This study introduces the addition of wheat fiber, oat fiber, and inulin to Chinese-style sausages, in amounts of 3.5% and 7%, respectively. Researchers used analysis of general composition and texture properties, and sensory evaluation to assess the influence of these three types of dietary fiber on the quality and palatability of Chinese-style sausages. Results showed that the type and amount of dietary fiber introduced did not significantly influence the general composition, color, and total plate count of sausages. However, the addition of wheat fiber and oat fiber significantly hardened the texture of Chinese-style sausages (p<0.05). A greater amount of dietary fiber added implied a harder texture. Added inulin did not influence the texture of Chinese-style sausages (p>0.05). Results of product assessment showed that, aside from sausages with 7% wheat fiber scoring less than 6 points (on a 9-point scale) in terms of overall acceptability, the other groups of Chinese-style sausages scored over 6 points. Judges preferred the sausage groups with 3.5% added oat and wheat fiber. This study demonstrates that adding fiber to Chinese-style sausages to increase the amount of dietary fiber is feasible.
Milk yield and its composition is governed by level of nutrition and the composition of diet. Higher concentrate input improves milk yield, whereas its input at moderate levels improves yield of milk fat. High level of dietary protein improves dry matter intake and milk production, however, CP content above 14% has less advantage. Milk yield is enhanced by the feeding of cottonseed and soyabean meal, whereas milk fat increases by the supplementation of cottonseed. Dietary fat increases energy intake, production of milk and milk fat. Quality and quantity of feeds consumed affect fermentation patterns in rumen. Among the rumen metabolites, volatile fatty acids (VFA) content and propionate proportion have been related positively with milk yield, whereas proportion of acetate and butyrate have been related positively with milk fat content. Dietary carbohydrates through the source of sugar, starch, roughage and fibre affect VFA concentration in rumen. Therefore, concentration of volatile fatty acids could be altered to the advantage of consumer through judicious manipulation of diet.
A feeding experiment was conducted to determine the effect of dietary distillers dried grain (DDG) on the growth and body composition of juvenile abalone, Haliotis discus hannai. Three diets were formulated to contain 0% (DDG0), 30% DDG (DDG1) replacing wheat flour and 30% DDG (DDG2) replacing fish meal and wheat flour. A commercial feed (CF) was also compared with experimental diets. Three replicate groups of abalone averaging $0.6{\pm}0.01g$ were fed one of the four diets for 14 weeks. The highest survival rate was observed in the abalone fed the DDG2 diet, which was higher than that of abalone fed the DDG0 diet. Weight gain, shell length, shell width and soft body weight of the abalone were not affected by dietary DDG and CF diet (P > 0.05). Proximate and amino acid composition of the soft whole body were not affected by dietary DDG and CF diet (P > 0.05). The result of this experiment suggests that DDG is a good ingredient to replace fish meal and wheat flour in the diet and could be used up to 30% in the diet without negative effects on the growth performance of juvenile abalone Haliotis discus hannai.
Inclusion effect of various levels of jack mackerel meal (JMM) acting as feed attractants and/or stimulants in diets on the growth, feed consumption, feed utilization and whole body composition of rockfish was investigated. Three hundred juvenile rockfish were randomly allocated into 15 flow-through tanks. Five experimental diets supplemented with JMM at 0%, 1%, 3%, 5%, and 10% at the expense of anchovy meal were prepared and referred to as the JMM0, JMM1, JMM3, JMM5, and JMM10 diets, respectively. Weight gain, specific growth rate (SGR) and feed consumption of fish tended to improve with dietary levels of JMM. The greatest weight gain, SGR and feed consumption were observed in fish fed the JMM10 diet, followed by the JMM5, JMM3, JMM1, and JMM0 diets, in that order. Condition factor (CF) of fish tended to improve with dietary inclusion levels of JMM. Growth performance, feed consumption and CF of fish tended to improve with dietary inclusion levels of JMM ranging from 0% to 10%.

An experiment was conducted to evaluate the effects of chromium picolinate on growth performance, nutrient utilizability, carcass composition, serum traits and in vitro protein synthesis of 3 day old Arbor Acres broiler chickens when dietary crude protein levels were varying in diets. Six replicates of eight chicks each (average initial weitht = 59.4 g) were randomly assigned to three levels (low, medium, high) of dietary crude protein at two levels of chromium (0, 200 ppb Cr/kg diet) as chromium picolinate. Six chicks/treatment were randomly chosen for analyses of carcass composition, six additional chicks/treatment were randomly chosen for analyses of serum components, and a chick/treatment was chosen for in vitro culture of liver tissue. Chromium picolinate did not affect feed intake, protein and fat utilizability, regradless of dietary crude protein level. But feed/gain ratio were more improved in groups fed the low protein diets added with chromium picolinate compared with groups fed the medium and high protein diets with chromium picolinate. Carcass fat tended to decrease whereas carcass protein tended to increase when added with chromium picolinate. Broilers fed diets with chromium picolinate exhibited lower serum triglyceride and nonesterified fatty acid concentrations than those fed without chromium picolinate (p < 0.05). Both secreted and retained proteins in cultured acinar cell were higher in groups fed diets with chromium picolinate than those fed diets without chromium picolinate (p < 0.05). It could be suggested that chromium picolinate was effective in improving weight gain and nutrient utilizability when dietary crude protein was low (p < 0.05), and also effective in manipulating carcass fat when dietary crude protein level was high (p < 0.05).

This study was conducted to investigate the effects of dietary lipid source and level on growth performance, blood parameters, fatty acid composition and flesh quality of sub-adult olive flounder Paralichthys olivaceus. Eight experimental diets were formulated to contain 5% squid liver oil (SLO), 5% linseed oil (LO), 5% soybean oil (SO), a mixture of 1% squid liver oil, 2% linseed oil and 2% soybean oil (MIX), no lipid supplementation with high protein level (LL-HP), 10% squid liver oil (HL-SLO), a mixture of 1% squid liver oil, 4.5% linseed oil and 4.5% soybean oil (HL-VO), and 1% squid liver oil with high starch level (LL-HC), respectively. Two replicate groups of fish (average initial weight of 296 g) were fed the diets for 17 wks. After 5 wks, 11 wks and the end of the feeding trial, five fish from each tank were randomly sampled for analysis of body composition. At the end of the feeding trial, final mean weight of fish fed the LL-HP diet was significantly (p<0.05) higher than that of fish fed the HL-VO diet, but did not differ significantly from those of fish fed the SLO, LO, SO, MIX, HL-SLO and LL-HC diets. Fish fed the LL-HP diet showed significantly higher feed efficiency than fish fed the LO, HL-SLO and HL-VO diets. Feed efficiency of fish fed the LO, SO and MIX diets were similar to those of fish fed the SLO and HL-SLO diets. Fish fed the HL-SLO diet showed significantly higher total cholesterol content in plasma compared with other diets. Fatty acid composition of tissues was reflected by dietary fatty acid composition. The highest linoleic (LA) and linolenic acid (LNA) contents in the dorsal muscle were observed in fish fed the SO and LO diets, respectively, regardless of feeding period. The highest eicosapentaenoic acid (EPA) content in the dorsal muscle was observed in fish fed the LL-HP and LL-HC diets after 11 and 17 weeks of feeding, respectively. Fish fed the SLO and HL-SLO diets showed higher docosahexaenoic acid (DHA) content than that of other treatments after 11 and 17 weeks of feeding, respectively. Dietary inclusion of vegetable oils reduced n-3 HUFA contents in the dorsal muscle and liver of fish. The n-3 HUFA contents in tissues of fish fed the SLO and HL-SLO diets were higher than those of fish fed other diets, except for the LL-HP and LL-HC diets. Hardness, gel strength, chewiness and cohesiveness values of dorsal muscle in fish were significantly affected by dietary lipid source. The results of this study indicate that fish oil in fish meal based diets for sub-adult olive flounder could be replaced by soybean oil and linseed oil without negative effects on growth and feed utilization.

This feeding experiment was conducted to investigate the effects of dietary inclusion of various additives on growth performance, hematological parameters, fatty acid composition, gene expression and histopathological changes in juvenile olive flounder (Paralichthys olivaceus). Eleven isonitrogenous (49% crude protein) and isolipidic (10% crude lipid) experimental diets were formulated: no additives (Con); 5% kelp meal (Ke); 10% krill meal (Kr); 1% garlic powder (Ga); 1% citrus meal (Ci); 3% onion powder (On); 1% ginger powder (Gi); 1% mugwort powder (Mu); 1% licorice powder (Li); 1% wasabi powder (Wa); and a mixture (Mix) of these additives. Three replicate groups of juvenile flounder (average weight of 8.5 g) were fed one of the experimental diets to visual satiety twice a day for 15 weeks. The dietary inclusion of additives did not affect survival, weight gain, specific growth rate feed efficiency, daily feed intake, daily protein intake, protein efficiency ratio, hepatosomatic index and visceralsomatic index of the fish. Plasma triglyceride levels were significantly lower in fish fed the Ke, Ga, On, Gi, Mu, Li, and Mix diets than in fish fed the control diet. Plasma glucose, glutamic oxaloacetic transaminase and total cholesterol did not differ among dietary treatments. No significant difference was observed in fatty acid composition and lipid content of the dorsal muscle in fish fed the experimental diets. Myosin gene expression did not differ significantly among treatments after 5 weeks but was significantly lower in fish fed the Kr, Ci, Li, and Mix diets than in control group after 15 weeks. Histopathological analysis showed mild gill hyperplasia and mild necrosis of liver parenchymal cells in several individuals of each experimental group. These conditions were also observed in the control group and were not thought to be related to the inclusion of feed additives. The present findings indicate that the dietary inclusion of additives did not affect growth performance, fatty acid composition, gene expression, and histopathological changes in juvenile flounder. However, plasma triglyceride content may be reduced by supplementation with 5% kelp meal, 3% onion powder, 1% garlic powder, 1% ginger powder, 1% mugwort powder, and the additive mixture.
Objective: This study investigated the effects of dietary n-6:n-3 polyunsaturated fatty acid (PUFA) ratio on growth performance, blood indexes, tissue fatty acid composition and the gene expression in finishing pigs. Methods: Seventy-two crossbred ([Duroc×Landrace]×Yorkshire) barrows (68.5±1.8 kg) were fed one of four isoenergetic and isonitrogenous diets with n-6:n-3 PUFA ratios of 2:1, 3:1, 5:1, and 8:1. Results: Average daily gain, average daily feed intake and gain-to-feed ratio had quadratic responses but the measurements were increased and then decreased (quadratic, p<0.05). The concentrations of serum triglyceride, total cholesterol and interleukin 6 were linearly increased (p<0.05) with increasing of dietary n-6:n-3 PUFA ratio, while that of high-density lipoprotein cholesterol tended to decrease (p = 0.062), and high-density lipoprotein cholesterol:low-density lipoprotein cholesterol ratio and leptin concentration were linearly decreased (p<0.05). The concentration of serum adiponectin had a quadratic response but the measurement was decreased and then increased (quadratic, p<0.05). The proportion of C18:3n-3 was linearly decreased (p<0.05) in the longissimus thoracis (LT) and subcutaneous adipose tissue (SCAT) as dietary n-6:n-3 PUFA ratio increasing, while the proportion of C18:2n-6 and n-6:n-3 PUFA ratio were linearly increased (p<0.05). In addition, the expression levels of peroxisome proliferator-activated receptor gamma (PPARγ) and lipoprotein lipase in the LT and SCAT, and adipocyte fatty acid binding protein and hormone-sensitive lipase (HSL) in the SCAT had quadratic responses but the measurements were increased and then decreased (quadratic, p<0.05). The expression of HSL in the LT was linearly decreased (p<0.05) with increasing of dietary n-6:n-3 PUFA ratio. Conclusion: Dietary n-6:n-3 PUFA ratio could regulate lipid and fatty acid metabolism in blood and tissue. Reducing dietary n-6:n-3 PUFA ratio (3:1) could appropriately suppress expression of related genes in PPARγ signaling, and result in improved growth performance and n-3 PUFA deposition in muscle and adipose tissue in finishing pigs.
Background: The most beneficial dietary pattern in managing metabolic syndrome (MetS) in the elderly has not been ascertained. The aim of this study is to classify dietary patterns and to examine associations between dietary pattern, MetS and body composition in elderly Koreans. Methods: This study was conducted among Koreans 65 years or older using data from the Korea National Health and Nutrition Examination Survey in 2009. A total of 1,567 study subjects were included. All statistical analyses were conducted using SPSS version 20.0 and dietary patterns were classified by cluster analysis. Results: There were three dietary patterns derived by cluster analysis in this study. We observed that most South Korean elderly still maintain a traditional dietary pattern. Dietary patterns were classified as balanced (31%), imbalanced (40%), or very imbalanced (30%), with the majority of subjects having an unbalanced diet pattern in which their total energy and nutrient intake was insufficient compared with the Dietary Reference Intake for Koreans. Those in the very imbalanced group had a ratio of macronutrients (carbohydrates:fats:protein) of 81.15:7.18:11.50 and a 54% higher likelihood of having hypertriglyceridemia (P=0.025) compared with those in the balanced group. Conclusion: The current findings indicate that the diets of South Korean elderly are nutritionally imbalanced, including high carbohydrate consumption, which confers a high risk hypertriglyceridemia. These findings highlight the effect of nutritional imbalance in elderly with MetS.

This study was conducted to determine the effects of dietary level of whole flaxseed (WFS; 0, 10 and 15%) on performance, carcass characteristics and fatty acid composition of serum and subcutaneous, perirenal, and intramuscular adipose tissues of Korean Hanwoo cattle. The daily gains were not different among treatments. Dietary inclusion of WFS decreased (p<0.05) feed intake but improved (p<0.05) feed conversion ratio (feed/gain). Backfat thickness and marbling score were increased (p<0.05) by dietary WFS. Carcass weight, dressing percentage, loin-eye area, and carcass yield and quality were not different among treatments. The proportion of C18:3 in serum and, to a lesser extent, in adipose tissues were increased (p<0.01) by dietary WFS, indicating that lipids from WFS escaped ruminal biohydrogenation. Animals fed WFS had lower proportions of saturated fatty acid (SFA; C14:0 and 16:0) and higher proportions of polyunsaturated fatty acids (PUFA; C18:2. 18:3, 20:2, 20:4, 20:5 and 22:6) in perirenal and intramuscular fat than animals fed diets without WFS, resulting in an increased PUFA/SFA ratio. Furthermore, feeding WFS increased (p<0.01) proportions of $\omega$-3 and $\omega$-6 fatty acids in intramuscular fat but decreased (p<0.05) the $\omega$-6/$\omega$-3 ratio. Relative treatment effects were similar between 10 and 15% WFS. Feeding WFS can effectively alter composition of adipose tissues with enhanced feed conversion ratio.
