An experiment was conducted to determine the effects of supernormal level of copper (Cu) from different supplementary sources on the performance, cholesterol level in plasma and breast muscle, and accumulation of fat and Cu in broilers. In a 5 wk feeding trial, two hundred forty hatched male broiler chickens were assigned to four dietary treatments: control diet containing 10 mg/kg supplementary Cu, control diet plus 250 mg/kg Cu from $CuSO_4$ ($CuSO_4-250$), control diet plus 125 mg/kg Cu from Cu-methionine chelate (Cu-Met-125), and control diet plus 250 mg/kg Cu from Cu-methionine chelate (Cu-Met-250). Weight gain in Cu-Met-125 treatment and Cu-Met-250 treatment were not different, but they were significantly (p<0.05) greater than that in $CuSO_4-250$ treatment. Plasma total cholesterol and reduced glutathione (GSH) in blood were significantly reduced by supplementation of $CuSO_4-250$, but were not significantly affected by Cu-Met supplementations. Plasma HDL cholesterol, plasma triglycerides and breast muscle cholesterol were not significantly affected by Cu supplementation. $CuSO_4-250$ improved metabolizability of crude fat, which resulted in low abdominal fat pad weight. Cu from Cu-Met was better absorbed and accumulated more in the breast muscle and lesser in the liver compared with Cu from $CuSO_4$.

This experiment was conducted to investigate the effects of three different copper (Cu) sources (one inorganic and two organics) and levels (0, 50, and 100 mg/kg) on the growth performance, Cu digestibility, fecal mineral excretion, serum mineral concentration, jejunal morphology, and serum biochemical profile of growing pigs. A total of 42 male, growing pigs (31.08 ± 1.82 kg) were randomly assigned to seven treatments consisting of one negative control (0 mg/kg of added Cu level) and treatments with copper sulfate (CuSO4), Cu-amino acid complex (CuAA), and Cu-hydroxy-4-methylthio butanoate chelate complex (CuHMB) at 50 and 100 mg/kg each for 28 d. Pigs fed 50 or 100 mg/kg of Cu showed improved (p < 0.05) average daily gain and feed intake. Although Cu excretion decreased (p < 0.01) in pigs fed 100 mg/kg of organic Cu sources compared to those fed CuSO4, there was no difference between the Cu sources in pigs fed 50 mg/kg. However, the apparent total tract digestibility of Cu increased (p < 0.01) in pigs fed organic Cu sources compared with that in pigs fed CuSO4. The addition of CuHMB increased (p < 0.01) serum phosphorus and sulfur concentrations; however, there were no effects of source and level on jejunal morphology and serum biochemical profile. These results suggest that the inclusion (50 mg/kg) of organic Cu sources (CuAA and CuHMB) in the growing pig diet could be beneficial for growth performance and Cu availability and may reduce environmental pollution.
The heavy metal removability of four kinds of tea was investigated in the various conditions: particle size of tea(10, 35. 70, 100 mesh), concentration of heavy metal(25, 50, 100ppm) and extraction temperature(30. 50, 70. 10$0^{\circ}C$). The removabilities by the tea solids were increased as the particle size decreased, concentration of heavy metal increased, and extracting temperature increased. Of the four kinds of tea Pb, Cd and Cu removability by Eucommia ulmoides Oliv tea was the highest. In addition, heavy metal removability by Schizandra chinensis Baillon tea was better than that of other tea as extraction temperature was increased.

Effect of dietary salmonella lysate in broiler chicks inoculated with Salmonella typhimurium on the antioxidant system(freshness) of broiler meats during 4$^{\circ}$C refrigeration was investigated. In Pectoral and leg muscle, regardless experimental diets, as the refrigeration day passed, CuZnSOD activity decreased gradually, while at 7d MnSOD activity and peroxide level raised and then lowered at 14d. MnSOD and peroxidase activity, however, had differed according to experimental diets. The results indicated that antioxidant system of broiler meats will be changed according to experimental diets(nutrients). As the CuZnSOD, MnSOD and peroxidase activity are responsible for proteolysis of muscle protein, it was concluded that change of antioxidant system during 4$^{\circ}$C storage explain the biological activity(freshness) of broiler meats.
Present study was to investigate the effect of dietary vegetable sources such as carrot, peahull and squash on mineral balance of Na, K, Ca, Fe, Cu, Zn and Mg in mice. It would also determine if the kind, level and feeding period of vegetables can affect the mineral balance. One hundred and thirty mice weighing $29{\sim}30g$(8 weeks of age) were randomly selected. Ten mice were fed their standard diet, and the others were divided into three experimental groups that were fed standard diet supplemented with carrot, peahull and squash. Mineral intake and urinary and fecal excretion of minerals were measured to investigate the effect of the kind, level and feeding period of vegetables on absorption rate and balance of minerals. Body-weight gain was increased in high peahull diet group compared to the control. No significant difference was observed for feed efficiency ratios between different experimental groups and urine volume was increased by vegetable fed group. Na, Ca, Fe, and Cu intake were lower in high squash-diet fed soup. K intake was higher in carrot fed mice, and Zn, and Mg intake were higher in peahull fed mice. Absorption rate and balance of mineral in control group resulted in positive balance while experimental groups showed negative. The kind of vegetable, feeding level and feeding period affected the intake of Na, K, Ca, Cu and absorption rate of Cu, Zn and balance of K, Cu, Zn to negative. In spite of the higher intake of t Zn and Mg, in experimental groups the absorption rate showed negative balance.

The purpose of this study was to investigate the effect of calcium (Ca) and vitamin D (vit. D) levels on metabolism of various minerals such as Ca, P, Mg, Fe, Zn, Cu, and Cr. The comparison was made on the rats that were placed on diet containing powdered skim milk with different Ca and vit. D levels for 5 weeks. A total of 42 5-week-old Sprague-Dawley rats were divided into 7 groups as follows: Control group consisted of normal Ca and normal vit. D (0.5% Ca, 1,000 IU vit. D); Experimental groups were divided into low (0.25%) and high (1.0%) calcium levels; and vit. D group was divided into low (10 IU), normal (1,000 IU), and high (5,000 IU) subgroups. The weight gain and food efficiency ratios of the rats were not significantly different with increasing dietary Ca levels. The absorption rates of 7 minerals (Ca, P, Mg, Fe, Zn, Cu, and Cr) were significantly decreased with increasing dietary Ca levels. Also, fecal excretion of P significantly increased with increasing dietary vit. D levels (p<0.05), and urine excretion of Fe was significantly increased with increasing dietary vit. D levels (p<0.001). The result indicated that higher Ca intake affected on bioavailability of other minerals, due to interactions among minerals in the process of intestinal absorption. However, vitamin D intake had no effect on bioavailability of several minerals. Therefore, it could be suggested that adequate Ca intake is important for balance of the minerals.
This study examined the effect of excess loading of calcium (Ca)and iron(Fe) on the bioavailability of minerals in both normal and Ca-and Fe-deficient rats. Three-week-old male rats were divided into four groups and fed experimental diets for six weeks, containing either normal (0.5%) or high(1.5%) Ca and normal (35ppm) or high (350ppm)Fe. Likewise, three-week-old male rats were first fed a Ca-and Fe-deficient diet for three weeks, and then fed one of four experimental diets for additional three weeks. In both normal and Ca-and Fe-deficient rats, ca contents of serum, liver, kidney and femur were not significantly affected by dietary Ca and Fe levels. Apparent Ca absorption(%) decreased in rats fed a high Ca diet regardless of dietary Fe levels. Magnesium(Mg) contents of serum, liver and femur significantly decreased in rats fed a high Ca diet. Fe contents of serum and liver significantly increased in rats fed a high-Fe diet, but decreased in rats fed a high Ca diet. Fe content of serum and liver significantly increased in rate fed a high-Fe diet, decreased in rats fed a high-Ca diet. Apparent Fe absorption increased in rats fed a high-Fe diet, and decreased in rats fed a high-Ca diet in Ca-and Fe-deficient rats, but dietary Ca did not seem to affect Fe absorption in normal rats. Phosphorus(P) contents of serum and femur were not significantly affected by dietary Ca and Fe levels in both normal and Ca-and Fe-deficient rats. Serum copper(Cu) decreased in rats fed a high-Fe diet, while serum zinc(Zn) decreased in rats fed a high-Ca diet in normal rats. Cu contents of liver, and Zn contents of serum and liver decreased in rats fed a high-Fe diet in Ca-and Fe-deficient rats. There results suggest that a dietary overload of Ca and Fe in both normal and Ca-and Fe-deficient rats may decrease mineral bioavailability leading to potential health problems.
This study was aimed to investigate the Cu bioavailability, growth response, digestibility of nutrients, and blood metabolites of broiler chicks fed CuSO4 in nano or common forms. A total of 720 broiler chickens were distributed between eight treatments according to a completely randomized design. There were 8 treatments and 6 replicates in each treatment with 15 birds/replicate. The treatments were divided into common copper sulfate at the doses of 16 ppm, 40 ppm, 80 ppm, and 120 ppm (INO) and hot-melt extruded copper sulfate at the doses of 16 ppm, 40 ppm, 80 ppm, and 120 ppm (HME-Cu). The experiment was operated for 35 days in 2 phases (phase 1, d 0 to 14; and phase 2, d 15 to 35). No significant differences were shown in growth performance, feed intake, FCR, and nutrient digestibility among the treatments. The concentration of Cu in the serum was increased in the HME-Cu broilers compared with the INO broilers at phase 2. A linear increase was observed in the concentration of Cu in the liver in broilers fed INO diets, however, no significant differences were observed by the supplementation of HME-Cu levels. The linear increase was detected in the content of Cu in excreta in the INO and HME-Cu treatments by increasing the dietary Cu content. The HME-Cu treatments showed a lower Cu concentration in the excreta compared with the INO treatments. The higher bioavailability of Cu in HME form can decrease the recommended dose of Cu in broiler diets.
The objective of this study is to investigate background levels of As and heavy metals (Cd, Cu, Pb and Zn) and their dietary intakes from white rice produced at various provinces in Korea during 2000. Except Jeju-do, sixty-three rice grain samples were taken at 8 provinces and analyzed for the elements using ICP-AES after acid digestion. The average contents of hi, Cd, Cu, Pb and Zn in the samples were 0.126, 0.040, 1.96, 0.361 and 16.6 mg/kg(DW), respectively. These levels are within the ranges of worldwide average concentrations in rice grains reported by various research. Assuming the rice consumption of 256 g/day by overall households in Korea, the amount of daily intake of As, Cd, Cu, Pb and Zn by the rice were estimated to be 32.3, 10.2, 502, 92.4 and 4,250 ${\mu}g$/day, respectively. Those amount of daily intakes of the elements by the rice are within the WHO's guide for trace elements, however, rice consumption is one of the most important sources of dietary intake of As and some heavy metals in Korean population.
A layer experiment was conducted to determine the effects of supplementary methionine chelates (Cu, Zn and Mn), individual or in combination, on laying performance, eggshell quality, gizzard erosion, and IgG level of serum for 8 weeks. Five hundred 96-wk-old force molted ISA Brown layers were assigned to five dietary treatments. Basal diet was formulated to meet or exceed the nutrients requirements listed in NRC (1994). Five experimental diets were control, Zn-methionine chelate (Zn-Met) supplemented, Cumethionine chelate (Cu-Met) supplemented, Zn-Mn-methionine chelate (Zn-Mn-Met) supplemented and Zn-Mn-Cu-Met supplemented diet. Each treated diet was supplemented with respective mineral(s) at the level of 100 ppm in the form of methionine chelate. Egg production was increased by Cu-Met supplementation but decreased by Zn-Met supplementation. Egg weight was significantly (p<0.05) lower in Cu-Met treatment than those of the control and Zn-Met treatment. Specific gravity of eggs and eggshell strength were highest and soft egg production was lowest in Cu-Met treatment. Gizzard erosion index was significantly increased by supplementation of Cu-Met, Zn-Mn-Met or Zn-Mn-Cu-Met. Zinc content in liver significantly increased by Zn-Met, but not by Zn-Mn-Cu-Met treatment. In conclusion, 100 ppm Cu in Cu-Met chelate improved laying performance and eggshell quality but also increased gizzard erosion index. Supplementation of Zn-Met or its combination with other mineral chelates had no beneficial effects on laying performance and eggshell quality.
