Quality Characteristics of Goat Meat Tteokgalbi Prepared with the Addition of Centella asiatica Powder (병풀분말을 첨가한 염소고기 떡갈비의 품질특성)

  • This study aimed to investigate the effects of Centella asiatica powder on the quality characteristics and storage stability of goat meat Tteokgalbi. The goat meat Tteokgalbi samples were prepared with four different quantities (0, 0.5, 1, and 1.5%) of Centella asiatica powder. The moisture content of the samples containing Centella asiatica powder was significantly lower than that of the control (p<0.05). The protein content of the samples containing Centella asiatica powder was significantly higher than that of the control (p<0.05). As the proportion of Centella asiatica powder increased, the pH, L*, and a* values of the uncooked and cooked samples decreased (p<0.05). The water holding capacity and the cooking yield of the uncooked and cooked samples were higher in the samples containing Centella asiatica powder than in the control (p<0.05). Also, with the increasing amounts of the Centella asiatica powder, the thiobarbituric acid reactive substance (TBARS) levels decreased. The 1-1.5% Centella asiatica powder group showed lower levels of volatile basic nitrogen (VBN) than the other groups as per the assay (p<0.05). The results indicate that Centella asiatica powder could enhance the quality characteristics and storage stability of goat meat Tteokgabi.

Effects of the Feeding Levels of Alfalfa on the Intake, Digestibility, Nitrogen and Energy Utilization by Korean Native Goats (Alfalfa의 급여수준이 산양의 섭취량, 소화율과 질소 및 에너지 이용성에 미치는 영향)

  • This study was conducted to compare the dry matter intake, the digestibility, and utilization of nitrogen and energy of Korean native goats, when fed on orchardgrass(OG) mixed with alfalfa(AA) at a different levels. Experimental diets include three treatments : OG 100%, OG 80%+AA 20%, and OG 60%+AA 40%. With increasing levels of AA supplementation, the content of CP was higher for AA supplemented diets than for OG 100% diets, while the content of NDF, ADF, hemicellulose and lignin content were slightly lower for AA supplemented diets than for OG 100% diets. Also, the DM intake and the digestibility of DM, cellular constituents, NDF and ADF were higher for AA supplemented diets than for OG 100% diets, especially those were the highest in OG 60%+AA 40% diets(P<0.05). The apparently digested N, retained N and biological value of AA supplemented diets were increased with increasing levels of AA supplementation, compared with those of OG 100% diets(P<0.05). The utilization of DE and ME were slightly high in OG 60%+AA 40% diets, but there was no significant difference among all diets. According to the results, DM intake, digestibility and nitrogen utilization were improved in goat fed diets with supplementation AA(AA 20%, 40%), compared with those of OG 100% diets. But energy utilization did not show the difference among diets. Hence, It needs to provides to the adequate energy sources to goats.

Dietary phosphorus deficiency impaired growth, intestinal digestion and absorption function of meat ducks

  • Objective: An experiment was conducted to investigate the effects of dietary non-phytate phosphorus (nPP) deficiency on intestinal pH value, digestive enzyme activity, morphology, nutrient utilization, and gene expression of NaPi-IIb in meat ducks from 1 to 21 d of age. Methods: A total of 525 one-d-old Cherry Valley ducklings were fed diets (with 7 pens of 15 ducklings, or 105 total ducklings, on each diet) with five levels of nPP (0.22%, 0.34%, 0.40%, 0.46%, or 0.58%) for 21 d in a completely randomized design. Five experimental diets contained a constant calcium (Ca) content of approximately 0.9%. Body weight (BW), body weight gain (BWG), feed intake (FI), and feed to gain ratio (F:G) were measured at 14 and 21 d of age. Ducks were sampled for duodenum and jejunum digestion and absorption function on 14 and 21 d. Nutrient utilization was assessed using 25- to 27-d-old ducks. Results: The results showed ducks fed 0.22% nPP had lower (p<0.05) growth performance and nutrient utilization and higher (p<0.05) serum Ca content and alkaline phosphatase (ALP) activity. When dietary nPP levels were increased, BW (d 14 and 21), BWG and FI (all intervals), and the serum phosphorus (P) content linearly and quadratically increased (p<0.05); and the jejunal pH value (d 14), duodenal muscle layer thickness (d 14), excreta dry matter, crude protein, energy, Ca and total P utilization linearly increased (p<0.05); however, the serum ALP activity, jejunal $Na^+-K^+$-ATPase activity, and duodenal NaPi-IIb mRNA level (d 21) linearly decreased (p<0.05). Conclusion: The results indicated that ducks aged from 1 to 21 d fed diets with 0.22% nPP had poor growth performance related to poor intestinal digestion and absorption ability; but when fed diets with 0.40%, 0.46%, and 0.58% nPP, ducks presented a better growth performance, intestinal digestion and absorption function.

Investigation of Physicochemical and Sensory Quality Differences in Pork Belly and Shoulder Butt Cuts with Different Quality Grades

  • The objective of this study was to investigate the effects of quality grade (QG) on the physicochemical composition and eating quality attributes of pork belly and shoulder butt. Seventy-two growing-finishing crossbred pigs were slaughtered and their carcasses were graded according to the Korean pork carcass grading system. Based on the grading criteria, the carcasses were classified into: QG 1+ (n=23), QG 1 (n=23) and QG 2 (n=26) groups. At 24 h postmortem, belly and shoulder butt cuts were collected from the QG groups and used for analysis of meat quality, flavor compounds and eating quality attributes. Results showed that the variation in fat content among QG was approximately 2% in the both cut types. The QG showed no effects on all the quality traits: cooking loss, pH and color of the belly or shoulder butt (p>0.05). Thirty-five flavor compounds comprising mainly fatty acids oxidation/degradation-derived products (e.g., aldehydes) and only few Maillard reaction-derived products (e.g., sulfur-and nitrogen-containing compounds) were identified. However, the QG showed a minor effect on the flavor profiles in both the belly and shoulder butt. Regarding the sensory quality, no effects of the QG were found on all the eating quality attributes (color, flavor, juiciness, tenderness and acceptability) for both the belly and shoulder butt cuts (p>0.05). Thus, it may be concluded that the current pork carcass grading standards do not reflect the real quality and value of the belly and shoulder butt cuts.

Analysis of Iridoid Glycoside and GABA Content in the Roots of the Rehmannia glutinosa Cultivars (지황 품종별 뿌리에서 Iridoid 배당체와 GABA 분석)

  • Background: Rehmannia glutinosa is a perennial herb belonging to the family Scrophulariaceae. Its roots have been utilized as a traditional medicine. The aim of this study was to elucidate the basic information of the roots of the R. glutinosa cultivars and their utilization. Methods and Results: The roots of R. glutinosa cultivars were harvested in the end of March. The two iridoid glycosides, aucubin and catalpol, were analyzed by liquid chromatography/mass spectrometry (LC/MS), whereas ${\gamma}-aminobutyric$ acid (GABA) was analyzed by gas chromatography/mass spectrometry (GC/MS). The aucubin content was the highest in the Dakang cultivar, whereas no aucubin was detected in the five cultivars. All cultivars had more than 12 mg/g catalpol content, and the maximum catalpol content was found in Jihwang 1. The GABA content was the highest in Suwon 1, and it was 40 times more than that in the Yeongang cultivar. Conclusions: The highest aucubin, catapol and GABA contents were detected in the Dakang, Jihwang 1, and Suwon 1, cultivars respectively. This study provides the crucial information regarding the versatile utilization and pedigree selection of R. glutinosa cultivars.

A Study on the Present Condition and Prospect of Architectural Cultural Heritage Content Applied to 3D Digital Technology (3차원 디지털기술 적용 건축문화재 콘텐츠 현황분석 및 전망에 관한 연구)

  • Digital data was collected using modern three-dimensional digital technology. Current content-specific technologies were investigated through domestic and foreign cases so that three-dimensional digital technology could be applied to the utilization of various contents. First, the use of three-dimensional digital technology of architectural cultural assets has been changing from the restoration of cultural assets. Second, some of the contents produced were found to be underutilized. Third, the type of content has been changing in experience and exhibition, but the online approach was small. Fourth, digital restoration using domestic IT technology has been used as a technology to restore overseas cultural heritage. The fifth analysis of the relationship between the content types and 3D digital technologies shows the use of currently limited technologies. This study analyzed the status of digital architecture and the application of three-dimensional digital technologies to lay the foundation for the active development and utilization of content. Subsequent studies on various layers and digital technologies will be needed to revitalize digital architectural cultural assets in the future.

Effect of 'Azotobacter' Bioinoculant on the Growth and Substrate Utilization Potential of Pleurotus eous Seed Spawn

  • We investigated the effect of nitrogen fixing Azotobacter bioinoculant on the mycelial growth and the rate of substrate utilization by Pleurotus eous. The synergistic or antagonistic role of the microorganism during dual culturing with the mushroom or the competitor molds Trichoderma viride, and Trichoderma reesi was studied. Azotobacter was inhibitory to the molds, which are competitive to the mushroom in the seed spawn substrate, but was synergistic towards the mushroom. The growth, substrate utilization potential as total nitrogen content and cellulase enzyme activities of the mushroom in the seed spawn substrate were also enhanced in the presence of the bioinoculant at lower inoculum concentrations, upto 5 ml broth culture per spawn bottle.

  • Application of water-saving self-feeders can reduce water consumption of pigs by more than 50% . so the feeding-watering system one of the most important way of the reduction of the slurry. Bioactive deep litter housing can eliminate slurry. Matured urine, faeces and litter can use for the purposes of soil conditioning and fertilizing . Water-saving slurry handling technology can halve manure dilution so it can double the nutrient content of the slurry. By using of straw bale biofilter for reducing emissions of pig houses makes fattening of pigs possible close to populated area. Developed rate control system for slurry application make avoiding over-fertilization possible , can fulfill better the demand of nutrient of plants. By means of computer aided manure utilization system area distribution of soil characteristics can determinate . The system is suitable for planning the utilization of manure and slurry in environment -friendly way.

Improvement of Kimchi Juice Fermentation by Combined method for Chinese Cabbage Waste Utilization (폐기물 활용을 위한 종합적 처리방법의 김치쥬스 발효 향상)

  • The effective fermentation methods of Kimchi juice for utilization of outer layer of Chinese cabbage, an waste of Kimchi industry were studied. The Kimchi juice prepared with brining and grinding the waste of Chinese cabbage and addition of spices was fermented at $25^{\circ}C$. Addition of 5$^{\circ}C$15% fermented Kimchi juice of pH 5.4 at initial stage and pH 4.4 at middle state resulted in a significant increase in fermentation rate and solid content after 12 hours of fermentation. The combined method of enzymatic hydrolysis(0.1% viscozyme) of the brined and ground cabbage and addition of 2.0% NaCl, 1.0% sucrose and 10% fermented juice of pH 5.4 first and 4.4 during fermentation, respectively resulted in more rapid fermentation. The solid concentration was 5 times higher than control at maximum point and acidic and total flavor intensity were also significantly high.

Effects of Caffeine Intake on Calcium Utilization in Rats of Different Age and Sex (카페인 섭취수준이 연령이 다른 흰쥐의 체내 칼슘 이용에 미치는 영향)

  • The purpose of this research was to investigate the effect of caffeine levels on calcium utilization in rats of different age and sex. Calcium utilization was compared in rats of different age(4 weeks and 10 months) and sex that were fed various levels of caffeine (0, 3.5, and 7mg/100g body weight) for 3 weeks. There was no significant difference in feed intake, serum calcium level, and ash content in tibia among the groups. Fecal calcium excretion was lower in young rats than in adults, Urinary calcium excretion significantly higher in the caffeine groups than that in the no-caffeine group. Daily retention and apparent absorbability of calcium in young rats were higher than those in adult rats. However, there was no significant difference among groups of different sex and caffeine levels. The results of this study suggest that caffeine consumption promotes urinary calcium excretion.
