Effects of Membrane-filtered Powder of Sunmul on the Quality Characteristics of Noodles (막분리한 순물의 농축분말 첨가가 국수의 품질에 미치는 영향)

  • This study was conducted to investigate the quality characteristics of noodles prepared with the addition of nanofiltered (NF) powder of sunmul. Noodles were prepared with different levels $(0\%,\;1.5\%,\;3\%\;and\;5\%,\;w/w)$ of NF powder and physico-chemical properties were examined. Results of rapid visco analyzer showed that peak, trough, final viscosity and set back decreased as the NF powder level increased. The weight and volume of cooked noodles increased with the addition of NF powder. Turbidity of soup also increased as the amount of NF powder increased, indicating higher cooking loss. The color of wet and cooked noodles became greenish yellow as the NF powder level increased. Hardness, springiness, gumminess and brittleness of cooked noodles decreased with the increasing amount of NF powder. Results of sensory evaluation showed that noodles prepared with up to $3\%$ addition of NF powder was considered to be as acceptable as noodles prepared without NF powder.

Effects of Dietary Biotite Powder on Physico-chemical Characteristics of Pork (흑운모 분말 급여 돈육의 이화학적 특성)

  • This study was carried out to analyze the physico-chemical characteristics of the loin from pigs fed biotite. Control was fed diet for piglets and growing pigs, and treatments were fed diet supplemented 1.25% and 1.75% biotite to piglet diet and to growing pigs, respectively. Ratio of carcass grade A was shown as 27.8% and 50% in control group and treatment, respectively. And that of carcass grade A and B was appeared as 52.8% in control and 80% in treatment. The control group showed higher value of water and protein content than treatment. However, fat and ash content of treatment were higher than those of control. Treatment showed lower value than control in shear force and cooking loss, and was higher than control in pH value(p<0.05). L*, a* and b* value of control in meat color were lower than those of treatments. Treatments group was shown lower value than control group in textural gumminess and brittleness. In the sensory test of fresh meat, there was no significant difference between control and treatment group. However, intramuscular fat content and overall acceptability of control were more or less lower than its of treatment. In cooked meat, the meat color of control was lower than those of treatments. Control group was shown higher saturated fatty acid value than treatment group. However, the poly unsaturated fatty acid, essential fatty acid, and the ratio of unsaturated fatty acid/saturated fatty acid and essential fatty acid/saturated fatty acid were low.

Study on Comparison of Growth Performance, Feed Efficiency and Carcass Characteristics for Holstein and F1(Holstein ♀ x Hanwoo ♂) Steers and Heifers (Holstein과 교잡종 거세우 및 처녀우의 성장발육, 사료이용성 및 도체특성 비교 연구)

  • Present study was conducted to investigate the optimal feeding levels for producing the high quality meat on the basis of the information deriving from the comparison of the growth performance and carcass characteristics among breeds(Holstein vs F1, Holstein♀×Hanwoo♂), sex(steer vs heifer) and interaction between breed and sex. Thirty two animals on 4 treatments(i.e. eight head each) were used for 540 days from seven to 24 months of age. The results obtained are summarized as follows; the range of average daily gains was 0.733 to 1.018, 0.994 to 1.255, 0.947 to 1.259 and 0.736 to 0.824kg for the growing, the early-fattening, the mid- fattening and the finishing periods, respectively. The range of average daily gains for the entire period was 0.882 to 1.061kg. The gains were higher for Holstein(7.3%) and the steers(10.5%) than F1 and the heifers, respectively. Concentrates and total digestible nutrients intakes per kg gain were higher for Holstein and the heifers than F1 and the steers, respectively. These findings may indicate that feed utilization is higher for Holstein than F1, and higher for the steers than the heifers. In carcass characteristics, back fat thickness was thicker for Holstein than F1, and rib-eye area was smaller for Holstein than F1. The rib-eye area per kg carcass weight was larger for F1 and the heifers than Holstein and the steers, respectively. Meat color was better for Holstein than F1, but the sex distinction did not show any differences. In physicochemical properties of longissimus dorsi, shear force, cooking loss, water holding capacity and the panel test scores of juiciness, tenderness and flavor for F1 and the heifers were better than those for Holstein and the steers, respectively. According to the above results, we may conclude that F1 and heifers rather than Holstein and steers are recommended for high quality meat production. In steers and heifers of Holstein and F1, the optimal feeding levels may be 1.9% of apparent body weight for concentrates and 25% of concentrates intake for rice straw.

Effects of Immunocastration on Physiological Changes, the Characteristics of Carcass and Meat Quality in Boars (면역거세가 수퇘지의 생리적 변화, 도체 및 육질 특성의 차이에 미치는 영향)

  • This study was undertaken to investigate the effects of the immunocastration on the growth performance, the characteristics of carcass and meat quality in boar. Total 45 piglets(Landrace×Yorkshire) were prepared from the birth and were fed the experimental diet by the time to be slaughtered at around 110 kg of body weight. The experimental groups consisted of five piglets per pen with 3 replicates in three treatment groups, non castrated(NC), surgically castrated(SC), and GnRH antagonist(GA). In SC group, all piglets aged 3-4 days after birth were castrated by the surgical method. For the immunocastration, 2ml of GnRH antagonist(Improvac, Pfizer, Australia) were subcutaneously injected into piglets twice on the 16th and 20th week after the beginning of the trial in the GA group. The immunocastration did not make any significant influences on the growth performance, as compared with the other treatments. The different castration method used in either GA or SC group pigs had similar effects on the dressing percentage and body fat content as carcass parameters. In respect of a meat quality, the meat color, pH, shearing force and cooking loss were not significantly different in all treatment groups. Testosterone concentration in serum was shown to be similar between GA and SC group at 2 weeks after the 2nd injection of GnRH antagonist. The weight of bulbourethral gland and the radius and weight of testis were significantly smaller in GA than in NC(P=0.002). All together, this study suggested that the castration by immunocastration can be an alternative method for the surgical castration without any changes in growth performance, the characteristics of carcass and meat quality shown in surgical castration group.

Effect of Dietary Brown Rice on the Carcass and Meat Quality of Broiler Chicken (현미 급여가 육계의 도체 및 육질 특성에 미치는 영향)

  • The objective of this study was to evaluate the carcass and meat quality of broiler chicken when slaughtered after treating with different source of grain(T1, 100% corn; T2, 50% corn + 50% brown rice; T3, 100% brown rice) in broiler diet. The carcass weight was decreased when feeding level of rice increased. The yield of breast was higher in T2(18.6%) than T1(17.3%) and T3(l7.9%). The L values(L *) and b values(b*) in meat color were decreased as the feeding level of rice increased when compared to T1(P < 0.05). Warner-Bratzler shear force(WBS) values were higher in T2 and T3 compared to T1. Cooking loss(%) was increased for T2(23.49%) and T3(24.50%) compared to T1(22.90%). In fatty acid composition, linoleic acid(C18:2, n6) contents were significantly lower in T2(31.89%) and T3(27.89%) when compared to TI(33.21%)(P < 0.05), and the total contents of unsaturated fatty acids(UFA) were 76.85%(T1), 77.22%(T2), or 75.49%(T3). The ratio of n6/n3 was decreased as the level of rice increased in the feed(T1 19.89%, T2 17.73%, and T3 17.01%). In conclusion, the meat quality was not significantly different between T1 and T2 from the results of carcass weight, meat color, WBS, and fatty acid composition; therefore, brown rice can be substituted for 50% of corn in the broiler diets.

Feeding Effect of Whole Crop Rice based TMR on Meat Quality of Hanwoo Steers (사료용 벼 위주 TMR 급여가 거세 한우의 육질 특성에 미치는 영향)

  • This study was conducted to investigate the effect of whole crop rice based TMR on the meat quality of Korean Native Cattle (Hanwoo). Sixteen Hanwoo steers (average 8 months old) were divided into the control group (commercially marketed TMR) and the WCR-TMR group (whole crop rice based TMR). Feeding trials were carried out up to 30 months of age, and after slaughter, the strip loin were collected and analyzed for meat quality. There were no significant differences in proximate compositions of Hanwoo (P>0.05), and crude protein, crude fat and crude ash were 19.51~20.23 %, 11.53~11.35 % and 1.10~1.12 %, respectively. There was no significant difference in water holding capacity and cooking loss between treatments (P>0.05), but it was slightly lower in the control group. Among the various functional components in meat, β-carotene was not detected, but α-tocopherol was significantly higher in WCR-TMR group and vitamin A content in control (P<0.05). The a-value in the meat color index decreased significantly with longer storage period in the control group, whereas the WCR-TMR fed group showed no significant difference (P>0.05) according to the storage period. There were no difference between the treatments in the TBARS (2-Thiobarbituric acid reactive substances) value used as an indicator of lipid oxidation and in fatty acid content. But the control group had high myristic acid content, whereas the WCR-TMR supplemented group showed higher oleic acid and linoleic acid content. In conclusion, feeding of WCR based-TMR increased the α-tocopherol content, which is a functional ingredient in meat, and the other components were not significantly different from the control. Therefore, it was judged that there was no significant difference between WCR based and conventional TMR in meat quality characteristics.

Effect of Feeding Probiotics on Quality Properties of Pork (생균제 급여가 돈육의 품질 특성에 미치는 영향)

  • A total of 120 pigs were used to investigate the effect of feeding probiotics on quality properties of pork. About 6 kg pigs were randomly alloted into one or three experimental diet groups (C: commercial diet feed; T1: 0.1% KBC1121 feed; T2: 0.1% YC2000+0.1% KBC1121 feed). Pigs were slaughtered at approximately 110 kg live weight and chemical composition and physico-chemical characteristics were measured in pork loin. Moisture, crude protein and crude ash were not differences among the treatments. However, crude fat content of T2 was significantly higher than that of other treatments. All of dietary probiotic groups showed significantly higher pH than control. WHC was significantly higher in T1 than other treatments. Cooking loss, shear force value and cholesterol content were not differences among the treatments. In meat color, $L^*$ value was not difference among the treatments, but $a^*\;and\;b^*$ value were lower in T1 than other treatments. In textrure properties of cooked meat, brittleness, hardness, gumminess and chewiness value were significantly higher in T1 than other treatments. Sensory evaluation was not difference among the treatments. The myristic, stearic and oleic acid content of T2 were significantly higher than those of other treatments. Whereas linoleic acid was significantly lower than other treatments. Unsaturated fatty acid (UFA) was significantly higher in T1 than T2. Essential fatty acid (EFA) and EFA/UFA were higher in the order of T1 > C > T2. In amino acid composition, total and essential amino acid, aspartic acid, threonine, serine, glutamic acid, valine, isoleucine, leucine and lysine level were lower in T2 than other treatments.

Effects of Dietary Silkworm Droppings on Quality Characteristics of Pork Loin (잠분(蠶糞) 급여가 돈육의 품질 특성에 미치는 영향)

  • This study investigated the effects of silkworm droppings (SWD) added diet feeding on quality characteristics of pork loin meat Pigs were divided into 7 treatment groups (10 pigs/group) and subjected to one of seven treatment diets $(0,\;1\%,\;2\%\;and\; 3\%\;SWD\;for\;4 weeks,\;1\%\;2\%\;3\%$ SWD for 8 weeks, SWD diets; total fed diets) before slaughter. Pork loin were collected from the animals (110kg body weight) slaughtered at a commercial slaughterhouse. Pork loin meat were packaged aerobically and then stored at $4^{\circ}C$ for 2, 5, 8, or 12 days. Samples were analyzed for general composition, texture characteristics and physico-chemical properties. pH value was not significantly different between the control and SWD treatment groups. pH of control and SWD treatment groups were increased as the storage period passed General composition, cooking loss and texture was not significantly different between the control and SWD treatment groups. WHC of SWD treatment group was higher than that of control group. WHC of control and SWD treatment groups were significantly decreased as the storage period passed (p<0.05). Meat and fat color (CIE $L^{\ast}$, $a^{\ast}$, $b^{\ast}$) were no significant differences between the control and SWD treatment groups. $L^{\ast}$ and $b^{\ast}$ value of meat color were decreased as the storage period passed There was a not significantly difference in shear force value among control and SWD treatment groups. Shear force value was decreased significantly during storage in all treatment groups. In all results, dietary SWD-supplementation was not affected in general components, texture characteristics and physico-chemical properties. It is suggested that dietary SWD-supplementation could produce of high quality pork.

Physicochemical Properties and Tenderness of Hanwoo Loin and Round as affected by Raising Period and Marbling Score (사육기간과 등심의 근내지방도가 거세한우 등심 및 우둔의 이화학적 성상 및 연도에 미치는 영향)

  • This study was performed to investigate the physicochemical properties and tenderness of Hanwoo loin and round cuts, as affected by various raising periods and marbling scores. Five loin and round cuts with various marbling scores (5-9) from Hanwoo at various raising periods (27, 33, 30 mon) were collected. pH, Hunter color values (L, a, b), chemical composition, cooking loss, vacuum purge, and Warner-Bratzler shear values were evaluated according to two-way analysis of variance. No differences in pH values of Hanwoo loin were observed by raising period and marbling scores (p>0.05), but those of Hanwoo round at 27 mon was the lowest. Increased Hunter color values were observed with the increased marbling score and those at 27 and 30 mon were lower than 33 mon. Redness (a) and yellowness (b) of Hanwoo round cuts with the raising period of 27 mon were higher than those at 30 and 33 mon. The raising period of 27 mon showed higher water holding capacity than those of 30 and 33 mon, regardless of Hanwoo cut. Increased shear values (kgf) of Hanwoo round cuts were observed with increasing raising period (p<0.05). Increased marbling score decreased shear values in loin cuts, but no differences were observed in the round cuts. Based on these results, the parameters measured varied with meat cut, and raising period affected round pH, color, chemical composition, vacuum purge, and shear values. Marbling score affected color, chemical composition, water binding capacity, and shear values in loin cuts (p<0.05), but didn't affect any parameters in round cuts (p>0.05).

Effect of Age on Chemical Composition and Meat Quality for Loin and Top Round of Hanwoo Cow Beef (한우암소고기의 연령이 등심 및 우둔부위 일반성분 및 육질에 미치는 영향)

  • This study investigated the chemical composition, meat quality and volatile flavor compounds in loin and top round of Hanwoo beef (n=126) depending on different age groups (G1, <5; G2, 6-8; G3, >9 years old). The intramuscular fat content (%) was higher for loin and top round of G1 (p<0.05) than that in the other groups. There was no difference in age groups for the top round; however, the loin of G1 had lower protein content (p>0.05). Total collagen content was lower in the top round of G3 (p<0.05). The loin and top round muscles of G1 had higher $a^*$ values and lower Warner Bratzler shear force values than that in the other age groups (p<0.05). The loin muscles of G1 were lower in percentage of cooking loss and higher in the water holding capacity than the loin in the other groups (p<0.05). The loin of G1 had lower total content of saturated fatty acids, whereas the top round of G1 had higher total content of monounsaturated fatty acids and lower total content of polyunsaturated fatty acids than that in the other age groups (p<0.05). Alanine was the highest free amino acid in the loin of Hanwoo beef, followed by glutamine, glycine, isoleucine and proline. The loin of G1 had higher contents of threonine, alanine, valine, methionine, phenylalanine, leucine and lysine than those in the other groups (p<0.05). The loin of G3 contained higher 3-methylbutanal, furfural, octanal, 1-(acetyloxy)-2-propanone, 1-octanol, 2,5-dimethylpyrazine and 2-ethyl-2,5-dimethylpyrazine in volatile flavor components than the loin in G1(p<0.05).
