한식과 양식의 조리방법(cooking method)에 관한 연구 (The study of differences korean food and western food cooking style)

  • All the food including Korean food is made by boiling preparing raw materials food. and to know how to cook correctly is the basis to cook delicious food. For mankind, finding out fire was the source of enormous change in the development of food culture. I have investigated the difference in cooking Korean style & Western style, by using fire, and known that there is a little difference between two methods except for cooking method by food. Preferably there is a wide difference by combinations of raw materials and cooking method.

가열조리방법에 따른 돼지고기 목심의 이화학적 특성 변화 (Physicochemical Changes in Pork Boston Butts by Different Cooking Methods)

  • 돼지고기 목심을 섭취할 때에 동물성 지방과 콜레스테롤의 섭취를 줄일 수 있는 효과적인 가열조리방법을 제시하기 위하여 돼지고기 목심을 삶기, 찌기, 굽기 및 튀기기의 방법으로 가열조리한 후, 이화학적 특성의 변화를 조사하였다. 가열조리에 따른 가열감량, 탈수량, 탈유량 및 탈콜레스테롤양은 튀기기 처리구에서 가장 많았다. 시료의 pH는 가열 조리에 의하여 증가하였고, 시료로부터 추출한 지질의 굴절율은 튀기기 처리구에서 가장 많이 증가하였다. 시료의 경도, 점착성, 저작성은 튀기기에 의하여 가장 많이 증가하였고, 탄력성은 가열조리에 의하여 거의 변화되지 않았으며, 응집성은 가열조리에 의하여 증가하였다. CIE $L^{\ast}$값은 가열조리에 의하여 증가하였는데 찌기 처리구에서 가장 많이 증가하였고, CIE $a^{\ast}$값은 가열조리에 의하여 감소하였는데 삶기와 찌기 처리구에서 크게 감소하였으며, CIE $b^{\ast}$값은 삶기와 찌기 처리구에서는 약간 감소하였지만, 굽기와 튀기기 처리구에서는 약간 증가하였다. 가열조리 방법에 따른 시료의 지방산 조성은 튀기기 처리구를 제외하고는 거의 변화가 없었다. 그러므로 돼지고기 목심을 섭취할 때, 튀기기 방법이 동물성 지방이나 콜레스테롤의 섭취를 줄이는데 효과적이라고 생각되었으나 기호적인 가치 등을 고려한 더 많은 연구가 필요하다고 생각한다.

Exploring the impact of various cooking techniques on the physicochemical and quality characteristics of camel meat product

  • Objective: The objective of this study was to evaluate the effects of four different cooking techniques viz: boiling, grilling, microwave, and frying; on the physicochemical characteristics of camel meat. Methods: Protein composition and their degradation as well as biochemical and textural changes of camel meat as influenced by cooking methods were investigated. Results: The highest cooking loss (52.61%) was reported in microwaved samples while grilled samples showed the lowest cooking loss (44.98%). The microwaved samples showed the highest levels of lipid oxidation as measured by thiobarbituric acid reactive substances, while boiled samples showed the lowest levels (4.5 mg/kg). Protein solubility, total collagen, and soluble collagen content were highest in boiled samples. Boiled camel meat had lower hardness values compared to the other treated samples. Consequently, boiling was the more suitable cooking technique for producing camel meat with a reduced hardness value and lower lipid oxidation level. Conclusion: The camel meat industry and camel meat consumer can benefit from this research by improving their commercial viability and making consumers aware about the effects of cooking procedures on the quality of camel meat. The results of this study will be of significance to researchers and readers who are working on the processing and quality of camel meat.

식품영양학전공 및 비전공대학생들의 식품조리에 관한 의식과 조리능력 수준에 대한 조사 (A Study on the Recognition about Food Preparation and Cooking Ability of College Students majoring in Food & Nutrition and Others)

  • The purpose of this study was to examine the recognition about food preparation and cooking ability of college students majoring in food & nutrition and others. Data were collected from 729 students residing in Chonbuk area by using a self-administered questionnaire. Food and nutrition major students got significantly higher scores than non-major. ones in the recognition of significance and interest in cooking activity. Both food and nutrition major and non-major female students recognized the necessity of cooking ability than non-major male students. Sixty eight percent of the subjects answered that they have aided often his or her family to cook at home. The students majoring in food and nutrition were interested in various fields such as Korean, western style and fusion food. Most of the respondents teamed how to cook from family at home; however major students have learned cooking not only from family but also from various channels such as culinary school, TV and books. The practical use of knowledge about food science was very low in most respondents. The cooking methods used frequently were sauteing, broiling and deep-fat-frying. This study showed that both food and nutrition major and non-major students recognized the necessity of cooking ability and had interests in cooking activity, but cooking ability of non-major ones was significantly lower than that of major students, and the traditional consciousness that women have to take charge of cooking at home tends to be decreasing.

병원입원 환자에게 실시되는 한국음식의 조리법 표준화를 위한 연구 (A Study on the standardization of Cooking Method of Korean Food for Hospital Patients)

  • In this study, author suggests menu selection according to disease and standard cooking methods for hospital patients. Nutritional state of patients must be considered to select menu. Especially age, sex, and disease symptoms are important factors to determine the nutritional requirement. Special diet should be delivered to cure the patients with different appetite, digesting ability and symptoms. Menu must be planed including various food although nutritional restrictions should be considered, In this point of view, effective cooking methods and considerations of various Korean traditional food as hospital food are suggested. Recipe of traditional Korean beverage and cookies are also presented.

냉동저장, 조리법, 재가열이 대고기의 지질 산패에 미치는 영향 (Effect of Frozen Storage, Cooking Methods and Reheating on Lipid Oxidation in Chicken Meat)

  • Effect of frozen storage(0, 15, 30, 40 days, -18$^{\circ}C$), cooking methods(frying, microwaving) and reheating on lipid oxidation in chicken meats were evaluated by measuring thiobarbituric acid value (TBA value) and by measuring fluorescence value. TBA values were increased by storage days and were higher in leg meats than breast meats. According to cooking method, TBA values were higher in frying chicken meats. The fluorescence values were also increased by storage days and were higher in breast meats than leg meats.

Factors affecting home cooking behavior of women with elementary school children applying the theory of planned behavior

  • BACKGROUND/OBJECTIVES: The objective of this study was to examine factors affecting cooking behavior at home. We examined components of the theory of planned behavior, perception of cooking skills, and socio-demographic variables affecting cooking behavior at home. SUBJECTS/METHODS: The study sample included 425 women raising elementary school children living in South Korea. They responded to an online structured questionnaire. The variables affecting cooking behavior at home were assessed using hierarchical regression analysis. RESULTS: The frequency of cooking behavior at home was 14.1 meals per week. Most respondents showed an intention regarding cooking behavior. The average score for attitude toward cooking behavior at home was 15.1 points (scale of 1 to 25). Attitude and cooking behavior showed a significant positive correlation (P < 0.01, r = 0.22). The subjective norm was 14.6 points (scale of 1 to 25). The subjective norm showed a significant correlation with cooking behavior (P < 0.01, r = 0.18). The control belief was 2.8 points (scale of 1 to 5). The control belief and cooking behavior showed a significant correlation in all questions (P < 0.01, r = 0.25). The subjects were significant confident about their cooking skills, except for Kimchi. Perception of cooking skills showed a significant correlation with all questions concerning cooking behavior (P < 0.01, r = 0.30). Significant variables for predicting intention regarding cooking behavior were perception of cooking skills, employment status, income, and attitude. Significant variables for predicting cooking behavior were employment status, income, control belief, number of children, and behavioral intention. CONCLUSIONS: In order to provide nutrition education to increase cooking behavior at home, it is necessary to have a positive attitude toward cooking behavior, increase control belief, and improve confidence related to cooking skills. Moreover, differentiated education based on the employment status of women is needed.

생물성 연소에서 발생하는 미세먼지 배출계수 개발에 관한 연구: 고기구이를 중심으로 (A Study on the Development of Particulate Matters Emission Factors from Biomass Burning: Mainly Commercial Meat Cooking)

  • In this study, PM emission factors for commercial meat cooking were developed by the experiment using the similar restaurant model. The commercial material types of meat cooking were beef, pork and duck. And meat cooking materials were classified with marinated and raw cooking methods. The marinated and raw cooking methods were flat griddle (LPG) and under fired charbroiling grill. As a results, $PM_{10}$ emission factors for underfired pork cooking was estimated as 7.39 g/kg-meat which was the highest value in this study. The emission factors of under fired charbroiling grill method were higher than that of flat griddle method regardless of meat cooking material types and marinated meat. The particle size distribution of meat cooking was 0.23~5 ${\mu}m$ and median diameter was 2~2.5 ${\mu}m$.

조리방법에 따른 고등어(Scomber japonicus) 및 전갱이(Trachurus japonicus)의 일반성분 및 지질성분의 변화 (Changes in Proximate Composition and Lipid Components in Chub Mackerel Scomber japonicus and Japanese Jack Mackerel Trachurus japonicus with Various Cooking Methods)

  • Changes in the proximate composition, lipid classes, and fatty acids were studied in chub mackerel Scomber japonicus and Japanese jack mackerel Trachurus japonicus muscles cooked using a frying pan, oven, and microwave oven. The moisture content was high in the raw samples (chub mackerel 65.5%, Japanese jack mackerel 60.5%) and decreased with cooking, especially in the frying pan method (chub mackerel 49.2%, Japanese jack mackerel 49.8%). In contrast, the protein, lipid and ash contents increased significantly with cooking in chub mackerel muscle (P<0.05). However, the lipid content of Japanese jack mackerel muscle showed no significant difference between the samples using the three cooking methods and the raw sample. The dripped lipid contents from the cooked muscles showed the highest levels in the frying pan samples and the lowest levels in the microwave oven samples. The percentage of non-polar lipid (NL) in the total lipid content was over 95% in the muscle lipids (10.43-21.86 g/100 g sample). Prominent fatty acids were 16:0, 18:1n-9, 22:6n-3 (docosahexaenoic acid, DHA), 16:1n-7 and 20:5n-3 (eicosapentaenoic acid, EPA) in both fish muscles and dripped lipids. There was no change in the EPA level in any of the fish muscles, by any cooking method. The percentage of DHA in the muscle of chub mackerel showed the lowest level in the frying pan sample and the highest level in the microwave oven and raw samples, and an intermediate level in the oven sample. However, the percentage of DHA in the Japanese jack mackerel muscle was not significantly different between the various cooking methods. From these results, the microwave oven and oven cooking methods showed relatively low levels of dripped lipid content and loss of n-3 PUFA compared with the frying pan cooking method.

배추의 조리방법에 따른 항산화 활성 및 카로티노이드와 토코페롤 함량 변화 (Different Cooking Methods for Korean Cabbage and Their Effect on Antioxidant Activity and Carotenoid and Tocopherol Contents)

  • Korean cabbage (Brassica campestris L.ssp.pekinensis) is one of the major cruciferous vegetables. Cruciferous vegetables contain a rare series of secondary metabolites of amino acids called glucosinolates, as well as carotenoids, tocopherol, vitamin C and fibers. This study evaluated the effect of common cooking methods (boiling, microwaving, steaming and frying) on the phytochemical content (lutein, ${\beta}$-carotene, ${\gamma}$-tocopherol, and ${\alpha}$-tocopherol), and total antioxidant capacity of Korean cabbages, determined by DPPH assay and ABTS assay. Boiling caused a decrease in carotenoids, lutein and tocopherols. Microwaving and steaming were relatively good cooking methods for maintaining lutein, ${\beta}$-carotene, ${\gamma}$-tocopherol, and ${\alpha}$-tocopherol. The overall results of this study demonstrate that some domestic cooking procedures, specifically microwave and steaming, increased the bioaccessibility of carotenoids and tocopherol, highlighting the positive role of the nutritional properties of Korean cabbage.
