크랜베리를 첨가한 막걸리의 품질 특성 (Quality Characteristics of Makgeolli Supplemented with Cranberries)

  • Korean traditional rice wine, Makgeolli, has been widely consumed and increasingly popular in Korea. In this study, we examined Makgeolli supplemented with cranberries (0, 5, 10 and 15% by rice weight) during fermentation for seven days for the various quality characteristics : pH, total acidity, soluble contents, color, reducing sugars, alcohol contents, and DPPH free radical scavenging activities, total flavonoids, microbial properties, and sensory properties. After the pH value decreased from a range of 4.40~5.63 to 3.83~3.94 up to day 3, the pH gradually increased until day 7. As fermentation proceeded, soluble contents and reducing sugar increased in most of the samples, with a temporary reduction after day 2. There were no differences in L and b color values, but the "a" value showed significant differences with the rate of cranberry added. The DPPH free radical scavenging activity and total flavonoid content of cranberry Makgeolli were higher than those of the control. After fermentation for seven days, the alcohol content ranged from 14.57 to 17.40%, while total acidity levels were within the range of 0.50 to 0.54%. Yeast cell counts increased until day 3 and then, gradually deceased. In the sensory evaluation, Makgeolli with 10% cranberry showed the highest overall acceptance.

Short-term Administration of Conjugated Linoleic Acid Reduces Liver Triglyceride Concentration and Phosphatidate Phosphohydrolase Activity in OLETF Rats

  • The present study explored the short-term effects of dietary conjugated-linoleic acid (CLA) on liver lipid metabolism in starved/refed Otsuka Long Evans Tokushima Fatty (OLETF) rats. Male OLETF rats (12 weeks old) were starved for 24 hours, then refed for 48 hours with either a CLA diet [7.5% CLA and 7.5% Safflower oil (SAF)] or a SAF control diet (15% SAF). The results demonstrated a 30% reduction of hepatic triglyceride (TG) concentration in the CLA group when compared to the control group. Liver cholesterol concentration was also 26% lower in the CLA fed rats. The activity of mitochondrial carnitine palmitoyltransferase, the rate-limiting enzyme of fatty acid oxidation, was moderately elevated by 1.2-fold in the livers of the CLA group when compared to the control. In contrast, phosphatidate phosphohydrolase, the rate-limiting enzyme for TG synthesis, was found to be 20% lower in the livers of the CLA-fed rats. Therefore, dietary CLA evidently lowers liver lipid concentrations through a reduced TG synthesis and enhanced fatty acid oxidation in starved/refed OLETF rats.

난소절제 골다공증 모델 흰쥐의 체내 칼슘 이용성 저하에 대한 칼슘 섭취 수준의 효과 (Effect of Dietary Calcium Levels on the Reduction of Calcium Availability in Ovariectomized Osteoporosis Model Rats)

  • To investigate the effects of dietary calcium levels on the Ca metabolism in a rat model of ovariectomized osteoporosis, two studies were conducted. In Expt. I, five week-old femalc rats ovariectomized and fed a low Ca diet(0.06% Ca) for four weeks were compared with rats fed a normal (0.53% Ca) or low Ca diet under the sham-operated condition. Ovariectomized rats showed a significant increase in body weight and food intake. In rats fed the low Ca diet, a remarkable decrease was shown regardless of ovariectomy in serum Ca concentration, breaking force of bones, Ca and phopsphrus contents of bones, and apparent absorption and retention of Ca. Furthermore hte decrease of Ca contents of serum and bones in rats ovariectomized and fed the low Ca diet was similar to that in rats model of postmenopausal osteoporosis. In Expt. II, rats ovariectomized and fed on the low Ca diet for four weeks were divided into three groups, those given low Ca diet, normal Ca diet and high Ca diet(1.06%) respectively. The results indicated that supplementations of Ca at the intake level of 0.53% and 1.06% for 4 weeks tend to improve the relative Ca deficiency shown in experimental rat model of ovariectomized osteoporosis.

임심성 당뇨병환자의 신체적 특성과 식습관 (Physical and Dietary Characteristics in Women with Gestational Diabetes Mellitus)

  • The present study was conducted to investigate physical characteristics, food habits of pregnant women with gestational diabetes mellites(GDM). The subjects were consecutive pregnant women, 21 GDM and 43 non-GDM controls who received antenatal care at the Obstetrics and Gynecology clinic. There were no significant difference in the mean age between the two groups(GDM:30.8years, non-GDM:30.5years). Significant differences were observed in several anthropometric characteristics such as height(GDM:159.7cm, non-GDM:162.3cm), prepregnancy weight(GDM:61.6kg, non-GDM:54.1kg), body mass index(GDM:23.9kg/$m^2$, non-GDM:20.5kg/$m^2$), and triceps skin fold thicknesses(GDM:30.9mm, non-GDM:24.7mm) between the two groups. The GDM group had an high incidence of(52.4%) family history of diabetes mellitus than those of control group(23.3%). In the GDM group, more irregularities of meals and more bed-time snacking were observed than those of control group. The intake amount of carbohydrates as well as the total energy were significantly higher in the GDM group when thery were compared with the control. These results suggest that the GDM women in Korea do exhibit clearly distinctive anthropometric and dietary characteristics. Nutritional management such as weight control before conception and throughout pregnancy, monitoring total energy and carbohydrate intakes, and implementing more rigorous meal scheduling might be beneficial for the prevention or reduction of the prevalence of the GDM or its complications. 숙시닐화에 따른 참깨박 농축 단백질의 성분 변화 (Effect of Succinylation on the Composition of Sesame Protein Concentrates)

  • Addition of 0.5, 1.0 and 2.0g of succinic anhydride to 2g of sesame protein concentrates succinylated 44.9, 70.0and 83.1% of the available amino groups, respectively. Considerable amount of phytate were removed in all sesame protein concetrates and the highest reduction was obtained by addition of 2.0g of succinic anhydride. Among the minerals investigated, high amount of calcium and magnesium were presented in defatted sesame flour. In the case of calcium, magnesium and iron, the contents were decreased as the degree of succinylation was increased. Most amino acid content of sesame protein concentrates was not changed by succinylation but lysine was slightly decreased. Result of color measurement showed that the higher degree of succinylation, the higher values of L and B were founded.

Case-control Study of Risk Factors for Non-Hodgkin Lymphoma in Mumbai, India

  • Background: In the year 2010, it is estimated that nearly 0.36 million new cases and 0.19 million deaths with Non-Hodgkin lymphoma occurred. In India, among males, NHL incidence rates vary across the country which has encouraged us to conduct a case-control study to study risk factors. Materials and Methods: The present unmatched hospital-based case-control study conducted at Tata Memorial Hospital included subjects registered between the years 1997-99. There were 390 'lymphoma cases' and 1,383 'normal controls. Results: Data on age, tobacco habits, occupational history, dietary factors, tea, coffee were collected by the social investigators. Univariate and multivariate methods were applied for obtaining the odds ratios for risk factors. Conclusions: In the study, cigarette smoking (OR=2.0) and bidi smoking (OR=2.8), were associated with excess risk of lymphoma. Among the dietary items, only consumption of mutton showed 7.3-fold significant excess risk for lymphoma. Consumption of milk showed a 6-fold excess risk (OR=1.5); while coffee showed a 50% reduction in risk for lymphoma. Among occupational exposure, exposure to use of pesticides showed 3-fold excess risk for lymphoma.

난소화성 말토덱스트린을 첨가한 기능성 글루텐 프리면의 이화학적 품질 특성 (Physicochemical Quality of Functional Gluten-Free Noodles added with Nondigestible Maltodextrin)

  • In this study, gluten-free noodles were developed and the physicochemical quality of gluten-free noodles added with nondigestible maltodextrin (NMD) was also investigated. The gluten-free noodles were prepared by addition of 0, 5, 7, and 9% NMD of total ingredients except water. Inhibition activities for ${alpha}$-amylase and ${alpha}$-glucosidase according to the addition amounts of NMD were evaluated. As a result, activities of carbohydrate-digestive enzymes decreased with an increase of the added NMD amounts. Water binding capacity and solubility of raw noodles increased upon NMD addition. Swelling power also increased as temperature rose. L value of raw noodles decreased with the addition of NMD, but b value increased. Texture profile analysis of cooked noodles showed reduction of hardness, springiness, and chewiness of noodles with NMD. On the other hand, tensile strength of cooked noodles containing up to 7% NMD was not significantly different from that of noodle without NMD. In the sensory evaluation, elasticity of noodles with 9% NMD was lower than that of other noodles, whereas other characteristics of noodles were not significantly different among noodles. Therefore, it was confirmed that the addition of 5~7% NMD had little effect on the sensory quality of noodles.

Effects of Carnitine on the Lipid Metabolism in the Ethanol-Fed Rats

  • The effect of dietary carnitine on ethanol-induced fattv liver and hvpertriglyceridemia was examined in an animal model. Consistent with literature, ethanol fed at 5g/Kg of b.w. to rats produced a significant increase in hepatic concentrations of total lipid, kislycerine, phospholi-pid, free cholesterol and esteriaed cholesterol as well as elevated plasma concentrations of triglvceride. It was when the ethanol diet was supplemented with D.L. camitine that there was a singini-cant reduction in the accumulation of lipids in the ethanol-compromised liver. Dietary cacti-tine was also effective in ameliorating ethanol-induced hypeuriglyceridemia. Total protein con-tents in the plasma was not varied among the groups. Ethanol의 대사과정에 관여하는 영향중에 특징적인 것으로 과유지방혈증(hyperlipidemia) 까 지방간(fatty liver)을 거쳐 간경변에 이르는 간에 관계하는 일련의 증상들을 들 수 있다. 본 실험에서는 만성적 ethanol의 지방대사 장해에 대한 D.L.-carnitine의 효과에 대해 고찰하였다. 실험용 횐쥐를 사용하여 실험군(ethanol group)에게 체중 kg당 5g의 ethanol(30% in saline)을 투여하여 알콜유발성 지방간과 과유지방혈증을 일으키고, 그 실험군 흰쥐들에게 carnitine(0.4 mg/g of body weight)을 첨가하여 그 효과를 관찰하였다. 그 결과 carnitine을 첨가하여 투여한 흰쥐들에서 ethanol처리군과 비교하여 볼 때 간과 혈장에서 지방축적이 현저히 감소하는 것을 관찰할 수 있었다.

더덕 전처리 방법에 따른 조리 작업 효율 및 더덕구이의 품질 특성 (The Cooking Efficiency and Qualities of Deodeok-gui from Optimized Pre-processing of Codonpsis lanceolata)

  • Codonopsis lanceolata serves as, an appetizing health food for its, characteristic flavor, taste, and texture:however, it requires a long and complicated cooking process. Therefore, this study conducted pre-processing procedures to improve the cooking process and Codonopsis lanceolata more easily. For processing efficiency, freezing and blanching were efficient for peeling and the rate of peel disuse. In addition the freezing process, effectively reduced the time spent in beating raw material. In the salinity test, freezing and blanching quickly increased salinity over 28 days. As the result of SEM cross-section tests showed that frozen Codonopsis lanceolata become porous, it's assumed that seasoning permeates into this cross-section efficiently. As the appearance of Deodeok-gui as significant differences according to the pre-processing methods, this study examined pre-processing methods(time spent in peeling, rate of peel disuse, time spent in beating out material, salinity, moisture content, texture, and the color) of Codonopsis lanceolata. After testing Deodeok-gui, it was found that freezing is effective, not only for process efficiency and cooking time reduction, but also for improving its qualities.

백미, 흑미 첨가 케이크의 물리적 특성 (The Physical Properties of Rice and Color Rice-Added Cakes)

  • In this research, we added 10%, 20% and 30% of white rice powder and colored rice powder to wheat flour, then baked cakes to appraise the quality of each cake by physical and sensory evaluation The resultsare as follows: 1) The specific gravity was increased in order of rice powder-added batters and colored rice powder-added batters. No remarkable difference was found in expansion ratio of cakes except some reduction in 30% rice powder-added cake. 2) Gumminess of cake was higher in the 30% colored rice-added cake Hardness of rice-added cakes was higher than colored rice-added ones. More adding rate of rice, higher hardness of cake. No remarkable difference was found in chewiness, springiness and cohesiveness of cakes 3) In case of color, rice-added cakes showed more L value and less b value than colored rice-added ones. Colored rice-added cakes showed less L value more a value and less b value as adding rate became higher 4) According to the results of sensory evaluation, no remarkable difference was found in the size of a cell and distribution of cells. Crumb and tenderness tended to be lower in rice added cakes than in colored rice added ones. Color was prefered in 30% colored rice added cakes over rice-added cakes and less added colored rice added cakes.
