Food Habits and Dietary Quality by the Presence of Perceived Major Chronic Disease among Male Manufacturing Company Workers in Their 40s (40대 남자 생산직 근로자의 주요 만성질환 유병 인지 상태에 따른 식습관 및 식사의 질)

  • This study aimed to investigate the association between awareness of having a chronic disease with food habits and dietary quality among 320 male manufacturing workers in their 40s. Participants were categorized into groups. The first group comprised workers who were aware of having chronic diseases (ACD, n=160) and had been diagnosed with any one or more of the following major chronic diseases: Metabolic syndrome, hyperlipidemia, hypertension, obesity, and cardiovascular disease. The second group comprised those who had experienced none of the above diseases were classified as a group of people who were a ware of not having chronic diseases (ANCD, n=160). The mean age of the subjects was 44.2 years. The mean weight (P<0.001) and body mass index (BMI; P<0.01) were significantly higher in the ACD than in the ANCD group. The frequency of alcohol consumption and the number of current smokers were not significantly different between the two groups. Dietary attitudes were not significantly different between the two groups. The frequency of egg consumption was significantly higher in the ACD group (P<0.05). Picky eating, vegetable intake, checking nutrition labels, and healthy eating behavior were not significantly different between the two groups. The frequency of exercise was significantly lower in the ACD group compared to the ANCD group (P<0.05). The mean nutrition quotient (NQ) score was 51.9, with no significant difference between the two groups. Based on these results, the awareness of suffering from chronic diseases was not significantly related to dietary attitudes, food habits, and overall dietary quality among production workers. Therefore, there is a need to develop and implement nutrition education programs to inculcate an awareness of health status that can lead to dietary changes.

  • Low energy intakes, poor nutritional quality, and low food diversity are among the factors affecting the nutritional status of elderly in Korea. Therefore, a nutrition counseling and education program was conducted to promote dietary change and to improve nutritional status of elderly. The 7 step program consisted of a individual nutrition counseling and weekly or biweekly group nutrition education programs. Pre- and post-test measurings of dietary behaviors, attitudes, nutrition knowledge, and 24-hour dietary recall data were collected. Positive changes in the attitude related to diet were noted, whereas nutritional knowledge scores were not improved. Significant increases were noted in the frequency of vegetable consumption in female and diversity of food consumption in male. The densities of vitamin C(male & female), $B_1$, $B_2$, and niacin, calculated using the INQ(Index of Nutritional Quality), were significantly improved by nutrition counseling and education programs. These results suggest the appropriateness of nutrition intervention programs for the improvement of elderly nutrition.

General Characteristics and Eating Styles by Gender and Nutrition Knowledge Level in Upper-Grade School Children in Gyeongbuk (경북 일부 초등학교 고학년생의 성별과 영양지식에 따른 일반적인 특성 및 식생활의 차이)

  • The purpose of this study was to obtain the basic information needed for an effective program of nutrition education and the establishment of desirable dietary attitudes in elementary school children. The study was conducted using a self-administered questionnaire, and the participants were 281 elementary school children. The data were analyzed in terms of the participants' gender and level of nutritional knowledge, and group differences were assessed using chi-square and Duncan's multiple range tests. The results were as following: Male and female students did not differ in nutritional knowledge. In terms of health-related life style, there were significant differences according to gender and nutrition knowledge. In terms of dietary habits, there were significant differences in the regularity of meal times according to gender and nutrition knowledge. With regard to food preferences, there was a significant gender difference in taste preferences with the male students preferring a salty taste more than the female students.

Effect Evaluation of Nutrition Education for Improving Preferences to Korean Traditional Foods in Upper Grades Schoolchildren (초등학교 고학년 아동의 전통음식 선호 증진을 위한 교육 효과 평가)

  • The purpose of this study was to evaluate the effect of dietary education on improving preferences to Korean traditional foods in upper grades schoolchildren. The education group consisted of 184 children ($4^{th}$=65, $5^{th}$=50, $6^{th}$=69), while the control group consisted of 135 children ($4^{th}$=40, $5^{th}$=55, $6^{th}$=40). Each group was selected from a different school in Changwon. In the education group, 12 lessons were implemented using educational materials based on sensory education. For the evaluation, pre- and post-surveys were performed in each group using self-administered questionnaire surveys. Variables in the questionnaire consisted of self-efficacy, subjective norms, cognitive attitude, food neophobia scale, eating frequency, preference, intake experience, and nutrition knowledge. After education, the knowledge score improved significantly in both groups. However, self-efficacy (p<0.01), subjective norms (p<0.01), cognitive attitude (p<0.001) and food neophobia scale (p<0.001) changed significantly in only the education group. The intake frequency of Korean traditional foods did not significantly increase in either group. However, the preferences and intake experience of the foods, which were offered in class and school meals, changed significant in only the education group. In conclusion, dietary education based on sensory education may be useful for developing a positive eating attitude for Korean traditional foods in children.

A Study of Obesity Indices of Korean Adolescents and Related Factors (우리 나라 일부 초.중.고등학생들의 체질량지수 관련요인에 관한 분석)

  • The purpose of this study was to investigate the relationship of body mass index with environmental and dietary factors including nutrition knowledge, and nutrition attitude of Korean adolescents. Anthropometric measurements, questionnaire responses, and 24-hour dietary records of 531 elementary, 543 middle, and 533 high school students residing in Seoul and Kyunggi-do were collected. Data was analysed using SAS computer program. The results are as follows. Mean BMI of elementary school boys was higher than that of girls. However, there were no significant differences in mean BMI between sexes both in middle and high school students. Calcium and iron consumption were lowest among elementary and middle school students, respectively when the intake was expressed as a percentage of the Korean RDA. Energy, protein, vitamin A, vitamin B$_1$, vitamin B$_2$, niacin, and vitamin C intakes(% RDA) were lowest among high school students. The factors influencing BMI of elementary students were BMI of the parents in boys, and BMI of the father in girls. In middle school students, energy intake, fathers BMI, mothers nutrition knowledge and students BMI, and nutrition knowledge were related to the obesity indices of boys, while fathers and mothers BMI were related to the mean obesity index of girls. In high school students, nutrition knowledge and mothers nutrition attitude were related to the obesity index of boys, while BMI of parents was related to the obesity index of girls. In conclusion, mothers and fathers BMI were the most common factors influencing the BMI of these adolescents. Although these results can not determine if food behaviour directly affects BMI, it may influence the BMIs of family members, and therefore nutrition education to keep normal weight and desiradle food habits should be emphasized. More systematic studies to investigate the cause-effect relations of these factors are required.

A Survey on Lactation and Weaning Practice of Infants and Their Mothers' Attitude on Infant Nutrition in Kangwon Province (강원 일부 지역 영유아의 수유 및 이유실태와 영아 영양에 대한 어머니들의 태도)

  • This study was carried out to investigate the lactation and weaning practice of infants and their mothers' attitude on infant nutrition. We interviewed 152 mothers in three pediatric clinics located in Sokcho city. From this survey, $76.3\%$ of infants was fed colostrum milk during first one week of life. During the first 4 months, $31.6\%$ of infants was fed breast-milk, while $42.8\%$ of them was fed bottled-milk. More housewives fed their babies with breast milk than the working mothers. Infants ate first weaning food at 5.73$\pm$1.86 months of life. Highly educated mothers showed positive response to the questionnaire : Breast-feeding is good for baby but it requires mother's sacrifice, and Breast-feeding may ruin the good shape of mothers. Highly income mothers responded negatively to the statement : Breast-feeding is not a must for infants since bottled-milk is a good substitution for breast-milk. Comparing with the mothers whose income was about 1 -2 million won per month, with ones who got paid less than 1 million won per month the former responded positively to : Breast-feeding is good for baby but it requires mother's sacrifice. Mothers recognized the importance of weaning in the following order : Supply of nutrition, Enforcement of digestion and absorption capability, Variety of taste, Disease prevention, Development of self-reliance, and Development of baby tooth. To improve the infants' nutritional status, education program on infant nutrition should be organized and run for the pregnant and lactating women in obstetrician and pediatric clinics and through the mass media as well.

The Analysis of Farmers′ Nutrient Intakes the Effect of Nutritional Education Using Computer Program-based Nutritional Counseling for Farmers (농업 종사자의 영양섭취상태와 컴퓨터 영양상담 프로그램을 이용한 영양상담교육 효과 분석)

  • This study was to evaluate the effectiveness of nutritional counseling for farmers by using computer- based program to estimate pre - and post - knowledge and attitude changes. The desirable change of both knowledge and attitude focused on improving food Intake and early easing of body complaints. 311 agricultural workers in Korea were chosen for this experiment. The score was compared by 2 methods. In the first method, the scores were calculated from nutrient intake quantity and indices. In the second method, the difference of pre and post test of nutritional counseling by count of correct answers of foods and food preparation attitudes was measured according to different body complaints status. Major farming type was rice-planting(39%). The consciousness of health status of the subjects of less than 50 years old was good(42%), but it was only 20% in over 50 years' group. Female farmers felt uncomfortable in body complaints. Their body complaints were 2 times more than the male farmers, particularly, in over 50 years group. Nutrient intakes were lower in male based on the KRDA, except for vitamin C, niacin, and phosphate. Female farmers' nutrient intake was adequate based on the KRDA, but was low in vitamin A, pyridoxin, and iron. From the scores of knowledge and attitude by pre and post tests, counseling was efficient In nutritional education of all age groups, especially the older ones. The effect of counseling by farming type showed that the real agricultural workers had more increased score In the post test. This results Indicated that counseling about food, nutrition. and health to these workers was always effective. Therefore nutritional counseling and education program should be developed for different kinds of health and nutrition. It would be conducted to promote food behavior and improve nutritional and health status of farmers.

Evaluation of Saturday Nutrition Classes for Obese Elementary Students in Chungnam Province (비만 초등학생의 토요 영양 교실의 운영 효과 평가)

  • This study was designed to evaluate Saturday nutrition classes for obese elementary students in Chungnam Province. Obesity index, nutrient intake, nutrition knowledge, nutrition attitude, and self-satisfaction of 36 obese elementary students were compared before and after attending nutrition classes every other Saturday for 3 months. The average age, height, weight, body fat, % body fat, and obesity index were 11.9 years, 145.5 cm, 53.3 kg, 24.5 kg, 45.7%, and 32.4%, respectively. Most of the subjects(94.5%) viewed themselves as fat. Sixty-three percent of children were discontent with their body-image. All answered that they have experience with weight control. The major methods of weight control were exercise and reduction of snacks. The mean serum cholesterol, blood glucose, GOT/GPT, and hemoglobin were 177.4 mg/dL, 90.4 mg/dL, 25.8/25.5 IU/L, 14.5 g/dL, respectively. After attending nutrition classes, the daily intakes of energy, plant protein, plant fat, carbohydrate, crude fiber, and cholesterol increased significantly. The scores for nutrition knowledge, nutrition attitude, and self-satisfaction also increased after nutrition classes, but there were no significant differences. Percent body fat decreased significantly after nutrition classes. In conclusion, nutrition education for elementary students is effective for the prevention and control of obesity. Further research is needed to develop a systematic program of nutrition education for obese children.

Awareness and Usage Patterns of Housewives in Busan for Consuming Marine Products (수산물에 대한 부산지역 주부의 인식 및 이용실태)

  • We conducted this study to compare the awareness and attitude of Busan housewives about consuming marine products. The survey was conducted from April 10 to May 31, 2019 by using a questionnaire. The degree of preference of seafood was higher among individuals in their 40s than those in the other age groups. Among the women in their 30s, 40s, 50s and 70s, the reason for liking seafood was 'taste', and for those in their 60s it was 'nutrition'. Overall the most common reason for disliking seafood was the 'fishy smell (37.4%)'. Conception degree of nutritive value of seafood was higher among individuals in their 30s and 40s than that for those individuals in their 50s, 60s and 70s. As for the price of seafood, the wives over 40s thought seafood was more expensive than did those wives in their 30s. The younger the individuals were, the lower was the perceived degree of safety was 49.8% of the subjects reported that the main concern for purchase was 'freshness'. The perceived degree of safety for imported seafood was better for the wives in their 60s and 70s than that for those wives in their 30s, 40s and 50s. The confidence level for local Korean seafood was higher for the wives in their 60s than that for the wives in their 50s. The degree of preference for seafood was moderate overall, except for Jellyfish. Age was positively correlated with conception for safety and dietary attitude (P<0.01), whereas age was negatively correlated with monthly food expenditure, nutrition knowledge and intake requirements (P<0.01). Preference for seafood was positively correlated with conception for safety (P<0.05), nutrition knowledge (P<0.05), dietary attitude (P<0.01), awareness for nutritive value (P<0.01) and intake requirements (P<0.01). Laws and regulations should be reinforced in order to promote eating more seafood and periodic research to determine the actual amount of consumed seafood and people's preferences should be conducted.

Dietary Behavior and Attitude for the Food and Nutrition Section in the Home Economics Curriculum of Middle School Students in Rural Area (농촌 중학생의 식행동과 가정과 식생활단원에 대한 태도)

  • The study was performed to investigate the dietary behaviors and attitudes toward the lesson of Food and Nutrition in Home Economics course among middle school students in rural area. The participants of the study were 647 second-grade students in a middle school in Geumsan-gun, Chungcheongnam-do. The main nutrition problems of the students were found to be deviated food-intake habits and irregular meal time. Twenty six percent of female students and 14.8% of male students skipped breakfast. Seventy three percent of the total students have a tendency of food aversions. The food groups they dislike most were vegetables and pulses. They answered they got nutrition information mostly from the class at school. Their favorite topic in the lesson of Food and Nutrition was cooking. Some students did not like Food and Nutrition because it requires too much memorization. Teaching methods they liked were lecture, discussion, and audio-visual presentation. Although 81.7% of the students thought that the lesson of Food and Nutrition was useful, only 17.1% of the students practiced what they learned from the lesson. These results confirm that nutrition education in middle school is essential to the students in rural area and that it is needed to find an effective teaching method and materials for them to change positively their food behaviors at daily life.
