Physicochemical properties of M. longissimus dorsi of Korean native pigs

  • Background: The meat quality of Korean native pigs (KNP) and crossbred pigs (LYD; Landrace ${\times}$ Yorkshire ${\times}$ Duroc) was examined to generate data useful for selecting native pigs for improved pork production. Methods: Fifty Korean native pigs (KNP) and 50 crossbred pigs (LYD) were tested. Loin samples (M. longissimus dorsi) of the two breeds were analyzed to determine meat quality and sensory properties. Result: KNP had a higher moisture content than LYD (p < 0.05); however, it had significantly lower crude fat and ash content than that of LYD (p < 0.001). KNP had significantly higher shear force than LYD (p < 0.01). KNP also showed significantly higher cooking loss than LYD (p < 0.05). KNP had a lower $L^*$ value than LYD (p < 0.05); however, it had a markedly higher $a^*$ and $b^*$ value than LYD (p < 0.001). KNP showed significantly higher linoleic acid, linolenic acid, and arachidonic acid content than LYD (p < 0.05). Although KNP had significantly better flavor and overall palatability than LYD, it was less tender than LYD (p < 0.01). Conclusion: KNP had a markedly higher $a^*$ value than LYD. KNP had significantly higher shear force than LYD. The total unsaturated fatty acid content was higher in KNP than in LYD.

Evaluation of Un-fasted Pig Stomach Spent Feed as a Substitute in Finishing Pigs Diet

  • Insufficient pre-slaughter fasting leaves serious amount of feed-like contents (designated here as un-fasted stomach spent feed, USSF) in the eviscerated pig stomach. This study was intended to evoke economical and environmental seriousness of USSF discharge by estimating its value as pig feed. For finishing pigs feeding trial, three levels (0, 5, and 10%) of USSF were blended with pig feed to prepare control and two treatment diets, respectively. A total of 42 (21 males, 21 females) crossbred (Landrace ${\times}$ Yorkshire ${\times}$ Duroc) finishing pigs weighing $81.5{\pm}8.0$ kg were employed to 28d feeding trial and in vivo digestibility trial by $Cr_2O_3$ indicator method with 7 males and 7 female pigs per treatment. In vitro total tract digestion of USSF showed 70.5% and 57.6% of DM and OM digestibilities, respectively which were poorer (p<0.05) than those of pig diet. There were no differences in body weight gain, daily feed intake and feed conversion ratio among treatments although 10% USSF substitution exerted relatively poor performance. In vivo apparent digestibilities of diets containing USSF 5% and 10% were lower (p<0.05) than that of 100% pig feed. There were no differences (p>0.05) in dressing percentage and carcass grade among treatments. Results of this study showed that 5% USSF substitution in finishing pigs diet did not exert any disadvantage in terms of production performance and carcass grade. This study implied that un-fasted slaughter causing excessive excretion of USSF should be avoided. If not avoidable, the USSF should not be wasted in abattoir but could be recycled as pig feed.

사육면적 증가를 위한 반층돈사의 활용이 이유자돈의 성장 및 스트레스에 미치는 영향 (Effects of semi-floor pens on growth performance and stress in weaning pigs)

  • The objective of this study was to increased breeding area in same size pig pen and growth performance of weaning pigs. A total of 330 crossbred ($6.68{\pm}0.36kg$) weaning pigs were subjected to a 42-day feeding trial(3 pens/treatment) in which effects of the semi-floor were compared : NC; Negative control ($0.23m^2/pig$; 40 pigs/pen), PC; Positive control($0.30m^2/pig$; 30 pigs/pen) and Semi-floor($0.30m^2/pig$; 40 pigs/pen). There was a significant effect on BW at 6 week along all treatment(P<0.01). There was a effect of Semi-floor treatment on ADG(average daily gain) only during the first 3 week after weaning(P<0.01). No significant effect was observed in the ADFI during the experiment period. NC treatment had significantly lower BUN value than other treatments(P<0.05). The results from immune and stress response with semi-floor suggest that no negative effects in their blood analysis. Consequently, semi floor treatments increased additional breeding area and also growth performance rather than other treatments in weaning pigs.

Length polymorphism in OGT between Korean native pig, Chinese Meishan, and the Western pig breeds

  • Background: The Korean native pig (KNP) is generally thought to have come from northern China to the Korean peninsula approximately 2000 years ago. KNP pigs were at the brink of extinction in the 1980s, since then efforts have been made to restore the breed by bringing together the remaining stocks in South Korea. As a result, KNP was registered as a breed in 2006. To find additional breed-specific markers that are distinct among pig breeds, variations in O-linked N-acetylglucosamine transferase (OGT) were investigated. OGT is located on chromosome X and catalyzes the post-translational addition of a single O-linked-${\beta}$-N-acetylglucosamine to target proteins. Findings: Length polymorphism in the intron 20 of OGT was identified. The intron 20 of OGT from Duroc, Landrace, and Yorkshire breeds was 281-bp longer than that from either KNP or Chinese Meishan pigs. The difference between the Western pig breeds (BB genotype) and KNP or Meishan pigs (AA genotype) was due to an inserted 276-bp element and the 5-bp ACTTG. Conclusions: The polymorphism in OGT identified in this study may be used as an additional marker for determining the breed of origin among Meishan and the Western pig breeds. The length polymorphism suggests that the locus near OGT is not fixed in KNP. This marker would be relevant in determining the breed of origin in crossbred pigs between KNP pigs with known genotypes and the Western pig breeds with BB genotypes, thus confirming the contribution of the X chromosome from each breed.

  • 본 연구는 우리나라 재래돼지의 고유 특성을 살린 우수한 품종을 개발하기 위하여 수행하였으며, 도체특성은 DK1이, 육질특성과 지방산조성은 DK2가 두록과 비교하여 차이가 없거나 우수한 것으로 나타나 재래돼지를 활용한 우수한 육질의 돼지 품종 개발이 가능할 것으로 사료된다.

Evaluation of coat color inheritance and production performance for crossbreed from Chinese indigenous Chenghua pig crossbred with Berkshire

  • Objective: This work was to determine coat inheritance and evaluate production performance for crossbred pigs from Berkshire×Chenghua (BC) compared with Chinese indigenous Chenghua (CH) pigs. Methods: The coat color phenotypes were recorded for more than 16,000 pigs, and the genotypes of melanocortin 1 receptor (MCIR) gene were identified by sequencing. The reproductive performance of 927 crossbred BC F4 gilts and 320 purebred CH gilts was recorded. Sixty pigs of each breed were randomly selected at approximately 60 days of age to determine growth performance during fattening period, which lasted for 150 days for BC pigs and 240 days for CH pigs. At the end of the fattening period, 30 pigs of each breed were slaughtered to determine carcass composition and meat quality. Results: The coat color of BC pigs exhibits a "dominant black" hereditary pattern, and all piglets derived from boars or sows genotyped ED1 ED1 homozygous for MC1R gene showed a uniform black coat phenotype. The BC F4 gilts displayed a good reproductive performance, showing a higher litter and tear size and were heavier at farrowing litter and at weaning litter than the CH gilts, but they reached puberty later than the CH gilts. BC F4 pigs exhibited improved growth and carcass characteristics with a higher average daily live weight gain, lower feed-to-gain ratio, and higher carcass lean meat rate than CH pigs. Like CH pigs, BC F4 pigs produced superior meat-quality characteristics, showing ideal pH and meat-color values, high intramuscular fat content and water-holding capacity, and acceptable muscle-fiber parameters. C18:1, C16:0, C18:0, and C18:2 were the main fatty acids in M. longissimus lumborum in the two breeds, and a remarkably high polyunsaturated/saturated fatty acid ratio of ~0.39 was observed in the BC F4 pigs. Conclusion: The BC F4 pigs exhibit a uniform black coat pattern and acceptable total production performance.

Quality Characteristics of Dry-cured Ham Made from Two Different Three-way Crossbred Pigs

  • This study was conducted to compare the physicochemical traits of dry-cured hams made from two different three-way crossbred pigs: Yorkshire${\times}$Landrace${\times}$Duroc (YLD) and Yorkshire${\times}$Berkshire${\times}$Duroc (YBD). Animals were slaughtered at a live weight of 110 to 120 kg and cooled at $0^{\circ}C$ for 24 h in a chilling room, the ham portion of the carcasses were cut and processed by dry-curing for physico-chemical analyses. While the moisture and crude protein contents of dry-cured ham were higher in YLD than in YBD, crude fat and ash content were higher in YBD (p<0.05). The salt contents of ham from YBD were higher than those from YLD (p<0.05). YBD ham samples showed a higher $L^*$ and $b^*$ values than those from YLD, while YBD ham showed lower $a^*$ value (p<0.05). Thiobarbituric acid reactive substances (TBARS) and volatile basic nitrogen (VBN) values of YLD hams were lower than those of YBD samples (p<0.05). Hardness, gumminess, chewiness, and shear force values of YBD ham were higher than those of YLD sample (p<0.05). Saltiness was significantly higher in YBD ham than in YLD samples (p<0.05). YLD ham displayed a superior quality than YBD. Considering the meat quality parameters of two-way crossbred ham, YLD hams could be more suitable for the production of dry-cured products.

Effects of Corn Cob-based Diets on the Levels of Nutritionally Related Blood Metabolites and Onset of Puberty in Mukota and Landrace×Mukota Gilts

  • The objective of this study was to determine the levels of nutritionally related blood metabolites, age and body weight at puberty in gilts fed on corn cob-based diet in Mukota and Landrace${\times}$Mukota crossbred gilts. Ten gilts of each of Mukota and crossbred genotypes were fed two diets for 14 weeks in a 2${\times}$2 (breed${\times}$diet) factorial treatment arrangement. A corn-cob based diet, designed to contain 2,304 kcal ME/kg, and a standard pig grower diet, were used. The corn cob constituted 20 percent of the total ration. Fortnightly, bodyweights and feed conversion ratios (FCR) were recorded. Blood samples were collected to determine blood glucose, urea and creatinine levels. The average daily bodyweight gain (ADG) in the Mukota was lower (p<0.05) than in the crossbred gilts. Crossbred gilts fed on the corn cob-based diet had lower (p<0.05) urea values from eight weeks from the start of the experiment (p<0.05) compared to Mukota gilts fed the same diet. There were no differences in blood glucose and creatinine concentrations between diets and genotypes. The lack of differences in the nutritionally-related blood metabolites suggest that corn cobs could be incorporated at 20 percent inclusion without compromising blood metabolite concentrations and age at puberty of the Mukota and Landrace${\times}$Mukota gilts.

국내 모돈에 대한 발굽 병변 조사 (Survey on claw lesions of sows in Korea)

  • Claw lesion is one of the major causes of lameness in sows and the lameness is one of the reasons for culling of sows from the swine herd. This survey was conducted on sows in total of 8 farms with a total of 684 pigs. The lesions observed in the study were horizontal and vertical claw cracks (CWH & CWV), differences in the length of toes (T) and/or in the length of dew claws (DC) according to crates, breeds and parity of sows. Scores of claw lesions were assigned on 0, 1, 2, and 3 at each foot depending on the severity of the claw lesions. The sows' parity was classified into 1 to 2, 3 to 4, 5 to 8. Prevalence rate of claw lesions in sows raised on punched plastic crate was higher than that in sows raised on tribar crate. In prevlence rate by breeds, inbreed Landrace sows showed higher than that of Yorkshire sows. According to 4 claw lesions, the length of DC was the highest at parity 3~4 and CWV was the lowest at parity 3~4 in F1 crossbred sows raised on punched plastic crates, respectively. In Yorkshire breeds raised on punched plastic crates, the length of DC at parity 5~8 was the lowest and CWH was the highest at parity 3~4, respectively. In Landrace breeds raised on tribar crates, CWH was the highest at parity 1~2 and CWV was the lowest at parity 3~4, respectively. The high parity in F1 crossbred sows showed high prevalence rate of claw lesions than that of low parity and other inbreed sows, respectively. These results may be useful as elementary data in establishment of welfare quality protocol and preventive measures to reduce economic losses from craw lesions in sows.

제주 개량 흑돼지와 국내에 도입된 주요 돼지 품종의 육질 특성 및 근섬유 특성 비교 (Comparison of Pork Quality and Muscle Fiber Characteristics between Jeju Black Pig and Domesticated Pig Breeds)

  • 본 연구는 제주 개량 흑돼지의 육질특성 및 근섬유 특성이 국내에 도입된 다른 품종과의 차이를 확인하고자 수행되었다. 제주 개량 흑돼지는 국내에 보급된 다른 돼지 품종보다 도체중이 작고 근내지방이 적은 특징을 나타내었다. 그러나 사후 45분 및 24시간째 pH를 비롯하여 육색, 보수력 및 연도 등 육질특성에서는 다른 품종과 비슷한 수준의 결과를 나타내었다. 삼원교잡종인 LYD 품종이 비교적 등지방 두께가 얇고 근내지방 함량이 높았으며, 보수력 및 육색 등에서도 좋은 품질을 나타내었고, D의 경우도 가장 좋은 보수력과 연도를 나타내었는데 이러한 결과는 근섬유 특성에서도 확인할 수가 있었다. 한편, M 품종은 등지방 두께가 두껍고 근내지방이 적으며, 육질 특성에서도 명도 및 육즙감량이 가장 높은 값을 나타내어 가장 좋지 못한 품질을 보였다. 제주 개량 흑돼지는 재래 흑돼지가 교잡을 통해 개량된 것으로 현재 육질특성에서는 국내에 보급된 다른 품종과 비교하여 크게 나쁘지는 않으나 도체중 및 근내지방 함량 등 도체특성에 대한 개선이 필요할 것으로 사료된다.
