Quality characteristics of Aster scaber and development of functional healthy drinks using its extract (참취의 고부가 식품이용화를 위한 품질특성 및 기능성 건강음료 개발)

  • This study was conducted to investigate quality characteristics of Aster scaber to increase the value of functional food resources. To examine quality characteristics of Aster scaber, various factors such as color, texture, fiber, minerals, tannin, crude proteins, crude lipids and sensory quality were determined using physiochemical methods. The contents of dietary fiber were 0.68 g in each 100 g of Aster scaber (freeze drying base). In mineral contents, iron was the highest value in Aster scaber (freeze drying base). The contents of tannin were 35.6 ppm of Aster scaber (fresh base). Aster scaber was shown significant difference in tannin from freeze drying leaf. From the results of sensory evaluation, the age of 30's and 40's showed a better acceptability in blanching. Functional healthy drinks were made from extracts of Aster scaber for relieving thirst and promoting health. The recipe of drinks were decided to establish manufacture condition through the sensory evaluation, color, flavor, taste, and overall acceptability. The shelf-life was established in 18 months through quality was analyzed such as soluble solids, optical density 480, pH, acidity and microorganisms.

A Study on Mercury Concentration in the Hair of University Students in Jeon-nam Area (전남지역 일부 대학생 모발 중 수은 농도에 관한 연구)

  • This study analysed the mercury concentration in the hair of 62 students (male : 21, female : 41) of D university in Najusi, Jeon-Nam area. Also, questionnaire, which developed by NIES, were completed by the students. According to the questionnaire, most of the students had a higher intake of meat than that of fish. Also, among the students, there were many smokes and many had dental treatment with amalgam. Based on the gender, female showed 1.024 ${\mu}g/g$ and male showed 0.882 ${\mu}g/g$ of the mercury concentration. This means that female students had higher level of mercury in their hair, but it was not a significant statistic difference. Comparing by the intake frequency of meat, processed food stuffs, protein foods, it shows the more they at the higher mercury concentration was observed. According to the intake frequency of fish, when the number of times they intake increased, the mercury concentration was higher. Under one time was 0.857 ${\mu}g/g$ and twice or more times were 1.152 ${\mu}g/g$, which showed a significant statistical difference (p<0.05). Depending on the Life style, the mercury concentration in the hair was high with workout, outdoor activities, and direct smoking. The mercury concentration in the hair showed no difference for whether they received amalgam treatment but the personal dietary habit and the Living condition affects strongly on the mercury concentration level.

Differential Effects of Cod Proteins and Tuna Proteins on Serum and Liver Lipid Profiles in Rats Fed Non-Cholesterol- and Cholesterol-Containing Diets

  • Fish muscles are classified into white and red muscles, and the chemical composition of the two fish muscles have many differences. Few reports have assessed the health-promoting functions of white fish muscle proteins (WFP) and red fish muscle proteins (RFP). We therefore evaluated the mechanisms underlying the alteration of lipid profiles and cholesterol metabolism following the intake of WFP prepared from cod and RFP prepared from light muscles of tuna. Male Wistar rats were divided into six dietary groups: casein (23%), WFP (23%), and RFP (23%), with or without 0.5% cholesterol and 0.1% sodium cholate. Compared to the WFP-containing diet, the RFP-containing diet supplemented with cholesterol and sodium cholate significantly increased serum and liver cholesterol contents. However, in the RFP groups, an alteration in cholesterol metabolism including an increased tendency to excrete fecal sterols and hepatic cholesterol $7{\alpha}$-hydroxylase was related to the reduction of hepatic cholesterol contents. This phenomenon might be related to the tendency of an increased food intake in RFP-containing diets. These results highlight the differential effects of WFP and RFP on serum and liver lipid profiles of Wistar rats fed non-cholesterol- or cholesterol-containing diets under no fasting condition.

Epidemic Trends of Upper Gastrointestinal Tract Abnormalities: Hospital-based study on Endoscopic Data Evaluation

  • Purpose: To understand the epidemiology of different upper gastrointestinal (UGI) tract related abnormalities through endoscopic data analysis. Materials and Methods: A retrospective study of three years from January 2009 to December 2011 was conducted with data from endoscopic surveillance of upper GI tract problems, collected from the Gastroenterology Unit, Osmania General Hospital, Hyderabad. MS excel and Medcalc software (comparison of proportions) were used for data analysis. Results: A total of 10,029 (6,468 in males and 3,561 in females) endoscopies were performed during this three-year period. The male to female ratio was 1.8:1. Overall, ~30% of endoscopies evaluated showed patients with acid peptic disorders, 13.6% with vascular-related abnormalities, 10.6% showed structural abnormalities, followed by 6.3% with malignancies. Burden of malignancies was mostly observed in the older age group (60-69 years). Esophageal cancer cases decreased (p=0.0001) whereas stomach cancers increased over this period (p=0.0345). We also observed an increased incidence of acid peptic disease (APD) (p=0.0036) and gastroesophageal reflux disease (GERD) (p=0.0002) cases during this period. Conclusions: Endoscopic diagnosis is useful for early detection of UGI anomalies and helpful for physicians to manage and treat varied kinds of UGI disorders. Analysis of data revealed changing trends in the incidence of various pathologies of the UGI tract. Functional dyspepsia and GERD definitely reduce the quality of life of the individual. The role of our diverse dietary habits and lifestyle associated with these problems have not yet been established, though there have been reports on the effect of coffee, spicy food, wheat-based diet, screening of UGI pathologies along with collection of complete personal and medical history details, can h elp in correlating the patients' condition with various aspects of lifestyle and diet.

Prepartum Feeding of Cationic or Anionic Diets to Holstein Cows Given 30 or 60 Day Dry Periods: Comparison of Dry Matter Intake, Physiological Measures and Milk Production

  • Eighty-four Holstein cows were used to evaluate effects of feeding two diets that differed in dietary cation-anion difference (cationic; +28 or anionic; -138 mEq/kg DM) on prepartum and postpartum dry matter intake (DMI), body weight (BW), body condition score (BCS), serum Ca concentrations and on subsequent milk production and composition. Treatments were in a $2{\times}3{\times}2$ factorial arrangement that included prepartum diet, dry period length (30 d dry, 30 d dry+estradiol cypionate (ECP), and 60 d dry), and prepartum and postpartum bST ($POSILAC^{(R)}$ 10.2 mg/d). No interaction of prepartum diet with dry period length or bST supplementation was detected for any measure evaluated either prepartum or postpartum. No significant effects of prepartum diet on prepartum DMI, BW or BCS were observed. Mean DMI during the first 28 d postpartum were similar for cows fed the cationic or anionic diets prepartum (25.5 vs. 26.1 kg/d). During postpartum wk 1 to 14, no differences in mean BW or BCS were detected due to prepartum diet fed but decreases for both groups were observed during the first 6 wk postpartum. No differences due to prepartum diet were observed for mean milk or 3.5% FCM yields or for milk composition during the first 10 wk of lactation. Similarly, mean milk yield of cows during the first 21 wk did not differ significantly due to prepartum diet fed (38.5 vs. 38.6 kg/d). Overall, cows fed the prepartum cationic or anionic diets had similar mean postpartum serum concentrations of Ca (9.34 vs. 9.35 mg/dl). Subsequent milk production, milk composition and concentrations of Ca did not differ. Importantly, the two prepartum diets were equally satisfactory in minimizing incidence of milk fever and in supporting initiation of lactation, irrespective of dry period length and supplemental ECP and bST.

Physicochemical properties and energy content of yellow dent corn from different climatic origins in growing pigs

  • Objective: The objective of this study was to determine the digestible energy (DE) and metabolizable energy (ME) of yellow dent corn sourced from different meteorological origins fed to growing pigs and develop equations to predict the DE and ME of yellow dent corn from southwestern China. Methods: Sixty crossbred barrows were allotted to 20 treatments in a triplicate 20×2 incomplete Latin square design with 3 replicated pigs per dietary treatment during 2 consecutive periods. Each period lasted for 12 days, and total feces and urine during the last 5 days of each period were collected to calculate the energy contents. Results: On dry matter (DM) basis, the DE and ME in 20 corn grain samples ranged from 15.38 to 16.78 MJ/kg and from 14.93 to 16.16 MJ/kg, respectively. Selected best-fit prediction equations for DE and ME (MJ/kg DM basis) for yellow dent corn (n = 16) sourced from southwestern China were as follows: DE = 28.58-(0.12×% hemicellulose)+(0.35×% ether extract)-(0.83×MJ/kg gross energy)+(0.20×% crude protein)+(0.49×% ash); ME = 30.42-(0.11×% hemicellulose)+(0.31×% ether extract)-(0.81×MJ/kg gross energy). Conclusion: Our results indicated that the chemical compositions, but not the meteorological conditions or physical characteristics could explain the variation of energy contents in yellow dent corn sourced from southwestern China fed to growing pigs.

Effect of Sea Tangle on Proliferation of Splenocytes from Normal and Diabetic Mice (다시마섭취가 정상과 당뇨쥐의 비장세포 증식에 미치는 영향)

  • To investigate the effect of sea tangle on immune function in normal and diabetic states, 10-week old ICR mice were feed control(C) and sea tangle(5) diets containing 5%(w/w) cellulose and 13.6%(w/w) dry sea tangle for 4 weeks. After 4 weeks, three quarters of mice(CD and SD) were made diabetic by intramuscular injection of streptozotocin(150mg/kg bw). On the 4th day after diabetes was apparent by urinary glucose, one third of diabetic mire(CDG and SDG) were treated with glipizide(20mg/kg bw) and the other third(CDM and SDM) with metformin (500mg/kg bw) orally. Spleen weights of diabetic mice with no hypoglycemic drug treatment appeared to be higher in the sea tangle group(SD) than in control(CD), but were not different when drugs were administered. Data on splenocyte proliferation stimulated by lipopolysaccaride from Salmonella abortus equi(0.l$\mu\textrm{g}$/ml) showed that sea tangle increased mitogen response in normal mice(C group vs S group) and appeared to have the same effect in diabetic mice with or without drug treatment. Splenocyte proliferation induced by concanavalin A(0.1$\mu\textrm{g}$/ml) also showed similar results, although there were not statistically significant. Concentration of interleukin-2(IL-2) released from splenocytes of the S group seemed higher than from the C group, but the IL-2 concentrations were not different among six diabetic groups. Results of fatty acid compositions of splenocyte phospholipids showed that diabetes reduced arachidonic acid/linoleic acid ratios and that sea tangle intake and glipizide treatments increased contents of polyunsaturated fatty acids. It is concluded that dietary sea tangle has a positive effect on splenocyte proliferation under normal condition and could have the same effect under diabetic conditions. Effects of kimchi supplementation on blood pressure and cardiac hypertrophy with varying sodium content in spontaneously hypertensive rats

  • We tested the effects of dietary intake of freeze-dried Korean traditional fermented cabbage (generally known as kimchi) with varying amounts of sodium on blood pressure and cardiac hypertrophy in spontaneously hypertensive rats (SHRs). Wistar-Kyoto rats (WKY), as a control group, received a regular AIN-76 diet, and the SHRs were divided into four groups. The SHR group was fed a regular diet without kimchi supplementation, the SHR-L group was fed the regular diet supplemented with low sodium kimchi containing 1.4% salt by wet weight, which was provided in a freeze-dried form, the SHR-M group was supplemented with medium levels of sodium kimchi containing 2.4% salt, and the SHR-H group was supplemented with high sodium kimchi containing 3.0% salt. Blood pressure was measured over 6 weeks, and cardiac hypertrophy was examined by measuring heart and left ventricle weights and cardiac histology. SHRs showed higher blood pressure compared to that in WKY rats, which was further elevated by consuming high sodium containing kimchi but was not influenced by supplementing with low sodium kimchi. None of the SHR groups showed significant differences in cardiac and left ventricular mass or cardiomyocyte size. Levels of serum biochemical parameters, including blood urea nitrogen, creatinine, glutamic-oxaloacetic transaminase, glutamic-pyruvic transaminase, sodium, and potassium were not different among the groups. Elevations in serum levels of aldosterone in SHR rats decreased in the low sodium kimchi group. These results suggest that consuming low sodium kimchi may not adversely affect blood pressure and cardiac function even under a hypertensive condition.

A Study on the Efficacy of the Coumarine Derivatives with Anti-Inflammatory Activity in the Trifoliate Orange Extract (탱자 추출물에서 항염증 활성을 갖는 쿠마린 유도체의 효능에 관한 연구)

  • Trifoliate orange components consist of several kinds, such as monoterpenes, limonoids, flavonoids, and coumarins. Coumarin derivatives were shown to possess valuable pharmacological properties such as anti-inflammatory and dietary effect. Among them, 7-geranyloxycoumarin 6 is a promising chemopreventive agent againist skin, tongue, oesophaqus and colon carcinogenesis in rodents. Seven new coumarin derivatives structurally related to 7-geranyloxycoumarin were synthesised in good yields by $Cs_2CO_3$/acetonitrile condition. We investigated the effect of anti-inflammatory activity on interleukin-6 for synthesised geranyloxycoumarin derivatives. 6-Geranyoxycoumarin 9 (68.9% / $1{\mu}M$ ; 72.6% / $10{\mu}M$) of the anti-inflammatory activity is far higher than 7-Geranyloxycoumarin 5 (40.1% / $1{\mu}M$ ; 61.1% / $10{\mu}M$) and their other derivatives.

The relationship between dental hygiene problems and dental hygiene planning according to oral health status (구강건강상태에 따른 치위생문제와 치위생계획의 연관성)

  • Objective: The purpose of this study was to reduce the burden on dental hygienists in performing dental hygiene processes in the clinic. This study systematically analyzed dental hygiene problems and dental hygiene planning according to the oral condition of patients by applying an oral health care program based on the dental hygiene process. Methods: This study analyzed influential factors of 17 dental hygiene problems and 12 dental hygiene plans according to the oral health index and charts of 185 patients. This study was approved by the Institutional Review Board (IRB No. 1041449-201801-HR-003) of Silla University. The frequency of dental hygiene problems and dental hygiene planning was analyzed and correlations among the oral health index, dental hygiene problems, and dental hygiene planning were analyzed. Results: The higher the bleeding on probing score was, the more scaling was planned. The higher the calculus rate was, the more air-jet and jaw joint disorder prevention education was planned. The higher the O'Leary index was, the more dietary education and air-jet was planned. The higher the Simplified Oral Hygiene Index was, the more air-jet and jaw joint disorder prevention education was planned. The higher the Periodontal Screening and Recording index was, the more scaling and professional tooth cleaning was planned (p<0.05). Conclusions: The burden of oral preventive duties on dental hygienists will be minimized by systematically establishing problems and planning of dental hygiene according to patients' oral health index scores. Therefore, it is expected that dental hygienist can actively use the dental hygiene process in oral health care programs.
