메밀 발아 중 물리화학적 특성과 무기질 함량의 변화 (Changes in Physico-chemical Properties and Mineral Contents during Buckwheat Germination)

  • To provide the effective application scheme and basic information of buckwheat (Fagopyrum esculentum Moench), buckwheat was germinated at 10$^{\circ}C$ for 7 days and 100 kernels weight, germination rate, root length, chemical composition and mineral contents were examined at 24 hour Intervals. During the germination period, the 100 kernels weight increased approximately 0.3g per day. The germination rate increased sharply after 2 days and the root length increased greatly after 4 days. The crude protein contents increased with germination time, whereas the carbohydrate contents decreased. The crude ash and fat contents did not differ significantly during the germination period. The Ca contents Increased for the 4th day of gemination, but gradually decreased afterwords. The Na contents increased in the initial stage of germination, but then gradually decreased. However, there were no significant change In the Mg, K. Fe. Mn and Zn contents.

중학교 수학학습요소의 학교급간 이동에 대한 분석 (The Study on the Movement of Mathematics Contents among School Levels)

  • This study was based on the analysis of changes in curriculum of elementary mathematics curriculum, and changes in curriculum of middle school and high school mathematics curriculum. The purpose of this study is to analyze the movement of learning contents among the school levels based on the middle school mathematics curriculum and to summarize the influence on the curriculum of middle school mathematics according to the movement of learning contents. The research conducted according to the purpose of this study is as follows. First, we analyzed the trends of mathematical contents between elementary and middle schools after the movement of ten mathematics curriculums. Second, we analyzed trends of learning factors after mobility and mobility between middle school and high school. Third, the characteristics of 'the contents of mutual movement based on middle school' and 'the contents deleted from middle school' were analyzed. The results of this study are expected to reflect on current and past curriculum and to give meaningful implications to the composition of new curriculum.

제주도 주변해역 표층퇴적물의 점토광물 절대함량 및 상대함량 비교연구 (A Comparative Study on Absolute and Relative Clay Mineral Composition of the Surface Sediments around the Jeju Island)

  • 정량X선회절분석법을 이용하여 131개의 제주도 주변해역 표층퇴적물 시료 내에 존재하는 각 점토광물의 절대함량과 점토광물 사이의 상대함량을 구한 후 그 분포 양상을 비교하여 보았다. 절대 함량은 각각 일라이트(0.5~40.5%, 평균 15.3%), 녹니석(0~7.9%, 평균 2.6%), 카올리나이트(0~5.6%, 평균 1%) 이며 공통적으로 한국남해, 제주도의 북서쪽 해역, 제주도 남쪽 먼 해역에서 높다. 점토광물 함량의 합을 100으로 가정하고 구한 상대함량은 각각 일라이트 70.9% (16.7~89%), 녹니석 21.5% (8.4~68.5%), 차올리나이트 7.6% (0~29.3%)이다. 상대함량을 이용하여 분포 양상을 나타낸 결과, 일라이트는 연구해역 북서쪽과 남동쪽, 그리고 제주도의 남서쪽 해역에서 다른 점토광물에 비해 상대적으로 높은 비율로 분포한다. 녹니석은 연구해역 동쪽과 제주도 서쪽에 인접한 해역에서 상대적으로 높은 비율로 분포하며, 카올리나이트는 제주도 서쪽과 남쪽에 인접한 해역과 남쪽 먼 해역에서 상대적으로 높은 비율로 분포한다. 점토광물 절대함량 분포경향은 연구해역 내 점토에서 실트 입자의 세립질퇴적물 분포와 일치한다. 반면, 점토광물 상대함량 분포는 세립질퇴적물 분포와 관련성을 보이지 않는다.

국내 주요 식품(Key foods) 중 면류 제품의 영양성분 함량 비교 (Comparison of Nutritional Composition of Noodle Products in Korean Key Foods)

  • This study analyzed the nutritional composition (proximate composition, total dietary fiber, calories, minerals, fatty acids, and amino acids) of 10 noodle products (tteok ramyun, jjamppong ramyun, kimchi ramyun, instant udon, cup ramyun, jajangmyun, bibimmyun, cream spaghetti, ssalguksu, and milmyun), which account for 85% of the cumulative intake of one or more key nutrients, using data from the 7th Korea National Health and Nutrition Examination Survey. The moisture contents of bibimmyun, jajangmyun, and cream spaghetti were lower than those of the other noodle products, whereas the crude fat, crude protein, carbohydrate, and calorie contents were the highest. Cream spaghetti had the highest mineral, fatty acid, and amino acid contents, followed by bibimmyun and jajangmyun. Ssalguksu had the lowest contents of most nutrients. These data could be used to populate a food composition database, which can provide consumers with the nutritional information about frequently consumed noodle products.

豚 內臟筋中 總脂質 含量과 構成脂質의 組成 (The Contents of Total Lipid and the Component of the Lipid in Porcine Variety Tissue)

  • The contents of crude fat were remarkably different according to parts in porcine tissues. The most contents of total lipids in variety tissues were neutral lipid, and the nexts were phospholipid and glycolipid, where these of the most composition in liver were phospholipid and the next neutrallipid and glycolipid. The major component of the nonpolar lipids in fresh was triglyceried(58.09∼74.68%) and phospolipid in the polar lipid were phosphatidyl choline(20.14∼45.17%) and phosphatidyl ethanolamine(18.5∼30.14%) and the main component in glycolipid acylsterol glyceride(26.10∼45.15%), respectively.

굴비의 가공.저장 중 Malonaldehyde 함량 및 지방산 조성 변화 (The Changes of Malonaldehyde and Fatty Acids Composition of Yellow Corvenia during Gulbi Processing and Storage)

  • 저염 굴비의 가공 방법을 모색하고자 염장 기간을 달리하여 식염 농도가 상이한 굴비의 건조 및 저장 중 지질 과산화물인 malonaldehyde의 함량 및 지방산의 조성 변화를 분석 비교하였다. 천일염으로 염장 기간을 5시간과 5일로 달리하여 천일건조와 저장을 거치는 동안 수분의 함량은 각 가공 단계 및 저장 기간의 경과와 더불어 점차 유의적으로 감소하는 경향을 나타내었다. 염도는 5시간 염장 시료와 5일 염장 시료간에 약 10배의 차이가 있었으며, 수분과 상반되게 건조와 저장 과정을 거치면서 점차로 증가하는 경향을 보였고, pH는 저장 기간에 따른 차이가 미미하였다. Malonaldehyde는 5시간 염장 시료에 비하여 5일 염장한 시료에서, 근육부분보다는 표피 부분에서 더 높은 함량으로 정량되었으며 가공 과정을 거치면서 계속적으로 증가하는 경향이었다 지방산은 oleic acid $(C_{18:1})$, palmitic acid$(C_{16:0})$, docosahexaenoic acid$(C_{22:6})$의 함유 비율이 높았으며 가공을 거치면서 포화 지방산은 증가하고 불포화 지방산은 감소하는 경향이었다. 저장 21일에 5시간 염장 시료와 5일 염장 시료의 불포화 지방산 잔존율은 각각 1.39와 0.99로 굴비 가공 중 불포화 지방산은 첨가 식염의 농도가 높을수록, 가공보다는 저장 동안에 급격히 변화함을 알 수 있었다.

결구배추 잎의 이화학적 성분 조성 (Physicochemical Composition of Head-Type Kimchi Cabbage Leaves)

  • 김치용 결구배추를 겉잎(L1), 중잎(L2), 속잎(L3)으로 세 등분하여 부위별로 일반성분을 포함한 이화학적인 성분을 측정하여 비교하였다. 조단백질 및 조지방 함량은 겉잎(L1)이 높았고, 조회분 및 탄수화물 함량은 속잎(L3)이 높았다(P<0.05). 열량은 24.5~26.5 kcal/100 g이었고 부위별로 유의적인 차이가 없었으며, 총식이섬유는 겉잎(L1)이 가장 높았다(P<0.05). 유리당은 fructose, glucose, sucrose가 확인되었으며, 속잎(L3)에서 fructose 및 glucose 함량이 높았다(P<0.05). 유기산은 citric acid, malic acid, succinic acid가 검출되었으며, citric acid와 malic acid 함량은 속잎(L3)이 높았고 succinic acid는 겉잎(L1)이 높았다(P<0.05). 총유리 아미노산의 30% 이상을 차지하는 glutamic acid 함량은 속잎(L3)에서 높았으며, ${\gamma}-aminobutyric$ acid의 함량은 겉잎(L1)이 가장 높았다(P<0.05). 결구배추 잎의 주요 미네랄 성분은 K, Na, Ca, Mg이며, 이 중 K의 함량이 가장 높았다. 총미네랄 함량은 겉잎(L1)이 가장 높았다(P<0.05). 결구배추 잎은 부위에 따라 이화학적 성분 조성이 다른 특성을 가지므로 신선편의 식재료로서 활용성이 더욱 증대될 수 있을 것으로 생각한다.

사태의 가열시간 및 냉동저장에 따른 지방산 조성 변화 (Changes of Fatty Acid Composition in Shank During Heating Time and Frozen Storage)

  • This study was carried out to investigate changes of the lipid contents and the fatty acid composition in shank during heating time and frozen storage. 1. The total lipid contents of raw shank were about 3.57% and decreased stepwise during heating time 30, 60, 90 min and frozen storage(24hrs) The contents of neutral lipid, glycolipid and phospholipid were 70.71%, 6.36%, and 22.93% in raw shank, and neutral lipid contents were decreased, whereas Phospholipid contents were increased according to heating tide. In frozen storage, neutral lipid and glycolipid contents were increased, while phospholipid contents were decreased. 2. Lipids of shank possessed about 8 kinds of fatty acid as the constituent by gas-liquid chromatography analysis. The main fatty acids were oleic acid, palmitic acistearic acid and linoleic acid: the fatty acids of total lipids in raw shank were 43.48% of oleic acid, 23.13% of palmitic acid,12.00% of stearic acid and 6.75% of linoleic acid. Also the fatty acids were 43.32% of oleic acid, 23.26% of palmitic acid, 9.30% of stearic acid 2.15% of linoleic acid in neutral lipid, 22.63% of oleic acid, 8.44% of palmitic acid, 11.98% of stearic acid, 27.01% of linoleic acidin glycolipid, 39.38% of oleic acid, 15.89% of palmitic acid, 15.55% of stearic acid, 17.49% of linoleic acid in phospholipid. 3. The fatty acid pattern of total lipid, neutral lipid, glycolipid and phospholipid was not any changes, whereas there was a difference in the fatty acid contents: palmitic acid and stearic acid of total lipid were decreased in the 30 min and 60 min heating but increased in 90min heating, and linoleic acid of neutral lipid was increased stepwise during heating time and frozen storage. Also palmiict acid of glycolipid was increased gradually and linoleic acid in heating time 30, 60 min was higher than 90 min and frozen storage. Among fatty acids in phoapholipid, oleic acid was increased during heating time, while decreased in frozen storage, and linoleic acid was not any change but linolanic acid was increased. UFA/SFA of phospholipid was the highest when heating time was 60 min. From above results, it was found that when heating time was 60 min beneficial nutritionally, comparing with changes of fatty acid composition according to the heating time aid frozen storage.

스마트러닝 환경에서 모바일 콘텐츠가 학습자의 학습만족도에 미치는 영향 (The Influence of Mobile Contents on the learner's learning satisfaction in the Smart Learning Environment)

  • Since the world entered the age called "Smart Revolution", there has also been a lot of changes in the field of education. In educational environment, there is a growing interest in smart learning based on mobile contents, with the development of Smart Devices and ubiquitous technology. This paper is about a research on what effects smart learning has on leaner side when learners make active use of mobile contents in this age of Smart Revolution. First, we embodied teaching plans for some practical classes in forms of mobile contents using M-bizmaker. After the learning process based on the embodied contents for students, we analyzed the survey results on 4 sections-their use of apps, screen composition, technical support, interactions. We also studied the results of a questionnaire on 4 sections-contents, information offering, feedback systems, learner assessment-to evaluate their satisfaction. The research suggests that learner satisfaction can be improved with smart learning based on mobile contents embodied for leaners.

Effects of Dietary Fatty Acids on Serum Lipids and Fatty Acid Composition of Serum Phospholipids in Men

  • Serum lipid levels and fatty acid composition of serum phospholipids(PL) were investigated in 24 healthy male subjects who consumed either corn oil(CO) rich In linoleic acid(LA), perilla oil(PO) rich in $\alpha$-linolenic acid($\alpha$-LNA), or canola oil acid(OA) as a major fat source fir 5 weeks. The PO and the CNO groups showed significant(P <0.05) increases in serum high density lipoprotein-cholesterol(HDL-C) levels and in ratios of HDL- C/total cholesterol(TC) compared with initial values measured at the beginning of the study. Significantly(p <0.05) increased concentrations of serum triglycerides(TG) ware observed after 5 weeks of the CO based diet compared with both its intial value and the concentration observed after 5 weeks with the PO-based diet. fatty acid composition of serum PL reflected changes in dietary fatty acid composition and metabolism. Compared with the initial levels, significandy increased contents of eicosapentaenoic acid(EPA) and docosahexaenoic acid(DHA) were observed in serum PL of the PO group and significantly increased contents of $\alpha$-LNA and EPA were observed in the CNO group. Arachidonic acid(AA) content of serum PL did not change in the CO group during the study period, although, the increase in LA was significant(P <0.05). Compared with the CO-based diet, both the PO and the CNO-based diets seem to have beneficial effects on atherosclerosis by influencing the serum lipid profile and fatty acid composition of serum PL.
