups with eight replicates of six hens each. Four diets were prepared in a 2×2 factorial arrangement with or without MSM and Se. The trial lasted for 12 wk. Results: There were no interaction effects or main effects (p>0.05) on laying performance and egg quality. However, feed intake increased in Se-fed hens (p = 0.051) and decreased in MSM-fed hens (p = 0.067) compared with that of hens in the control group. Dietary MSM increased (p<0.05) the ileal villus height and villus height:crypt ratio in hens compared with those receiving the non-supplemented control diet. Dietary MSM and Se did not affect the percentage of short-chain fatty acids in the ileal contents. Dietary Se enriched the Se content in egg yolk compared with that of the non-supplemented control diet (p<0.05). Dietary Se increased (p<0.05) glutathione peroxidase levels in the liver and serum samples compared to the control diet. The total antioxidant capacity in the liver increased (p<0.05) in laying hens that were fed MSM-supplemented diets than in hens fed the control diet. Dietary MSM significantly increased the relative superoxide dismutase levels in serum samples (p<0.05). Conclusion: Supplementation with either MSM or Se independently improved the antioxidant capacity of laying hens. Furthermore, dietary Se produced Se-enriched eggs, but this effect was neither additive nor synergistic with dietary MSM.
