This study was conducted to investigate the productivity, meat quality, blood variables, stress responses, and litter quality of broilers offered feed with different levels of Glycine (Gly) supplementation under heat stress condition. A total of 760 one-day-old Ross 308 broiler males were randomly assigned to one of the four dietary treatment groups: (1) basal diet (control; CON); (2) basal diet + Gly 0.1% (Gly 0.1%); (3) basal diet + Gly 0.2% (Gly 0.2%); and (4) basal diet + Gly 0.3% (Gly 0.3%). The environments for all the treatments groups were maintained according to broiler rearing guidelines from day 1 to day 21, and heat stress condition (32 ± 1℃, 60 ±5%) was created from day 22 to the end. The addition of Gly increased weight gain and affected feed intake (p < 0.05). Gly 0.1% group had higher pH and ferric reducing antioxidant power (FRAP) in the chicken meat and lower heterophil (HE)/lymphocyte (LY) ratio in the blood (p < 0.05). In particular, Gly 0.2% treatment group had lower serum corticosterone level (p < 0.05) than other groups. For jejunum morphology, the addition of Gly 0.2% significantly reduced the depth of the crypts (p < 0.05). However, the addition of Gly did not significantly affect litter quality (p > 0.05). In conclusion, the addition of glycine improved productivity and meat quality, alleviated heat stress, and improved intestinal function. Further studies are needed to determine the optimal level and mechanism of action of the additive when ingested.
This study was conducted to ivestigate the quality of modeled chinese-cabbage Kimchi. The mutual action of sub-ingredients and optimum mixing conditions were examined by analyses of pH, acidity, content of vitamins, carotenes, number of total microorganism, and Lactobacilli, the activities of softening related to enzymes (polygalacturonase and ${\beta}$-galactosidase), and sensory quality during fermentation. The result about the mutual action of red pepler powder and garlic showed that the pH was decresed as concentration of garlic was higher and that of red peppler powder became lower. Kimchi had unpleasant taste and undesirable odor when the adding ratio of the peper powder and garlic was unbalanced. As the concentration of garlic became higher, the content of vitamin C in Kimchi tissue decreased while that of vitamin C in Kimchi juice increased. The contents of vitamin B1, B2 and carotene increased as the concentration of garlic became lower. The optimum mixing ratio of red pepper powder and garlic evaluated by overall eating quality was 4.66% and 3.45%, respectively. The result about the mutual action of ginger and green onion was that pH became higher as the concentration of ginger was 1.84% and that of green onion was 5.96%. The intensity of fresh taste and odor became stronger as the concentration of ginger increaed to 2.76% and that of green onion decreased to 2.98%. The balance of sour, salty and hot taste became better as the concentration of ginger increased and that of green onion decreased. The optimum mixing condition evaluated by overall eating quality was 2.94% in ginger + 2.78% in green onion. The contents of vitamin B1, B2 and C were high in this condition. The result about the mutual action of leek and salted anchovy juice was that pH became lower as the concentration of leek increased and that of salted anchovy juice decreased. Sour, hot and sweet tastes were good in the condition of leek 12%, salted anchovy juice 4.69%. Palatable, fresh taste and odor became weaker when the one of both sub-ingredients was too much little. The optimum mixing condition evaluated by overall easting quality was 9.76% in leek + 7.32% in salted anchovy juice. The contents of vitamin B1, B2, C and carotene were high in this condition and other sensory qualities were good. The result about the mutual action of salt and sugar was that pH became lower as the concentration of sugar became higher and that of salt became lower. The sweet taste was reduced of hot taste than salty taste. Palatable and fresh tastes were desirable when Kimchi fermented with less salt and more sugar. The optimum mixing condition evaluated by overall eating quality was 3.29% in sugar + 4.80% in salt. The contents of vitamin B1, B1, C and carotene were high in this condition. The result of model Kimchi fermented at 20$^{\circ}C$ was that the number of Lactobacilli in model Kimchi was higher than that of in control Kimchi. The fermentation period was extended under pH 4.0 and the contents of vitamin B1, B1,C and carotene were high through the whole edible period. The activity of polygalacturonase was low, but that of ${\beta}$-galactosidase was high during fermentation.

The objective of the current study was to investigate the effects of stocking density (SD) and dietary supplementation of vitamin C on growth performance, meat quality, intestinal permeability, and stress indicators in broiler chickens. The study was conducted using a completely randomized design with a 2 × 2 factorial arrangement consisting of 2 different SD and 2 supplemental levels of dietary vitamin C. A total of 1,368 Ross 308 broiler chickens of 21 days of age with similar body weights (BW) were randomly allotted to 1 of 4 treatments with 6 replicates each. Different numbers of birds per identical floor pen (2.0 m × 2.4 m) were used to create 2 different SD levels of low SD (9 birds/m2) and high SD (18 birds/m2). The basal diet was formulated with no supplemental vitamin C to meet or exceed nutrient recommendations of the Ross 308 manual. The other diet was prepared by supplementing 200 mg/kg vitamin C in the basal diet. The study lasted for 14 days. At the end of the study, 3 male birds per replicate were selected to analyze meat quality, intestinal permeability, and stress indicators such as blood heterophil:lymphocyte (H:L) and feather corticosterone (CORT) concentrations. Results indicated that there were no interactions between different SD and dietary supplementation of vitamin C for all measurements. For the main effects of SD, birds raised at high SD had less (p < 0.01) BW, BW gain, and feed intake with increasing stress responses including greater blood H:L and feather CORT concentrations (p < 0.01) than those raised at low SD. Transepithelial electrical resistance in the jejunal mucosa was decreased (p < 0.05) at high SD, indicating an increase in intestinal permeability. However, the main effects of dietary supplementation of 200 mg/kg vitamin C were insignificant for all measurements. In conclusion, high SD of broiler chickens impairs growth performance and intestinal barrier function with increasing stress responses. However, dietary supplementation of vitamin C may have little beneficial effects on broiler chickens raised at the high SD condition used in the present study.
The effects of differen concentrations of Obosan as a feed additive dietary herb were examined on survival rate, growth, feed conversion ration and condition factor in olive flounder (paralichthys olivaceus). Effectiveness of dietary Obosan with optimized concentration for 48 weeks were also observed with regard to growth performances and yields. All groups fed diets containing 0.15, 0.3 and 0.6% of Obosan revealed significantly higher survival rate than control group (P<0.05). Growth, feed conversion ratio and condition factor of olive flounder fed diets containing Obosan were considerably improved when compared to those of controls (P<0.05). The 0.3% of dietary Obosan was proven to be the optimal concentration in all parameters tested. The dietary Obosan (0.3%) for 48 weeks showed significantly higher surval rate than control (P<0.05), and also improved yields in weight gain (19.0% improvement), specific growth rate (4.8%), feed conversion ratio(13.6%) and condition factor (10.8%), significantly (P<0.05).
This study was performed to determine the optimal hydrolysis conditions for the production of hydrolysates, including water-soluble dietary fiber from Chinese cabbage, with commercial enzymes. The optimal pH and temperature for hydrolysis of the hemicellulose fraction were pH 5.0 and $40^{\circ}C$, and optimal enzyme concentrations were 45 units and 21 units for Shearzyme plus and Viscozyme L, respectively. The yields of the hydrolysate including the water-soluble dietary fiber from the hemicellulose fraction by Shearzyme plus and Viscozyme L were 22.64 and 24.73%, respectively, after a 72 h reaction. The molecular weight distribution of alcohol-insoluble fiber was characterized by gel chromatography; degradation of hemicellulose increased with increasing reaction time. Our results indicate that the hemicellulose fraction was degraded to water-soluble dietary fiber by enzymatic hydrolysis, and its hydrolysate could be utilized as new watersoluble food materials.

The effect of dietary carrot extract on skin pigmentation and non-specific immunity of red seabream was evaluated in a six-week feeding trial compared to that of astaxanthin. Fish were fed different experimental diets supplemented with three levels of carrot extract (30, 100, and 300 mg ${\beta}$-carotene/kg diet or CE30, CE100, and CE300), 100 mg astaxanthin/kg diet (AXT100), or a diet without supplement as control for 6 weeks. Our results revealed that the specific growth rate and feed conversion rate were not significantly (p>0.05) affected by carrot extract or astaxanthin supplementation for 6 weeks. After 3 weeks of feeding, the dietary carrot extract significantly (p<0.05) influenced the redness ($a^*$) and hue ($H^*{_{ab}}$) of fish skin. CE300 showed the highest $a^*$ and the lowest $H^*{_{ab}}$, suggesting that carrot extract increased the redness of skin color. However, after 6 weeks of feeding, dietary carrot extract significantly (p<0.05) increased the values of yellowness $b^*$ at all three levels. In contrast, AXT100 significantly (p<0.05) increased the values of $a^*$ but decreased the value of $H^*{_{ab}}$. Only CE300 significantly (p<0.05) increased the serum lysozyme activity. These findings suggest that dietary carrot extract can be utilized as a natural feed additive to improve skin pigmentation and health condition of fish.
The purpose of the study was to investigate attitude about self-weight reduction and dietary intakes by body mass index (BMI) of university students. The subjects were Korean university students (male: 1,024, female: 1,575) who were participating in a nutritional education class via the internet. This survey was carried out using a self-administered questionnaire. The questionnaire included items about demographic characteristics, nutrient intakes, health-related lifestyles, dietary behaviors, body images and diet experiences. As for prevalence of obesity, 3.2% of male subjects were underweight, 64.2% were normal weight, 20.8% were overweight, and 11.8% were obese. In female subjects, 25.8% were underweight, 67.1 % were normal weight, 5.3% were overweight, and 1.7% were obese. Distribution of obesity by BMI was significantly different between male and female subjects. There was a significant difference in perceptions of body weight between male and female subjects. The female subjects were more likely to perceive themselves as overweight. As for weight reduction, the higher BMI was, the more weight reduction was tried in both male and female subjects. As for average daily intakes for energy and 11 nutrients, most nutrient intakes were not significantly different by distribution of BMI. However, obese subgroup showed the lowest nutrient intakes compared to other subgroups. As BMI increased, mean adequacy ratio (MAR) significantly decreased. Therefore, nutritional education via the internet is necessary for university students to establish physically and mentally optimal health condition through nutritional intervention.
There is substantial evidence that insulin sensitivity can be enhanced through appropriate dietary management . In this study, insulin sensitivity was evaluated using and insulin suppression test. Male Sprague-Dawley rats, were caused to be in a diabetic condition by the injection of streptozotocin, and divided into four groups. They were fed one of the following diets for 2 weeks : (group 1) a high-carbohydrate(CHO) low-fat low-fiber diet, (group 2) a high CHO low-fat and high-fiber diet, (group 3) a low-CHO high-fat and low-fiber diet, and (group 4) a low-CHO low-fat diet groups (as comparison between group 1 and group 2 shows). In the low-CHO high-fat diet groups, dietary fiber tended to decrease plasma glucose levels at the end of the experiment, but not significantly (as comparison between group 3 and group 4 shows). The average steady state plasma glucose level in rats on the group 3 diet was the highest among all four groups(p<0.05), indicating the poorest insulin sensitivity . However, high fiber increased insulin sensitivity in rats on the low-CHO high-fat diets(as shows by a comparison between group 3 and group 4). On the other hand , the high-CHO low-fat enhanced insulin sensitivity in rats on the low fiber diet(group 1 and group 3). The degree of enhancement of insulin sensitivity depends on the combination of CHO, fat , and fiber in the diet. In conclusion, this study demonstrates that a low-CHO high-fat low -fiber diet may be deleterious to diabetic rats. In view of insulin sensitivity enhancement , dietary fiber level is irrelevant, as long as the diet has a high-CHO and low-fat level.

Feed intake (FI) of sows during lactation is a serious problem because sows require a large amount of energy for high milk production during lactation. Providing a palatable diet is important for lactating sows to cope with the stress of breast-feeding. Palatability can be increased by adding sweeteners to diets. This study was conducted to evaluate the effects of saccharin (sweetener) on growth performance, fecal moisture, and litter performance of lactating sows. Sixteen sows were randomly allotted to one of two dietary treatments in a 27-day trial starting from lactation. The two dietary treatments were supplemented with 0 and 0.2% saccharin (sweetener), respectively. Average daily feed intake (ADFI) was increased (p < 0.05) and back fat loss (BFL) was decreased (p < 0.05) in sows fed saccharin supplementation diets compared with sows fed control diet during lactation. However, sows' body weight loss, body condition score (BCS), fecal score, and the number of piglet survival were not different (p > 0.05) among dietary treatments. The two dietary treatments also had no significantly different effect (p > 0.05) on litter weight and average daily gain (ADG) of piglets. Taken together, saccharin has no significant effect on growth performance of piglets but it can increase FI and reduce BFL of lactating sows.

This study was conducted to evaluate the optimum dietary lipid level in juvenile river puffer. Five semi-purified diets were formulated with corn oil to contain graded levels of lipid levels of 6, 9, 12, 15 and 18%. Fish averaging $8.32{\pm}0.02$ g randomly were fed the experimental diets in triplicate groups for 8 weeks. After the 8-weeks feeding trial, weight gain and specific growth rate of fish fed the 9% diet were significantly higher than those of fish fed the 15 and 18% diets (P<0.05) but there was not significantly different from that of fish fed the 6, 9 and 12% diets. Feed efficiency and protein efficiency ratio of fish fed the 6, 9 and 12% diets were significantly higher than those of fish fed the 18% diet (P<0.05). Visceralsomatic index of fish fed 18% diet was significantly higher than that of fish fed the 6% diet (P <0.05) but there was not significantly different from that of fish fed the 9, 12, 15 and 18% diets. No significant differences were observed in condition factor, hepatosomatic index and whole body composition among all the fish groups. Serum cholesterol and triglyceride fish fed of 18% diet were significantly higher than that of fish fed the other diets (P<0.05). Optimum dietary lipid levels by using broken-line model and by using second order polynomial were estimated at 7.01% and 8.98% for the maximum growth of fish respectively. Therefore, these results suggested that the optimum dietary lipid level could be greater than 7.01% but less than 8.98% for the maximum growth in juvenile river puffer.
