Quality Characteristics of Sulgidduk with Prepared Glutinous Corn Flour (찰옥수수 분말을 첨가한 설기떡의 품질 특성)

  • This study was conducted to investigate the effective ratio of Sulgidduk to glutinous corn flour. We measured the moisture content, color differences, and texture of Sulgidduk with glutinous corn flour and conducted a sensory test. There was a significant difference between the moisture content of the glutinous corn Sulgidduk batches with added glutinous corn flour and the control group. As the proportion of glutinous corn flour increased, the lightness(L) significantly decreased, whereas the redness(a) and yellowness(b) significantly increased. When the amount of glutinous corn flour increased, there was a significant increase in the hardness and adhesiveness, but a significant decrease in the cohesiveness. The results of the sensory evaluation showed that roughness increased significantly when the amount of glutinous corn flour was increased. The moisture and softness decreased significantly as the glutinous corn flour concentration increased. These results indicated that adding $5{\sim}10%$ corn flour to the glutinous corn Sulgidduk produced the best quality.

The Quality Characteristics of Rice-Corn Cakes (옥수수 가루를 첨가한 Rice-Corn Cakes의 특성에 관한 연구)

  • This experiment was carried out to investigate the effects of adding corn flour on the quality of rice cakes. Rice-corn cakes were prepared by adding corn flour at 25%, 50% and 75%, and the quality characteristics were measured. In the expansion ratio, springiness and cohesiveness of rice-corn cakes, the 25% group(C-25) was the highest and the 75% group(C-75) was the lowest. The higher the ratio of adding corn flour was, the lower the expansion ratio, springiness and cohesiveness were. In the hardness and chewiness of rice-corn cakes, the 75 % group(C-75) was the highest and the 25% group(C-25) was the lowest. But in the taste, texture and overall acceptance of rice-corn cakes, the 50% group(C-50) was the best.

  • Calcium and magnesium in polished rice, polished barley, what flour, and corn which were used for Yakju fermentation were determined by atomic absorption spectrophotometry and their quantitative changes in the filtrates of mashes were checked at 24 hours intervals dueing the whole brewing period. The results obtained were as follows. 1) Mineral contens of raw materials(mg% of each anhydrous materials). Ca : polished rice 8.21, polished barley 26.11, wheat flour 66.10, corn 86.63 2) Mineral contents of kojies made from raw materials (mg %of each anhydrous materials). Ca : rice koji 26.36, barley koji 97.61, what flour koji 87.69, corn koji 16.13, seeding koji 28.76 Mg: rice koji 29.29, barley koji 39.84, what flour koji 244.50, corn koji 102.64, seeding koji 143.79 3) Quantitative changes of minerals in the fitrates of mashes. Calcium contents in the filtrates of mashes were increased gradually after mashing in the first stage but unchanged till the mashes were ripened after mashing in the second stage. On the other hand, magnesium cotents were decreased gradually after increase in the the other hand, magnesium contens were decreased gradually after increase in the first stage but showed a tendency to increase gradually in the second stage. 4)Mineral contents of Yakjues produced, marketing Yakju, and natural water for brewing (g/ml).   • This study was carried out to investigate the characteristics of starch paste which was used for the conservation of paper properties. Three kinds of commercial corn starch and five kinds of fermented wheat starch were examined on the contents of amylose and amylopectin, shapes of particles, and viscosity and pH of paste. And adhesive strength on the drying, accelerated aging, and wetting treatments were measured. The contents of amylopectin of oxidized corn starch were higher those of cationic corn starch, unmodified corn starch, and fermented wheat flour. In case of fermented wheat flour, increasing of a fermentation period was resulted in increasing of amylopectin contents. The particle shapes of commercial corn starch showed with a uniform polygon, but fermented wheat flour showed with a mixture of small and large oval types. The viscosity of oxidized corn starch were very lower those of cationic corn starch and unmodified corn starch. And increasing of a fermentation period of wheat flour was resulted in increasing of viscosity. The pH of commercial corn starch were 3.6-7.5 and fermented wheat flour were 3.6-5.2. Through the examination on the nature and adhesive strength of starch paste, the oxidized corn starch 60 cps which is the name of products and wheat flour which had fermented for 5 years were considered that most suitable for conservation of paper properties.

The Effect of Acon on the Serum and Liver of Rats (상수리첨가 식이가 흰쥐의 혈청지질 및 간장에 미치는 영향)

  • The antioxidant effects of freeze-drying acorn were examined to find how much the freeze-drying acorn can reduce peroxidized corn oil poisoning, which influenced cholesterol, triglyceride, phospholipids, lipidperoxides, GOT(glutamate oxaloacetate transaminase), GPT(glutamate pyruvate transaminase) in serum, and cholesterol, triglyceride, lipidperoxides, fatty acid of phospholipids, SOD(superoxide dismutase), catalase in liver. In this experiment, male rats of Sprague-Dawley strain were used. The rats were divided into 6 groups, which were fed differently for 5 weeks : basal diet, 10% peroxidized corn oil added to basal diet, 1% acorn flour and 10% peroxidized corn oil added to basal diet, 5% acorn flour and 10% peroxidized corn oil added to basal diet, 10% acorn flour and 10% peroxidized corn oil added to basal diet, and 0.25% tannic acid and 10% peroxidized corn oil added to basal diet. The results were as follows : It was found that the peroxidized corn oil-fed 5 weeks induced the elevation of cholesterol, triglycerides, lipid peroxides, GOT, GPT in serum, and cholesterol, triglycerides, lipid peroxides in liver as compared to the basal diet-fed rats, but the acorn flour-fed rats reduced the elevation of these components. In addition, saturated fatty acid in rat liver phospholipids induced the elevation by feeding of peroxidized corn oil and, on the other hand, the acorn flour-fed rats reduced the elevation of saturated fatty acids. The acorn flour-fed rats reduced the activity of SOD in liver while they enhanced the activity of catalase in liver as compared with the peroxidized corn oil-fed rats.

Baking Properties of Gluten-free Rice Bread with Different Percentages of Corn Starch and Waxy Corn Starch (옥수수 전분과 찰옥수수 전분 첨가 비율에 따른 Gluten-free 제빵 특성)

  • The baking properties of gluten-free rice bread with different percentages of corn starch and waxy corn starch were investigated. The specific gravity and color (L, a, b) of the dough as well as the appearance, color (L, a, b) and texture of the rice bread were analyzed. Replacement of rice flour with 1, 2.5, 5, 7.5 and 10% corn starch did not have a significant effect on the specific gravity and color of the dough. The volume and specific volume of the rice bread showed an increasing trend as the amount of added corn starch increased. The chewiness, gumminess and hardness of the rice bread showed a decreasing trend as the amount of added corn starch increased. Replacement of rice flour with 1, 5 and 10% waxy corn starch did not have a significant effect on the specific gravity and color of the dough. The color of the rice bread showed an increasing trend as the amount of added waxy corn starch increased. These results suggest that replacement of rice flour with 7.5% corn starch or 1% waxy corn starch is effective for gluten-free rice bread.

A Study on the Water Absorption Velocity of Sized Fabrics (푸새직물의 흡수속도에 관한 일연구)

  • This paper aims to examine the velocity of water absorption of cotton, hemp, and T/C fabrics sized by rice, wheat, potato, corn flour and pp.V.A.. Experimental variables such as the concentration of sizing agents, the moisture regain of unsized fabrics and the ironing temperature showed the following results. 1. When the fabrics were sized, the velocity of water absorption increased according to the order of corn, rice, potato, wheat flour and pp.V.A. for cotton fabrics, of corn, potato, rice, wheat flour and pp.V.A. for hemp fabrics, and of corn, wheat, rice, potato flour and pp.V.A. for T/C fabrics; corn flour showed the highest velocity of water absorption and pp.V.A. did the lowest among all the others mentioned above. 2. The higher fabric density, the higher velocity of water absorption. The finer the count of fabric yarn, the higher velocity of water absorption. 3. The material of sized fabrics most affected the velocity of water absorption than other factors of those. 4. To a certain extent, the higher the concentration of sizing agent, the higher the velocity of water absorption. 5. The fabrics with moisture regain of 20% before sizing showed the highest velocity of water absorption. 6. The ironing temperature after sizing fabrics mentioned below showed the highest velocity of water absorption; 180$^{\circ}C$ for cotton, 200$^{\circ}C$ for hemp, and 160$^{\circ}C$ for T/C fabrics.

Physical Properties and Optimization of Tangsuyuk Batter Ingredients (탕수육 배터의 물리적 특성 및 최적화)

  • Physical properties were investigated in tangsuyuk batter containing different amounts of ingredients, such as wheat flour, corn starch, sodium bicarbonate, alum and water. For the response surface methodology (RSM) central composite design was used to determine the optimal ingredient ratios for viscosity, color properties(lightness, redness, yellowness, color differences) and cutting forces. There were significant differences(p<0.05) between the different batter mixtures. The lightness(L) of batter was in proportion to the increased amount of wheat flour and corn starch. Higher redness was recorded with increasing corn starch. Higher yellowness was observed with increasing wheat flour and sodium bicarbonate. Color differences were higher with increasing wheat flour, corn starch, and/or alum and decreasing water. Cutting forces were linearly increased with increasing sodium bicarbonate. From these results, it is possible to monitor the effects of ingredients on physical properties of tangsuyuk batter, and to predict their optimal ratios.

Effect of Several Carbohydrate Sources on Lipid Metabolism in Cholesterol Fed Rats (탄수화물급원의 차이가 흰쥐 체내 지질함량에 미치는 영향)

  • The effects of several carbohydrate sources on plasma, liver and fecal lipid contents of rats fed diet containing sucrose, corn starch, brown rice, milled rice or wheat flour with 0.3% cholesterol for four weeks were investigated. Plasma triglyceride and total cholestrol increased significntly in sucrose group, and decreased significantly in milled rice group compared to other three groups. There were no significant differences in plasma lipid contents among corn starch, brown rice and wheat flour groups. The contents of liver triglyceride and cholesterol in brown rice group decreased significantly compared to there four groups. Fecal excretion of total cholesterol in rice and wheat flour groups was significantly higher than in sucrose and corn starch groups. The contents of fecal bile acid increased significantly in milled rice and brown rice groups compared to other three groups. Fecal bile acid content of wheat flour group was similar to those of sucrose and corn starch group. From these results, it is suggested that rice has a possibility of hypolipidemic effect in cholesterol fed rat.

Development of Substrates for the Production of Basidiocarps of Flammulina velutipes (팽나무버섯 자실체 생산을 위한 기질개발)

  • Agricultural and forest wastes were tested as substrate for the production of Flammulina velutipes. Among the meranti, pine tree, mixed sawdust, coffee waste and peanut hull tested, coffee waste was the best basal substrate for the production of basidiocarps. When various supplements, such as ricebran, brewer's grain, defatted corn flour, defatted soybean flour and defatted rapeseed flour were tested, defatted corn flour was chosen for the production of basidiocarps. Maximum yield of basidiocarps(129.38 g/bottle) was obtained from the mixed medium at 4 : 1 ratio of coffee waste and defatted corn flour.
