Effects of Dietary Protein and Magnesium Levels on Ca and Mg Metabolism in Rats (단백질과 마그네슘 공급수준이 흰쥐의 칼슘과 마그네슘 대사에 미치는 영향)

  • The present study was carried out to investigate the effects of dietary protein and magnesium levels on calcium and magnesium metabolism in male Sprague-Dawley rats. Forty-eight male rats(average weight, 210g) divided into six diet groups; protein 8% and Mg-free diet, protein 8% and Mg 400mg/kg diet, protein 8% and Mg 900mg/kg diet, protein 20% and Mg-free diet, protein 20% nd Mg 400mg/kg diet, and protein 20% and Mg 800mg/kg diet group. After the rats were fed with experimental diets concentration were examined. Kidney weight was significantly higher in protein 8% and Mg-free group compared with other groups. Serum calcium concentration of protein8% group tended to decrease with the increase of the level of magnesium. Serum magnesium concentration in protein 8% and 20% group was lower in Mg-free group than that in other groups(p<0.05) and it also increased as the dietary magnesium level was increased. Urinary calcium and magnesium concentration in Mg-free group were significantly lower than those of other groups.

Effects of Caprylic Acid and Cyclodextrin Complex on In vitro Fermentation Characteristics and Methane Production (Caprylic Acid와 Cyclodextrin 복합물이 In vitro 반추위 발효성상 및 메탄 생성에 미치는 영향)

  • This study was conducted to evaluate the effects of dietary addition of caprylic acid(CA)-cyclodextrin (CD) complex on in vitro fermentation characteristics, total gas and methane production. Experiment was done with six treatment groups; 1) no CA-CD complex(control), 2) CA 20 mg(T1), 3) CD 830 mg(T2), 4) CA-CD complex 425 mg(T3), CA-CD complex 850mg(T4), CA-CD complex 1,700 mg(T5). Ruminal pH, ammonia and total VFA concentrations of T2, T3, T4 and T5 were lower(P<0.05) than those of control and T1 for the 12h incubation. The increase in molar percentage of propionate was observed in T4 and T5 compared with control and T2 for the 8h incubation(P<0.05), however, the ratio of acetate to propionate was unchanged in all treatments. Total gas of T1 was lower than that of control, but T2, T3, T4 and T5 were higher compared with control for 12h incubation(P<0.05). If the methane ratio (as %) to total gas for all treatments was compared, T3, T4 and T5(CA-CD supplemented groups) averaged 2.7% whereas control, T1 and T2 showed 3.4, 2.8 and 5.1%, respectively. Therefore, according to these results, it might be concluded that supplementation of CA-CD complex could reduce methane production without disrupting ruminal fermentation.

Factors Influencing the Bone Status of Korean Elderly Women (한국 노년기 여성의 골격 상태에 영향을 미치는 요인에 관한 연구)

  • This study was designed to investigate the effects of dietary calcium. serum estrogen level and physical activity on the bone status of 116 healthy elderly women living in urban area. Current calcium intake was assessed by convenient method(refered to as Ca intake) and calcium containing food frequency method(refered to as Ca index) Daily activity record was used for the estimation of physical activity level, and serum estrogen level was measured from fasting blood of subjects. The rate of bone resorption was evaluated by the determination of hydroxyproline(Hpr) in fasting urine with correction for creatinine excretion. The results of this study are summarized as follows : 1) Average daily Ca intake of subjects was 621.4$\pm$155.8mg, which is above the Korean recommended dietary allowances. However 44.8% of the subjects consumed Ca below RDA level. Ca index score was significantly correlated with the bone status(P<0.05), Ca intake did not show significant correlation with the bone status although a positive trend of influence was evident. 2) Average serum estrogen level of subjects was 18.7$\pm$9.8pg Contrary to our anticipation. estrogen level did not show any significant relation to age and bone status. 3) Daily physical activity was classified into four categories by activity intensity : sedentary. moderate, active and severe. The average physical activity of subjects belong to moderate level. and the bone status was significantly related to the physical activity(P<0.01) 4) Among other influential factors such as age, pocket-money. family type. drinking, smoking and BMI, there was a significant difference between bone status and BMI(P<0.05). 5) Multiple regression analysis of variables showed that physical activity has greater effect than other variables when the entire subjects were taken into account. However. eliminating the subjects whose bone status rated as excellent(Hpr/cr<0.009), Ca index showed higher correlation than physical activity. These results have demonstrated that dietary calcium intake is the primary important factor for keeping good bone health and that bone status of subjects with a sufficient calcium intake is affected by various factors such as physical activity, age, smoking. Mineral Contents of Hot Water Extracts and Shell of Shellfishes from Western Coast of Korea (서해안 조개류의 껍질과 열수 추출물의 무기질 함량)

  • Yields of shells, appearance of the shellfishes, mineral contents of the shells and their hot water extracts were determined in six shellfishes such as corb shell(CS). short neck clam(SNC). taste clam(TC), ark shell(AS). top shell(TS) and oyster(OY) from the western coast of Korea. Yields of shells in shellfishes were 70.I~80.5% but yields of TC was the lowest as 40.7%. The highest among weight of the shell the shellfishes was the TS(26.2g) and the lowest weight was TC(5.6g) Colors of CS, SNC, TC. AS. TS and OY were yellowish brown, brown, black. greenish brown and gray. respectively. Ca content of the shell of shellfishes was 36.23~38.78% and the content of K and Na were 0.23~4.54% and 1.48~l.59%, respectively. Contents of Na, Mg, Fe. Mn, Zn, Cu. P and S were in the range of 0.01~0.21%. It also contained heavy metals, such as Pb(1.90~7.75 ppm), Cd(0.5~4.50 ppm), As (1.40~4.30 ppm), Se (0.2~l.50 ppm). Cr(1.00~8.30 ppm) and Hg(0.002~8.2 ppm), Ca content in hot water extracts of shell of shellfish was the highest in TC(2,448 mg/100 g), and the lowest in SNC(115 mg/100 g). K content in TC extracts was the highest with the levels of 952 mg/100 g. P content of TC and SNC were 201 and 0.36 mg/100 g, respectively. The contents of Pb, As, Se and Cr were the highest in the extracts of TC and were 110. 40. 90, 20 $\mu$g/100 g, respectively. But Cd was not detected in the extracts of SNC.

Analysis of General Components, Mineral Contents, and Dietary Fiber Contents of Synurus deltoides (수리취(Synurus deltoids)의 일반성분, 무기질 및 식이섬유에 관한 연구)

  • This study was conducted to estimate the general components, minerals, and dietary fiber contents of Synurus deltoides. S. deltoides contained 81.1% moisture content, and the proportions of crude fat, crude protein, crude ash, and crude fiber were 0.3%, 4.2%, 2.6%, and 3.5%, respectively. Potassium (3,249.1 mg) was the most abundant component among the minerals in S. deltoides. In addition, S. deltoides contained many other minerals, e.g. calcium (854.8 mg), phosphorus (60.3 mg), magnesium (344.7 mg), sodium (57.3 mg), zinc (1.7 mg), iron (30.9 mg), copper (0.8 mg), and manganese (5.8 mg). Almost all of the mineral contents of S. deltoides were higher than those of Aster scaber and Ligularia fischeri, except for zinc, copper, and manganese. Total dietary fiber (TDF), insoluble dietary fiber (IDF), and soluble dietary fiber (SDF) contents of S. deltoides were 42.6 g, 37.9 g, and 4.7 g, respectively, and these were also higher than those of A. scaber and L. fischeri used in this study. These results suggest that S. deltoides may be a valuable nutrient source.

Nutritional Assessment and Mineral Content of Wild and Cultured Catfish Silurus asotus (자연산 및 양식산 메기의 미네랄 함량 및 영양평가)

  • This study was performed to evaluate mineral contents of catfish Silurus asotus. As a result of mineral content, the mean content of the macro mineral was (in descending order): K (310.36-412.66 mg/100 g), P (186.42-223.02 mg/100 g), Na (35.32-57.87 mg/100 g), Mg (22.88-31.87 mg/100 g), Ca (9.05-13.07 mg/100 g). In comparison, the mean content of the micro mineral was (in descending order): Fe (0.26-0.95 mg/100 g), Zn (0.26-1.02 mg/100 g), Cu (ND-0.08 mg/100 g), Mn (0.01-0.03 mg/100 g). A proportion of mineral intakes with the dietary reference intakes for Koreans (KDRIs) set by the Korean Nutrition Society. Nutrient uptake proportion of mineral intakes was (in descending order): P (62.16%), K (20.71%), Mg (16.82%), Fe (13.02%), Zn (11.38%) Cu (10.94%), Na (6.59%), Ca (3.09%), Mn (0.96%). The mineral content was compared with the major protein food sources according to the Korea Health Statistics (2013) such as polished rice, pork, chicken, beef, eggs and milk. The calcium content contains; lower level of milk and eggs, chicken whereas higher levels of rice, pork and beef. Catfish has less iron content than major protein food source. Phosphorus and potassium contain higher level of major protein food sources.

Evaluation of Nutrition Knowledge, Dietary Attitudes and Nutrient Intakes of Nurses Working in Kyungnam Area (경남지역 간호사의 영양지식, 식생활태도 및 영양소 섭취상태 평가)

  • This study was performed to investigate the dietary attitudes and nutrient intakes of nurses. A total of 291 nurses working at hospitals in the Kyungnam area participated in the study. The general characteristics and dietary attitudes of the subjects were surveyed using a self-administered questionnaire, and nutrient intakes was examined using one-day 24-hour recall method. The results were as follows : 67.7 percent of the subjects were nurses, 32.3% were nursing assistants. Average age of the subjects was 26.9 years old, average nursing experience was 5.7 years, and 70.7% of the subjects graduated from junior college. The rates of shift work (45.4%) and non-shift work (54.6%) were similar, and 91.5% of subjects worked on a three-shift a day schedule. The average nutrition knowledge score was 14.3 $\pm$ 2.5 out of a possible 20 points. Most of the nurses had experienced dietary problems such as skipping meals and overeating. Sixty-eight point three percent of the nurses had breakfast less than 3 times a week, and the main reason for skipping meals was a lack of time. Most of the nurses (74.1%) didn't exercise regularly. The average score on dietary habits was 55.6 out of 100, and most of the subjects belonged to the‘fair’group in terms of dietary habits. Married nurses, and those over 31 years of age, scored significantly higher on dietary habits than unmarried nurses, and those under 25 years of age (p < 0.001), and the scores significantly increased with increasing age. Mean daily carbohydrate and fat intake was 231.5 $\pm$ 66.1 g, 41.1 $\pm$ 18.8 g, and cholesterol and crude fiber intake was 238.2 $\pm$ 184.6 mg, 5.2 $\pm$ 2.0 g. respectively. Compared with the recommended allowances, the energy (1560.0 $\pm$ 448.5 kcal), calcium (453.8 $\pm$ 222.3 mg) iron (10.6 $\pm$ 7.6 mg), vitamin A (658.5 $\pm$ 538.1 R.E) and vitamin B$_2$ (0.96 $\pm$ 0.5 mg) figures were below the Korean RDA, and the protein (65.9 $\pm$ 31.0 g), vitamin B, (1.14 $\pm$ 0.5 mg), vitamin C (143.2 $\pm$ 119.6 mg), niacin (14.4 $\pm$ 6.3 mg) and phosphorus (958.1 $\pm$ 352.1 mg) figures were above the Korean RDA. The average carbohydrate, protein, fat ratio of energy intake was 60:17:23. The intake ratio of Ca and P showed an unbalance of 1:2. The dietary habits had a positive correlation (p < 0.001) with nutrition intake except vitamin A and vitamin C. Therefore, In order to improve overall dietary behavior and nutritional status, systematic nutrition education programs should be developed.

The Effect of Mineral Dissolution from Beef Rib Bone by Acid Condiment and Cooking Time (산성조미료와 조리시간이 소뼈의 무기질 용출에 미치는 영향)

  • The effect of boiling with grain vinegar and citric acid on the dissolution of Ca. Mg and P out of beef rib bone during stew preparation was investigated. As the concentration (0, 0.5, 1.0, 2.0%) of grain vinegar and citric acid increased, the amount of Ca, Mg and P dissolved out of the rib bone increased compared with the control. The increase in boiling time(1, 2, 4, 8, 12 hour) also showed the same result. Between the two acid condiments citric acid extracted more Ca, Mg. P compared with the grain vinegar at the same concentration. The pH of the rib bone stew added with the acid condiments increased gradually during the boiling process. In sensory evaluation. the rib bone stew boiled for 12 hours with 2% grain vinegar was highly evaluated compared to the stew prepared with citric acid.

  • The purpose of this research was to determine the relationship of the dietary nutrients to blood pressure among preschool children in Seoul and to concurrently study the effect of seasonal variance on the aforementioned relationship. The subjects of the study consisted of 203 preschool children aged four to six years. Anthropometric measurements of height, weight, pulse rate and blood pressure, urinary excretion of five cations(Na, K, Ca, P, Mg), creatinine and urea nitrogen and dietary questionaires concerning sodium, potassium calcium and phosphorus were taken during the two periods of summer(Aug. 1986)and winter(Feb, 1987). The results obtained are summarized as follows: 1) The daily urinary excretion of five cations, creatinine and urea nitrogen is summer and winter was as follows; The sodium content was 57.8 mEq in the summer and 59.4 mEq in the winter ; potassium 20.4 mEq and 23.0 mEq, respectively ; calcium, 5.5 mEq and 3.6 mEq, respectively ; and phosphorus, 27.4 mEq and 19.9 mEq, respectively. Only calcium and phosphours excretions in the urine showed significant differences per season(p<0.05). 2) The average dietary intake per day of sodium was 2349mg in the summer and 2155mg in the winter ; potassium consumption was 1425mg in the summer and 1448mg in the winter ; intake of calcium was 472mg in the summer and 500mg in the winter ; and phosphours consumption was 642mg in the summer and 634mg in hte winter. The sodium-to-potassium consumption ratio 1.6 and 1.5, respectively, in the summer and in the winter and the calcium-to-phosphorus ration was 0.7 in the summer and 0.8 in the winter. The dietary calcium intake showed significant differences between the seasons. 3) The principal source of sodium consumption among preschool children was from seasoning-including talbe salt, soy sauce and instant sauce-which accounted for higher then 45% of the sodium intake in both seasons. The main source of potassium was frutis and vegetables which accounted for 29.6% of the potassium intake in the summer and 25.7% in the winter.   • Postmenopausal women lose more bone mass than men as a result of estrogen deprivation. The resultant low bone mineral density (BMD) is a major risk factor in the development of osteoporosis. Calcium, phosphorus and magnesium are main components of bone. The purpose of this study is to investigate nutrient intake and serum osteocalcin, Ca, P and Mg and their correlation to bone mineral density in Korean postmenopausal women residing in rural areas. We conducted 24 hour dietary recalls, anthropometric measurements and blood analysis on 60 postmenopausal women. The BMD of the lumbar spine (L2$\rightarrow$L4) and the femoral neck were measured by dual energy X-ray absorptiometry (DEXA). Subjects were assigned to one of three groups:normal (T-score> -1, n=20), osteopenia (-2.5> T-score $\leq$ -1, n=23), and osteoporosis ( T-score $\leq$ -2.5, n=17). The mean age, height, weight and BMI were 62.37 yr, 154.36 cm, 55.28 kg and 23.18 $kg/m^2$ respectively. The mean daily energy and protein intakes were 76.35% and 87.41% of RDA for Koreans. The mean intakes of calcium, phosphorus, and magnesium were 463.62 mg (66.23% of RDA), 955.32 mg (136.47% of RDA), 345.87 mg respectively. The mean serum levels of calcium, phosphorus and magnesium were 8.76 mg/dl, 3.80 mg/dl, and 2.10 mg/dl, respectively, and there were no significant differences among the three groups. However, the BMD of the femoral neck showed a significantly negative correlation with serum magnesium (p<0.05). To summarize the results, most nutrient intakes (especially calcium) in postmenopausal women did not reach the RDA values for Koreans. Also, increase of serum magnesium levels may be related to bone loss.
