Vegetable intake is associated with lower Frammingham risk scores in Korean men: Korea National Health and Nutrition Survey 2007-2009

  • BACKGROUND/OBJECTIVES: Observational studies suggest that an association between vegetable consumption and coronary heart disease (CHD). However, the results are inconsistent. This study aimed to investigate the daily intake of vegetables on a national level and its effect on the risk of CHD risk, as determined by the Framingham Risk Score (FRS). SUBJECTS/METHODS: This study was conducted a cross-sectional design of 2,510 male adults 40-64y of age who participated in the 2007-2009 Korean National Health and Nutrition Examination Survey. Daily intake of vegetable was assessed by 24-h recall, and the consumption frequency of vegetables was determined using a food frequency questionnaire. The odd ratio of CHD risk according to daily intake and frequency of vegetables was analyzed. RESULTS: Total vegetable intake was inversely and significantly associated with the risk of CHD (Model 1: 4th vs. 1st quartile, OR = 0.74, 95% CI = 0.58-0.96, P for trend = 0.0015), and the significant relationship with CHD risk remained even after adjusting for potential confounders (Model 3: 4th vs. 1st quartile, adjusted OR [aOR] = 0.69, 95% CI = 0.49-0.95, P for trend = 0.0492). Subjects in the higher quartiles of non-salted vegetable intake had 31% lower odds of the risk of CHD compared to those in the lowest quartile after adjusting for various potential confounders in model 3 (aOR = 0.69; 95% CI = 0.49-0.97, P for trend = 0.0478). No significant associations between the frequency of vegetable intake (total, green, white and red vegetable) and the risk of CHD were found. CONCLUSIONS: The major results of this study indicate that higher vegetable intake may help prevent CHD in Korean men.

한국인의 식이섬유 섭취 실태 (Dietary Fiber Intake of Korean)

  • According to the data published in 1990s on the intake of dietary fiber(DF) of Korean, DF intake of Korean has been gradually decreasing in the last two decades. Mean daily intake of DF in 1990s is estimated to be in the rage of 17-20g per capita and over seventy five percent of the subjects examined appeared to consume DF less than 20g per day. The major food sources of Df in Korean diet include cereals, vegetables, fruits, seaweeds and seasonings. The present level of DF intake of Korean is lower than the tentatively recommended minimum intake of DF. It is predicted that, if the present trend of change on food consumption pattern is maintained, the gradual increases in the incidence of chronic degenerative diseases will be continuing. Therefore, the beneficial effects of DF on health care and disease control should be emphasized through the nutritional education and high level consumption of DF needs to be strongly recommended in the dietary guideline. In order to raise the daily consumption of DF, more whole grain cereals need to be used as a part of staple and more frequent intake of legumes and seaweeds is required as well as the development of high-fiber diet recipes and natural high-fiber products.

Association of daily carbohydrate intake with intermuscular adipose tissue in Korean individuals with obesity: a cross-sectional study

  • BACKGROUND/OBJECTIVES: The prevalence of obesity, a worldwide pandemic, has been increasing steadily in Korea. Reports have shown that increased intermuscular adipose tissue (IMAT) is associated with an increased risk of cardiovascular disease, independent of body mass index. However, the relationship between dietary intake and IMAT accumulation in the Korean population remains undetermined. The objective of this study was to evaluate regional fat compartments using advanced magnetic resonance imaging (MRI) techniques. We also aimed to investigate the association between IMAT amounts and dietary intake, including carbohydrate intake, among Korean individuals with obesity. SUBJECTS/METHODS: This cross-sectional study, performed at a medical center in South Korea, recruited 35 individuals with obesity (15 men and 20 women) and classified them into 2 groups according to sex. Anthropometry was performed, and body fat distribution was measured using MRI. Blood parameters, including glucose and lipid profiles, were analyzed using commercial kits. Linear regression analysis was used to test whether the IMAT was associated with daily carbohydrate intake. RESULTS: Carbohydrate intake was positively associated with IMAT in all individuals, with adjustments for age, sex, height, and weight. No significant differences in blood indicators were found between the sexes. CONCLUSIONS: Regardless of sex and age, higher carbohydrate intake was strongly correlated with greater IMAT accumulation. This suggests the need to better understand sex differences and high carbohydrate diet patterns in relation to the association between obesity and metabolic risk, which may help reduce obesity prevalence.

  • A survey to determine the zinc content of early-infant food sources was conducted. Collected samples from various lots were human milk from volunteer mothers and infant formula and market milk from markets. The determined results by Atomic absorption Spectrophotometer were as follows: 1. Averages of Zn were 201$\pm$144 $\mu\textrm{g}$/dl in human milk, 2.243$\pm$0.888 mg/100g in infant formula, 292$\pm$90$\mu\textrm{g}$/dl in market milk and showed the decline trend by the lactation periods in human milk. (p<0.01) 2. Estimated daily intake of Zn from human milk was higher than that from infant formula in 3 months old infants.

서울 주거민의 음료섭취에 관한 조사 연구 (Beverage Consumption Patterns of Inhabitants in Seoul)

  • In this study we have evaluated daily beverage intake of the inhabitants in Seoul by a 24 hrs. recall procedure from 1145 respondents between pre-school children to adults in the period of June-July 1985. Estimates of consumption were made for each of seven beverage groups and comparisons were made within age, sex and body weight. Significant differences existed for certain beverage in each category analyzed. Total Fluid intake was greater for male than female at all ages and tended to be lower in the older age group with adjustment for differences in body weight. Milk was the major beverage among children while soft drinks were the predominant beverage for teen-ages. Alcoholic drinks represented the smallest component of daily fluid intake among women but were the second largest component of daily fluid levels for men over the age of 24 years.

여대생의 섭식태도 및 생활시간에 관한 조사연구 - 6년간의 추이 조사 - (The Studies of the Dietary Survey and Daily Living Schedule of College Women - Changes during six years -)

  • For the purpose of implementing health and nutrition education for college women, we investigated changes in height, weight, and daily living schedule, as well as the relationship between energy intake and expenditure, and food and nutrients intake levels for the six years from 1977 to 1982. A special form of questionaires was prepared and distributed to well-trained subjects (total 213) in order to find out their general characteristics, daily living schedule and dietary intakes. The recovery of questionaires distributed to each subject was 90%. Then the quality of their living, energy balance, nutrient intake and food intake were evaluated and the F-test was used to test the statistical significances. It was found that : 1) The range of weights and heights of subjects were between 48-50 kg, 157-161cm respectively over the 6 year period. 2) In daily living schedule, that is, the average physiological activity time including sleeping ranged from 760 to 801 minutes. Free time decreased gradually, from 318 minutes per day in 1977 to 275 minutes in 1982. Average time for study and for house work was 196-280 minutes and 68 - 157 minutes respectively for 6 years, and study time was significantly varied in each year. 3) The energy intake of the subjects averaged 1762 Kcal, whereas the expended energy was 1892 Kcal. In the energy balance determined by the relationship between energy intake and expendituye, the ratio of subjects who maintained a negative energy balance gradually increased from 53% (1977) to 64%(1982). 4) The average nutrient intake was higher than the recommended dietary allowance except for calorie (1997 - 1982), calcium (1979) and iron (1979, 1980). The total calorie intake was composed of 59-63% carbohydrate, 19 - 24% fat and 15 - 18% protein Of the total protein intake the percentage of animal was 47 -51% for six years, showing acceptable nutritional status. 5) The average total food intake of the subjects increased from 1,080 g (1977) to 1,184g (1982), but this was not a significant difference. Cereal composed the highest proportion among the total food intakes, and rice intake was 58-78% of cereals. Cereal was followed in decreasing order by vegetables, dairy products, fruits, meat and fish products. The option available for the selection of cooking methods as well as the selection of food item was limited, so there were few changes over time.

Trends in energy intake among Korean adults, 1998-2015: Results from the Korea National Health and Nutrition Examination Survey

  • BACKGROUND/OBJECTIVES: Assessing changes in energy intake and dietary sources is important to understand trends in the prevalence of obesity. Thus, we examined trends in energy intake and its nutrient and food sources in Korean adults from 1998 through 2015. SUBJECTS/METHODS: This study included 70,769 subjects aged ${\geq}19$ years who completed a nutrition survey. Subject data were obtained from the 1998, 2001, 2005, 2007-2009, 2010-2012, and 2013-2015 Korea National Health and Nutrition Examination Surveys. Dietary intake was assessed by a 1-day 24-hour recall method. RESULTS: In men, the daily energy intake significantly increased from 2,196 kcal in 1998 to 2,489 kcal in 2013-2015 (P for trend < 0.0001). However, the daily energy intake among women did not change significantly over the same period (P for trend = 0.5772). The percentages of energy intake from animal foods (e.g., meat and milk) and beverages increased during the study period in both men and women. However, the percentage of energy intake from plant foods decreased due to a marked decrease in the intake of white rice. Changes in food sources of energy intake led to changes in the nutrient sources of energy intake; for example, the increase of energy intake from fat and decrease of energy intake from carbohydrate. CONCLUSIONS: This study suggests that since 1998, energy intake has increased among Korean adult men, but not among women. However, the composition of food and nutrient sources of energy intake has changed in both men and women. Energy intake and its nutrient and food sources should continue to be monitored regularly in the Korean adult population.

국내 시판 일부 불소함유치약 사용 시 연령별 어린이 불소섭취량 (Relationship of the use of some fluoride containing dentifrice on the korean market to children's fluoride intake in different age groups)

  • Objectives : The purpose of this study was to examine the amount of daily fluoride intake among children using fluoride-containing dentifrice in an effort to pave the way for the selection of criteria for the development of safe dentifrice for different age groups to make a contribution to children's oral health. Methods : This study was implemented over approximately six months from May to October 2008 by recruiting subjects, asking their consent, conducting a survey, collecting samples and analyzing the collected data. The subjects in this study were preschool residents in Seoul and Gyeonggi province, who were at the western age of 2 to 5. The amount of fluoride withdrawn from their one-time toothbrushing was measured in two different ways. One was by using HMDS-facilitated modified diffusion method and fluoride ion electrode, and the other was by applying ion chromatography without the diffusion procedure. Results : The fluoride intake accounted for $46.5{\pm}19.1$ percent of the amount of fluoride used, and that percentage was statistically significantly different according to age(p<0.01). The one-time fluoride intake from dentifrice per weight(kg) was a mean of $0.009{\pm}0.006mg$. As a result of multiplying this amount by daily toothbrushing frequency, the daily fluoride intake from dentifrice per weight(kg) appeared to be $0.023{\pm}0.016mg$ on average. There was a large difference among the children in that regard, since that ranged from a low of 0.003mg to a high of 0.070mg. And age made a statistically significant difference to that(p<0.01). Conclusions : The above-mentioned findings of the study showed that the children's daily fluoride intake from dentifrice per weight was lower than the recommended daily fluoride intake from diets per weight for young children aged 1 to 12(0.05-0.07mg). However, there was a great disparity among the children in that aspect, and they are likely to take more fluoride from other things as well. Therefore it is required to prepare separate criteria for preschool and school-aged children.

Dietary intake and major source foods of vitamin E among Koreans: findings of the Korea National Health and Nutrition Examination Survey 2016-2019

  • BACKGROUND/OBJECTIVES: Vitamin E is essential for health, and although vitamin E deficiency seems rare in humans, studies on estimates of dietary intake are lacking. This study aimed to estimate dietary vitamin E intake, evaluate dietary adequacy of vitamin E, and detail major food sources of vitamin E in the Korean population. SUBJECTS/METHODS: This study used data from the Korea National Health and Nutrition Examination Survey (KNHANES) 2016-2019. Individuals aged ≥ 1 year that participated in a nutrition survey (n = 28,418) were included. Dietary intake was assessed by 24-h recall and individual dietary vitamin E intake was estimated using a newly established vitamin E database. Dietary adequacy was evaluated by comparing dietary intake with adequate intake (AI) as defined by Korean Dietary Reference Intakes 2020. RESULTS: For all study subjects, mean daily total vitamin E intake was 7.00 mg α-tocopherol equivalents, which was 61.6% of AI. The proportion of individuals that consumed vitamin E at above the AI was 12.9%. Inadequate intake was observed more in females, older individuals, rural residents, and those with a low income. Mean daily intakes of tocopherol (α-, β-, γ-, and δ-forms) and tocotrienol were 6.02, 0.30, 6.19, 1.63, and 1.61 mg, respectively. The major food groups that contributed to total dietary vitamin E intake were grains (22.3%), seasonings (17.0%), vegetables (15.3%), and fish, and shellfish (7.4%). The top 5 individual food items that contributed to total vitamin E intake were baechu kimchi, red pepper powder, eggs, soybean oil, and rice. CONCLUSIONS: This study shows that mean dietary vitamin E intake by Koreans did not meet the reference adequate intake value. To better understand the status of vitamin E intake, further research is needed that considers intake from dietary supplements.

한국 성인의 배추김치 섭취 빈도에 따른 영양소 섭취 및 다소비 식품 섭취에 관한 연구: 2012~2013년 국민건강영양조사 식품 섭취 빈도 조사 자료를 이용하여 (Nutrient intakes and frequently consumed foods among Korean adults according to the intake frequency of Baechu (Chinese cabbage) kimchi: Based on the 2012~2013 Korea National Health and Nutrition Examination Survey)

  • 본 연구에서는 2012, 2013년도 국민건강영양조사를 이용하여 한국성인의 김치 소비 실태 조사를 섭취 빈도와 1회 섭취량을 이용하여 김치의 섭취 패턴, 영양소섭취량 및 다소비 식품을 조사하였다. 연구 결과 한국 성인의 아침결식률은 25~27%로 점심이나 저녁에 비해 높게 나타났으며, 끼니는 하루 3끼니를 섭취하는 대상자가 높았고, 간식은 섭취한 경우가 92% 이상으로 높은 비율을 보였다. 또한, 외식 횟수는 하루 1회 이상이 2012년에 27.6%, 2013년도에는 33%로 가장 높았으며, 특히 주 5회 이상 외식을 하는 비율이 2012년에 45%였으며, 김치 섭취 빈도 중 배추김치는 하루 2회 섭취 횟수 대상자의 비율이 가장 높았다. 배추김치 섭취 빈도에 따른 다소비식품 상위 30위를 분석한 결과에서는 배추김치만이 상위권 안에 들었고, 다른 김치류는 30위 내에 나타나지 않았다. 이러한 결과를 토대로 배추김치뿐만 아니라 다양한 김치 섭취를 높일 수 있는 방안의 모색이 필요할 것으로 사료된다.
