This study was performed to investigate the dietary habits, nutrient intake, and health status and to explore the relationship between dietary habits and health status in the middle-aged men and women. The subjects consisted of 220 men and 220 women aged 40-59 years old. Dietary habits and nutrient intake were assessed by self-administered questionnaire and 24 hours dietary recall method by personal interview. Percent of body fat, serum cholesterol, and serum triglyceride level were measured. The middle aged adults who had breakfast and meals irregularly were more than 60% of the study subjects. The middle aged men had meals habits significantly more irregularly than the middle aged women. The middle aged men had high fat meat intake more frequently than the middle aged women. The middle aged men had significantly high energy and protein intake more than the middle aged women but the middle aged women had significantly high carbohydrate intake more than the middle aged men and tended to consume milk higher than the middle aged men. The middle aged adults who had high body fat tended to overeat food, to have high fat meat and processed food intake more frequently than those who had low body fat. The middle aged adults who had high serum cholesterol and triglyceride level tended to overeat food and to have processed food intake more frequently than those who had low serum cholesterol and triglyceride level. The middle aged adults who had regular meals habits. tended to have low serum triglyceride level than those who had irregular meals habits.
The purpose of this study was to estimate the iron availability and to analyze dietary factors which influence hematological indices of 130 female adolescents with iron deficiency anemia. Intakes of iron and other nutrients were estimated using a self-administrated questionnaire combined with the 24-hour recall mehtod and iron availability was calculated by Monsen's method. Mean daily intakes of calorie, protein and vitamin C were 1631.0kcal(77.7% of RDA), 54.7g(84.2% of RDA) and 45.7mg(83.0% of RDA), respectively. In terms of iron, mean daily intake was 8.7mg(48.3% of RDA) and heme iron intake was 3.0mg which correspond to 34% of total iron intake. The amount of total absorbable iron was 1.5mg and the estimated bioavailability of dietary iron was 17.2%. In summary, intake of several nutrients for most of the subjects were under RDA. Dietary factors affecting hematological indices were analyzed by stepwise multiple regression. Intake of vitamin C was a major determinant of Hb level, while both intake of enhancing factor and iron availability were major determinants of serum ferritin level. In conclusion proper nutritional education and guidance for iron deficiency anemic female adoalescent needs to be developed and to improve their iron storage should be increased intakes of enhancing factors, female adoalescents.
This study was to investigate 1) the correlation of serum Ca, with depression and anxiety ; and 2) the effect of Ca intake on those symptoms. The subjects were three females and two males who were 53-66 years old with the severe subjective symptoms of depression and anxiety. They have taken more than twice Ca of RDA(recommended dietary allowances for Koreans) daily for 6 months(dietary treatment). The prestudy Ca intake of the subjects was low: 60% of RDA for Koreans. Their serum Ca concentration was also low: 6.67 $\pm$ 0.15mg/d1 before the dietary treatment. They expressed severs depression and anxiety, with high self scores in a psychological test. Their serum Ca concentration increased to 8.32 $\pm$ 0.17mg/dl after six months of dietary treatment, while the symptoms of depression and anxiety decreased significantly after two months and nearly disappeared after six months. This result seemed to be an effect of the dietary high Ca intake. Serum Ca and the psychological states of depression and anxiety correlated negatively, and the coefficients of determination were high in the results of linear regression analysis of depression and anxiety by serum Ca. Therefore the serum Ca concentration could be a good marker to predict depression or anxiety relatively well. The continuous high Ca intake could decrease the probability of developing depression or anxiety and mitigate their symptoms because serum Ca concentration increased, while the state of depression and anxiety decreased with the increased Ca intake.
ESR1 has been listed in the Human Obesity Gene Map as candidate gene associated with obesity. Thus, in this study, we investigated the effect of the ESR1 rs1884051 polymorphism on obesity-related variables, together with their modulations by dietary intake in Korean men. The obesity-related variables and dietary intake of 3,039 Korean men aged 40-59 years from KoGES database were analyzed. Body weight (P = 0.007), BMI (P = 0.003), waist-hip ratio (= 0.011), fat body mass (P = 0.010), and body fat percentage (P = 0.040) were significantly lower in subjects with the minor T allele of ESR1 rs1884051 than in subjects carrying the C allele. Moreover, the rs1884051 T allele was associated with a decreased risk of obesity prevalence (P = 0.040). Among the subjects whose total energy intake was below the median, carrier of the minor T allele of ESR1 rs1884051 had a lower BMI (P = 0.003) when compared with subjects carrying the C allele. In addition, among subjects whose plant protein intake was above the median, carrier of the minor T allele of ESR1 rs1884051 had a lower BMI (P = 0.044) compared with subjects carrying the C allele. Our findings demonstrate that there is a significant association between the ESR1 rs1884051 variant and obesity-related variables and this association can be potentially modified by dietary energy and plant protein intake.
BACKGROUND/OBJECTIVES: The branched-chain amino acids (BCAA), including isoleucine, leucine, and valine, promote muscle protein synthesis. However, obesity may interfere with protein synthesis by dysregulating mitochondrial function in the muscles. This study aimed to examine the association between dietary intake levels of BCAA and skeletal muscle mass index (SMI) in middle-aged participants, and the effect of obesity/abdominal obesity on this association. SUBJECTS/METHODS: The data of 3,966 men and women aged 50-64 years who participated in the 2008-2011 Korea National Health and Nutrition Examination Survey were analyzed. Intake levels of energy-adjusted dietary amino acids were obtained using a 24-hour dietary recall. SMI was calculated by dividing the appendicular skeletal muscle mass by body weight (kg) and multiplying the result by 100%. Multivariable general linear models were used to analyze the association of dietary BCAA intake levels with SMI. RESULTS: The beneficial effects of energy-adjusted dietary BCAA intakes on SMI were greater in the non-obesity/non-abdominal obesity groups; however, no significant associations were observed in the obesity/abdominal obesity groups (P > 0.05). CONCLUSIONS: Healthy weight and sufficient intake of dietary BCAA are recommended to maintain muscle mass.
This study was conducted to assess dietary intake and quality obtained by 24-hour recall method between Korean-Chinese in Yanbian, China(Korean-Chinese) and Koreans in Kuri, Korea(Koreans). The subjects consisted of 730 Korean-Chinese and 696 Koreans. Mean daily energy intake of Korean-Chinese was 1,788kcal and that of Korean was 1,844kcal. Proportions of energy intake from carbohydrate, fat, and protein were 62.6: 16.9: 14.2 for Korean-Chinese and 65.4: 16.3: 14.4 for Koreans. Nutrient intake levels of Koreans were higher than those of Korean-chinese in most nutrients. Calcium and vitamin $B_2$ intakes as percent of Korean RDA were less than 60% in Korean-Chinese. Koreans consumed calcium and vitamin A in the level less than 80% of Korean RDA. Iron intake level of Korean females was less than 75% of Korean RDA. Korean-Chinese consumed 90.4% of food from plant origin, and Koreans consumed 82.5% of food from plant origin. Mean dietary diversity score(DDS) of Korean-Chinese, $3.00{\pm}0.39$, was significantly lower than that of Koreans, $3.73{\pm}0.76(p<0.05)$. Mean dietary variety score(DVS) of Korean-Chinese, 13.6, was significantly lower than that of Koreans, 20.1(p<0.001). According to these results, some adults in the both Korean-Chinese and Koreans did not consume enough nutrients, especially calcium and vitamin $B_2$ intake for Korean-Chinese and calcium and vitamin A intake for Koreans. Dietary qualities of Korean-Chinese subjects and Korean females were not adequate. In the future, further research to promote dietary quality of Koreans including Korean-Chinese must consider the results of this study.
The purpose of this study was to identify the effectiveness of a nutrition education program of reducing children's sugar intake based on social cognitive theory. This education program composed of 6 units was conducted in discretional activity class of the $3^{rd}$ and $4^{th}$ grade elementary school students. The results are as follows: First, the rate of correct answers and score of nutrition knowledge significantly increased after nutrition education. The scores of nutrition education in male students, students whose mothers have no job, and students with skinny physiques were much improved after nutrition education(p<0.05, p<0.01, p<0.001, respectively). Second, the dietary attitudes toward reducing sugar intake and checking nutrition labels significantly improved(p<0.05). And also, it tended to decrease in preference and intake of sweet foods. Third, the consumption of candy caramel jelly(p<0.05), yogurt(p<0.05), jam honey(p<0.05), and ice cream(p<0.001) were reduced after nutrition education. Besides, obese students' consumption of isotonic beverages, carbonated beverages, and fruit juice was reduced. Therefore, a positive change in dietary behavior appeared. Based on the above results, we confirmed that the nutrition education program focusing on reducing sugar intake applied with social cognitive theory was effective for improving the nutrition knowledge, dietary attitude and dietary behavior in sugar intake in elementary school students. Especially, this program showed the improvement in nutrition knowledge as well as dietary attitude and behavior in sugar intake among obese children. Since nutrition education during childhood significantly influences lifetime-health and disease prevention, it is necessary to develop theory-based nutrition education program and practice systematic and constant nutrition education in elementary schools.
The present study assessed the relation of dietary fiber to food habits in Korean adults aged 20 and over, using a newly established dietary fiber, as well as the 2001 Korean National Health and Nutrition Survey. The per capita average dietary fiber intake of Koreans was estimated to be 12.25 ${\pm}$ 5.23 g/1,000 kcal. Calorie-based dietary fiber intakes for females was over the KDRl, but for males it was below the KDRI. The levels of total dietary fiber and energy corresponded with frequent snacking but calorie-based dietary fiber intake did not. The subjects who skipped meals, frequently ate out and consumed fried foods tended to have lower levels of calorie-based dietary fiber although the levels of energy and total dietary fiber corresponded with frequent eating-out and consumption of fried foods. The results of this study suggest that Koreans must make efforts to regularly have three meals a day, reduce the frequency of eating out and consume fewer fried foods in order to maintain the optimum intake levels of dietary fiber that protect against chronic diseases.
This research was designed to examine the dietary habits and unbalanced diet of middle school students by gender and region. The survey was conducted using questionnaires on dietary habits and unbalanced diet administered to 726 students (urban: 367, rural: 359). The obesity index using BMI showed that the largest proportion of girls was 'underweight' in both regions, which showed a significant difference by region (p<0.001). Male students in urban areas prefer salty taste more than rural students (p<0.05). In urban areas, problems relating to dietary habits were 'unbalanced diet' and 'overeating' in male students and 'frequent snacks' and 'irregular mealtime' for female students (p<0.01). The frequencies of skipping breakfast (p<0.01), snack intake (p<0.001), eating out (p<0.001) and fast food consumption (p<0.001) were significantly higher in urban students than in rural students, and the reason for eating snacks was 'hungry' in urban students and 'habitually' and 'delicious' in rural students (p<0.01). Unbalanced diet was significantly higher in rural students compared with urban students (p<0.001) and male students compared with female students in urban (p<0.05), and the factors affecting dietary habits were mostly related to family. Male students in urban areas showed a significantly lower intake frequency of 'fish, tofu and beans' (p<0.05) and 'milk and yogurt' (p<0.05), but higher intake frequency of 'vegetables' (p<0.001) compared with female students. Male students in rural areas showed a significantly lower intake frequency of 'meat' (p<0.05) but higher intake frequency of 'milk and yogurt' (p<0.05) compared with female students. Urban students showed a significantly higher intake frequency of food groups compared with rural students. To conclude, desirable nutrition education on meal regularity, snack choice, and problems relating to unbalanced diet should be conducted in schools.
The effects of dietary cellulose to utilize the intake nutrients in the albino rats were investigated by the two consecutive experiments in this study. The author wanted to observe the effects of the age of animals and different level of dietary cellulose, high and low in the first experiment and the effects of dietary cellulose from three different sources, rice bran, vegetable and pure-cellulose at high level in the second experiment. The results were summarized as follows. (1) The obvious effect of dietary cellulose caused to increase feces weight. Consequently apparent digestibilities of intake nutrients in the diet decreased. It was noteworthy that fecal glucose excretion was significantly affected by cellulose intake. Since three nutrients, protein, fat and carbohydrate serve as energy sources in the body, this result can be interpreted to be lowered in the efficiency of energy utilization out of intake from the diet. (2) The nutrients loss due to dietary cellulose resulted in reduction of skeletal muscle and bone weights which lead eventually to affect in reduction of body weight. (3) The effects of dietary cellulose showed differently according to the amount of cellulose ingested, dietary nutrients composition, the kinds of dietary cellulose supplemented and the age of experimental animals. When the intake diet was proportionately imbalanced in three different energy sources, carbohydrate, fat and protein, the cellulose intake was adversely affected in the utilization of the nutrients in the body. Cellulose from rice bran decreased body weight gain, cellulose from vegetable maintained medium level in body weight and pure-cellulose increased body weight. Growing rats showed more sensitive effects of cellulose tolerance in the body than grown rats in every concerns of this experiment.
