Objective: The aim of this study was to investigate the impact of dietary nicotinic acid (NA) on apparent nutrient digestibility, rumen fermentation, and rumen microbiota in uncastrated Xiangzhong black cattle. Methods: Twenty-one uncastrated Xiangzhong black cattle (385.08±15.20 kg) aged 1.5 years were randomly assigned to the control group (CL, 0 mg/kg NA in concentrate diet), NA1 group (800 mg/kg NA in concentrate diet) and NA2 group (1,200 mg/kg NA in concentrate diet). All animals were fed a 60% concentrate diet and 40% dried rice straw for a 120-day feeding experiment. Results: Supplemental NA not only enhanced the apparent nutrient digestibility of acid detergent fiber (p<0.01), but also elevated the rumen acetate and total volatile fatty acid concentrations (p<0.05). 16S rRNA gene sequencing analysis of rumen microbiota revealed that dietary NA changed the diversity of rumen microbiota (p<0.05) and the abundance of bacterial taxa in the rumen. The relative abundances of eight Erysipelotrichales taxa, five Ruminococcaceae taxa, and five Sphaerochaetales taxa were decreased by dietary NA (p<0.05). However, the relative abundances of two taxa belonging to Roseburia faecis were increased by supplemental 800 mg/kg NA, and the abundances of seven Prevotella taxa, three Paraprevotellaceae taxa, three Bifidobacteriaceae taxa, and two operational taxonomic units annotated to Fibrobacter succinogenes were increased by 1,200 mg/kg NA in diets. Furthermore, the correlation analysis found significant correlations between the concentrations of volatile fatty acids in the rumen and the abundances of bacterial taxa, especially Prevotella. Conclusion: The results from this study suggest that dietary NA plays an important role in regulating apparent digestibility of acid detergent fiber, acetate, total volatile fatty acid concentrations, and the composition of rumen microbiota.
New Dietary Reference Intakes (DRIs) forthe United States and Canada have recently been set for both macronutrients and micronutrients, and are likely to be of interest to health professionals in Korea as well. DRIs are now available for nutrients that did not have Recommended Dietary Allowances set in the past (amino acids, n-3 and n-6 fatty acids, total fiber, added sugar, choline, boron, nickel, and vanadium). Furthermore, the units for the DRIs do not always match those traditionally carried on food composition tables (FCTs). FCT developers will also need to consider carrying new variables to allow the calculation of folate intake in $\mu$g of dietary folate equivalents, vitamin E intake as mg of a-tocopherol (not as mg of a-tocopherol equivalents), and vitamin A intake as $\mu$g of retinol activity equivalents (not as $\mu$g of retinol equivalents). Because the new recommendations for upper levels of intake sometimes refer to a specific form or source of a nutrient, nutrients occurring in foods must be separated from added or supplemental forms for vitamin E, niacin, and folate; pharmacological magnesium must be carried as a separate variable; and preformed vitamin A must be separated from vitamin A from carotenoids. As a disease that reduces quality of life, functional dyspepsia (FD) is associated with foods that may worsen its symptoms or cause it. The purpose of this study was to examine the nutritional status and dietary behaviors of FD patients. We investigated food intake, food intake frequency, and dietary habits of 45 FD subjects according to the Rome III Diagnosis Criteria. Average age and body mass index (BMI) were 47.7 years and $22.6kg/m^2$ (males: $23.4kg/m^2$, females: $22.1kg/m^2$), respectively. Average energy intake was 77% of Korean Dietary Reference Intake (KDRI), and it was less than that of the Korea National Health and Nutrition Examination Surveys (KNHANES). Other nutrient intake levels were similar to the KNHANES. Energy intake proportion of carbohydrates : protein : fat was 56 : 18 : 26, and the ratio of fat intake was higher than that of the KNHANES. Beans, laver, tomato, and yogurt were consumed very frequently. In the results of meal regularity, dietary behaviors and composition of diet were relatively good. It is likely that the patient controlled their diet by eating cautiously and by reducing alcohol drinking and smoking. Our results indicate that FD patients' nutritional status by consumption of nutrients was at a level of normal healthy people and that dietary habits were better than normal adults. However, their fat intake levels were somewhat higher than normal people. Therefore, further research is required to identify the relationship between dietary intakes and FD.

Using antibiotics as growth promoter has been banned in poultry feed industry, thus various researchers try to seek an alternative to replace the growth-promoting antibiotics. In this study, we aimed to evaluate the growth performance via intestinal nutrient utilization and cecal microbial composition of broiler after dietary supplementation with most commonly using antibiotics, zinc bacitracin, and sophorolipid. A total of 180 1-day-old chicks were randomly assigned, and dietary treatment was as follow: CON, basal diet; ZB, 100 ppm of zinc bacitracin supplemented diet; and SPL, 250 ppm of sophorolipid supplemented diet. Their growth performance was evaluated and the samples of blood, small intestine, and ileal and cecal digesta were collected for biochemical, histological, and genomic analyses. The body weight and average daily gain of 7-day-old chicks were higher in ZB and those in overall experimental period were improved by ZB and SPL supplementation (p < 0.05). Their intestinal characteristics were not affected by dietary treatments in duodenum and ileum. Nonetheless, villus height was increased by SPL supplementation in jejunum (p < 0.05). Moreover, dietary SPL supplementation could down-regulate the expression level of pro-inflammatory cytokine, IL-1β (p < 0.05). mRNA levels of lipid and protein transporters did not differ among the treatments, however, relative expression levels of carbohydrate transporters, GLUT2 and SGLT1 were increased in broiler chicken's jejumum fed zinc bacitracin and sophorolipid supplemented diets (p < 0.05). Dietary zinc bacitracin supplementation could increase the population of Firmicutes in phylum level, and the portion of Turiciacter in genus level. On the other hands, the portion of Faecalibacterium was increased by dietary SPL supplementation compared to the other treatments. Our findings suggest that SPL supplementation improves growth performance through enhanced carbohydrate utilization capacity via improvement of gut morphological status and modulation of the cecal microbial population of broilers.
Due to the continuous change of socio-economic circumstances and dietary pattern, the need to change recommended dietary allowances and the basic food groups has been required. Consequently, there have been six revisions of the Korea RDAs, the national recommanded dietary allowances. I reviewed the six sequences of revisions concerning the basic food groups. Up to the fifth revision, the ranks of the basic food groups were based upon the dietary needs of the people of the perspective era. However, in the sixth revision, there was no rank associated with the food groups, but the food groups were portrayed in a food composition tower that explained their importance and their necessary consumption amounts. I could indirectly observe the dietary pattern of each era by analyzing the basic food groups and the representative foods of each food group. I also studied information of pictorial representations of the basic food groups and compared the items of the representative foods with nutrient analysis table. By observing nutrient analysis table, I analyzed whether the clarified representative foods of the basic food groups are indeed foods that were eaten frequently by people daily.

Objective: Oilseeds and nut co-products can be used as alternative feed ingredients in animal diets because they may have a lower cost than traditional ingredients. A study was, therefore, conducted to determine the chemical composition of copra, palm kernel, and nut co-products from South-East Asia or Australia. The hypothesis that country of production influences nutritional composition was tested. Methods: Oilseed meals included 2 copra expellers, 3 copra meals, and 12 palm kernel expellers. One source of almond hulls and cashew nut meal were also used. Samples were obtained from suppliers located in South-East Asia or Australia. All samples were analyzed for dry matter, gross energy, nitrogen, amino acids (AA), acid-hydrolyzed ether extract (AEE), ash, minerals, insoluble dietary fiber, and soluble dietary fiber. Copra and nut co-products were also analyzed for total starch and sugars. Results: Copra expellers had greater (p<0.05) concentrations of dry matter and AEE compared with copra meal. However, copra meal had greater (p<0.05) concentrations of total dietary fiber (soluble and insoluble) and copper than copra expellers. Palm kernel expellers from Indonesia had greater (p<0.05) concentration of histidine and tyrosine compared with palm kernel expellers from Vietnam. Almond hulls was high in dietary fiber, but also contained free glucose and fructose, whereas cashew nut meal was high in AEE, but low in all free sugars. Conclusion: Copra expellers have greater concentration of AEE, but less concentration of total dietary fiber when compared with copra meal, and except for a few AA, no differences in nutrient composition of palm kernel expellers produced in Indonesia or Vietnam were detected. According to the chemical composition of nut co-products, cashew nut meal may be more suitable for non-ruminant diets than almond hulls.
Accuracy of dietary assessment depends on correct estimation of quantity as well as correct data on composition of the products. Milk and soymilk were considered quite homogeneous in items of package size and composition. One serving size of fluid milk and soymilk is considered 200 mL but there are products with different amounts on the market. This study was conducted to investigate variations of amounts and composition of fluid milk and soymilk products of one portion siz on Korean market. Twenty-nine milk products were purchased and categorized into 8 groups-regular, low-fat, skim, chocolate, strawberry-flavored, banana-flavored, and black soybean-added. Sixteen fluid soymilk products were purchased and categorized into 4 groups-regular, infant, black sesame or black soybean added and others. Actual volume of each product was measured by mass cylinder and compositions of major nutrients on the package were compared to the values in the most widely used nutrient DB in Korea. Amounts of milk specified on the package of purchased products were 182.3-318.5 ml, the largest being banana-flavored milk. Amounts of soy milk were 184.3-240.5 mL, the largest being regular soymilk. Measured amount of each products were close to the amount on the package (<5%). Contents of macronutrients on the package were different from the food composition table in several products. The amounts of calcium varied greatly among the products due to the popularity of adding calcium to milk and soymilk products recently. These variations in the amount and contents of major nutrients in milk and soymilk products can lead to considerable error to the results of dietary assessment unless the amount and the composition of each product are regularly updated in the food composition table whenever the new products are introduced in the market.

An experiment was conducted to evaluate the effects of dietary levels of chromium in the form of chromium picolinate on growth performance, nutrient utilizability, carcass composition, serum traits, and in vitro lipolysis and lipogenesis in adipose tissues of Arbor Acre broiler chicks. Experimental diets containing six different levels of chromium (0, 100, 200, 400, 600 and 800 ppb) were fed for 6 weeks. Individual treatment had six replicates of eight birds each and their average initial weight was 59.2 g. Dietary addition of chromium did not affect growth performance and nutrient utilizability. However, mortality appeared to be reduced with addition of chromium to the diet. It was obvious that chromium supplementation significantly decreased serum cholesterol and increased serum HDL cholesterol (p < 0.05), but serum insulin, glucose, triglyceride and non-esterified fatty acid concentrations were inconsistent among dietary supplementation levels of chromium. The in vitro lipolysis and lipogenesis in adipose tissues were significantly influenced by dietary addition of chromium (p < 0.05). Chicks fed diets containing 200 or 400 ppb chromium showed the highest protein content and the lowest fat content in their carcass.

The emerging role of endothelial inflammation in diabetes has stimulated research interest in the effects of nutrition on related indices. In the current study we investigated whether the nutrient composition of dietary formula as reflected in glycemic index (GI) may be predictive of postprandial endothelial inflammation in non-diabetic subjects. A double-blinded, randomized, crossover study was conducted in non-diabetic subjects (n = 8/group). Each subject consumed three types of diabetes-specific dietary formulas (high-fiber formula [FF], high-monounsaturated fatty acid (MUFA) formula [MF] and control formula [CF]) standardized to 50 g of available carbohydrates with a 1-week interval between each. The mean glycemic index (GI) was calculated and 3-hour postprandial responses of insulin, soluble intercellular adhesion molecule-1 (sICAM-1), nitrotyrosine (NT) and free fatty acids (FFA) were measured. The MF showed the lowest mean GI and significantly low area under the curve (AUC) for insulin (P = 0.038), but significantly high AUCs for sICAM-1 (P<0.001) and FFA (P < 0.001) as compared to the CF and FF. The FF showed intermediate mean GI, but significantly low AUC for NT (P<0.001) as compared to the CF and MF. The mean GI was not positively correlated to any of the inflammatory markers evaluated, and in fact negatively correlated to changes in FFA (r = -0.473, P = 0.006). While the MF with the lowest GI showed the highest values in most of the inflammatory markers measured, the FF with intermediate GI had a modest beneficial effect on endothelial inflammation. These results suggest that nutrient composition of dietary formula as reflected in the GI may differently influence acute postprandial inflammation in non-diabetic subjects.

The objective of this research was to determine the effects of synchronizing the rate of dietary energy and nitrogen release on: ruminal fermentation, microbial protein synthesis, blood urea nitrogen, and nutrient digestibility in beef cattle. Four, two-and-a-half year old Brahman-Thai native crossbred steers were selected for the project. Each steer was fitted with a rumen cannula and proximal duodenal cannula. The steers were then randomly assigned in a $4{\times}4$ Latin square design to receive four dietary treatments. Prior to formulation of the dietary treatments, feed ingredients were analyzed for chemical composition and a nylon bag technique was used to analyze the treatments various ingredients for degradability. The treatments were organized in four levels of a synchrony index (0.39, 0.50, 0.62 and 0.74). The results showed that dry matter digestibility trend to be increased (p<0.06), organic matter and acid detergent fiber digestibility increased linearly (p<0.05), while crude protein and neutral detergent fiber digestibility were not significantly different (p>0.05). Higher concentration and fluctuation of ruminal ammonia and blood urea were observed in the animal that received the lower synchrony index diets. As the levels of the synchrony index increased, the concentrations of ruminal ammonia nitrogen and blood urea nitrogen, at the 4 h post feeding, decreased linearly (p<0.05). Total volatile fatty acid and bacteria populations at the 4 h post feeding increased linearly (p<0.05). Microbial protein synthesis trend to be increase (p<0.08). The results of this research indicate that synchronizing the rate of degradation of dietary energy and nitrogen release improves ruminal fermentation, microbial protein synthesis and feed utilization.
