"음식보(飮食譜)" 의 조리(調理)에 관한 분석적(分析的) 고찰(考察) (Analytical Study on the Cooking in Eum Sik Bo)

  • "Eum Sik Bo," the old cook book in Korean, had been kept on microfilm by Hwang, but the condition of copy was not clear so that interpretation of the content was very difficult. The interpreted content was classified and analyzed. The kinds of cooking food recorded in this book were alcohol beverage 12, Side dish 12, Dessert 11, etc. The materials used for the cooking foods cereals, meats, fishes, honey, vegetables, etc. - were various and the cooking methods were described in detail. But the unit of measuring and the used utensils were very poor. The special feature of "Eum Sik Bo" were the fact that red pepper was not used as seasoning and that Nu Ruk was used for Sik He and Ma ji Jub for Nu Ru Mi compared with "Eum Sik Di Mi Bang" and "Zu Bang Moon" According to these points, "Eum Sik Bo" was supposed to be written contemporary or a little later than "Eum Sik Di Mi Bang(1670's)" and "Zu Bang Moon (the end of 17th Century)."

이용자 체험에 따른 서점 공간의 표현특성 연구 (A Study on the Expressional Characteristics of Spaces in Bookstores based on Users' Experiences)

  • In recent years, as selling books on the internet becomes popular, the number of off-line bookstores are rapidly dwindling away. This change on the book market requires, the function and space of the bookstores should be defined again. Now bookstores are the places of experiences on cultures, world-views, and lifestyles around books. The study examines six large bookstores and finds three strategies of space expression as follow. First, Dominicanen bookstore in Maastricht which was built as a church has an expression which contrasts the old and the new as well as the sacred and the profane. Fangsuo bookstore in Chengdu creates a modern underground Sutra Depository. Here, people experience history and religion. Second, Cook & Book in Brussels has nine theme areas, each with a different selection of books, different interior decoration and special food and beverage like a theme park. Zhongshu bookshop in Shanghai has a lattice of nine reading rooms in which each unique design theme is characterized based on each book subject. Third, Cultura Bookstore in Sao Paulo is created to support social interchange. It leads people to the enormous plaza of books where people read books freely and participate in workshops, movies and all kinds of events. Daikanyama Tsutaya Books in Tokyo is composed of three white box-form pavilions which are connected by a 55-meter long aisle, called a magazine street. People walk along the street and choose concierge services as they browse magazines and books. The study finds out three strategies of design in current large bookstores to promote place-experience, which are the story-telling of history and culture, the design of theme parks, and openness for public mingling like plazas and streets. Thus, the study suggests a new paradigm in the design of bookstores in this internet age.

16세기 조선 의서 "이석간경험방"에 나타난 전통지식 분석 : 죽과 밥을 이용한 식치 처방을 중심으로 (Analysis on the Traditional Knowledge Appearing in "Yi, SeikKan Experience Prescriptions" Which is a Book on Medicine in Joseon Dynasty in the 16th Century : with a Focus on Medical Treating with Eating Foods Using Porridge and Rice)

  • Objectives : Medical treating with eating foods is one of important therapies in East Asian traditional medical knowledge and is referred as a therapy to treat diseases through foods. Since the food cannot be separated from ordinary people living, the medical treating with eating foods is a therapy with strong locality and contains many autogenous parts. Methods : Recently, the world is showing much interest for genetic resources, and the concept of intellectual property is rapidly expanding as the field of 'new knowledge property right' as well. Thus, the knowledge of medical treating with eating foods recently draws much attention in the economic aspect beyond the scholarly interest for traditional medicine. Here, I would like to summarize and report the contents related to medical treating with eating foods on "Yi, SeikKan experience prescriptions" which was discovered before. Results & Conclusions : First, medical treating with eating porridge on "Yi, SeikKan experience prescriptions" is classified into one with nonglutinous rice as the main ingredient and the other with other grains as the main ingredient. It is differently utilized depending on the nature of the grain. Second, medical treating with eating rice on "Yi, SeikKan experience prescriptions" was born from our nation's unique way of living and is classified into one way to eat rice mixed with ground medicinal herbs, another one to cook and eat rice with mixed grains and the other way to use as the external application. Medical treating with eating rice is assumed to replace the meal. Third, "food section" was given separately and discussed in this book. There were some parts different from existing medical knowledge due to the accumulation of experience using medicinal herbs. Fourth, we should pay attention to experience a book on medicine where vibrant medical information has been recorded in order to discover and process our traditional knowledge resources as a useful form.

「음식디미방」과 「규합총서」와의 비교를 통한 「주식시의」 속 조리법 고찰 (A Literature Review of Cooking Method in 「Jusiksiui」 compared with 「Eumsikdimibang」 and 「Gyuhapchongseo」)

  • This study examined the cooking method in "Eumsikdimibang", "Gyuhapchongseo" and "Jusiksiui" over time. The Korean cook book, "Jusiksiui", published in the late 1800s, was mainly investigated. The results showed that"Jusiksiui" contained more than 99 foods. In particular, there were 49 side dishes, including five types of porridge three types of noodles, and four types of dumplings. Most food recipes in "Jusiksieu" are the same as those in "Gyuhapchongseo". Results of comparison between "Gyuhapchongseo" (1809) and "Jusiksiui" (late 1800's), Korea's significant archives of Korean recipes, showed that approximately 50 recipes out of 99 recipes were the same as those indicated by "Yeolgujatang" and "Seunggiactang" as hospitality foods and "Gochujang", "Jeupjang", and "Jeupjihi" as traditional paste foods. This indicates that recipes in "Gyuhapchongseo" were transcribed into those in "Jusiksiui". Thus, "Jusiksiui" is the archive that includes recipes that have been passed down from generation to generation in a traditional family and transcribed archive of "Gyuhapchongseo", which was widely read by midwives in the late 1800's.

근대(1910-1948) 조리서 속 설탕의 활용과 소비문화 고찰 (The Research of Sugar's Application and Consumption Culture in the Modern Times' Cooking Book (1910-1948))

  • This research analyzed consumer culture and usage of sugar in modern times based on 12 modern popular Korean cooking books with sugar recipes. Procedures were formed via textual analysis. The outcomes of the study can be summarized in brief statements. According to "Banchandeungsok", "Booinpilj", and "Chosunmoossangsinsikyorijebeob", sugar was utilized in 34 out of 663 or 5.1% of cooked foods during the 1910s to 1920s. According to books such as "Ganpyounchosunyorijebeob", "Ililhwalyongsinyoungyangyoribeob", "Chosun's cooking of the four seasons", "Halpaengyoungoo", "Chosunyorijebeob", and "Required reading for housewife", sugar was added to 165 out of 998 or 16.5% of cooked foods during the 1930s. According to the books like "Chosunyorihak", "Chosunyoribeob", and "Woorieumsik", sugar was an ingredient in 241 out of 756 or 31.9% of cooked foods during the 1940s. Sugar depicted within the 12 modern popular Korean cooking books primarily functioned as an alternative sweetener, starch, sweet enhancer, preservative, and seasoning. Similar to illustrated sugar from modern popular Korean cooking books, sugar has continually been favored by Korean cooks starting from the 1910s with 5.1% usage, the 1930s with 16.5% usage, and the 1940s with 31.9% usage. Despite its short history, sugar's culinary importance in Korea has been on the rise ever since the early 1900s. Although sugar is an exotic spice in Korea, it has gained social, cultural, and symbolic recognition as well as practicality within Korean food culture. Thus, it has become more internalized and familiarized as an inseparable sweetness that characterizes current Korean food.

속초시 영유아의 이유실태조사 (Study on Infant Feeding Practice in Sockcho-City)

  • 속초시에 거주하는 6개월에서 20개월 사이의 영유아 170명(남아 98명, 72명)을 대상으로 1991년 3월 25일에서 4월 5일 사이에 영유아들의 어머니들에게 설문지로 이유실태를 조사한 결과는 다음과 같다. 어머니의 학력수준은 79.4%가 고졸 이상이며 주부가 69.4% 직장근무 17.1%, 부업 및 시간제 근무가 13.5% 이었다. 영유아의 이유이전의 수유방법은 모유영양이 40.0%, 인공영양이 44.1% 및 혼합영양이 15.9%이었다. 모유의 수유기간은 최고 18개월까지로 나타났으며 인공영양아를 제외한 대상자중에서 평균 수유기간은 6.3개월 이었다. 이유의 시작시기는 대상자 전체가 2개월에서부터 12개월로 평균 5.6개월이었으며, 이유의 완료시기는 전체가 6개월에서부터 12개월로 평균 11.4개월 이었다. 제일 먼저 먹인 이유식은 과일 쥬스류가 전체의 78.2%이었다. 식품의 종류별로 이유식의 사용빈도에서 대상자의 75.9%가 곡류를 자주 사용한다고 하여서 당질위주의 이유식이 이루어 졌으며, 육어류와 채소의 사용빈도는 낮았다. 시판이유보충식의 사용여부는 주 3회이상 사용하는 경우가 44.7% 이었으며 대개가 분말 및 액상형태인 제품이었다.

서양음식의 외식에 관한 연구 -서울지역을 중심으로- (A Survey on the Dining out of Western Food in Seoul Area)

  • This study was surveyed by 192 male and 238 female eating-out behaviors about western food in Seoul. The results were summarized as follows : The recognition degree about the western food was 14.2% In $\ulcorner$know well$\lrcorner$, 54.891 in $\ulcorner$know somewhat$\lrcorner$, 25.3% in $\ulcorner$Not know$\lrcorner$ and was observed significance by sex, food expenses and dine-out expenses. The recognition degree about western food was observed more highly than expected and would be further more highly with westernized dietary culture. The information of concern and knowledge about western food was taken by mass-communication, book, school education, etc. and the answer marked significance by sex. age, school career. The majority of subjects had chosen Korean restaurants in dining-out and the western restaurants were favorable to twenties(20~29) and thirties(30~39). The frequency of western restaurants visits was 46% in $\ulcorner$1~3times/month$\lrcorner$, 39% In $\ulcorner$several times/year$\lrcorner$ and the answer of frequency had significance by age, food expenses, and dine-out expenses. The choice of western A la carte menu restaurants was chicken restaurant(28%), cutlet restaurant(24%), hamburger R. (13%), pizza R. (19%), Spaghetti R. (9%). hamburger restaurants were favorable to twenties and the majority of pizza restaurant chosen were high level by monthly income. Content to be improved in western food was 68% in $\ulcorner$proper taste in Korean$\lrcorner$. Western cook should be improved properly in Korean tasting.

연근정과의 재료 및 조리방법에 관한 연구 (A Study on the Ingredients Preparation Method of Lotus Root Jung Kwa)

  • 설탕이나 꿀에졸인 한국의 전통적인 한과류의 하나인 정과를 1600년대 부터 현재 까지 소개된 조리책을 중심으로 정과의 변천과정을 정리하고 아울러 연근정과를 주제로 연근의 삶는 방법과 물, 설탕, 꿀의 배합비, 졸임시간의 변화가 연근정과의 모양, 맛, 질감, 색에 어떤 영향을 주는 가를 관능검사와 기계적 방법으로 알아내어 가장 과학적이고 효과적인 제조방법을 알아낸 결과는 다음과 같다. (1) 조리책에 소개된 정과의 종류는 34종류이며 그 중 연근정과가 가장 많이 소개되었다. (2) 처음에는 정과를 졸일 때. 꿀을 사용했으나 1843년에 출판된 음식법(飮食法)에서 처음으로 설탕을 사용해서 졸인 감자정과가 소개되었다. (3) 연근을 7 mm 두께로 썰어 물 150 ml, 연근 100 g, 식초 4 ml를 넣고 12분간 삶는다. 이 때의 hardness는 5.86 mm였다. (4) 모양, 맛, 진감, 적에 가강 좋은 영향을 주는 물의 량은 200 ml 였고 이 때의 hardness는 3.3 mm 였다. (5) 모양, 맛, 질감, 색에 가장 종은 영향을 주는 설탕의 양은 30 I이었고 이때의 hardness는 3.8mm 이었다. (6) 모양, 맛, 질감, 색에 가장 좋은 영향을 주는 꿀의 앙은 40 g 이었고 이 때의 hardness는 4.9 mm 였다. (7) 가장 좋은 졸임시간은 삶은 연근 100 g에 물 200 ml, 설탕 30 g을 넣고 30분간 졸이다가 꿀 40 g을 넣어 12분간 졸인다. 이 때의 hardness는 4.9 mm 였다. (8) 연근정과를 만드는 가장 좋은 방법은 연근 100 g, 물 200 ml, 설탕 30 g꿀 40 g으로 총 42분간 졸이는 것이다.

퍼지이론을 응용한 조리법에 관한 연구 -비빔밥을 중심으로- (Study on the Recipe Using Fuzzy Theory)

  • 본 논문은 퍼지이론을 조리법에 적용함으로써 지금까지 자료조사를 근거로 하여 관능검사를 토대로 제시된 한국요리의 표준화 방법을 체계화하고 쉽게 응용할 수 있도록 하는 방법을 제시하였다. 본 논문에서는 비빔밥을 중심으로 퍼지 이론을 적용하였으며 식품 조리법의 판정기준인 관능지수를 퍼지 이론에 적용하여 추론하는 방법을 제시하였다. 이 방법은 재료의 분량에 따른 관능지수의 변화에 대한 매우 제한적인 경우에 대해서 제시를 했지만 더 많은 재료의 분량 및 조리방법 등을 고려하면 더욱 정확하고 보편적인 관능지수를 직접 조리를 하지 않고 시뮬레이션에 의하여 추론할 수 있다. 본 논문에서는 그 기초적인 연구로 퍼지 이론을 소개하고 비빔밥을 중심으로 기본적인 방법을 제시하였는데 이 퍼지이론의 도입은 조리법의 과학화 및 전산화를 용이하게 하며, 환자의 체계적인 영양관리와 어린이, 노약자 등 식이요법이 필요한 사람들과 조리법이 한정적인 특정지역에 적용하여 다양한 방법을 모색할 수 있을 것으로 생각된다.

더덕을 이용한 음식의 전통레시피 개발과 내·외국인의 선호도 (Preferences of Koreans and Foreigners for Traditional Recipe Developed containing Deoduk)

  • Various Korean healthy foods containing Deoduk were developed and standardized recipe. Sensory evaluations of Koreans and foreigners for these developed foods were performed by using the 5-point hedonic scale. The results of the sensory test on foods containing Deoduk were as follows: Deoduk bap (2.90~3.91), Deoduk seolgidduk (3.19~4.40), Deoduk gangjeong (3.00~4.60), riasted Deoduk with red pepper paste (2.73~4.20), Deoduk pine nut juice salad (2.40~3.96), and Seopsansam (3.91~3.81). Deoduk seolgidduk, developed by using a recipe for Sansambyeong which in a Chosun dynasty cook-book, was highly preferred by Africans, Japanese, and Koreans. In particular, all foreigners except Southeast Asians liked Deoduk gangjeong, and both Koreans and foreigners liked Seopsansam. Foreigners' experience of eating foods containing Deoduk was high at 'No' (68.9%), whereas Japanese (60.0%) had previous experience. Exactly 91.6% of Koreans responded 'Yes' to the question of whether or not Deoduk food is good for health, whereas the proportion of foreign respondents who said 'Yes' was 43.2%, 'No' was 5.4%, and 'I don't know' was 51.4%. Deoduk seolgidduk was preferred by Japanese, and most foreigners preferred Deoduk gangjeong and Seopsansam. Therefore, Deoduk could be developed as a healthy food for globalization of Korean food. However, as foreigners' awareness of Deoduk is low, we must positively promote the health function of traditional food ingredients and develop various menus suitable forforeigners' tastes for the globalization of Korean food.
