Three microorganisms and one chemical preservative were tested for their effects on the fermentation and aerobic stability of whole-crop wheat, sorghum and maize silages. Wheat at the early dough stage, sorghum at the late milk stage and maize at the one-third milk line stage were harvested and ensiled in 1.5-l anaerobic jars untreated or after the following treatments: control (no additives); Lactobacillus plantarum (LP) at $1.0{\times}10^6$ colony-forming units (CFU)/g of fresh forage; L. buchneri (LB) at $1.0{\times}10^6$ CFU/g; Propionibacterium acidipropionici (PA) at $1.0{\times}10^6$ CFU/g; and a formic acid-based preservative (FAP) at 3 ml/kg of fresh forage weight. Three jars per treatment were sampled on d 90 after ensiling, for chemical and microbiological analysis. At the end of the ensiling period, 90 d, the silages were subjected to an aerobic stability test lasting 5 d. In this test, $CO_2$ produced during aerobic exposure was measured along with chemical and microbiological parameters which serve as spoilage indicators. The silages inoculated with LP had higher concentration of lactic acid compared with the controls and the other treated silages (p<0.05). The controls and LP-inoculated silages spoiled upon aerobic exposure faster than LB, PA and FAP-treated silages. The controls and LP-inoculated silages spoiled upon aerobic exposure faster than LB, PA and FAP-treated silages due to more $CO_2$ production (p<0.05) in these two groups and development of yeasts unlike the other groups. In the experiment, the silages treated with LB, PA and FAP were stable under aerobic conditions. However, the numbers of yeasts was higher in the LP-inoculated wheat, sorghum and maize silages compared with the LB, PA and FAP-treated silages. The LB, PA and FAP improved the aerobic stability of the silages by causing more extensive heterolactic fermentation that resulted in the silages with high levels of acetic and propionic acid. The use of LB, PA and FAP as silage additives can improve the aerobic stability of whole-crop wheat, sorghum and maize silages by inhibition of yeast activity.
Objective: Diet acidification supplementation is known to influence intestinal morphology, gut microbiota, and on phosphorus (P) utilization of broilers. Alterations in intestinal barrier and microbiota have been associated with systemic inflammation and thus regulating bone turnover. Hence the effect of acidifier addition to drinking water on tibia mass and the linkages between intestinal integrity and bone were studied. Methods: One-d-old male broilers were randomly assigned to normal water (control) or continuous supply of acidified water (2% the blend of 2-hydroxy-4-methylthiobutyric acid, lactic, and phosphoric acid) group with 5 replicates of 10 chicks per replicate for 42 d. Results: Acidification of drinking water improved the ash percentage and calcium content of tibia at 42 d. Broilers receiving acidified water had increased serum P concentration compared to control birds. The acidified group showed improved intestinal barrier, evidenced by increased wall thickness, villus height, the villus height to crypt depth ratio, and upregulated mucin-2 expression in ileum. Broilers receiving drinking water containing mixed organic acids had a higher proportion of Firmicutes and the ratio of Firmicutes and Bacteroidetes, as well as a lower population of Proteobacteria. Meanwhile, the addition of acidifier to drinking water resulted in declined ileal and serum proinflammatory factors level and increased immunoglobulin concentrations in serum. Concerning bone remodeling, acidifier addition was linked to a decrease in serum C-terminal cross-linked telopeptide of type I collagen and tartrate-resistant acid phosphatase reflecting bone resorption, whereas it did not apparently change serum alkaline phosphatase activity that is a bone formation marker. Conclusion: Acidified drinking water increased tibia mineral deposition of broilers, which was probably linked with higher P utilization and decreased bone resorption through improved intestinal integrity and gut microbiota and through decreased systemic inflammation.
전통안동식혜를 제조하여 $5^{\circ}C$에서 보관하면서 GC와 GC-MS를 이용하여 향기성분의 원인 물질을 분석, 동정하였고 맛성분의 원인물질인 유기산의 변화를 검토하였다. 안동식혜의 주요 향기성분으로는 camphene, sabinene, 1-(1.5-dimethyl-4-hexyl)-4-methyl-benzene, ${\alpha}-zingibirene$, farnesene, 2.6-b is-(1.1-dimethylethyl)-4-methyl-phenol, ${\beta}-sesquiphellandrene$, calalene, tetradecanoic acid, hexadecanoic acid 및 9.12-octadecanoic acid 등을 들 수 있었다. 안동식혜의 숙성 및 저장중에 있어서 생성된 향기성분은 2.4-undecadienal, 1H-indole, 2.4-decadienal, isoterpinolene 및 D-nerdiol 5종류이었다. 비휘발성 유기산 함량의 변화를 보면 저장 초기에는 젖산 0.49 mg/100 g이던 것이 19.37 mg/100 g으로 증가하였고 다른 유기산들의 함량 변화는 거의 없었다. 안동식혜의 숙성 및 저장 기간중의 pH의 변화는 차차 감소하였고 산도는 차차 증가하여 저장 6일째 0.41이었다.
본 연구는 아이스플랜트의 생리활성을 향상시키고, 식생활에서의 활용가능성을 높이기 위하여 물김치 형태로 발효시켰으며, 아이스플랜트의 성분 및 몇 가지 생리활성을 발효 전과 비교하였다. 물김치 침지액의 pH는 발효 6일째까지 계속해서 낮아졌으며, lactic acid의 생성량은 발효 4일째에 가장 많았다. 아이스플랜트 물김치 건더기 중의 D-pinitol은 발효 전 $4.196{\pm}0.096mg/g$에서 6일째에는 $3.843{\pm}0.116mg/g$으로 감소하였다. 그러나 myo-inositol과 D-chiro-inositol은 각각 발효 전 $0.453{\pm}0.022$와 $2.815{\pm}0.008mg/g$에서 6일째에 $0.630{\pm}0.029$와 $4.117{\pm}0.096mg/g$으로 증가하였다. 아이스플랜트 추출물의 DPPH, ABTS radical 소거활성 및 FRAP 활성은 대체로 발효 후에 높게 나타나 유사한 경향이었으며, 1 mg/ml의 농도로 처리하였을 때 각각 발효 5일째($79.09{\pm}0.69%$), 4일째($87.55{\pm}1.21%$) 및 6일째($78.72{\pm}0.99%$)에 가장 높았다. Lipid/MA assay에 의한 항산화 활성도 대체로 발효 후에 높게 나타나 유사한 경향이었으며, 추출물을 $500{\mu}g/ml$ 처리하였을 때, 발효 4일째에 가장 높은 활성($64.65{\pm}1.63%$)을 나타났으며, 발효 5, 6일째에는 낮아지는 경향이었다. 아이스플랜트 추출물의 t-BHP, $H_2O_2$ 및 ethanol에 의하여 손상된 BNL CL.2 세포의 생존율은 각각 $14.19{\pm}0.98$, $13.80{\pm}2.25$ 및 $25.89{\pm}2.90%$이었으나, 추출물을 $200{\mu}g/ml$의 농도로 처리하였을 경우, 각각 발효 6일째에 $50.07{\pm}4.85%$, 2일째에 57.06% 및 4일째에 $66.06{\pm}1.36%$의 세포생존율을 나타내어 간세포가 회복되고 있음을 알 수 있었다. 그러나 발효 후에 간세포 보호효과가 뚜렷이 증가하지는 않았다. ${\alpha}-Glucosidase$ 저해활성은 모든 실험군에서 $83.52{\pm}2.69{\sim}92.79{\pm}2.16%$로 상당히 높게 나타났으며, 발효기간이 경과함에 따라 조금씩 증가하였다. 한편 ${\alpha}-Amylase$ 저해활성은 전체적으로 $52.64{\pm}3.26{\sim}57.56{\pm}1.21%$로 나타났으며 발효 전후에 뚜렷한 차이가 없었다. 이와 같은 결과로 볼 때, 아이스플랜트의 물김치 발효기간은 4~5일이 적정할 것으로 생각되었다. 한편 발효에 의한 기능성은 항산화효과를 제외한 간세포보호 및 ${\alpha}-Glucosidase$, ${\alpha}-Amylase$ 저해활성은 전체적으로 소폭 향상에 그쳤다. 따라서 이러한 결과를 바탕으로 발효 등 다양한 가공방법이 개발되어, 향후 아이스플랜트의 소비촉진의 계기가 되기를 기대한다.
A study was conducted to examine the influence of maize (Zea mays) and cowpea (Vigna unguniculata) intercropping on fodder biomass production and silage characteristics. Maize fodder was cultivated alone and intercropped with cowpea at seed ratio of 85:15 and 70:30. Fodder was harvested at heading stage (at about 35% dry matter). The data indicated significant increase in biomass and crude protein production of maize intercropped with cowpea at seed ratio 70:30 followed by seed ratio 85:15 as compared to maize alone. However, no (p>0.05) difference was observed in TDN production among the three treatments. Four types of silages from, I) maize alone, II) maize and cowpea (85:15), III) maize and cowpea (70:30) and IV) maize supplemented with 2.5% urea were prepared. After 60 days of ensiling period, silage samples were analysed for proximate composition and fermentation characteristics. Crude protein and lactic acid values of silages I, II, III and IV were 8.52, 9.82, 14.90 and 13.96% and 9.00, 9.38, 10.86 and 7.43%; respectively. In situ dry matter digestibility was maximum in silage III followed by silages II, IV and I. The results suggested that intercropping of maize and cowpea at seed ratio 70:30 increased fodder production and produced quality silage.
An experiment was conducted to study the effect of frequency of defoliation on the ensiling characteristics and nutritive value of Guineaecotype 'A' (Panicum maximum Jacq) grass. Guinea grass harvested at 2, 3, 4, 5, 6, 7, 8, 9, 10 and 12-week cutting intervals was chopped (2 cm) and ensiled alone or with the addition of coconut (Cocos nucifera L.) meal (w/w-fresh weight basis), for periods of 6, 7 or 8 weeks in 2-litre laboratory silos. Dry matter, water soluble carbohydrates, lactic acid, pH, ash, nitrogen and digestibility in vitro were measured in representative samples of preensiled and ensiled material. Dry matter content of silages prepared from herbage harvested at 2 and 3 weeks intervals was lower (P<0.05) compared to longer defoliation intervals. The pH of silage prepared from herbage over 8 weeks old were higher (P<0.05) than those harvested below 8 weeks. The water soluble carbohydrate content of silage prepared from 3-weekly defoliated herbage was higher (P<0.05) than those prepared from longer periods. Lengthened growth period decreased (P<0.001) the crude protein content of the ensiled material, whereas the addition of coconut meal resulted in marginal increases. In vitro organic matter digestibility of the silages decreased (P<0.05) with the increase in forage maturity.
The present study examined the physical, chemical, microbial, and sensory characteristics of Queso Blanco cheese supplemented with powdered microcapsules containing tomato extracts (0.5-2.0%) during storage at $7^{\circ}C$ for 60 d. The lactic acid bacterial count and lycopene concentrations in Queso Blanco cheese supplemented with powdered microcapsules were significantly higher than those of the control. In a texture analysis, the gumminess, chewiness, and hardness values for Queso Blanco cheese were significantly higher with increasing concentrations of the powdered microcapsules containing tomato extracts. Total short-chain fatty acids in Queso Blanco cheese supplemented with powdered microcapsules containing tomato extracts were not significantly altered compared to the control. Sensory evaluation scores for the yellowness, tomato taste, and firmness of Queso Blanco cheese were significantly higher after supplementation with powdered microcapsules containing tomato extracts.
Direct-fed microbials (DFM) have been used to enhance milk production in lactating cattle and to increase feed efficiency and body weight gain in growing ruminants. Primary microorganisms that have been used as DFM for ruminants are fungal cultures including Aspergillus oryzae and Saccharomyces cerevisiae and lactic acid bacteria such as Lactobacillus or Streptococcus. Attempts have been made to determine the basic mechanisms describing beneficial effects of DFM supplements. Various modes of action for DFM have been suggested including : stimulation of ruminal microbial growth, stabilization of ruminal pH, changes in ruminal microbial fermentation pattern, increases in digestibility of nutrients ingested, greater nutrient flow to the small intestine, greater nutrient retention and alleviation of stress, however, these responses have not been observed consistently. Variations in microbial supplements, dosage level, production level and age of the animal, diet and environmental condition or various combinations of the above may partially explain the inconsistencies in response. This review summarizes production responses that have been observed under various conditions with supplemental DFM and also corresponding modification of ruminal fermentation and other changes in the gastrointestinal tract of ruminant animals.

The objectives of this study were to apply the Baranyi model to predict the growth of natural microflora in liver sausage with added kimchi powder. Kimchi powder was added to the meat products at 0, 1, 2, and 3% levels. To determine and quantify the natural microflora in the meat products, total plate counts and counts of anaerobic bacteria and lactic acid bacteria were examined throughout the 28 d of storage. The obtained data were applied to the Baranyi growth model. The indices used for comparing predicted and observed data were $B_f$, $A_f$, root mean square error (RMSE), and $R^2$. Twelve predictive models were characterized by a high $R^2$ and small RMSE. The Baranyi model was useful in predicting natural microflora levels in these meat products with added kimchi powder during storage.
