The meat quality, muscle fiber characteristics and fatty acid profile in Jinjiang and F1 Simmental×Jinjiang yellow cattle

  • Objective: This study compared the meat quality, muscle fiber characteristics, and fatty acids between Jinjiang yellow cattle (JJ) and F1 Simmental${\times}$Jinjiang yellow cattle (SJ) which were offered the same diet. Methods: Six JJ and six SJ individuals were reared and fattened from 10 to 26 months of age. After feeding, the highrib (HR), ribeye (RB), and tenderloin (TL) samples were taken from the carcass for meat quality evaluations. Results: The results showed that growth performance of SJ was higher than that of JJ (higher live weight and average daily gain), and the hot carcass weight of SJ was higher than that of JJ (p<0.05). pH of JJ was higher than that of SJ in TL (p<0.05); the color of $a^{\ast}$ of SJ was higher than that of JJ in TL and RB (p<0.05); the cooking loss of SJ was significantly lower than that of JJ in TL and RB (p<0.05); the shear force value was significantly lower in SJ compared to JJ (p<0.05); the muscle fiber diameter was higher and the fiber density was lower in SJ compared to JJ in HR and TL (p<0.05); compared to SJ, the muscles of JJ had higher saturated fatty acid (SFA) composition; the sum of monounsaturated fatty acid and polyunsaturated fatty acid (PUFA) were lower in the muscle of JJ; the mRNA expressions of myosin heavy chain-I (MyHC-I) and MyHC-IIa were higher in SJ compared to JJ in muscle of HR and RB; the mRNA expressions of MyHC-IIx and MyHC-IIb were lower in SJ compared to JJ in HR and RB (p<0.05). Conclusion: Meat quality and fatty acid profile differed between SJ and JJ; the muscle of SJ had higher $a^{\ast}$ and SFA; SJ had lower cooking loss, shear force and PUFA compared to the muscle of JJ. In addition, the type and development characteristics of the muscle fiber had some difference between SJ and JJ; these might be factors which caused the differences in meat quality and fatty acid profile between SJ and JJ.

식이 섭취량의 제한과 회복으로 인한 골격근육내 성분변화 (The Changes of Electrolytes Composition in Skeletal Muscles by Food Restriction and Rehabilitation)

  • Fiftysix male weanling rats of the Sprague-Dawley strain weighing $52.6{\pm} 0.9g$ were fed with 77% starch-15% casein diet by ad libitum for four days to get them adapted and divided into eight groups. For three weeks, the body weight gain of rats was controlled in three different ranges. After the period of food restriction, the rats were recovered by being fed by ad libitum for seventeen days. During the experimental period, the amount of food intake and body weight were measured. And the experimental groups were compared when they reached at the same age and at the same body weight. Anterior Tibialis, Extensor Digitorum Longus, Soleus, Plantaris, Gastrocnemius were used as analytic items of skeletal muscle. Wet weight of muscle, muscle protein, water content were measured from each of five skeletal muscles. Sodium, potassium, magnesium content were measured from Anterior Tibialis, Extensor Digitorum Longus, Soleus ana Plantaris. Phosphorus was measured only from Gastrocnemius. The whole carcass protein except the skeletal muscles was also measured. During the period of food restriction, food intake was $311.7{\pm}19.5g$ for the control group. $130.2{\pm}1.5g$ for the second group and $161.7{\pm}2.1g$ for the third group. During the period of food restriction, body weight gain was $106.8{\pm}12.7g$ for the control group, $3.6{\pm}2.1g$ for the second group and $18.9{\pm}3.3g$ for the third group. Comparing the body weight when they reached at the age 66 days, the control group showed higher value than the other groups. In the concentration of electrolytes of skeletal muscles sodium and magnesium tend to increase and potassium and phosphorus tend to decrease by food restriction. But after their recovery, there was no significant difference between the groups. By the degree of food restriction, there was time difference in reaching at the same body weight. But when they reached at the same body weight, there was no significant difference in the value of electrolytes concentration. Regarding all the results of this study, the ages of rats which reached the same body weight were different by food restriction level during weanling. Once food·restricted rats reached the same body weight by recovery, the concentration of electrolytes and protein tend to become almost the same.

  • Livestock products like meat, milk and egg have been principal food sources for human beings since the historic periods of time. Nowadays consumption of these food items have been avoided due to its high contents of SFA, cholesterol and total fat which are major culprits of chronic adult diseases causing major deaths of people. However, the relationship between livestock products and diseases is not always true because the amounts of fat and cholesterol and types of fatty acids in meat and meat by-products depend on the part of the meat and types of animals. Although meat intakes do not always cause mai or adult diseases, still the developmental necessity does exist for animal foods equipped with biologically active properties, which in turn can improve nutritional status and health more than ever Meat with high protein lean part and low fat can be produced by applying synthetic somatotropin and beta-adrenergic agonists like clenbuterol, cimaterol etc. during breeding. This application brings benefits like higher growth rate, lower fat contents and improve feed efficiency ratios. Meats fortified with long chain PUFA($\omega$-3 fatty acids) can also be produced by modulating feed composition.Egg Products have faced the reduced sales annually because of its high cholesterol contents. Recently brand eggs fortified with special nutrients or chemical components having functional proper ties in the human body system are very popular Research Interests have been focused on eggs with low cholesterol and high omega-3 fatty acids. Low cholesterol eggs and high omega-3 eggs can be produced in several different ways, but popular way to increase is feeding the feeds with different oil sources containing high omega-3 and 6 fatty acids such as fish oil, perilla oil, linseed oil and lecithin etc. But proper compositon of feed formula should be found and economically beneficial. Brand eggs fortified with vitamin, mineral, unknown growth factors are also manufactured. Low cholesterol and high $\omega$-3 PUFA milk are marketed recently Cholesterol removal technology is not completely established and has several limitations to be overcome. Milk fortified with $\omega$-3 fatty acids is made by incorporating high &13 fatty acid foods in feed despite of extraordinary way of fatty acid metabolism In cow. All these biologically active products will be very beneficial and useful for human consumption when limitations of manufacturing technology such as safety and lowered sensory qualities are resolved. Furthermore, thorough and precise tests and quality control for these products should be performed to ensure the effectiveness and usefulness in terms of improving health and nutritional status in general. However one caution should be pointed out to lay people informing that these items are nothing but a food and not panacea. Therefore, it is important to remember that the only way of maintaining good health is absolutely through consuming balanced diet.

칼납자루이 사료 Carotenoids 대사와 체색개선에 미치는 영향 (Metabolism of Dietary Carotenoids and Effects to Improve the Body Color of Oily Bittering, Acheilognathus koreensis)

  • Effects of dietary carotenoids were investigated on metabolism of the carotenoids, and body pigmen tation in oily bittering, Acheilognathus koreensis. Two weeks later after depletion,oily bitterings were fed the diets supplemented with either lutein, cynthiaxanthin and astaxathin for 4 weeks. Carotenoids distributed to and metabolized in integument were analyed. The carotenoid isolated from the integument of wild oily bittering, composed of 47.2% zeaxanthin, 11.4% lutein epoxide, 11.0% diatoxanthin, 9.7% lutein and 8.3% zeaxanthin epoxide. Meanwhile, two weeks later after depletion, the carotenoid composed of 29.9% crytoxanthin, 19.3% zeaxanthin, 13.2% lutein epoxide, 12.0% diatoxanthin and 8.8% zeaxanthin epoxide. These indicated that zeaxanthin, diatoxanthin, lutein epoxide and zeaxanthin epoxide were actively metabolized in oily bittering, compared to that of other fresh water fish. Total carotenoid content in the integument of wild oily bittering and oily bittering depleted for two weeks was found to be 1.72mg% and 2.08mg%, respectively. Two weeks later after treatment of experimental diet, total carotenoids content was increased to 2.23mg% in lutein, 2.36mg% in cynthiaxanthin and 2.49mg% in astaxanthin supplemented group, which were relatively higher than 2.10mg% in control group. Meanwhile, 4 weeks later, total ca rotenoids content was decreased to 1.76mg% in control, 1.95mg% in lutein, 1.74mg% in cynthiaxanthin and 1.72mg% in astaxanthin supplemented groups. These result indicate that dietary carotenoids were rapidly accumulated and then metabolized to certain metabolites shortly after feeding. Body pigmentation effects of the carotenoids due to accumulation of carotenoids in the integument of oily bittering was the most effectively shown in the astaxanthin supplemented group, followed by cynthiaxanthin and lutein supplemented groups. In the integument of oily bittering, dietary carotenoids were presumably biotrans formed via either oxidative or reductive pathways as presumed the variation of total carotenoid content and carotenoid composition in all experimental groups. The lutein was oxidized either to astaxanthin via doradexanthin and doradexanthin, or to zeaxanthin epoxide via zeaxanthin by oxidative pathway. Cynthiaxanthin was converted either to diatoxanthin and zeaxanthin by reductive pathway and then to zeaxanthin epoxide by oxidative pathway, or it was converted to astaxanthin via diatoxanthin, zeaxan thin and doradexanthin by oxidative pathway. Astaxanthin was converted to doradexanthin and zeaxanthin by reductive pathway and then to zeaxanthin epoxide by oxidative pathway. These results suggest that, oxidative pathway of carotenoids was major metabolic pathway along with reductive path way in fresh water fish.

Effects of Selected Fatty Acids Supplementation on Growth and Fecundity in Artemia franciscana

  • Effects of supplementing selected fatty acids on fatty acid incorporation (17 days) , and progeny production (14 days) in Artemia franciscana (Great Salt Lake, USA) were studied. To compare with the control four diets, which differed in fatty acid composition alone contain Dunalieia tertiolecta and an emulsion either rich in OA (oleic acid, 18: 1 n-9), ARA (arachidonic acid, 20:4n-6), EPA (eicosapentaenoic acid,20:5n-3), or DHA (docosahexaenoic acid, 22:6n-3). Each of these emulsions was supplemented at a ratio of 20 % of the daily dose of D. tertiolecta (% algal dry weight). The initial OA and ARA values were 33.5 and 1.7 mg/g DW of freshly-hatched nauplii, respectively. After 11 days of feeding, these values increased to 38.8 and 7.6 mg/g DW in Artemia receiving the fatty acid sup-plement rich in each of the respective fatty acids. After 14 days, the levels were almost doubled, reaching 62.8 and 13.4 mg/g respectively. On EPA supplementation, its level after 11 days of feeding was 14.3 and 17.3 mg/g in male and female, respectively and was 16.0 and 23.1 mg/g in the male and female after 14 days, respectively. The EPA accumulated more in the body (39.1 mg/g) than in ovisac (16.9 mg/g). In the DHA supplementation group also, DHA levels after 11 days of feeding were 3.1 and 5.5 mg/g in male and female, respectively. After 14 days, the DHA level continued to increase in male. but slightly decreased to 4.6 mg/g in female. It was not richer in ovisac (2.6 mg/g) than in the remaining body of female (4.6 mg/g). In conclusion, fatty acids supplied by a lipid emulsion as a supplement to the algal diet are well incorporated in the adult Artemia. Apart from being an extra source of energy, these emulsions may function as source of HUFA which may play an essential role for growth and progeny production (fecundity) of Artemia.

  • This study was conducted to prepare canned skipjack tuna Katsuwonus pelamis in the mixture of isotonic beverage and tomato paste (ST-S) for use as a health food. An analysis of the time-temperature profile and viable cells showed that a reasonable F0 value for ST-S preparation was 4 min. The proximate composition of ST-S was 76.8% moisture, 20.2% crude protein, 0.8% crude lipid, 1.7% ash and 0.5% carbohydrate. The calorie content of ST-S was 94.8 kcal, which is 47.4% lower than that of commercial canned skipjack tuna in oil (ST-O) and 2.2% lower than that of commercial chicken breast in water (CB-B). The total amino acid content of ST-S was 18.54 g/100 g, which is 31.4% lower than that of ST-O and 7.9% lower than that of CB-B. The major amino acids in ST-S were aspartic acid and glutamic acid. An enrichment effect due to such minerals as phosphorus, potassium and iron would be expected on consuming 100 g of ST-S. The major fatty acids in ST-S were 16:0 (27.4%), 18:1n-9 (14.3%) and 22:6n-3 (27.8%), which are different from those in ST-O and CB-B. The major free amino acids in ST-S were glutamic acid (8.1%), histidine (38.6%) and its related dipeptide, such as anserine (15.7%). In an evaluation of taste, flavor and color, ST-S was found to be superior to ST-O and CB-B.

생균제 급여가 비육돈의 발육 및 질병발생에 미치는 영향 (Effect of Dietary Probiotics on Growth and Pathological Status in Growing-Finishing Pig)

  • 미생물제제를 이용한 돈분뇨 처리시스템(3N-System, 속성발효시스템) 운영에 있어 돼지에 급여하는 생균제가 비육돈의 발육 및 질병발생에 미치는 효과와 분뇨처리효과를 구명하기 위하여 실시한 시험결과를 요약하면 다음과 같다. 생균제 혼합급여 시험은 사료에 0.1% 씩 생균제와 항생제를 각각 첨가하여 처리구별로 30두씩 3처리 평균체중이 21.4$\pm$0.54kg인 육성비육돈 90두를 공시하여 시험을 실시하였다. 0.1% 생균제 (Bacillus toyoi spore) 급여구는 육성돈에서 출하시까지 급여하였으며, 0.1% 항생제 (kitasamycin and sulfamethazine) 첨가 급여구는 출하 1개월전 부터는 항생제 첨가한 사료를 급여하지 않았다. 일당 증체량과 사료효율은 처리간에 유의적인 차이를 나타내지 않았다(P >0.05). 도체성적에 있어 출하시 체중과 도체중은 항생제 첨가급여구가 다소 높게 나타났으나 처리간에 유의적인 차이는 없었다(P>0.05). 등지방 두께는 생균제 첨가 급여구가 다른 처리구에 비하여 낮게 나타나는 경향이었다(P<0.05). 도체등급별 출현두수는 A등급 출현율에서 생균제 첨가 급여구가 다소 높은 비율을 보였다. 육안 병변에 대한 모니터링 결과에서는 생균제 급여구가 병변발생율이 적게 나타났다. 시험돈사의 환경조사에서 처리간에 온도의 차이는 없었으나 최저온도에서는 항생제첨가 급여구가 다른 처리구에 비하여 유의적으로 높게 나타났다(P<0.01). 습도는 생균제 첨가급여구가 84.34$\pm$6.03으로 다른 처리구에 비하여 높게 나타났다(P<0.01). 시험돈사내의 돈분뇨의 성상변화(BOD, COD, SS, T-N, T-P 및 암모니아 농도)도 생균제첨가 급여구가 낮은 수치를 보였다.

용담(Gentiana scabra Bunge var.buergeri Max.) 추출액이 식이성 고지혈증 흰쥐의 혈청 지질대사에 미치는 영향 (Effects of Gentiana scabra Bunge var.buergeri Max. Extract on Lipid Metabolism of Serum in Dietary Hyperlipidemic Rats)

  • 식이성 고지혈증 유발 Sprague Dawley계 숫흰쥐를 사용하여 용담 열수 추출액을 급여하므로써 혈당 및 혈청의 지질 개선 효과를 규명하기 위해 4주간 실험 사육한 결과, 혈당 농도는 대조군인 1군(물)에 비해 2군(콜레스테롤+물) 및 3군(콜레스테롤+용담추출액)이 높게 나타났으며, 콜레스테롤과 용담 추출액을 급여한 3군이 2군(콜레스테롤+물)보다 다소 낮은 경향을 보였지만 혈당 저하효과는 유의성있게 관찰되지 않았다. 혈청중 총콜레스테롤 농도는 2군에 비하여 3군이 유의적으로 낮게 나타났다. LDL-콜레스테롤 농도는 2군에 비해 3군에서 유의성있게 감소하였으며, 총콜레스테롤에 대한 HDL-콜레스테롤 농도비는 용담 추출액 급여군이 높게 나타났다. 혈청 유리 콜레스테롤 및 콜레스테롤 에스테르 농도는 콜레스테롤 급여군인 2군에 비해 용담 추출액 급여군(3군)이 유의성 있게 감소하였다. 중성지질 및 인지질 농도는 3군의 농도가 낮았다. 혈청 AST 및 ALT활성은 대조군에 비하여 여타 실험군에서 증가하는 경향을 보였다. 이상의 결과에서, 용담 열수 추출액이 식이성 고지혈증 흰쥐에 대한 혈청지질 개선효과가 다소나마 있는 것으로 사료된다.

The Effect of High Environmental Temperature and Nutrient Density on Pig Performance, Conformation and Carcass Characteristics under Restricted Feeding System

  • An experiment was conducted to examine the effect of a high environmental temperature on the performance, conformation, and carcass characteristics of pigs and the influence of diet. Thirty-six three-way crossed castrated male pigs with average initial body weight of 50.4 kg were used in the experiment. The pig were allocated to the following treatments: two environmental temperatures (20 and $30^{\circ}C$)${\times}$three dietary energy levels (2,980, 3,300 and 3,600 kcal/kg)${\times}$three protein levels (12.8, 15.2 and 17.2%). Daily weight gain was lighter (p<0.01) and feed: gain ratio lower (p<0.05) in pigs at $30^{\circ}C$ than for pigs at $20^{\circ}C$ The pigs at $30^{\circ}C$ were significantly taller with deeper bodies (p<0.05) and significantly longer (p<0.05) both vertically horizontally in the planum nasal when kept at $30^{\circ}C$. The width of body and the circumference of the neck were greater (p<0.05) at $20^{\circ}C$. The lean meat of the loin, middle section, ham, and hind section were significantly greater (p<0.05) in pigs kept at $30^{\circ}C$ and the belly was significantly heavier. The total unsaturated free fatty acids were significantly higher (p<0.05) in the body fat of pigs kept at $20^{\circ}C$ than in that of pigs at $30^{\circ}C$. The results indicated that when pigs are given very restricted same amounts of feed, they may need less energy to maintain their body temperature under moderately high environmental temperature ($30^{\circ}C$); consequently, their performance is better than that of pigs under optimum environmental temperature. The results showed very clearly that weight gain of pigs increased with increasing of dietary protein and energy content. The increasing of dietary protein content seemed more significant when content increasing to 17.2% compared with the 12.8 and 15.2% protein content treatments. The increasing of dietary energy content was more significant when content increasing to 3,600 compared with the other low energy content treatments.

Enrichment of Pork with Omega-3 Fatty Acids by Tuna Oil Supplements: Effects on Performance as well as Sensory, Nutritional and Processing Properties of Pork

  • The effects of tuna oil supplementation (0, 1, 2 and 3%) to pig diets on growth and carcass yield as well as meat quality were determined in 40 crossbred pigs. Animals were fattened from 30 to 90 kg of live-weight. Twenty-four hours after slaughter, following various early- and late-post mortem measurements, loin, backfat and belly were prepared from the carcasses. Bacon was produced from the belly part by curing and smoking. Neither performance (feed intake, daily gains, feed conversion efficiency) nor carcass quality (slaughter weight, dressing percentage, lean percentage, nutrient composition of the loin) were significantly affected by tuna oil supplementation. Tuna oil also had no clear effects on early- and late-post mortem meat quality traits, water-holding capacity and tenderness of the M. longissiumus dorsi (LD). Colour traits of LD and backfat, and backfat firmness were not significantly affected by tuna oil, either. However, there was a certain trend to elevated fat contents of LD (and bacon), but not of backfat, with increasing levels of tuna oil in feed. Pigs receiving elevated proportions of tuna oil expressed lower VLDL cholesterol and triglyceride concentrations in blood plasma, whereas the cholesterol content of LD, backfat and bacon did not reflect this trend. Effects of tuna oil on fatty acids in LD, backfat and bacon were often small in extent, except those concerning the long-chain polyunsaturated fatty acids. With 3% tuna oil in the diet, the contents of the particularly desired omega-3 fatty acids, C20:5 and C22:6, were 0.1 and 0.2 g/kg in LD. The corresponding values for backfat and bacon were 2.6 and 12.6 g/kg, and 1.3 and 9.2 g/kg, respectively. Tuna oil supplementation was associated with significant adverse effects on flavour and overall acceptance of bacon (not significant in LD although numerically the same trend was noted), but these effects on sensory ratings were limited in extent. Also shelf life of the products, determined as TBA value after different storage periods at $4^{\circ}C$ in LD, backfat and bacon, was significantly reduced. Overall, the present study suggests that omega-3 fatty acids may be enriched in pork by feeding tuna oil with few undesired side-effects, particularly those on sensory perception and shelf life, suggesting immediate consumption of the products is advisable. Most economically important traits (performance, slaughter and physical meat quality) remained unaffected.
