The purpose of this study is to develop a software program for nutritional counseling by assessment of nutrients intake status and health degree by using semi-quantitative frequency food intake method and the questionnaire of Cornell Medical Index(CMI) and farmers' syndrome. This program is composed with three parts, nutrients intake, health status with body complaints, and nutrition counseling contents for diet therapy of each body condition states. First, nutrient intakes with percentage of Korean Recommended Dietary Allowances, and quantities of other nutrients intake were calculated and presented in an out-put screen. Second, the different body complaints(farmers' syndrome, anemia, hypertension, gastrointestinal problem, and cardiovascular complaints) were divided 3 groups of health status as normal. suspected and ailment. The contents of nutritional counseling with recommended food kinds. intake quantities. and recommended preparation methods were shown by button click of each health state of body complaints. And also this program could serve several times for one person to compare nutrition education and counseling effect by use of pre and post presentation results. This programs would be effect to home extension workers of rural development administration for farmers' nutrition counseling.
Nutrition counseling and dietary intervention are essential to obesity management because weight reduction is the consequence of negative energy balance. The first step of the nutrition counseling in patients with obesity is thorough evaluation of the nutritional status. During the nutritional evaluation, amount of energy consumption, dietary habits, and medical and socioeconomic factors influencing diets should be evaluated. Diet interventions including low calorie diet, low fat diet, low carbohydrate diet, and high protein diet are all effective in weight reduction as long as decrease in energy consumption is accompanied. Amount of energy restriction and choice of diet interventions should be individualized based the medical condition and characteristics of each patient.
This study was conducted to determine changes in th contents and composition of dietary fiber during the growth of soybean sprout. Soybean was soaked in water at $25^{\circ}C$ for 2hrs and cultivated at 2$0^{\circ}C$ for 7 days under dark condition. The soybean sprouts were divided into cotyledon and axis and sampled every 24hrs. The analysis methodlogies used were Van Soest's NDF, AOAC's ADF and lignin and Prosky's IDF, SDF, TDF. The weight of 100 sprouts increased gradually from 20.26g to 90.12g during the growth periods. The weight increased to 344.9% of the original weight. The germination rate was 100% after soaking at $25^{\circ}C$ for 2hrs. Root length increased gradualy from 0.6cm at 1st day to 17.2cm at 7th day. The crude ash and crude fat contents showed no significant change in the cotyledon and axis. The crude protein contents increased in the cotyledon and axis, whereas the total carbohydrate content didn't have general tendency. The insoluble dietary fiber(IDF), soluble dietary fiber(SDF) and total dietary fiber(TDF) contents of cotyledon were no significantly different from 20.01%, 1.45%, 21.46% at 1st day to 22.75%, 2.07%, 24.82% at 7th day on dry basis. In axis those contents increased from 23.19%, 1.97%, 25.16% at 1st day to 32.78%, 3.02%, 35.80% at 7th day, respectively. The neutral detergent fiber(NDF) contents of cotyledon and axis increased from 4.35% to 6.39% and from 6.44% to 26.60% respectively on dry basis. The acid detergent fiber (ADF) contents of cotyledon and axis increased from 2.84% to 4.91% and from 2.5% to 4.7%, but there were no significantly different in the hemicellulose and lignin contents on dry basis. The hemicellulose and lignin contents of axis increased with culture periods from 1.70% to 4.41% and from 0.20% to 2.11%, respectively. The cellulose contents increased from 4.54% to 20.35% on dry basis.
This study was intended to evaluate the overall effects of nutritional education on adults having two or more symptoms of chronic degenerative disease. A nine week nutritional education program was provided for 65 adults with chronic diseases. We assessed the changes in dietary knowledge, eating behavior and socio-psychological factors. When we evaluated the nutrient intakes of the subjects, their energy intake was 79.4% of the Korean Recommended Dietary Allowances (RDA). Their dietary intake of other nutrients was also below the RDA level except for Vitamin C. Their knowledge of dietary therapy was slightly improved after the implementing of nutritional education. The dietary behavior of ‘night snacks before sleep’was significantly improved. While the overall fear due to disease was significantly increased, self-efficacy was not improved. Self-efficacy for eating “three regular meals” and “choosing fruit, vegetable and grain” were significantly decreased. Family support for “buying food which is good for my health” was also significantly increased, whereas “advises me to eat appropriate foods for health” was decreased. Biochemical analysis indicated that blood levels of triglyceride, cholesterol and blood pressure improved after nutrition education. Therefore, we concluded that nutritional education program for people with chronic degenerative diseases could change the diet therapy knowledge, dietary behavior, and the fear due to disease, support from family and behavior intention toward the direction to improve the chronic disease condition. However, it did not improve self-efficacy. Our study also indicated that nutritional education strategies to improve self-efficacy should be an important aspect in a long term education plan for patients to establish desirable eating habits.

Objective: The objective of this experiment was to investigate the effect of dietary ${\beta}-mannanase$ on productive performance, egg quality, and utilization of dietary energy and nutrients in aged laying hens raised under hot climatic conditions. Methods: A total of 320 84-wk-old Hy-line Brown aged laying hens were allotted to one of four treatments with eight replicates in a completely randomized design. Two dietary treatments with high energy (HE; 2,800 kcal/kg nitrogen-corrected apparent metabolizable energy [$AME_n$]) and low energy (LE; 2,700 kcal/kg $AME_n$) were formulated. Two additional diets were prepared by adding 0.04% (MN4) or 0.08% ${\beta}-mannanase$ (MN8) to LE treatment diets. The feeding trial was conducted for 28 d, covering a period from July to August in South Korea. The average daily room temperature and relative humidity were $29.2^{\circ}C$ and 83%, respectively. Results: Productive performance, egg quality, and cloacal temperature were not influenced by dietary treatments. The measured $AME_n$ values for MN8 diets were similar to those for HE diets, which were greater (p<0.05) than those for LE and MN4 diets. However, the $AME_n$ values for MN8 diets did not differ from those for LE and MN4 diets. Conclusion: The addition of ${\beta}-mannanase$ to low energy diets increases energy values for diets fed to aged laying hens. However, this increase has little positive impacts on performance and egg quality. These results indicate that dietary ${\beta}-mannanase$ does not mitigate the heat stress of aged laying hens raised under hot climatic conditions.
Metabolic syndrome (MS) was defined as condition in which the subjects have two or more abnormalities among obesity, hyperlipidemia, hypertension and hyperglycemia. To develop a nutritional education program for MS, this study was performed to compare the dietary habits and nutrients intake of complex symptoms of MS with obesity or hyper-glycemia. The participants in this study were 84 normal adults,62 MS with obesity, 33 MS with hyperglycemia and 54 MS with obesity and hyperglycemia (OB + HG). A dietary survey was conducted using 24-hour recall method. Total cholesterol level of MS with obesity group was significantly higher than other groups. WHR and systolic blood pressure showed no significant difference among MS with obesity, hyperglycemia and OB+HG groups. Dietary intakes of energy, Fe, Vit A, Vit $B_2$ and Ca were less than $75\%$ of 7th Korean RDA in the all groups. Especially, dietary intakes of Vit $B_2$, Vit A and Ca were less than $50\%$ of RDA in MS with hyperglycemia and OB+HG groups. The other nutrient intakes of each group were also below the RDA level except for P, Vit C. It appeared that most of the nutrient intakes in MS with hyperglycemia and OB + HG groups were significantly lower than normal group. In MS with obesity group, each consumption of sweet, organ meat and soup was higher than other groups. Each consumption of garlic and onion in MS with obesity, hyperglycemia and OB + HG groups was lower than normal group. Also, each consumption of soup in MS with hyperglycemia and OB + HG groups was higher than normal group. Indices of nutritional quality (INQ) for Ca, Vit A and Vit $B_2$ were below 1 in all the groups. Food composition group score of MS with hyperglycemia group was significantly lower than normal and MS with obesity groups. Our results indicated that nutritional education program for MS with obesity or hyperglycemia should include specific strategies to modify unsound dietary habits and inappropriate food intake for health.
Purpose: This study was performed to investigate the dietary behaviors and stress-related factors among male and female college students. Methods: A total of 405 college students (male-195, female-210) were recruited, of whom a questionnaire-based survey was conducted. The study investigated the general characteristics, health-related factors, dietary behaviors, and stress-related factors of the respondents. Results: The body mass index was significantly higher in males. The rates of underweight and overweight were significantly different between male and female respondents. The scores for workout frequency, health concerns and health condition were significantly higher in males, while the score for watching TV & playing computer games was significantly higher in females. The scores for meal regularity, frequency of breakfast consumption, and smoking were significantly higher in males. Eating problems showed a significant difference between males and females. The biggest source of stress was social factors, followed by college study and individual factors and the most experienced stress-induced symptom was anxiety, followed by headache and stomachache. The most popular way to overcome stress was taking a rest, followed by drinking & smoking and outdoor activity. The most preferred food under stressful conditions were alcohol or beverages, followed by hot & spicy food and sweet food, which showed a significant difference between males and females. Conclusion: These results indicate that stress affects dietary behaviors, drinking, smoking, and health status. Stress not only changes dietary behaviors, but is also related to health status. Therefore, it is necessary to develop appropriate programs for emotional stability and stress relief targeting college students which provide continuous nutrition education focused on desirable dietary behaviors and nutritional aspects.

The objective of this study is to investigate the effect of dietary glucose oxidase (GOx) supplementation on the reproductive performance, litter performance, total tract digestibility, and blood profile of lactating sows fed corn- wheat-based diet. A total of twenty multiparous sows (Landrace × Yorkshire) were allocated into one of four treatments with five replicates per treatment. The dietary treatments were as follows: CON (Basal diet), GO1 (basal diet + 200 U GOx/kg), GO2 (basal diet + 300 U GOx/kg), GO3 (basal diet + 400 U Gox/kg). Dietary GOx supplementation did not affect lactating sow's reproduction performance as well as body weight, backfat thickness, and body condition score during pre and post farrowing, and at weaning (p > 0.05). However, after farrowing to weaning period lactating sow's fed GOx supplement has linearly (p = 0.0196) decreased the bodyweight loss. While, there were no effects (p > 0.05) observed on sows backfat thickness loss, average daily feed intake, and estrus interval among treatment groups. Dietary supplementation of GOx has linearly improved the body weight gain (p = 0.049) and average daily gain (p = 0.040) of suckling piglets. The total tract digestibility of dry matter and nitrogen was linearly increased with the graded level of GOx supplement. Also, a linear effect was observed on the glucose and superoxide dismutase of blood profile with the dietary inclusion of GOx. In summary, our finding indicates that the dietary inclusion of GOx supplement with corn- wheat-based diet had a beneficial effect on the nutrient digestibility and blood profile of lactating sows and improved the growth performance of suckling piglets.
This study intended to compare the hypolipidemic effects among six experimental groups fed by three different dietary carbohydrates on hyperlipodemic rats. Sixty experimental animals were divided into 6 groups, SB, ST, SP and CB, CT, CP after production of hyperlipidemia fed by SB diet on Sprague-Dawley rats for 4 weeks. Rats were fed by six experimental diets for eight weeks. Hyjperlipidemic rats showed three times higher in plasma TG level not in cholesterol content compare to control group fed by stock diet. Two different dietary carbohydrates seem to be effective in body weight gain and fat cumulation as weight of epididymal fat pad. In comparison of S and C groups, C fed groups showed lowering effect in plasma TG and total lipid contents, but among S fed groups, ST and SP group showed lower than SB in this respects. Dietary carbohydrates seem to be more effective than fat in plasma lipid contents. When we compare among three different fat groups, only T groups with different carbohydrates increased in peroxisomal lipid oxidation and decreased in lipogenic enzyme activites. As same token, sucrose fed group with three fat sources seem to increase activiteies enzyme activities. In epididymal fat pad and Heart, SP and CP effect more in LPL activites than other groups. In conclusion, we can recommed to consume polysaccharides rather than disaccharide and n-3 fatty acids such as perilla and tuna oils to alleviate hypertringlycemic condition.
A 7-week feeding trial was conducted to investigate the effect of dietary starch level and kind on the growth and body composition of juvenile olive flounder. Triplicate groups of fish (average weight: 1.5 g) were fed iso-nitrogenous (48% crude protein) and isocaloric (4.8 kcal/g diet) diets containing 15-25% ${\alpha}$-potato starch and 15% ${\beta}$-potato starch. Survival was not affected by dietary starch level and kind. The weight gain of fish fed the diet containing 20% ${\alpha}$-potato starch was significantly higher than that of fish fed the diets containing 15% and 25% ${\alpha}$-potato starch levels. The feed efficiency and protein efficiency ratios of fish fed the diets containing 15% ${\beta}$-potato starch were significantly lower than those of the other groups (P < 0.05). The protein efficiency ratio tended to increase with increasing ${\alpha}$-potato starch. The daily feed intake of fish fed the diet containing 15% ${\beta}$-potato starch was significantly higher than that of the other groups (P < 0.05). The hepatosomatic index, condition factor, and proximate composition of the whole body were not affected by the dietary starch level and kind. These results indicate that up to 20% ${\alpha}$-potato starch could be incorporated into the juvenile flounder diet for optimum growth.
