고수의 향미성분에 관한 연구 (A Study on the flavor constituents of the Coriander(Coriandrum sativum L))

  • This study was carried out to investigate to proximate compositions, free sugars, organic acids, amino acids, and volatiles from the fresh leaf, root and seed of coriander. The research results are as follows: Moisture was 79.93% in the leaf, 81.89% in the root. Crude protein, crude lipid and crude ash were the highest in the seed. Ascorbic acid was 65.4mg% in the leaf and 37.83mg% in the root. Glucose, fructose and sucrose were the major free sugars. Glucose was 7.92mg% and fructose 7.51mg% in the leaf. Sucrose was 17.34mg% in the root, highest level. Among organic acids, malic acid was 354.55mg% in the leaf, the highest level. The content rate of organic acids was high in the order of leaf, seed and root. The content rate of total amino acid was high in the order of seed, root and leaf. Glutamic acid and aspartic acid were high in the leaf and root. Glutamic acid and proline were high in the seed. The content rate of free amino acid is the same as that of total amino acid. Glutamic acid and serine were high in the leaf and seed. Glutamic acid and treonine were high in the root. The contents of total amino acid in each parts of the coriander was higher than that of free amino acid, The composition of amino acid in the total amino acid and free amino acid was different. The volatile constituents were extracted by steam distillation method and analyzed by GC-Mass. The content of the volatile constituents was 45.31mg% in the leaf, (E)-2-decenal was the highest, followed by decanal, 2-dodecenal, (E)-2-decen-1-ol in order, aldehyde and alcohol was major constituents. The content of the volatile constituents was 36.01mg% in the root and 54.37mg% in the seed. linalool was the highest in the root and seed. it was 22.27 %, 53.67% in root and seed.

고수의 가열처리에 따른 향미 성분의 변화 (Variation of flavor components of Coriandrum sativum L. by blanching)

  • The present study investigated free sugar, organic acid, volatile components in fresh leaf and root of the coriander respectively, and in blanched leaf and root of the coriander, respectively. The research results are as follows : Glucose, fructose and sucrose were detected in leaf and root of the coriander. The content of total free sugar was 22.91mg% in leaf and 23.84mg% in root. By blanching, the contents of total free sugar decreased to 21.28mg% and 21.89mg% in leaf and root respectively. Malic acid, trataric acid were detected in leaf and root of the coriander. The content of total organic acid in leaf was higher than that in root of the coriander. By blanching, the content of total organic acid significantly decreased in leaf and slightly decreased in root. A total of 98 flavor components were detected in the leaf of coriander and total contents of those were 878.485mg/kg. The major components were (E)-2-Decen-1-ol, (E)-2-Decenal, and (E)-2-Tetradecenal. And a large amount of aldehydes and alcohols were shown in the leaf of coriander. By blanching, a total of 75 flavor components were detected in the leaf of coriander and total contents of those were 846.49mg/kg. The major components were (E)-2-decenal, (E)-2-Tetradecenal, decanal. The amounts of aldehydes were increased more. However, the amounts of alcohols were decreased more than those of the fresh leaf, respectively. A total of 77 flavor components were detected in the root of coriander and total contents of those were 455.064mg/kg. The major components were (E)-2-Tetradecenal, (E)-2-Decenal, and (E)-2-Dodecenal. By blanching, the kinds and the contents of the flavor components decreased and the major components is the same of the fresh root. And the contents of aldehydes and alcohols, acids decreased. However, the contents of esters and ketons increased.

  • Coriander(Coriandrum sativum L.) belongs to the family Umbelliferae/Apiaceae. It is cultivated as a spice and medicinal herb around the world, including its leaves and seeds. Coriander leaves have soft and fragrant, so they can be used in cuisines such as China, Mexico, and, Southeast Asia. Coriander leaves contain a high amount of vitamin C, carotene, and multiple polyphenols. Coriander essential oils and extracts have various chemical components and are known to have antioxidant, antibacterial, and antifungal activities. This study was carried out for resource discovery, propagation, and DB construction of aromatic plants. In order to evaluate the genetic characteristics, 30 kinds of Coriander seeds were supplied from the Center for Genetic Resources. The evaluation of characteristics of the basal part leaf number, leaf shape, and plant height was investigated. Also, Essential oils extract from various parts of plants including the leaves, flowers, and steam isolated by simultaneous distillation extraction(SDE) apparatus. In the results, heights showed growing to 70 cm over and basal part leaf number 0 to7. The leaves are variable, they are measured according to leaves incisions, and most of the included incision. The qualitative analysis of EOs was performed using gas chromatography-mass spectrometry. EOs had various chemical compositions. Major compounds were trans-2-Decenal, linalool, decanal, 2-Dodecenal, 13-Tetradecanal, 2-Undecenal.

러시아산 고수종자에서 추출한 정유성분 및 구성성분의 쌀바구미 및 어리쌀바구미에 대한 살충효과 (Insecticidal activities of Russia coriander oils and these constituents against Sitophilus oryzae and Sitophilus zeamais)

  • 쌀바구미 및 어리쌀바구미에 대한 고수 종자에서 추출한 정유의 살충활성을 비교하기 위하여 3가지 추출법(수증기증류, 용매 및 초임계 추출법)을 통해 정유를 추출하였다. 용매 및 초임계 추출법으로 추출한 정유는 쌀바구미 및 어리쌀바구미에 대해 살충효과를 나타내지 않은 반면에 수증기증류 추출법으로 추출한 정유는 쌀바구미 및 어리쌀바구미에 대하여 살충효과를 나타내었다. 고수종자의 수증기증류 추출법으로 추출한 정유를 GC-MS를 통해 분석한 결과 linalool (59.92%)이 가장 많은 함량을 나타내었으며, 그 다음으로 camphor (7.94%), linalool oxide (7.70%), p-cymene (7.44%), ${\alpha}-pinene$ (6.44%), limonene (3.29%), geranyl acetate (3.19%)의 순으로 함량 차이를 나타내었다. 이들 중 camphor와 linalool은 쌀바구미 및 어리쌀바구미에 대해 가장 우수한 살충활성을 나타내었으며, 나머지 성분들은 살충활성을 나타내지 않았다. 본 연구결과는 고수종자의 수증기증류 추출법에 의한 정유와 구성성분인 camphor 및 linalool이 저곡해충에 대한 살충제로서의 잠재력을 지니고 있는 것을 보여준다.

비듬균(Malassezia furfur)에 대한 식물 오일들의 항균활성 및 활성오일의 성분 분석 (Chemical Composition and Antifungal Activity of Plant Essential Oils against Malassezia furfur)

  • 비듬균(Malassezia furfur) 는 두피 질환을 일으키는 중요한 요소로써 오늘날 이러한 균들을 치료하는 치료제는 거의 없다. 몇몇의 전의 연구에서 오일들의 다양한 생물학적 활성이 보고되어졌지만 그것들의 항비듬균 활성은 거의 연구되지 않았고, 특히 Malassezia furfur에 대한 저해 활성은 보고되어 있지 않다. 따라서, 이 연구에서는 Malassezia furfur에 대한 식물 오일들의 저해활성을 평가하고, 이러한 오일 중에서 가장 활성이 좋은 오일을 가스 크로마토그래피(Gas chromatography-mass spectrometry)에 의해 성분을 분석하였다. 1차적으로 108개 오일의 스크리닝 과정에서 17개 오일[Allium sativum L., Carum carvi L., Coriandrum sativum L., Myroxylon balsamum var. pereirae Royle, Nepeta cataria L., Origanum vulgare L., Mentha pulegium L., Satureja hortensis L., Thymus vulgaris L. Thymus vulgaris L., Cinnamomum zeylanicum Blume, Pimenta dioica(L.) Merr., Eugenia caryophyllata Thumb.(Clove bud), Eugenia caryophyllata Thumb.(Clove leaf), Cymbopogon nardus L., Cymbopogon martinii Stapf., Citrus aurantifolia Swing. and Pimenta racemosa(Mill.) J.W.Moore] 이 2 mg/mL 의 농도에서 대조구인 이크라코나졸(itraconazole)과 비슷한 활성을 나타내었다. 이러한 17개 오일 중에서 Citrus auranifolia 오일이 가장 활성이 좋았으며, 처리농도 (1.5 mg/mL, 1.0 mg/mL, 0.5 mg/mL와 0.1 mg/mL) 에 따라 활성이 감소하는 경향을 보였다. 또한 Citrus auranifoli 오일의 가스크로마토그래피(GC-MS) 성분분석 결과 limonene, ${\gamma}$-terpinene and terpinolene의 함유율이 높은 것으로 나타났다. 그러므로 Citrus auranifolia 오일은 곰팡이 유래 질병들을 치료하기 위한 활성성분을 함유하고 있는 것으로 보인다.

미나리과 산채의 육가공품에 대한 저장성 및 관능특성 - 참당귀.돌미나리.고수 - (Storage and Sensory Characteristics of Pork Meat Products added Umbelliferaeceae Wild Plants -Angelica gigas Nakai, Ostericum sieboldii Nakai and Coriandrum sativum Linnaeus-)

  • Water activity of sausage added Umbelliferaeceae wild plants powder was decreased as storage time was prolonged and all samples were lower than those of the control. During the storage period, pH values of all samples were decreased. Cooking loss and storage loss was decreased as storage time was prolonged and showed differential from added sample. L, a, b values had a tendency to decrease, during the storage period. As the percentage of the wild plants powder in sausage, L, a values were decreased and b value was increased. Total plate counts of bacteria were increased as storage time was prolonged and wild plants powder added sausages were lower than control. Coriander 3.0% added sausage was the lowest total plate counts of bacteria, 1.3$\times$10$^{6}$ at four week'storage. As the percentage of wild plants powder in sausage was increased, total plate counts of bacteria decreased. Springiness, cohesiveness, chewiness, gumminess and hardness value of all sample were increased or decreased as storage time was longer. But they did not showed greatest various with storage time as well as additives. The sensory score of wild plants powder 0.5% added sausage were the highest, but wild plants powder 3.0% added sausage were the lowest. All the sensory score of coriander added sausage were high. The sensory score of all sample were decreased as storage time was prolonged. In wild plants powder 3.0% added sausage, the relationship between color, flavor, chewiness, wetness, taste and overall of sensory evaluation and all item of the textural characteristic showed huh correlation score. When storaging sausage for two weeks, the correlation of relationship between hardness of sensory evaluation and chewiness of textural characteristic was high.

Antimicrobial Activity of Medicinal Plants Against Bacillus subtilis Spore

  • Bacterial endospores, especially those of Bacillus and Clostridium genera, are the target of sterilization in various foods. We used Bacillus subtilis ATCC 6633 spores to screen novel antimicrobial substances against spores from medicinal plants. We collected 79 types of plant samples, comprising 42 types of herbs and spices and 37 types of medicinal plants used in traditional medicine in Korea and China. At a concentration of 1%(w/v), only 14 of the ethanol extracts exhibited antimicrobial activity against B. subtilis spores of at least 90%. Crude extracts of Torilis japonica, Gardenia jasminoides, Plantago asiatica, Fritllaria, and Arctium lappa showed particularly high sporicidal activities, reducing the spore count by about 99%. Consideration of several factors, including antimicrobial activity, extraction yields, and costs of raw materials, resulted in the selection of T. japonica, G. jasminoides, A. lappa, and Coriandrum sativum for the final screening of novel antimicrobial substances. Verification tests repeated 10 times over a 4-month period showed that the ethanol extract of T. japonica fruit reduced aerobic plate counts of B. subtilis spores the most, from $10^7$ to $10^4\;CFU/mL$ (99.9%) and with a standard deviation of 0.21%, indicating that this fruit is the most suitable for developing a novel antimicrobial substance for inactivating B. subtilis spores.
