  • Effects of levels of Bomboo Vinegar Liquids(BVL) on growth performance, serum profile and meat quality in employing 90 pigs were investigated. Ninety pigs were allocated into 3 groups and fed by dietary levels of BVL 0(control), 2.0 and 4.0% were included in experimental diets of each of the groups. Concentrated diet was supplemented with 2.0 and 4.0% BVL. The results showed that the daily weight gains and the feed conversion increased significantly(p<0.05) in 2.0% BVL and the feed intake increased slightly. The glucose and the cholesterol contents at the serum decreased significantly(p<0.05) in 2.0 and 4.0% BVL. On the other hand the total protein concentration and the blood urea nitrogen(BUN) increased significantly(p<0.05) in 4.0% BVL. The carcass weight increased significantly(p<0.05) in 4.0% BVL, and back fat thickness had decreased significantly(p<0.05) in 2.0 and 4.0% BVL. The carcass grade tended to increase in 2.0 and 4.0% BVL. The total fat content of loin tended to increase in 2.0 and 4.0% BVL while the cholesterol content decreased significantly(p<0.05). The pH had lower slightly in 2.0 and 4.0% BVL, the lightness and the yellowness of the meat color had higher significantly(p<0.05) while the redness decreased. Shear force values had lower significantly(p<0.05) in 2.0 and 4.0% BVL. For the fatty acid composition, the saturated fatty acids decreased significantly(p<0.05) in 2.0 and 4.0% BVL while unsaturated fatty acids(oleic acid and linoleic acid) increased significantly(p<0.05). For the sensory evaluation, 2.0 and 4.0% BVL had a significant(p<0.05) effect of diminishing the odor and improving the appearance. The taste was also significantly(p<0.05) improved. In conclusion the 2.0% BVL had a positive effect on the feeding performance, the carcass grade and the meat quality characteristics therefore 2.0% BVL is the appropriate supplemental levels of BVL for finishing pigs.

  • Twenty four Hanwoo cull cows were assigned to 2 groups, control and melengerol acetate(MGA)+selenium supplement containing vitamin E(SeE), based on the parity(6.5±1.7 birth) and body weight (493.17±55.61kg), and the experiment was conducted to establish the reasonable fattening method of cull cows for 240 days. Average daily body gains during 240 days were 0.51kg and 0.63kg in control and MGA+SeE, respectively(P<0.10). DDMI/ADG of MGA+SeE group improved compared to control group(P<0.05). Therefore, supplementation of MGA+SeE in concentrates may accelerate both of the growth rate and feed efficiency in Hanwoo cull cows. MQI from MGA+SeE was more developed based on the larger rib-eye area and thinner backfat thickness in carcass than that from control. Marbling score for MGA+SeE tended to increase compared to control. Dietary Se supplementation significantly affected muscle Se concentration in longissimus dorsi meat of MGA+SeE group(P<0.05). Similar results to Se were obtained from α-Tocoperol concentration. During 7 days of simulated retail display, accumulations of thiobarbituric acid reactive substances(TBARS) concentration in beef was greater(P<0.05) in control than in supplemented cows. These results supported the hypothesis that supplementation of MGA+SeE improve the growth performance and carcass grade both by the growth stimulating effect of MGA+SeE and by preventing the oxidation of the longissimus dorsi muscle in Hanwoo cull cows.

  • This study was conducted to evaluate the protein requirement for maintenance of fattening Korean black goat (Capra hircus coreanae). Six male goats with average initial body weight (BW) of $31.78{\pm}4.54kg$ and an average age of 8 months were used in this study. The experiment had a replicated duplicated $3{\times}3$ Latin square design for balancing carryover effects. In the course of the experiment, each of Black goats were fed three diets that were formulated to contain T1 (13%), T2 (16%) and T3 (19%) levels of crude protein (CP). A 14-day diet adjustment period was followed by a 5-day collection period. Dry matter intake (DMI) of groups fed diets with T2 was 966.67g/d which was higher than group fed diets with T1 and T3 were 925.14g/d and 936.08g/d each. Average daily gains (ADG) of black goats were the highest in T2(167.13g/d) But, there was no significant difference. Dietary protein levels affected the apparent digestibility of CP (p<0.05). A significant difference was found in CP intake among treatments and goats receiving T3, T2, and T1 recorded 181.23, 154.57, and 128.78g CP/d, respectively. This was excepted because CP intake is proportional to CP content of diet, which from highest to lowest was as follows: T3 (19%) > T2 (16%) > T1 (13%). Intercept of the regression equation between CP intake and CP balance indicated that maintenance CP requirement was 1.63g/BW0.75.

  • This study was performed to reveal nutritional excellency of popular Korean dishes, which were intended to distribute as a take-out type food suited for Americans. Four Korean dishes were selected due to their high preference from American sensory panels: Jeyuk-bokkeum (B), Kimchi-bokkeum (C), Dubu-jorim (D) and Namul (E). Nine weeks of the experimental periods were composed of two parts. In phase 1(5 weeks of the first half), high fat diets were fed to all treatments including the control group (A). In phase 2 (4 weeks of the last half), freeze-dried four Korean dishes were fed to the treatments except for the control. There was no significant difference in the final body weights among the groups as well as daily body weight gains and FER. Organ weights of the control group tended to be smaller than those of the treatment groups. For visceral fats, perirenal fat pad (RFP) and epidydimal fat pad (EFP) of the groups C and D were decreased by 20% compared with those of the group A. Total cholesterol level of the group C (94.13 mg/dL) was significantly lower than any other groups (p<0.05), but there was no significant difference in triglyceride(TG) level. HDL-cholesterol level of group B(20.38 mg/dL) was significantly higher than that of group D (17.25 mg/dL), but no significant differences were seen in groups C and E (p<0.05). In LDL-cholesterol level, the highest level was seen in group D, the lowest level in group E (p<0.05). From the findings, Kimchi-bokkeum, Dubu-jorim and Namul were superior to those of the control and jeyukbokkeum in terms of the blood lipid profiles. It might be a good Korean style take-out items suited for the Americans’ taste along with a good nutritional quality in the near future.

  • A nutritional demand of oyster, Crassostrea gigas larva as part of research for improving of utilization of microalgae being used for the artificial oyster seed production. The change of body growth and biochemical compositions of larvae were investigated during larvae rearing in hatchery. The larvae were cultured in 60 M/T tank and fed mixture 6 different phytoplankton species, Isochrysis galbana (30%), Cheatoceros gracilis (20%), Pavlova lutheri (20%), Phaeodactylum triconutum (10%), Nannochryis oculata (10%) and Tetraselmis tetrathele (10%). The initial feeding amount was $0.3{\times}10^4cells/mL$ at three times a day to D-shaped larva and the feeding amount had been increased 30% gradually every two day since the larvae were raising. The larvae were developed from D shape to pediveliger stage for 12 days. The daily growth of shell length and hight were $5.8{\sim}30.8\;{\mu}m$ and $8.7{\sim}31.4\;{\mu}m$, respectively and weight gains were changed from D shape to pediveliger as follow: wet weight was $0.52{\sim}15.0\;{\mu}g/larva$, dry weight was $0.2{\sim}6.5\;{\mu}g/larva$, and ash free dry weight was $0.1{\sim}8.5\;{\mu}g/larva$. The larvae growth pattern shown a logarithmic phase from D shape to umbone stage but after that stage shown a exponential growth aspect. The crude protein, crude lipid and nitrogen free extract (NFE) of larvae during rearing periods were analyzed as $6.1{\sim}10.6%$, $0.6{\sim}1.1%$ and 1.0-2.7%, respectively. And the total amino acid contents of the larvae during rearing periods were in order as glutamic acid $1.26{\sim}2.24%$, aspartic acid $0.97{\sim}1.70%$, and methionine $0.12{\sim}0.33%$. Of the total fatty acid in the analyzed larvae, the saturated fatty acid (SSAFA) was decreased from 54.3% (D shaped larvae) to 17.1 % (pediveliger) as larvae development but the total mono-unsaturated fatty acid (${\Sigma}MOFA$) and Poly-unsaturated fatty acid (${\Sigma}PUFA$) were increased from 29.9% and 7.8% to 40.6% and 45.6%, respectively. By the way the each fatty acid of the larvae were composed of palmitic acid $9.89{\sim}36.95%$, oleic acid $12.17{\sim}32.29%$, linoleic acid $1.96{\sim}33.55%$, EPA $2.17{\sim}11.58%$ and DHA $1.95{\sim}4.51%$. As a result of this study, the larvae of oyster were demanded a various nutrients for healthy growth and the feeding control, expecially after umbone stage larvae are a rapidly growing time, is very important for success of artificial seed production.

  • This study was conducted to investigate the effect of the level of concentrates and pasture grazing in 60 head of spring born Hanwoo heifers(initial body weight; 125.3kg) for 450days from six to 21 months in age. Feeding trial was conducted with 5 treatment(twelve heads/ treatment) which were T1(1.5% of apparent body weight in concentrates and indoor feeding for over-all period), T2(0.5% of apparent body weight in concentrates for pre-pasture grazing and pasture grazing), T3(1.0% of apparent body weight in concentrates for pre-pasture grazing and pasture grazing), T4(1.5% of apparent body weight in concentrates for pre-pasture grazing and pasture grazing), T5(2.0% of apparent body weight in concentrates for pre-pasture grazing and pasture grazing). During the total experimental period, average daily gains by treatments ranged from 0.322 to 0.465kg(average 0.405kg) and higher in the order of T5, T4, T1, T3 and T2, and increased with the level of concentrates feeding for pre-pasture grazing. TDN intakes required per unit of kilogram gain were 9.13 to 9.79kg(average 9.49kg) higher in the order of T1, T3, T5, T4 and T2, For the grazing period, they were ranged from 12.39 to 12.98kg(average 12.68kg), and were not significantly different. But TDN requirements of grazing groups was higher about 15.6% than the indoor feeding group’s. The rate of roughage to concentrates by treatments were 57.8 to 73.6%(average 63.7%). The body weight of 15 and 21 month in ages, that is, the ages at puberty and first conception by treatments were 201.2 to 230.7kg(average 223.8kg) and 270.2 to 331.4kg (average 307.6kg), respectively, and the latter were high per unit of 20.4kg by increasing the level of concentrates feeding for pre-pasture grazing every 0.5% addition of apparent body weight. The age of 225 and 275kg in body weight, that is, the body weight at puberty and first conception by treatments were 14.0 to 17.6 month (average 15.3 month) and 17.9 to 21.7 month(average 19.4), respectively, and the latter were shorter about 1.3 month by increasing the level of concentrates feeding every 0.5% addition of apparent body weight. According to the above results, it may be concluded that spring born Hanwoo heifers are raised at indoor have to feed with 1.8% of body weight in concentrates under full feeding of rice straws for all period from six to 21 months in age, but with 1.5% of apparent body weight in concentrates for grazing period.

  • The purpose of this paper is to clarify the characteristics of 'Podeok' in Daesoon Jinrihoe. The term Podeok can cause some misunderstanding as the same word Deok (德 virtue) has long been used in the Eastern Tradition. In other words, for most people who are used to traditional thought, Podeok may be conflated with the similar word 'Deok (virtue)' as used within Confucianism. People who are familiar with Confucian culture might thereby misunderstand the term Podeok as an aspect of Confucian moral ethics, or they could misconstrue Daesoon Jinrihoe as having appropriated and misused Confucian ideas. Furthermore, there are other problems that could arise if people compare Daesoon Jinrihoe's 'Podeok' with 'Deok (virtue)' as used by Laozi. While Deok in Laozi's usage represents the ability of an individual who can exercise his or her rationality with excellence, Deok in Daesoon Jinrihoe indicates the idea of actualizing Mutual Beneficence and the conditions that enable Mutual Beneficence. If one understands Deok as used by Laozi to contain the meaning of Mutual Beneficence, then it is possible to think that the two tradition share a similar meaning of Deok as Podeok in Daesoon Jinrihoe pursues Mutual Beneficence as its ultimate value. In order to preemptively correct these misunderstandings, I need to clarify how the idea of Deok was born out of traditional thought and what meanings it embodies. Additionally, it is necessary to examine how it became meaningful in Confucianism, and how it was criticized and ascribed new meanings in Laozi's thought. Through these clarification, it will become clear that Deok originally indicated a religious ritual that the king of the Zhou Dynasty performed after receiving the heavenly mandate and assuming rule over the nation. Later, this idea was transformed into a moral virtue and norm by Confucius. This moral virtue and norm was criticized by Laozi as an unnatural form of control as it was understood by Laozi as a teleological argument justifying whether or not lives were to be saved or sustained based on the perceived merits of each individual. On the contrary, Deok in Daesoon Jinrihoe and traditional thought stand on a totally different theological bases. Deok in Daesoon Jinrihoe is a means to practice and realize the truth of the earthly paradise of the Later World and the truth of Mutual Beneficence which were posited to the world through Kang Jeungsan's Works of Haewon (grievance resolution) that resolved the pattern of mutual conflict that characterized the Former World. Therefore, the idea of Podeok in Daesoon Jinrihoe gains completion only on the premises of Haewon Sangsaeng (resolution of grievances for mutual beneficence) and Boeun Sangsaeng (reciprocation of favors for mutual beneficence), and the way to practice Podeok is to practice Haewon Sangsaeng and Boeun Sangsaeng. In addition, the subordinate virtues such as loyalty, filial piety, and faithfulness that exist within Daesoon Jinrihoe's religious practice are not same as those of traditional thought. They are new concepts of virtues drawn from the cosmological laws of Daesoon Jinrihoe. To be specific, the virtues of Daesoon Jinrihoe are not rules that create discrimination and mutual conflict, but are instead ethical rules established upon the basis of Heaven and Earth having been newly organized, and thus, they will bring virtuous concordance, harmonious union, and mutual beneficence. The idea of 'Podeok' in Daesoon Jinrihoe can be understood as a religious practice that requires doctrinal understanding and tangible practice in daily life of followers. In other words, it is not the same Deok of earlier traditional thought in East Asia, but is instead a religious truth by which practitioners realize the truth of Sangje's Works of Haewon in human world as they practice Haewon Sangsaeng and Boeun Sangsaeng.
