Nutritional Status and Hair Mineral Content of Elementary School Children with Behavioral Problems (문제 행동을 가진 초등학생의 영양 상태와 모발 미네랄 함유량)

  • This study was performed to assess the nutritional status and hair mineral content of children with behavioral problems and compare the values with a gender, age-matched control group. The subjects were recruited from S elementary school children in Seoul, Korea. Students scored higher than 60 points were diagnosed with behavioral problems according to the Korean-Child Behavior Checklist. Nutritional assessment of the two groups (behavior problem group: male n=15, female n=24; $9.6{\pm}1.6$ years, control group: male n=16, female n=18; $9.5{\pm}1.9$ years) was performed using a nutritional survey and by measuring hair mineral contents. In the results, food frequency questionnaire analysis showed that the intakes of anchovy (P<0.05), soybean curb (P<0.01), radish (P<0.05), bean sprouts (P<0.05), spinach (P<0.05), carrot (P<0.05), pumpkin (P<0.05), lettuce (P<0.05), cabbage (P<0.01), apple (P<0.05), and milk (P<0.01) were higher in the control group than the behavior problem group, whereas intakes of ramyeon (P<0.05), cookies (P<0.05), and coke (P<0.01) were higher in the behavior problem group than the control group. Intakes of most nutrients such as plant-derived protein (P<0.05), fiber (P<0.05), plant-derived calcium (P<0.05), phosphorus (P<0.05), plant-derived iron (P<0.05), vitamin B2 (P<0.05), vitamin B6 (P<0.05), vitamin C (P<0.01), vitamin E (P<0.05), and folate (P<0.05) were significantly higher in the control group than the behavior problem group. Hair analysis showed that the levels of arsenic (P<0.05), mercury (P<0.001), uranium (P<0.05), iron (P<0.001), boron (P<0.01), and germanium (P<0.001) were lower, but the levels of phosphate (P<0.05), chromium (P<0.001), sodium (P<0.05), and sulfur (P<0.001) were higher in the behavior problem group than the control group. Conclusively, behavioral problems constitute a complicated condition in which nutritional factors may play major roles. However, it is still under investigation as to whether or not modification of dietary habits or nutritional supplementation can improve children's behavior, since symptoms require a broad understanding of the environmental and genetic interactions.

Effect of Sterilization Conditions on Physicochemical and Sensory Properties of Three Korean Fried Rice Sauces (한식볶음밥 소스 3종의 살균조건에 따른 일반 품질분석 및 관능평가)

  • Three types of Korean style fried rice sauce, 'Kimchi-tomato sauce', 'Doenjang butter sauce', and 'Seafood sauce' were developed in this study. Physicochemical properties such as pH, soluble solid content, acidity, salinity, and texture of sauces were analyzed after application of three different sterilization conditions ($110^{\circ}C/50min$, $115^{\circ}C/30min$, and $121^{\circ}C/20min$). However, no trend was observed in physicochemical properties of each sauce by sterilization conditions. The lightness (L-value) of doenjang butter sauce was higher than the other two sauces. Redness (a-value) and yellowness (b-value) of doenjang butter sauce and seafood sauce were greater than those of kimchi-tomato sauce due to different ingredients. Total viable cells were not detected under all sterilization conditions of the three types of sauce. The sensory evaluation results showed that $121^{\circ}C/20min$ of sterilization scored better than $110^{\circ}C/50min$ or $115^{\circ}C/30min$ sterilization in terms of overall preference of kimchi-tomato sauce and doenjang butter sauce. Overall, the preference of the three types of sauce showed that seafood sauce was best, followed by doenjang butter sauce and kimchi-tomato sauce.

Preventive Action of Ribes diacanthum Pall. against High Blood Glucose Level in Alloxan-induced Diabetic Mice (가시까치밥나무(Ribes diacanthum Pall.) 추출물의 Alloxan 투여 마우스에서 혈당 상승 억제 효과)

  • The preventive actions of methanol extracts from Ribes diacanthum Pall. (RDP) against high blood glucose levels in alloxan-induced diabetic mice were investigated. ICR mice (male, 8 wks) were divided into four experimental groups: a normal group (N), an alloxan-induced group (control), a RDP 1 mg/kg b.w./day + alloxan group (RDP-1) and a RDP 3 mg/kg b.w./day + alloxan group (RDP-2). Mice were fed RDP extracts for 14 days and then a diabetic condition induced by injecting alloxan (50 mg/kg b.w. i.v.). The total phenolic contents of RDP were 0.508 mg/g. Plasma glucose levels were significantly lower in RDP groups (RDP+alloxan) than the control (alloxan-induced diabetic group). In an oral glucose tolerance test, the glucose levels of RDP extract groups were significantly decreased compared to the control group. The levels of total cholesterol, triglycerides, AST, ALT, uric acid, and blood urea nitrogen in serum were lower in the RDP groups than the control group, whereas levels of HDL-cholesterol showed no difference between treatment groups. We conclude that RDP extracts positively influence blood glucose levels in diabetic mice.

Assessment of Nutritional Status in Elderly Dialysis Patients (노인 투석환자의 영양상태 평가)

  • It is important to evaluate nutritional status of elderly patients receiving dialysis, since wasting and malnutrition are their common problems. This study aims at assessing their nutritional status by the type and duration of dialysis. The nutritional status such as somatic fat and protein storage was evaluated with anthropometric measure including weight/height ratio, triceps skinfold thickness and midarm muscle circumference. It was also measured with albumin, transferrin, C3 and IGF-1 and calorie and protein intakes. The general clinical condition of patients was evaluated with the severity of uremia and metabolic acidosis. which were measured through the levels of serum urea, creatinine and bicarbonateion. The data were analyzed by using t-test, ANOVA, Wilcoxon-rank sums test, Scheffe test, Kruskal-Wallis test and Pearson correlation coefficients. The results are following : 1. There was no significant difference in the calorie and protein intakes by the type and duration of dialysis received. 2. As for the anthropometric measures, no significant difference was found by the type of dialysis in body mass index triceps skinfold thickness and midarm muscle circumference. Yet these anthropometric measures differed significantly by the duration of dialysis in those elderly patients receiving hemodialysis(HD group), but this finding was not found in those receiving continuous ambulatory peritoneal dialysis(CAPD). 3. Regarding the indicators of uremia and metabolic acidosis, blood urea nitrogen(BUN) and creatinine were lower in the CAPD group than in the HD group, whereas bicarbonate ion was higher in the CAPD group than in the HD group, with no statistical significance. In the HD group, creatinine increased significantly with the increase of the duration of dialysis. 4. Serum trasferrin and C3 were significantly higher in the CAPD group than in the HD group. However. each of biochemical indices did not show statistical significance by the duration of dialysis in both HD and CAPD groups. 5. Anthropometric measures were significantly associated with dietary intake. Significant correlations were observed between biocarbonate ion, BUN and creatinine. In addition, the correlations between serum protein and albumin and between transferrin and C3 were statistically significant. Yet, IGF-1 revealed no significant correlation with other nutritional indices. The above findings indicate that there were no difference in nutritional status measured with protein and calorie intakes between the type and duration of dialysis, but CAPD seems to benefit correcting uremia and metabolic acidosis than HD. Studies of dietary management for dialysis patients need to be pursued in order to improved the quality of aged patients receiving dialysis.

Drying Characteristics and Preferences for Steamed Chestnut-Sweet Potato Slab after Cold Air Drying (냉풍 건조 조건에 따른 증절간 밤고구마의 건조 특성과 기호도)

  • Cold air drying was conducted on steamed chestnut-sweet potato to improve its quality, convenience, and preference as snack. Steamed sweet potato was dried from 10 to $25^{\circ}C$ for 48 hours, and moisture contents, colors, texture, and taste were evaluated. The lowest moisture content was 4.53% at $25^{\circ}C$. Lightness decreased while other color values (a, b, and ${\Delta}$E) increased with increasing drying temperature and drying time. Reducing sugar and soluble solid contents ranged from 93.22~190.35 mg/g and 17~60 $^{\circ}Brix$, respectively. The highest hardness of chestnut-sweet potato was 25.13 kgf/$cm^2$, and springiness and cohesiveness were 88.60, and 94.87%, respectively, when dried at $25^{\circ}C$ for 48 hours. Sensory evaluation score was highest at $20^{\circ}C$ for 24 hours. The optimum drying conditions were determined to be $19^{\circ}C$ and 39.5 hours by RSM(response surface methodology).

A Study on the Quality Characteristics of Makgeolli Using Heat Treatment of Traditional Korean Nuruk Extract (재래누룩 추출물을 열처리한 막걸리의 품질 특성)

  • In this study, the condition for preventing abnormal fermentation was set by heating the nuruk extract, such that glycosyl enzymes maintain its activity and unnecessary microbes are removed. The total colony of microbes in the heated nuruk extract was highest in number at $25^{\circ}C$ and began to reduce at 50, $60^{\circ}C$ and sharply reduced over $70^{\circ}C$. Saccharogenic power (SP), glucoamylase and acidic protease activities were highest at $50^{\circ}C$, 10, 20, 30min and ${\alpha}$-amylase activity was lower at $50^{\circ}C$ than at $25^{\circ}C$. In the pHs of the nuruk extract, as the heat temperature became higher and treatment time was longer, the pHs were reduced significantly. The total acidities of heat treatments at 50, $60^{\circ}C$ were lower by 0.2% than at $25^{\circ}C$, where as the 70, $80^{\circ}C$ treatments showed a sharp rise from the early stage of fermentation. Soluble solids showed the same aspects with the glycosyl enzymes cases. In reducing sugar, 25, $50^{\circ}C$ treatments were sharply increased from the first day of fermentation while $60^{\circ}C$ treatments began to rise from second day 70, $80^{\circ}C$ were slightly increased after the fourth day. The normally alcohol fermented treatments were 25, 50 and $60^{\circ}C$ 30min. The $70^{\circ}C$ treatments almost did not alcohol fermentation. In the preference tests, taste and total acceptability were high at 25, $50^{\circ}C$ treatments. These results suggest that makgeolli using heat treated nuruk extract also has good taste as well as did not.

Preparation and Characteristics of Konjac Noodle-added Mugwort (쑥을 첨가한 곤약국수의 제조 및 특성)

  • Konjac gel is known as a low calorie food, because the main component is water. Mugwort has been used for food and medicine for a long time due to itsfunctional property, which contains a lot of vitamins and minerals. Therefore, konjac noodle-added mugwort was prepared. The konjac gel was made by from a centrifuge after adding water, alkali and mugwort power in konjac flour. The centrifuge was used to remove air in the gel. After centrifuging by heating the gel in boiling water for one hour, konjac noodle was made by pressing using a flat heating press. The results are as follows. In the drying process of mugwort freeze drying after blanching in 1% $NaHCO_3$ solution is better than other drying methods. The physical properties (hardness, elasticity, cohesiveness, gumminess) of konjac gel were measured with a Rheometer. The optimum processing conditions were decided by these measured values. The optimum condition of making konjac gel is 9% concentration of konjac flour, a ph of 12.0, $Na_3PO_4$ coagulant and 1.5% concentration of mugwort power in konjac flour.

The Effects of Feeding Acacia saligna on Feed Intake, Nitrogen Balance and Rumen Metabolism in Sheep

  • The aim of this study was to determine the feeding value to sheep of Acacia saligna grown under temperate conditions. Pen trials were undertaken to determine the effects of feeding A. saligna, which had been grown in a Mediterranean environment, on feed intake, nitrogen balance and rumen metabolism in sheep. Sheep were given ad libitum access to A. saligna with or without supplementation with PEG 4,000 or PEG 6,000. PEG 4000 appears to be the major detannification agent used in trials involving high tannin feed despite the fact that PEG 6000 has been shown to be more effective, in vitro. For this reason it was of interest to compare the two, in vivo. Dry matter intake was greater (p<0.05) in sheep supplemented with either PEG 4,000 or PEG 6,000 compared to the control. There was no difference, however, in intake between those supplemented with either PEG 4,000 or 6,000. Although animals were not weighed throughout the trial, a loss in body condition was obvious, in particular in the control group. Intake of N was greater (p<0.05) in sheep supplemented with either PEG 4,000 or PEG 6,000 than in the control. There was no difference in N intake between those supplemented with either PEG 4,000 or PEG 6,000. There were no significant differences in either the faecal or urinary N output between any of the treatment groups and all treatment groups were in negative N balance. Neither the average nor maximum pH of ruminal fluid of the control group was different to those supplemented with PEG. The minimum pH for the control group, however, was significantly higher (p<0.05) than for either of the PEG treatments. The average and the maximum ammonia levels were lower (p<0.05) in the control group compared with those in either of the PEG treatment groups. For all dietary treatments ruminal ammonia levels were well below the threshold for maximal microbial growth. Feeding A. saligna, without PEG, had a definite defaunating effect on the rumen. For all dietary treatments ruminal ammonia levels were well below the threshold for maximal microbial growth. It was concluded that A. saligna was inadequate as the sole source of nutrients for sheep, even with the addition of PEG 4,000 or PEG 6,000. The anti-nutritional effects on the animals were largely attributed to the excessive biological activity of the phenolics in the A. saligna leaves. There is a need to determine other supplements that may be complimentary with PEG to enhance the nutritive value of A. saligna to maintain a minimum of animal maintenance.

Effect of Varying Levels of Dietary Minerals on Growth and Nutrient Utilization in Lambs

  • Hisardale male lambs (n=24, 4-5 month of age) were maintained on a conventional ration for a month, to equilibrate the body mineral status. Six lambs were sacrificed after one month of feeding; the samples of organs were analyzed to ascertain mineral status. The remaining 18 lambs were divided into 3 groups of 6 each on body weight basis. Three dietary treatments containing 100 ($T_1$), 110 ($T_2$) and 120% ($T_3$) of minerals (Ca, P, S, Zn and Mn) as specified by NRC (1985) were formulated and each treatment was alloted ad libitum to a group for 120 days. Blood and wool samples were collected at monthly intervals. At the end of the experiment a balance trial of 5 days duration was conducted to study the balance of mineral elements. The effective intake of minerals was Ca, 111 and 120, P, 110 and 122; S, 112 and 129; Zn, 112 and 126 and Mn, 109 and 123 percent in $T_2$ and $T_3$, respectively, in comparison to $T_1$ (100). The additional mineral supplementation had no significant effect on dry matter intake. The average daily weight gain was higher (p<0.01) in $T_2$ and $T_3$ than the control ($T_1$). The lambs under treatments $T_2$ (8.72) and $T_3$ (8.47 kg) consumed apparently lesser amount of dry matter per unit gain as compared to $T_1$ (10.81 kg). Significantly higher (p<0.05) dry matter and crude protein digestibility (%) were observed in $T_2$ and $T_3$ than in $T_1$. The mean balances for different elements were Ca, 1.14, 1.68 and 1.67 g; P, 1.70, 1.95 and 2.18 g; S, 0.54, 0.92 and 1.11 g; Zn, 22.56, 25.30 and 28.71 mg; Cu, 7.94, 5.71 and 5.53 mg; Fe, 33.19, 32.94 and 31.03 mg and Mn, 8.24, 14.40 and 16.07 mg/lamb/day. The retention of supplemental minerals increased (p<0.01) while that of Cu decreased (p<0.01) due to supplementation of minerals (Ca, P, S, Zn and Mn). Retention as per cent of intake increased statistically for S and Mn while that of Cu decreased. It can be concluded that supplementation of minerals (Ca, P, S, Zn and Mn) higher than the recommended level improved body weight gain and feed to gain ratio. The retention of minerals increased due to supplementation. Therefore, an additional supplementation of deficient minerals (Ca, P, S, Zn and Mn) by 10% was beneficial for Hisardale male lambs under tropical condition in India.

Changes in the Chemical Composition and Textural Properties of Korean Cabbage during Salting (배추의 염장과정 중 성분변화와 조직감의 변화)

  • The effects of salting on the compositional and textural changes of Korean cabbage were studied. The optimum brining conditions were established ana the dietary fiber composition, mineral contents and moisture content of raw and salted Korean cabbage were determined. The cutting test of cabbage was made by Rheometer and the brittleness and chewiness were evaluated organoleptically. The optimum condition for brining was at 20% NaCl concentration for 6 hours. In the compositional changes of Korean cabbage by salting at 20% NaCl solution for one month, the content of hot water soluble pectin (HW-P) increased from 43.6% to 55.9% and that of hexametaphosphate soluble pectin (HM-P) decreased from 35.9% to 29.5%. The contents of cellulose and hemicellulose increased, but that of lignin decreased slightly by salting, showing no significant differences in raw and salted cabbage. The content of Na increased significantly and those of Ca, Mg and K decreased by salting. And also moisture content decreased from 91% to 79%. In the textural changes of Korean cabbage by salting, the maximum cutting force and cutting work increased five times and two and half times respectively. And organoleptic test did show significant increase in chewiness and decrease in brittleness. The maximum cutting force by Rheometer was well correlated with the sensory parameters. The results taken together showed that the changes in textural properties during salting are relevant to the changes in pectic substances, moisture content and mineral contents, but relatively irrelevant to the changes in cellulose, hemi-cellulose ana lignin. And it is considered that the maximum cutting force by cutting test is good means for the expression of texture of Korean cabbage.
