Eating Quality Traits of Hanwoo longissimus dorsi Muscle as a Function of End-Point Cooking Temperature

  • Interaction between carcass quality grade and end-point cooking temperature on eating quality of Hanwoo m. longissimus was investigated. Ten (10) of steers were sampled from a commercial population; carcasses with QG 1++ (n=5) and QG 1 (n=5) were chosen. Samples were cooked by electric oven at 60 or 82℃ and compared with uncooked control samples. The pH was not affected by cooking temperature but decreased the redness after cooking and steaks cooked at 60℃ were more reddish than steaks cooked at 82℃ in both QG groups. Higher cooking temperature greatly (p<0.05) increased the cooking loss, but there was no significant interaction between cooking temperature and QG on the cooking loss. Moisture is negatively correlated with temperature in both QG while the proportionate relationship between crude fat and end-point temperature found in QG 1++. WBSF values were significantly (p<0.05) high for QG 1, while that was significantly (p<0.05) increased when the temperature continues to increase. The increasing quality grade of beef resulted in significant higher (p<0.01) level of TBARS and cooking temperature increased TBARS content. Fatty acid composition was not altered by cooking at both temperatures and also the amount of fat intake was not changed. The current study indicates that eating quality of beef m. longissimus was greatly influenced by end-point temperature being interacted with QG. However, the amount and composition of fat were stable regardless of end-point temperatures. These results will provide a consumer reference to determine cooking conditions and intramuscular fat content.

한우의 이화학적, 관능적 특성을 통한 신선도와 맛의 품질 인자 설정 (Quality Factors of Freshness and Palatability of Hanwoo from their Physicochemical and Sensorial Properties)

  • 본 연구에서는 $1^+$ 등급 한우육의 신선도와 맛에 관련된 품질인자를 도출해내기 위하여 $0^{\circ}C$$10^{\circ}C$에 저장하여 저장기간별로 drip loss, cooking loss, VBN, TBARS, 총균수와 같은 이화학적 특성과 관능적 특성을 평가하였다. Drip loss와 cooking loss, VBN 및 TBARS의 경우 저장기간이 증가함에 따라 증가하였으며 저장온도가 높을수록 관능적 신선도와의 상관계수도 크게 증가하였다. Cooking loss의 경우 신선도에 있어서 저장온도 증가에 따라 상관계수가 크게 증가하여 영향을 많이 받았으며, 총균수는 $0^{\circ}C$보다 $10^{\circ}C$에서 상관계수가 감소하였다. 반면 맛에 대한 기호도에 대해서는 drip loss와 TBARS값이 $10^{\circ}C$에서 상관성이 높았으며 VBN 함량과 cooking loss 및 총균수는 $10^{\circ}C$에서 상관성이 낮아 온도 증가에 따른 영향을 상대적으로 적게 받는 것으로 나타났다. 이상의 품질 측정치를 종합하여 쇠고기의 신선도와 맛에 대한 5가지의 이화학적 특성과의 관계를 알아보고자 다중회귀분석 중 단계적 회귀분석을 한 결과, 쇠고기의 신선도에 대해서는 drip loss의 하나의 인자만으로도 $R^2=0.87$의 매우 높은 선형을 가지는 $Y_1=10.768-0.706X_1$(drip loss)의 선형 회귀식이 산출되었으며 전체 모형의 87%를 설명하였다. 반면, 저장기간에 따른 쇠고기 맛의 예측모델은 $R^2=0.95$의 매우 높은 선형을 가지는 $Y_2=9.702-0.438X_1(drip\;loss)-0.232X_5(TVC)$의 선형 회귀식이 산출되었으며 drip loss와 총균수의 두 인자로 이들 품질인자를 통한 쇠고기의 기호도의 계량적 해석이 가능하였다.

Application of an Electric Field Refrigeration System on Pork Loin during Dry Aging

  • This study aimed to investigate the effect of an electric field refrigeration (EFR) on the quality characteristics of pork loin including dry aging loss, pH, water holding capacity (WHC), cooking loss, color, shear force, thiobarbituric acid reactive substances (TBARS), and microbial growth during dry aging (0, 1, 2, 3, 4, 7, and 9 wk) in comparison with a commercial refrigerator (CR). Total plate counts (TPC) of the CR group approached 8.07 Log CFU/g at 2 wk of dry aging, thus indicating meat spoilage. Cooking loss, lightness, and shear force of EFR were significantly decreased (p<0.05) at subsequent aging weeks in both the EFR and CR. Aging loss, TPC, TBARS levels increased at subsequent aging weeks; however, pH values were not influenced by aging. At the same aging weeks (1 or 2 wk), the EFR group displayed significantly lower values (p<0.05) of aging loss, pH, TPC, and TBARS levels than the CR group. No significant differences in WHC, cooking loss, and shear force was observed until 2 wk of aging between the EFR and CR groups. The present results show that application of the EFR system improves the tenderness, color, and lipid oxidation stability of pork loin and extends its shelf life in comparison with a commercial refrigeration.

과열증기 처리조건에 따른 닭 가슴살의 물리·화학적 및 관능 특성 (The Effect of Superheated Steam Cooking Condition on Physico-Chemical and Sensory Characteristics of Chicken Breast Fillets)

  • 본 연구는 여러 가지 과열증기 처리 조건이 닭 가슴살의 물리화학적 품질 특성과 관능에 미치는 영향을 분석하고, 이를 바탕으로 과열증기를 이용한 닭 가슴살의 최적의 조리 조건을 설정해 보고자 하였다. 일반적으로 많이 사용하는 전기 오븐 구이와 비교했을 때 과열증기 처리군 중 스팀 온도 $330^{\circ}C$에서 8분과 $350^{\circ}C$에서 6분 처리한 군에서 중량 손실률이 적고, 적절한 수분 함량을 나타냈으며, 질감에 있어 경도, 깨짐성은 낮고 탄력성이 높게 나타났고, 관능평가에서도 모든 항목에서 기호도가 높게 평가되었다. 따라서 닭 가슴살 조리에 과열증기 기술을 적용할 경우 일반적인 전기 오븐 구이와 비교했을 때 조리시간을 단축하고 품질과 기호도가 우수한 제품을 생산할 수 있을 것으로 사료된다.

조리방법에 따른 쇠고기 안심스테이크의 이화학적 변화 (Changes of Physico-Chemical Properties of Beef Tenderloin Steak by Cooking Methods)

  • 본 실험은 조리방법(Grilling, Pan-frying, Oven-roasting, Microwaving)에 따른 쇠고기 안심 스테이크의 이·화학적 변화를 조사하기 위하여 일반성분, pH, 근원섬유 소편화지수, 색도, 가열감량, 물성(Rheology) 및 관능검사(Panel test)를 실시하였다. 조리방법에 따른 일반 성분은 microwaving 방법에서 다른 조리방법에 비하여 낮은 수분함량과 높은 지방함량을 나타냈다. pH는 조리후 다소 상승하였으나 조리방법에 따른 pH 차이는 없었으며, 육색의 변화에 있어서 L*과 b* -값은 microwaving과 pan-frying방법에서 grilling이나 oven-roasting 방법에서 가장 낮게 나타났다. 조리방법에 따른 근원섬유 소편화도는 oven-roasting 방법에서 가장 높게 나타났으나 조리방법간의 유의적인 차이는 없었다. 가열감량은 microwaving 방법에 의한 조리육에서 가장 많았다. 조리육이 물성에 있어서 경도와 부서짐성은 다른 조리방법에 비하여 microwave oven을 이용한 조리방법에서 높게 나타났으며, 응집성은 microwaving 방법에서 가장 낮은 값을 나타냈다. 그러나 탄력성은 모든 조리방법들간에 유의적인 차이가 없는 것으로 나타났다. 관능검사에 있어서 grilling, pan-frying과 oven-roasting 방법은 우수한 것으로 평가되었으며, microwaving은 전 항목에서 가장 낮은 점수를 얻었다.

INFLUENCE OF SLAUGHTER WEIGHT, SIRE, CONCENTRATE FEEDING AND MUSCLE ON THE PHYSICAL AND CHEMICAL CHARACTERISTICS IN JAPANESE BLACK BEEF

  • Seventeen Japanese Black steers were used to evaluate the influence of slaughter weight (550 kg, 600 kg or 650 kg), sire (two sires), concentrate feeding (barley or corn) and muscle (six muscles) on the following characteristics: pH value, cooking loss, shear value, moisture and crude fat contents. Crude fat contents were higher, and moisture content and shear values were lower in muscles from the large slaughter weight group 650 kg than those from other slaughter weight groups. Cooking loss, shear value, moisture and crude fat contents differed between sires. Corn feeding increased crude fat content in muscle compared to barley feeding. Muscles containing a large amount of intramuscular fat showed lower shear values and less cooking loss than those containing a small amount of intramuscular fat.

Effects of Phosphate and Two-Stage Sous-Vide Cooking on Textural Properties of the Beef Semitendinosus

  • Comparing the effects of sodium tripolyphosphate (STPP) concentrations of 0.2% and 0.4% on beef semitendinosus is the objective of the current investigation. The samples were cooked at varied temperatures (45+60℃ and 45+70℃) and times (1.5+1.5 h and 3+3 h) using staged cooking. The colour properties, cooking loss, water retention, shear force, water-holding capacity, sarcoplasmic, and myofibrillar solubility, and total collagen were investigated. The cooking time and temperature affected the water-holding capacity, cooking loss, CIE L*, CIE a*, CIE b*, myofibrillar, and sarcoplasmic solubility, with lower temperature and short time having the lower detrimental effect. However, the significant effect can be intensified after the addition of STPP with higher water-holding capacity and tender meat obtained with 0.4% phosphate concentration at any cooking conditions. The STPP lowered the collagen content and increased the protein solubility of myofibrillar and sarcoplasmic, which this degradation is used as a good indicator of tenderness.

Evaluation of Three Pork Quality Prediction Tools Across a 48 Hours Postmortem Period

  • Numerous reports have evaluated the predictive ability of carcass probes for meat quality using measurements taken early postmortem or near 24 h. The intervening time period, however, has been largely ignored. In this study, the capacity of three probes [pH, electrical conductivity (EC), and grading probe light reflectance (GP)] to predict pork longissimus muscle quality (drip and cooking losses, Warner-Bratzler shear, $L^*$, n = 30) was evaluated at 45 min, 90 min, 3, 6, 12, 24, and 48 h postmortem. The strongest relationships were observed between cooking loss and 6 h EC and GP ($R^2$ = 0.66, 0.72), and $L^*$ and GP ($R^2$ = 0.57-0.66, 12-48 h). pH was most valuable early postmortem ($R^2$ = 0.63, 90 min with cooking loss). GP at 6 h most effectively ($R^2$ = 0.84) predicted a two factor (cooking loss+$L^*$) meat quality index. Results emphasize the predictive value of measures taken between 3 and 12 h postmortem.

발아현미 첨가에 따른 국수의 제조 특성과 GABA 함량 및 항산화 활성 변화 (Quality Characteristics and Changes in GABA Content and Antioxidant Activity of Noodle Prepared with Germinated Brown Rice)

  • 발아 전과 후의 현미와 미강을 첨가한 밀가루 복합분으로 만들어진 국수의 품질 특성과 GABA 함량 및 항산화 활성의 변화를 조사하였다. 발아 전후의 현미와 미강을 각각 5, 10, 15% 첨가하여 국수를 제조하였다. 이렇게 제조된 국수는 조리 및 제면특성(cooking loss, swelling index, water holding capacity), 조리에 따른 GABA 함량과 항산화 성분(polyphenol) 및 활성(ABTS와 DPPH의 radical scavenging activities) 변화를 통해 기능성 국수로의 이용가능성을 알아보고자 하였다. 실험결과, 발아 후 rice bran의 첨가에 따른 cooking loss가 증가하는 것으로 관찰되었으며 반면에 swelling index에서는 차이를 나타내지 않았다. 발아 후 현미와 미강을 첨가한 조리 전후 국수에서 발아 전 현미와 미강을 첨가한 국수보다 높은 GABA 함량을 확인하였으며 발아에 따른 polyphenol 함량과 항산화 활성에서는 큰 변화가 없음을 확인할 수 있었다. 따라서 발아현미가 첨가된 국수는 밀가루 국수의 영양학적 가치와 항산화 기능을 향상시킬 수 있는 소재로써 이용 가능할 것으로 생각된다.

고압 가열 방식으로 추출한 Brown Stock의 특성 (The Characteristics of Brown Stock Prepared by High Pressure Cooking)

  • The autoclave method and the traditional cooking method were compared for nutrients(especially, minerals), color difference, viscosity, reduction of sugar and amino nitrogen content of brown stock. The autoclave cooking method is better than the traditional cooking method for retaining protein and amino nitrogen contents, as well as for reducing sugar content. Also, reducing sugar content increased by the autoclave cooking method. Since the color of brown sauce was related with the reducing sugar content, the autoclave cooking method was more effective than the traditional cooking method for the color development of brown stock. Since the autoclave method can reduce the cooking time without a loss of quality in brown stock, the autoclave method is a viable alternative to the traditional method of preparing brown stock.
