Effects of Corn Distiller's Dried Grains with Solubles on Production and Egg Quality in Laying Hens

  • Corn distiller's dried grains with solubles (DDGS) is a completely new feed ingredient in the Korean feed market. There is an ever increasing need for the Korean feed industry to import and make the best of it as a high protein and high energy feed ingredient. A layer feeding trial was conducted for 10 weeks to investigate the effects of addition of light-colored DDGS to layer diets on laying performance, egg qualities and yolk fatty acid composition. Also, the economics of using DDGS in the Korean situation was analyzed. Nine hundred Hy-line Brown layers, 24 weeks of age, were employed in a feeding trial consisting of four dietary treatments (0, 10, 15, and 20% DDGS), and five replicates per treatment. All experimental diets were prepared as iso-protein (17%) and iso-calorie (TMEn 2,780 kcal/kg). The use of DDGS up to 20% in layer diets did not exert any influence on feed intake, laying rate, total egg mass, mean egg weight and feed conversion ratio (p>0.05). The color and breaking strength of eggshell, as well as the albumin height and Haugh unit were not affected by the addition of DDGS up to 20% in the diet. The yolk color was significantly increased by DDGS supplementation (p<0.05). As the DDGS level increased, the oleic acid content decreased, and the linoleic acid increased (p<0.05) in egg yolk. The degree of saturation of yolk fatty acids was not affected by DDGS supplementation. The inclusion of light-colored DDGS up to 20% in layer diets resulted in a decrease of feed cost per kg without any undesirable effect on laying performance. In conclusion, the light-colored DDGS (L* 56.65) could be used up to 20% in layer diets without any harmful effect on laying performance, and possibly provide economic benefits to the Korean poultry industry.

Quality of Bastard Halibut Surimi Gel as Affected by Harvested Time of Unmarketable Cultured Bastard Halibut Paralichthys olivaceus (생산시기가 비규격 넙치 (Paralichthys olivaceus) 연제품의 품질에 미치는 영향)

  • In this study, we investigated the chemical and enzymatic properties of unmarketable cultured bastard halibut (UCBH) Paralichthys olivaceus harvested at different times (March, May, July, September, November, and January), and we examined the physical properties of surimi gel from UCBH as a potential source of surimi and surimi gel. The moisture and crude protein contents of UCBH harvested in July and January were >78% and <19%, respectively, which is greater than the moisture content in UCBH harvested in May, March, and September, but lower than the crude protein content. Regardless of the month of harvest, the UCBH had a higher crude protein content than Alaska pollock, which is the largest fishery biomass used for surimi and surimi gel, but a lower moisture content. Regardless of the month of harvest, the enzymatic activity in crude extracts of UCBH muscle ranged from 0.31-0.59 U/mg for casein (pH 6.0 and 9.0) and 11.7-12.7 U/mg for LeuPNA. These findings suggest that autolytic enzymes were unaffected by gel formation. Gel strength was highest in the surimi gel prepared from UCBH harvested in September, November, and January; second highest in that prepared from UCBH harvested in March and May; and lowest in that prepared from UCBH harvested in July. Compared to the gel strength of surimi gel from grade SA commercial Alaska pollock surimi, the strength of the surimi gels prepared from UCBH harvested in March, May, September, November, and January were superior, whereas that of the surimi gel prepared from UCBH harvested in July was similar.

Comparison of the distribution and accessibility of restaurants in urban area and rural area (도시 지역과 농촌 지역의 음식점 분포와 접근성의 비교)

  • Purpose: The purpose of this study was to measure accessibility and to examine distribution of restaurants in the local community. Methods: The target area of this study was two urban areas and a rural area in a city. We collected location information on all restaurants in target areas and classified all restaurants according to Korean food restaurants and Non-Korean food restaurants. We measured restaurant density per 100 m from the residences of the study population and calculated the distance of the nearest restaurant from the residences of the subjects using the Geographic Information System (GIS) analysis method. We compared the accessibility and distribution of restaurants in urban areas with that of the rural area, and compared the accessibility and distribution of Korean restaurants with that of Non-Korean restaurants. Results: Restaurants in urban areas were more dense than those in the rural area, and, in urban areas, restaurants were intensively distributed around the subjects' residence. Also, there were more Non-Korean food restaurants than Korean food restaurants in urban areas, and it was opposite in the rural area. Conclusion: It is important that we understood the current state of the restaurant environment in the local community using GIS analysis for the first time in the field of food environment. Further research is necessary on the association of restaurant environments and the dietary life of the population.

Effects of Cheonggukjang Added Phellinus linteus on Lipid Metabolism in Hyperlipidemic Rats (고지혈증 흰쥐에 청국장 및 상황버섯 청국장이 지질대사에 미치는 효과)

  • The effects of cheonggukjang (traditional fermented soybean food, CK) and cheonggukjang added Phellinus linteus (CKP) on lipid metabolism were investigated in adult male rats. Twenty weeks old Sprague-Dawley rats were fed a purified hyperlipidemic diet (control diet: 0.5% cholesterol, 10% fat, 18% casein) for 4 weeks. The rats were randomly assigned to each treatment group control, two kinds of CK or CKP (powders of CK or CKP as dietary protein sources) After 5 weeks of CK or CKP diets consumption, the body weights, the hepatic and epididymal fat pad weights of the CK or CKP diets groups were significantly decreased than those of the control group. The liver cholesterol and triglyceride levels were significantly lower in both the CK and CKP diets groups than those in the control group. The concentrations in serum triglyceride, total cholesterol, LDL-cholesterol, and atherogenic index ratios were significantly decreased in the CK and CKP diets groups compared with those in the control group. The HDL-cholesterol/total-cholesterol ratios were significantly increased in the CK and CKP diets groups compared with those in the control group. Fecal cholesterol and triglyceride excretion of the CK and CKP diets groups were significantly increased than those of the control group. These results showed that both the feeding of cheonggukjang and cheonggukjang added Pheilinus linteus decreased the triglyceride, total cholesterol and LDL-cholesterol in serum as well as the triglyceride and cholesterol in liver, and increased the HDL-cholesterol/total-cholesterol ratio in serum of the rats.

A Study on the Body Composition, Physical Activity Level, Basal Metabolic Rate, and Daily Energy Expenditure of Elderly in Busan (부산지역 일부 노인들의 신체조성, 신체활동수준, 기초대사량 및 에너지소비량실태에 관한 연구)

  • Objectives: The objectives of the study were to assess body composition, physical activity level (PAL), basal metabolic rate (BMR), and daily energy expenditure (DEE) and to examine associations between PAL and body composition, BMR, and DEE of elderly in Busan. Methods: A cross-sectional study was conducted among 226 elderly aged 65-93 years. Body composition was measured by Inbody 720. PAL was calculated by daily activity diary. BMR was calculated by Harris-Benedict (H-B) formula, Dietary Reference Intakes (DRI) formula, and Inbody 720 measurement. DEE was calculated by H-B formula, DRI formula, Inbody 720 measurement, and estimated energy requirements (EER) formula. Results: The mean fat free mass (FFM) in elderly men was significantly higher than that in elderly women (p<0.001). The mean percent body fat and fat mass (FM) in elderly women were significantly greater than those in elderly men (p<0.001, p<0.001). The mean PAL in elderly men (1.59) was significantly higher than that in elderly women (1.53) (p<0.001). The mean DEEs calculated by 3 methods except for H-B formula in elderly men were higher than EER for elderly men (2000kcal). The mean DEEs calculated by 4 different methods in elderly women were higher than EER for elderly women (1600kcal). Age showed significantly negative correlations with height (p<0.001, p<0.001), FFM (p<0.001, p<0.001), BMRs calculated by H-B formula (p<0.001, p<0.001), DRI formula (p<0.001, p<0.001) and Inbody 720 measurement (p<0.05 p<0.01) and DEEs calculated by H-B formula (p<0.001, p<0.001), DRI formula (p<0.001, p<0.001), Inbody 720 measurement (p<0.05, p<0.05), and EER formula (p<0.001, p<0.001) in elderly men and elderly women. PAL showed significantly positive correlations with FFM (p<0.05), BMR by Inbody 720 measurement (p<0.05) in elderly men and negative correlations with FM (p<0.05) in elderly women. Conclusions: Based on the results, PAL was associated with greater FFM in elderly men and lesser FM in elderly women. Therefore, nutritional education to increase physical activity for health promotion in late life is needed in the elderly.

Importance and performance of food and nutrition labeling for school adolescents in Seoul (서울 일부 지역 학교 청소년들의 식품/영양 라벨링에 대한 중요도-수행도 연구)

  • Purpose: This study investigated the importance and performance of food/nutrition labeling. The aim was to determine how important students consider food nutritional labeling, utilization of nutrition labels in daily life, and consumer satisfaction of current nutritional labeling. Methods: This study was conducted using a primary survey of students at one high school in Seoul. A total of 300 of 382 questionnaires were analyzed. Results: Regarding difference analysis of the importance-performance of food/nutrition labeling, importance showed higher scores than performance in all 10 attributes. According to the results of Importance and Performance Analysis (IPA), 'health, weight control and maintenance, proper dietary habits, and personal satisfaction' displayed both high importance and performance in the first quadrant. Importance of two factors (health and nutritional factor and effects of media and education) of the 10 attributes positively influenced overall satisfaction in the multiple regression analysis. Conclusion: To develop healthier food choices, it is necessary to educate adolescents about food/nutrition labeling and improve the food/nutrition labeling system.

The Impact of the Financial Crisis on Lifestyle Health Determinants Among Older Adults Living in the Mediterranean Region: The Multinational MEDIS Study (2005-2015)

  • Objectives: By the end of the 2000s, the economic situation in many European countries started to deteriorate, generating financial uncertainty, social insecurity and worse health status. The aim of the present study was to investigate how the recent financial crisis has affected the lifestyle health determinants and behaviours of older adults living in the Mediterranean islands. Methods: From 2005 to 2015, a population-based, multi-stage convenience sampling method was used to voluntarily enrol 2749 older adults (50% men) from 20 Mediterranean islands and the rural area of the Mani peninsula. Lifestyle status was evaluated as the cumulative score of four components (range, 0 to 6), that is, smoking habits, diet quality (MedDietScore), depression status (Geriatric Depression Scale) and physical activity. Results: Older Mediterranean people enrolled in the study from 2009 onwards showed social isolation and increased smoking, were more prone to depressive symptoms, and adopted less healthy dietary habits, as compared to their counterparts participating earlier in the study (p<0.05), irrespective of age, gender, several clinical characteristics, or socioeconomic status of the participants (an almost 50% adjusted increase in the lifestyle score from before 2009 to after 2009, p<0.001). Conclusions: A shift towards less healthy behaviours was noticeable after the economic crisis had commenced. Public health interventions should focus on older adults, particularly of lower socioeconomic levels, in order to effectively reduce the burden of cardiometabolic disease at the population level.

Water extracts of Eucommia ulmoides improve lipid, glucose, and antioxidant metabolism in ovariectomized rats (두충 열수추출물 급여에 의한 갱년기 유도 모델 흰쥐의 지질, 당질 및 항산화 대사 개선에 미치는 영향)

  • In postmenopausal women, estrogen deficiency can be associated with metabolic diseases, such as obesity, diabetes, and cardiovascular diseases. The purpose of this study was to investigate factors related to lipid, glucose and antioxidnat metabolism. Sprague-Dawley female rats were subjected to either bilateral ovariectomy or sham operation and randomly divided into 3 dietary groups, (n=8) sham-operated fed with normal diet (SHAM), ovariectomized fed with normal diet (OVX), and ovariectomized fed with normal diet supplemented with Eucommia ulmoides extract (OVX-EU). The OVX-EU group showed significantly lower body weight, triacylglycerol, and total cholesterol than that showed by the OVX group. In addition, the OVX-EU group showed improved lipogenesis, glucose-regulating enzyme activities, adipokine and antioxidant enzyme activities. These findings demonstrate that extracts from E. ulmoides extract can be used as a functional food.

Functional and sensory characteristics of kiwifruit jangachi cured with traditional Korean sauces, doenjang and kochujang (된장과 고추장 키위장아찌의 기능성 및 관능 특성)

  • This study aimed to compare total phenolic, total flavonoid, and vitamin C contents, antioxidant capacities, and sensory characteristics of jangachi made from green kiwifruit (Actinidia deliciosa cv. Hayward) and golden kiwifruit (A. chinensis cv. Hort16A), which were cured with doenjang and kochujang. Golden kiwifruit had higher total phenolic, total flavonoid, and vitamin C contents, and antioxidant capacities than green kiwifruit. Jangachi of both cultivars of kiwifruit had generally higher total phenolic and flavonoid contents, and antioxidant capacities than fresh kiwifruit. Doenjang jangachi of kiwifruit had higher total phenolic contents and antioxidant capacities than kochujang jangachi. Jangachi made from golden kiwifruit cured with kochujang, following pretreatment with sugar solution, had the highest overall quality on sensory evaluation among jangachies tested herein. Together, our findings suggest that kiwifruit jangachi may serve as a good dietary source of phenolics and antioxidants.

The Quality Characteristics of Beef Sausage with the Addition of Gynura procumbens (명월초 가루를 첨가한 우육 소시지의 최적화 연구)

  • The aims of this study were to determine the optimal mixing condition for two different amounts of Gynura procumbens powder and olive oil for the preparation of beef sausage. The experiments were designed according to the central composite design of response surface methodology, which showed 10 experimental points including two replicates of Gynura procumbens powder and olive oil. The physicochemical and mechanical characteristics as well as the sensory properties were measured, and these values were applied to the mathematical optimization models. The results of the physiochemical and mechanical analysis of each sample, including chewiness, cohesiveness, color a, color b, moisture content, salinity and heating loss showed significant differences. The sensory measurements were significantly different in color, flavor, tenderness, texture and overall quality. The optimum formulation, which was calculated using the numerical and graphical method, was determined to be 2.1 g Gynura procumbens powder and 7.06 g of olive oil.
