Optimization of Sensory Attributes of Brown Sauce added with Gelatin (젤라틴 첨가 브라운소스의 관능적 특성 최적화)

  • This study was carried out response surface analysis for brown sauce optimization. Three factors of heating time (10, 20, 30, 40, and 50 min), the added gelatin content (0, 4, 8, 12, and 16%) and the added tomato paste amount (0, 6, 12, 18, and 24%) were encoded into 5 levels (-2, -1, 0, 1, 2). After the central synthesis plan was set up to produce samples in 16 pre-arranged conditions and the sensory tests were conducted, the investigation on optimum level of these factors was conducted. The scope of optimum conditions for extraction was established through reading the range of reaction surfaces superimposed between those representing sensory properties such as color, flavor, taste, viscosity and overall acceptability was established. In this study, it was found out that the scope of optimum conditions for brown sauce extraction was 30 min for heating time, 9.00% for gelatin content and 11.25% for tomato paste amount. The reliability test proved the mentioned scope to have a similar value to that of the estimated scope when compared to the experimental values which was observed through experiments conducted under the same conditions as applied to values predicted through RSM program, enabling the verification of the reliability of derived regression formula.

  • The purpose of this study is to verify whether the FAST program is the Inquiry Science Curricular Materials, through the Comparison and Analysis of Inquiry Activities between the FAST program and our Secondary Science Books. The results of this study are as follows ; 1. FAST has 226 tasks of the Inquiry Activities, which is analyzed over two times than our text. 2. In level one, FAST holds the parts of Synthesizing Results and Evaluation, Hypothesizing and Designing an Experiment but u.ese aren't found in our text. 3. In level two, our text is analyzed No Discussion 72.2%, Demonstrating or Verifying the Content of the Text 82%, but FAST has Discussion Guided 81.8%, and isn't found any tesk of Demonstrating or Verifying the Content of the text. 4. In level three, our text is exposed a typical type I and analyzed Inquiry Index 15-25 ( Middle ), but FAST is found type IV, excepting Manipulating Apparatus and Observation and analyzed Inquiry Index over 35 ( Very - High ). Therefore, FAST Program is proved to be the desirable Inquiry Science Curricular Materials. In future, this worker is to arrange the results of the following paper as follows ; 1. The verification of the FAST Program by means of the Integrated Science Curricular Materials. 2. The development of the Inquiring, Integrated Science Curricular Materials through the results of the preceding study.

An Inquiring Demand for Certification of Contract Foodservice Management Company by in-depth Interview and a Review about the System in a Related Field (심층면접(In-depth interview)을 활용한 위탁급식전문업체 인증제도 도입에 대한 요구 조사 및 관련분야 제도에 대한 고찰)

  • This study was performed to inquire demand for indroducing certification on contract foodservice management company(CFMC) and review about the system in a related field. The methodology was practiced an in-depth interview for grasping demand on certification of CFMC and composition on an appraiser group. Content analysis was reviewed about the system in a related field. Large enterprises and small and medium-sized enterprises were positive opinion on a certification of CFMC and they suggested that education and research institution, industry, government, association will be included in appraiser group. The review about the system of a related industry was investigated by field such as similar product and service with restaurant industry, similar service with hotel and tourism industry. And similar purpose with a certification of CFMC was put in operation as PQ(pre-qualification) and selecting an adequate corporation in architecture industry. Therefore, a certification of CFMC should be tried to scientific introduction by objective verification.

  • Moisture in a building is one of the most important variables influencing building performance, human health, and comfort of indoor environment. However, there are still lacks in the knowledge of understanding the moisture problem well and controlling moisture. Accordingly, in order to provide the fundamental data to control moisture contents in the indoor air, this study was to predict moisture contents transferred through building envelopes and indoor moisture generation rate. Moisture transfer model was made by physical relations in each node, and the indoor moisture generation rate was gained by comparing the model with experimental analyses. From the study, we found out that moisture generation rate was critical and day-periodic, so that we predicted the indoor moisture content by substituting the constant value gained from the average in a day for the moisture generation rate.

Development of a Wellness Index for Workers (근로자를 위한 웰니스지표 개발)

  • Purpose: The purpose of this study was to develop a wellness index for workers (WIW) and examine the validity and reliability of the WIW for assessing workers' wellness. Methods: The developmental process for the instrument included construction of a conceptual framework based on a wellness model, generation of initial items, verification of content validity, preliminary study, extraction of final items, and psychometric testing. Content validity was verified by 4 experts from occupational health nursing and wellness disciplines. The construct validity, convergent validity and discriminant validity were examined with confirmatory factor analysis. The reliability was examined with Cronbach's alpha. The participants were 494 workers from two workplaces. Results: Eighteen items were selected for the final scale, and the results of the confirmatory factor analysis supported a five-factor model of wellness with acceptable model fit, and factors named as physical emotional social intellectual occupational wellness. The convergent and discriminant validity were also supported. The Cronbach's alpha coefficient was .91. Conclusion: The results indicate that the WIW is a valid and reliable instrument to comprehensively assess workers' wellness, and to provide basic directions for developing workplace wellness program.

Design of Electronic ID System Satisfying Security Requirements of Authentication Certificate Using Fingerprint Recognition (지문 인식을 이용하여 공인인증서의 보안 요건을 만족하는 전자 신분증 시스템의 설계)

  • In this paper, an electronic ID system satisfying security requirements of authentication certificate was designed using fingerprint recognition. The proposed electronic ID system generates a digital signature with forgery prevention, confidentiality, content integrity, and personal identification (=non-repudiation) using fingerprint information, and also encrypts, sends, and verify it. The proposed electronic ID system exploits fingerprint instead of user password, so it avoids leakage and hijacking. And it provides same legal force as conventional authentication certificate. The proposed electronic ID consists of 4 modules, i.e. HSM device, verification server, CA server, and RA client. Prototypes of all modules are designed and verified to have correct operation.

The Development of Home-Visiting Nurses' Professional Competencies (보건소 방문간호사의 전문직 간호역량)

  • Purpose: The purpose of this study was to identify professional competencies of visiting nurses in public health centers. Methods: A methodological study for the development of visiting nurses' professional competency was conducted through the review of literature and construction of a conceptual framework for the development of professional competence. After reviewing the content validity of each question and confirming the items of the preliminary tool, the construct validity of the tool was verified through exploratory factor analysis and internal reliability was confirmed. Results: After constructing 5 factors relating to the visiting nurse's professional competence, 25 items were developed, based on verification of content validity by experts. The results of the exploratory factor analysis showed that the professional competence of the visiting nurse was influenced by factors such as "health assessment and screening," "health teaching and counseling," "interprofessional communication", "program planning and implementation", and "Professional development". These five factors accounted for 76.38% of the professional competencies of the visiting nurse. Conclusion: The professional competence of the visiting nurse is consistent with the aim of the visiting nursing project. Also our results will contribute to baseline data used to evaluate the quality of work of the visiting nurse.

A Study on the Improvement of Korean Journal Citation Index Service

  • The KJC and KCI services operated by the National Research Foundation of Korea (NRF) need to refer to the global citation index database to set the service direction that researchers want and develop new functions. Therefore, in this study, the usability of Korea's KJC and KCI web databases was evaluated. In addition, FGI verification was performed for a group of experts on KJC and KCI improvement measures derived by academic information experts. The evaluation committee consisted of the researcher group, the society related group, the publisher (academic information distribution organization) group, and the policy-making organization group. A total of 16 experts performed usability evaluation and service improvement proposals for KJC and KCI services. As a result of usability evaluation of KJC and KCI web database using SUS measurement tool, KJC service was evaluated as 73.44, and KCI service was evaluated as good as 64.38. KJC improvement proposals were evaluated positively with 4 points or more for all improvement items, and KCI improvement proposals were positively evaluated with 3.5 points or more for all improvement items. Overall, KJC and KCI error improvements were evaluated with a score of 4 or more, showing strong affirmations. In the future, it is hoped that the improvement proposals and improvements proposed in this study will be applied to the development of KJC and KCI services, so that more quality services will be used by domestic researchers.

Development and Validation of an Instrument to Measure Nursing Information Literacy Competency

  • Purpose: The purpose of this study was to develop an instrument for measuring nursing information literacy competency, and then to examine the validity and reliability of the instrument. Methods: The developmental process of the instrument includes construction of a conceptual framework, generation of initial items, verification of content validity, preliminary study, extraction of final items, and psychometric testing. Its content validity was verified by three experts from nursing and nursing informatics. Its construct, convergent, and discriminant validity was examined in confirmatory factor analysis. Finally, its criterion validity was measured with Pearson's correlation. The tool's reliability was examined by Cronbach's ${\alpha}$. The participants include 382 nurses from four hospitals and one university hospital. Results: Twenty seven items in total were selected for the final scale, and the results of the confirmatory factor analysis were supported with acceptable model fit, which were named competency for identifying problem, potential sources for information, searching fine information, evaluating information, acquising and managing of information, using information ethically, and integrating new information. The convergent, discriminant and criterion validities were also supported. The Cronbach's ${\alpha}$ coefficient was .93. Conclusion: The instrument is valid and reliable to comprehensively assess nurses' information literacy competency, and to provide a basic direction for developing nursing information literacy program.

Efficient Proxy Re-encryption Scheme for E-Voting System

  • With the development of information and communication technologies, especially wireless networks and cell phones, the e-voting system becomes popular as its cost-effectiveness, swiftness, scalability, and ecological sustainability. However, the current e-voting schemes are faced with the problem of privacy leakage and further cause worse vote-buying and voter-coercion problems. Moreover, in large-scale voting, some previous e-voting system encryption scheme with pairing operation also brings huge overhead pressure to the voting system. Thus, it is a vital problem to design a protocol that can protect voter privacy and simultaneously has high efficiency to guarantee the effective implementation of e-voting. To address these problems, our paper proposes an efficient unidirectional proxy re-encryption scheme that provides the re-encryption of vote content and the verification of users' identity. This function can be exactly applied in the e-voting system to protect the content of vote and preserve the privacy of the voter. Our proposal is proven to be CCA secure and collusion resistant. The detailed analysis also shows that our scheme achieves higher efficiency in computation cost and ciphertext size than the schemes in related fields.
